Applying HACCP for Microbiological Quality Control in Hospital Foodservice Operations (병원 급식시설의 미생물적 품질관리를 위한 위험요인 분석에 관한 연구)

  • Time and temperature conditions, and microbiological qualities of six categories of menu items were assessed according to the process of food product Row in a 500 bed general hospital. The Harzard Analysis Critical Control Point (HACCP) system was applied to determine harzards, to assess their severity and risks, and to identity CCPs and memos for monitoring mem. The Critical Control Points identified for each category of menu items were: Meat Soup (Kyung Sang Do Gogi Guk): Pre-preparation, holding after pre-preration, and holding after cooking; Pot Stewed Stuffed Cabbage (Soe Yangbaechu Mali Chim): pre-preparation, holding after Pre-preparation, stuffing, cooking and holding after cooking; Boned Pork Sour Salad (Doeji Suyuk Muchim): Pre-preparation, holding after pre-preparation, and post-preparation after cooking; Sauteed Pork Ball (Jeyuk Wanja Jon): pre-preparation, holding after pre-preparation, shaping, and holding after cooking; Stir-fried Fragrant Mushroom (Pyogo Bosot Bokkum): basic ingredients, Pre-preparation, holding after pre-preparation, and holding after cooking; and Fried Corn with Vegetables (Oksusu Yachae Tuigim): pre-preparation, holding after pre-preparation, mixing, and holding after cooking.

The Relationship between the Career Preparation Behavior, Parental Social Support, Career Decision Making Self-Efficacy, and the Career Maturity of the Pre-Service Elementary School Teachers (교육대학생의 진로준비행동과 부모의 사회적 지지, 진로결정자기효능감 및 진로성숙의 관계)

  • The purpose of this study was to identify a causal relationship in the career preparation behavior, parental social support, career decision making self-efficacy and the career maturity of the pre-service elementary school teachers. A total of 374 questionnaires were used for data analysis, excluding the 23 copies deemed insincere in response. To ensure the reliability and validity of the questions, technical statistics of the frequency, ratio, average, standard deviation, skewness, and kurtosis via PASW 18.0, item-total correlation, the totality, and the reliability analysis. The structural analysis via AMOS 7.0 in the bootstrapping method was undertaken to perform the path analysis among the variables and to assess the suitability of the model. The findings of the study led to the following conclusions: First, the causal model for the career preparation behavior, parental social support, career decision making self-efficacy, and the career maturity of the pre-service elementary school teachers is suitable to empirical analysis on research variables. Second, the career decision making self-efficacy of pre-service elementary teachers has direct effect on career preparation behavior positively. Third, parental social support of the pre-service elementary teachers has indirect effects on the career preparation behavior positively.

The Influence of Factors Related to Preparation by Pre-Service Teachers for Gender Equity Education and Teaching Gender Equity

  • Gender equity education is ineffective in a public school system even though gender equity education is a current issue in South Korean education. One of the problems is attributed to teacher education because no better gender equity education can be accomplished without teacher preparation. Therefore, the effectiveness of teachers is a very important keyword in teacher education. This study examines learning experience, gender equity value, teacher preparation for gender equity education of pre-service teachers in Gonju, South Korea, the factors that influence teacher preparation for gender equity education, and the instruction of gender equity. A survey was delivered to pre-service teachers in 2008, and the data of 350 pre-service teachers were analyzed. MANOVA and Multiple Regressions were used for analyzing the data. The results will contribute to the development of effective teacher education for gender equity education and information on a partnership between the family and the public school system that is centered on gender equity education.

  • The purpose of this study is to investigate the factors affecting pre-service childcare teachers' job preparation behaviors according to the model of planned behavior theory which has proven useful in predicting various behaviors of human beings, and to provide job search guidance for pre-service childcare teachers in the educational dimension and social welfare dimension. The study model included the factors proposed in the planned behavioral theories such as attitude toward job preparation behavior, subjective norm, perceived behavior control, behavioral intention, and job preparation behaviors. As a result of analyzing the collected data, it was found that there was a statistically significant effect on job preparation behavior through mediation of subjective preparation norms, perceived behavior control, and attitude in that order with regard to job preparation behaviors, and the perceived behavioral control was found to have a direct and indirect effect on job preparation behaviors. Based on this, the theoretical basis for suggesting ways to promote pre-service childcare teachers' job preparation behaviors by raising subjective norms, perceived behavior control, and attitude levels is suggested.

  • The pre-elderly approaching old age in our society confront having a harsh economic status. The main purpose of this study was to explore the factors influencing the preparation of the pre-elderly for overcoming this status. In particular, it focused on financially stable pre-elderly persons. The data from the 2008 Chungcheongnam-do Welfare Plan for Five Years collected by the Chungnam Women's Policy Development Institute was used to analyze the research questions. The participants in this study included 735 persons (ages 55-64) living in Chungcheongnam-do. Five hundred and eighty-one self-reported questionnaires were used for the final analysis using SAS, version 9.1. This study attempted to identify the important variables needed to find the factors related to socio-demographic and economic characteristics, the adult-child relationship, the preparation plan for old age, etc. The results showed that job and health status were key to preparation for financial stability among the elderly. Another finding was the importance of concrete financial planning for the elderly; that is to say, the pre-elderly who made more concrete plans than indefinite ones were likely to belong to stable households. Another significant finding was that it is important to consider both objective and subjective factors for the financial preparation of the elderly. These results should serve as reference data for the future welfare policy for the elderly, because the financial independence of the elderly will be vital for a healthy relationship between new and old generations.

