Early Changes after Death of Plaice, Paralichthys olivaceus Muscle -2. Temperature Dependency on Physicochemical and Rheological Properties- (넙치(Paralichthys olivaceus)육의 사후 조기 변화 -2. 물리 화학적 및 물성적 특성의 온도 의존성-)

  • To clarify the effect of storage temperature on the physicochemical and rheological properties of plaice, Paralichthys olivaceus muscle, the changes in IMP accumulation rates, rigor index, breaking strength and K-value of muscle during storage at $0^{\circ},\;5^{\circ}C$ and $10^{\circ}C$ were studied. The maximum speed and content of IMP accumulation were showed in sample stored at $0^{\circ}C$ among the all samples. The content and time reached around the maximum IMP accumulation for each samples were $6.94{\mu}mole/g$ and 30hrs for samples stored at $0^{\circ}C,\;6.30{\mu}mole/g$ and 31.5hrs for $5^{\circ}C$ samples and $5.40{\mu}mole/g$ and 45hrs for $10^{\circ}C$ samples, respectively. Values of breaking strength in sample stored at $5^{\circ}C$ increased rapidly than samples at $0^{\circ}C$ showed maximum values after 10hrs. However, In case of fresh flesh stored at $10^{\circ}C$, there was no increase of breaking strength during storage. The breaking strength was not closely related with rigor index. The times reached around $5\%$ K-value which is representative excellent freshness index of sashimi were 14hrs for samples stored at $0^{\circ}C$, 13hrs for $5^{\circ}C$ samples and 4hrs for $10^{\circ}C$ samples. From the results above, it was suggested that the storage at low temperature($10^{\circ}C{\sim}5^{\circ}C$) was effective in increase the IMP contents and breaking strength, and maintenance the high-freshness of fresh plaice flesh at early periods after death.

Comparison of Physicochemical Characteristics of Hot-boned Chicken Breast and Leg Muscles during Storage at 20℃

  • The aim of this study was to compare the physicochemical changes of hot-boned chicken breast and leg muscles. Chicken breast and leg muscles from 56 broilers were excised within a 15 min post-mortem (PM) and stored at $20^{\circ}C$. Physicochemical traits were determined at 0.5, 6, 12, and 24 h PM. The ultimate pH of leg muscle was higher than that of breast muscle (p<0.05). The content of glycogen in the breast muscle was relatively higher than that in the leg muscle until 6 h PM (p<0.05). R-values showing rigor mortis of breast and leg muscles were completed after or before 6 h PM. Breast muscle had less cooking loss than leg muscle (p<0.05). Drip loss did not significantly differ between breast and leg muscles with the exception of that at 6 h PM. The sarcomere length of leg muscle was relatively longer than that of breast muscle (p<0.05). The MFI of leg muscle was significantly lower than that of breast muscle (p<0.05). The shear force of leg muscle was lower than that of breast muscle at 6 and 12 h PM (p<0.05); however, that of both muscles did not significantly differ at 24 h PM.

The Effect of Sa-am acupuncture on Knee Osteoarthritis

  • Objective : Acupuncture has been widely used throughout the world for the treatment of knee osteoarthritis (knee OA). This study investigated whether acupuncture, particularly Sa-am acupuncture, could be effective in relieving pain and improving the symptoms of knee OA. Method : This study was conducted as a prospective, randomized, controlled, and patient- and investigator-blinded clinical trial. Forty volunteers with knee OA participated in the study. All participants were screened through an inclusion and exclusion criteria. Thirty four participants completed the clinical trial. In total, forty subjects were randomly selected to receive Sa-am acupuncture. Eight sessions of acupuncture were given at the contralateral side of the problematic knee for 4 weeks. Korean translation of Western Ontario and McMaster Universities Osteoarthritis Index (KWOMAC) scores were measured twice: at the beginning and end of the clinical trial period. Both the Patient Global Assessment and physical health scores based on the 36-Item Short-Form Health Survey were also used to measure the results. Results : Compared to the pre-trial scores, the Sa-am acupuncture group (n=34) showed a significant decrease in KWOMAC total scores according to a paired t-test. The Sa-am acupuncture group also showed significant improvement in the Patient Global Assessment when compared to the pre-trial. Conclusions : Sa-am acupuncture for knee OA resulted in an improved KWOMAC total score. This was mostly driven by the function component score that was greatly affected by acupuncture. However, further studies with expanded designs are needed to solidify this finding with scientific rigor.
