Quality Characteristics of Kanjang(Soy Sauce) Fermentation with Bamboo Sap, Xylem Sap and Gorosoe (천연수액으로 제조한 간장의 품질특성)

  • Three varieties of soy sauce were prepared using saps of bamboo, xylem and gorosoe, with sea salt and bamboo salt, in May. Soy sauce was fermented in the traditional manner. Homemade soy sauce was analyzed after 3 months of aging. The pH and amino-type nitrogen content of soy sauce fermented with xylem sap and sea salt were very high, and malic acid was dominant among four types of organic acid. The content of calcium in soy sauce fermented with bamboo sap and sea salt was fourfold greater than that of the control. The contents of total amino acids in the soy sauces fermented with xylem sap and gorosoe, with the addition of sea salt instead of water, were 2-fold and 1.4-fold greater than that of ordinary soy sauce, respectively. In the DPPH assay, the antioxidant effect of soy sauce fermented with bamboo sap and sea salt was higher than that of other samples. Sensory evaluation showed that the overall acceptability of soy sauce fermented with gorosoe and sea salt was best, among the samples tested.

Effects of dietary supplementation with detoxified Rhus verniciflua sap on egg production, yolk lipid and intestinal microflora in laying hens

  • Objective: This study was conducted to investigate the effects of dietary detoxified Rhus verniciflua sap (RVS) on production performance, egg quality, lipid fractions of egg yolk, liver and serum, and the profile of cecal microflora in laying hens. Methods: Two hundred 52-week-old Hy-Line Brown layers were randomly divided into 4 groups with 5 replicates per group (2 hens per cage, 5 cages per replicate) and were provided with one of 4 experimental diets containing 0%, 0.05%, 0.1%, or 0.2% RVS, for 6 weeks. Due to unequal intervals of RVS doses, the interactive matrix language procedure of the SAS program was used to correct the contrast coefficients of orthogonal polynomials. Results: There were no differences in feed intake and egg weight among the groups. Egg production increased (linearly and quadratically, p<0.05) with increasing levels of RVS. Eggshell thickness increased (linear, p<0.05) as the level of RVS in diets increased. The levels of blood cholesterol and activities of glutamic-oxaloacetic transaminase and glutamic-pyruvic transaminase were not altered by dietary treatments. Increasing level of RVS increased (linear, p<0.05) the populations of cecal lactic acid bacteria. The content of yolk cholesterol decreased (linear, p<0.05) with increasing levels of dietary RVS, although there were no significant differences in each lipid fraction of the liver. Conclusion: This study indicates that dietary RVS could improve laying performance and eggshell quality, and affect cecal lactic acid bacteria in a dose-dependent manner.

  • Prediction of exact soil loss yield has as important engineering meaning as prediction of exact flow measurement in a stream. The quantity of soil loss in a stream should be considered in planning and management of water resources and water quality such as design and maintenace of hydraulic structures : dams, weirs and seawalls, channel improvement, channel stabilization, flood control, design and operation of reservoirs and design of harbors. In this study, the soil loss of Sap-gyo reservoir watershed is simulated and estimated by RUSLE model which is generally used in the estimation of soil loss. The parameters of RUSLE model are selected and estimated using slope map, landuse map and soil map by GIS. These parameters are applied to RUSLE's estimating program. And soil loss under probability rainfall in different frequencies are estimated by recent 30 years of rainfall data of Sap-gyo reservoir watershed.

  • The combined process of Sliding Arc Plasma and corona dielectric barrier discharge process (CDBD) was used to efficiently improve harmful substance, which convert into OH radicals which have strong oxidation potential, and so have deodorization and sterilizing effects, by generating specific radicals and anion and then reacting with the moisture contained in harmful substance. As a result of experiment, even if the size of SAP reactor is reduced from 80 A to 50 A, there is no much change and therefore it is judged the size of reactor may be minimized. And it was confirmed that after the anion and ozone generated from CDBD rector react with harmful substance, a anion was reduced from 510,000 ppb to 470 ppb and ozone from 98 ppb to 22 ppb. It was also judged the stability and durability of plasma producer are excellent. Accordingly, it is considered the harmful substances which exist in indoor air quality will be efficiently improved and removed by using further plasma combined process through this study.

  • ERP system is a good one because it provides required data to the Board of Directors at the right time, but needs to collect many data in this system. Nevertheless, increase in data leads to the system's quality deterioration which makes companies to carry out quality improvement. In order to solve quality deterioration problem, a company's quality improvement director must execute under acknowledgement of the relationships between sectors to be improved, which are DBMS, Application, System, Data Management, Archiving, and Reorganization. But in many cases, these relationships are ignored due to massive size of each of the sectors, resulting fragmental quality improvement operation. This case paper proposes a solution to effectively solve quality deterioration problem created by the massive data produced while operating ERP System(constructed by SAP package and web). First, it defines the sectors where quality improvements are vital, and lists out things to be considered. Then, by analysing the working process of these sectors, proposes the most efficient order of the improvement process. This case will eventually help the company's quality improvement director to execute quality improvement most effectively without trials and errors, which is this paper's ultimate goal.