Preparation and Characterization of Reduced Graphene Nanosheets via Pre-exfoliation of Graphite Flakes

  • In this work, the reduced graphene nanosheets were synthesized from pre-exfoliated graphite flakes. The pristine graphite flakes were firstly pre-exfoliated to graphite nanoplatelets in the presence of acetic acid. The obtained graphite nanoplatelets were treated by Hummer's method to produce graphite oxide sheets and were finally exfoliated to graphene nanosheets by ultrasonication and reduction processes. The prepared graphene nanosheets were studied by X-ray photoelectron spectroscopy (XPS), X-ray diffraction (XRD), atomic force microscopy (AFM), and transmission electron microscopy (TEM). From the results, it was found that the preexfoliation process showed significant influence on preparation of graphite oxide sheets and graphene nanosheets. The prepared graphene nanosheets were applied to the preparation of conductive materials, which yielded a greatly improved electrical resistance of $200{\Omega}/sq$.

  • The purpose of this study was to estimate the microbial quality of some raw vegetables, and suggest a safer method for their sanitization and pre-preparation in foodservice operations. Baechu-geotjeori was monitored from the ingredient to the final product, during different holding temperature. Three sanitization methods were performed during the pre-preparation (tap water, chlorine water and electrolyzed water). The largest reduction in the microbial counts was shown with the electrolyzed water pre-preparation (after treatment; the total plate counts decreased to 3.34-4.06 Log CFU/g, coliform counts decreased to 1.40-1.45 CFU/g). Prior to immersion in the chlorine water, washing was first peformed to see if the was a larger effective reduction in the microbial counts.

Hazard Analysis and Microbiological Quality Control of Sauteed Beef or Pork in Hospital Foodservice Operations (병원급식 시설에서의 완자전 생산과정의 미생물적 품질 평가에 관한 연구)

  • Time and temperature, microbiological quality of sauteed beef or pork were assessed in five general hospital foodservice operations. The microbiological quality of basic ingredients was poor and strict temperature control of refrigeration was required during delivery, and storage after receiving. In pre-preparation and cooking phases, improper handling practices of employees such as reusage of wiping cloth, indiscreet use of cutting board, and food handling with contaminated hands were noticed. During cooking phase, internal temperature of sauteed beef or pork reached a temperature of $74^{\circ}C$ or higher and the microbiological quality was good in general except hospital A. In all but hospital B, cooked foods were held at too high temperature in humid kitchen environment where could have permitted considerable bacterial multiplication. The sanitary conditions of container, equipments, and supplies were poor and should be improved promptly. The critical control points identified were: Hospital A: basic ingredients, pre-preparation, cooking, and preservice holding; Hospical B: bll8ic ingredients, and pre-preparation; Hospital C: basic ingredients, pre-preparation, pre service holding, and service; Hospital D: basic ingredients, pre-preparation, preservice holding, and service; and Hospital E: basic ingredients, pre-preparation, pre service holding, and service.

Pre-Service Secondary Music Teachers' Concerns About Music Teaching and Learning (중등예비음악교사의 교직에 대한 염려 조사)

  • Recently, there has been a growing focus on the concerns pre-service teachers have as they move through different stages of their teacher preparation programs. Accordingly, the purpose of this study was to investigate pre-service secondary music teachers' concerns about music teaching and learning. The specific research questions were as follows: (a) What concerns are most common among participants? (b) What are differences in the concerns of pre-service secondary music teachers based on their stage of teacher preparation? (c) What are differences in the concerns of pre-service secondary music teachers based on their previous teaching experiences? A survey was distributed to pre-service secondary music teachers in a university in Seoul, and responses from a total of 93 participants were included in the final analysis. Data analysis indicated that pre-service music teachers experienced more concerns related to teaching tasks and student impact than themselves. Also, as participants progressed through their teacher preparation programs, self concerns decreased while task concerns and student impact concerns increased. Pre-service secondary music teachers who had previously taught in a school had fewer concerns than participants with no teaching experience. Suggestions for how teacher preparation programs can address the concerns of pre-service secondary music teachers are offered.

The Effects of Preceptor Preparation Education on the Preceptor's Role Recognition and Job Satisfaction (프리셉터 교육이 프리셉터 역할인식과 직무만족도에 미치는 효과)

  • Purpose: The purpose of this study was to examine the effects of preceptor preparation education on the preceptor's role recognition and job satisfaction. Method: This study was designed as a pre-experimental, one group pre-test and post-test design. The subjects of this study were 44 preceptors who had the preceptor preparation education at a university hospital in Suwon, Korea. Data were collected from May 26th to June 15th, 2003. The collected data were analyzed using SPSS WIN 10.0 with paired t-test and Pearson's correlation. Result: The results were as follows; (a) After the preceptor preparation education, preceptor's role recognition increased significantly compared to before the preceptor preparation education (t=-4.910, p=.000), (b) After the preceptor preparation education, job satisfaction increased significantly compared to before the preceptor preparation education(t=-4.470, p=.000), (c) Preceptor's role recognition was significantly positive correlation with job satisfaction(r=.422, p=.004). Conclusion: The results of this study shows that preceptor preparation education was effective in increasing preceptor's role recognition and job satisfaction.