Chemical Composition, Nutritional Value, and Saponin Content in the Spring Sap of Acer mono (고로쇠나무 수액(樹液)의 화학적(化學的) 성분(成分), 영양가치(營養價置)와 사포닌 함유(含有) 여부(與否)에 관(關)한 연구(硏究))

  • This study was conducted to analyze the chemical composition, nutritional contents, and saponin in the xylem sap of Acer mono Max. From Feb 25 to Mar 4, 1994, spring sap was collected by making holes with 1.7cm diameter on the trunk of trees in Mt. Baekwoon and Mt. Jiri. Sugars were quantified by HPIC, amino acids by amino acid analyzer, saponins by TLC, HPLC, and $^1H$ & $^{13}C$ NMR. Major component of the sap was sucrose at a concentration range of 0.68 to 2.01%. Following minor components were found: glucose at 0.03-0.11%, and fructose at 0.01-0.03% as sugars, lipid at 0.03%, threonine at 0.152%, lysine at 0.038%, arginine at 0.068% as amino acids, ash at 0.1%, Ca at 175ppm, Fe at 2ppm, P at 19ppm, K at 16ppm, Na at 31ppm as minerals, vitamin $B_1$ at 0.6ppm, vit. $B_2$ at 0.1ppm, and vit. C at 19ppm. A trace of phenolic compounds was found by TLC, while saponin commonly reported in high-quality ginseng roots was not found in maple sap. It is concluded that sap of Acer mono contains a good variety of natural compounds such as sugars, amino acids, Ca, Fe, and vitamins to serve as an excellent source of very natural and health-promoting drink.

Semantics Aware Packet Scheduling for Optimal Quality Scalable Video Streaming (다계층 멀티미디어 스트리밍을 위한 의미기반 패킷 스케줄링)

  • In scalable streaming application, there are two important knobs to tune to effectively exploit the underlying network resource and to maximize the user perceivable quality of service(QoS): layer selection and packet scheduling. In this work, we propose Semantics Aware Packet Scheduling (SAPS) algorithm to address these issues. Using packet dependency graph, SAPS algorithm selects a layer to maximize QoS. We aim at minimizing distortion in selecting layers. In inter-frame coded video streaming, minimizing packet loss does not imply maximizing QoS. In determining the packet transmission schedule, we exploit the fact that significance of each packet loss is different dependent upon its frame type and the position within group of picture(GOP). In SAPS algorithm, each packet is assigned a weight called QoS Impact Factor Transmission schedule is derived based upon weighted smoothing. In simulation experiment, we observed that QOS actually improves when packet loss becomes worse. The simulation results show that the SAPS not only maximizes user perceivable QoS but also minimizes resource requirements.

Minima Controlled Speech Presence Uncertainty Tracking Method for Speech Enhancement (음성 향상을 위한 최소값 제어 음성 존재 부정확성의 추적기법)

  • In this paper, we propose the minima controlled speech presence uncertainty tracking method to improve a speech enhancement. In the conventional tracking speech presence uncertainty, we propose a method for estimating distinct values of the a priori speech absence probability for different frames and channels. This estimation is inherently based on a posteriori SNR and used in estimating the speech absence probability (SAP). In this paper, we propose a novel estimation of distinct values of the a priori speech absence probability, which is based on minima controlled speech presence uncertainty tracking method, for different frames and channels. Subsequently, estimation is applied to the calculation of speech absence probability for speech enhancement. Performance of the proposed enhancement algorithm is evaluated by ITU-T P. 862 perceptual evaluation of speech quality (PESQ) under various noise environments. We show that the proposed algorithm yields better results compared to the conventional tracking speech presence uncertainty.

Effect of a Mixture of Extracts from Residues of Onion Left after Onion Harvesting and Purslane (Portulaca oleracea) on Productivity and Quality Characteristics of Organic Onions (양파 수확 후 잔재물과 쇠비름 추출물이 유기농 양파의 수확량 및 품질 특성에 미치는 영향)

  • This study assessed the effects of treatment with sap extract from onion residues postharvest and purslane on the quality and quantity of organic onions. At the bending stage, onions treated with the sap extract showed vigorous growth, with higher plant heights, more leaves, and longer sheath lengths than untreated onions. The onion yield was significantly increased when the plant was treated with extracted sap as compared with that of untreated plants (p<0.05). The bulb weight distribution of onions in the mixed onion and purslane treatment was also significantly increased (~300 g) as compared with that of the other treatment (p<0.05). Except for CaO and S, the mineral content of the onions produced from plants treated with the onion and purslane extract mixture was higher than those of onions in the other treatment. The hardness of onions produced from plants treated with the onion and purslane extract was significantly increased (8% and 20%, respectively) as compared with that of onions produced from plants treated with the onion extract only or no treatment (p<0.05). However, there was no significant difference in the sugar contents of the onions produced from extract-treated and nonextract-treated plants. Postharvest, the content of inorganic components (phosphate, calcium, sulfuric acid, and manganese) was higher in soil treated with the onion extract than in soil treated with the onion and purslane extract and non-treated soil. It can be concluded that residues left after onion harvests and purslane extract can be used as natural and environmentally friendly materials for the cultivation of organic onions.

Stereo Image Quality Assessment Using Visual Attention and Distortion Predictors

  • Several metrics have been reported in the literature to assess stereo image quality, mostly based on visual attention or human visual sensitivity based distortion prediction with the help of disparity information, which do not consider the combined aspects of human visual processing. In this paper, visual attention and depth assisted stereo image quality assessment model (VAD-SIQAM) is devised that consists of three main components, i.e., stereo attention predictor (SAP), depth variation (DV), and stereo distortion predictor (SDP). Visual attention is modeled based on entropy and inverse contrast to detect regions or objects of interest/attention. Depth variation is fused into the attention probability to account for the amount of changed depth in distorted stereo images. Finally, the stereo distortion predictor is designed by integrating distortion probability, which is based on low-level human visual system (HVS), responses into actual attention probabilities. The results show that regions of attention are detected among the visually significant distortions in the stereo image pair. Drawbacks of human visual sensitivity based picture quality metrics are alleviated by integrating visual attention and depth information. We also show that positive correlation with ground-truth attention and depth maps are increased by up to 0.949 and 0.936 in terms of the Pearson and the Spearman correlation coefficients, respectively.
