This study was carried out to evaluate the immunomodulatory capacity of edible mushrooms, including Lepista nuda, Corprinis comatus, Letinus edodes, and Pleurotus eryngii, in mice. BALB/c mice were administered 1, 50, and 500 mg/kg body weight of various mushrooms five times a week over 4 weeks through gastric intubation. The control mice were administered distilled water. No significant changes in body weight were observed. IL-4 and IFN${\gamma}$ production was evaluated with splenic T lymphocytes stimulated in vitro with phytohemagglutinins for 48 hr. The mice group administered L. edodes showed significantly higher ratio of IFN${\gamma}$ versus IL-4 than the other groups. In addition, the ratio of plasma IgG2a versus IgG1 was also significantly elevated in mice treated with L. edodes. However, no significant change was observed in ratio of IgG2a versus IgG1 in splenic B lymphocytes stimulated in vitro with lipopolysaccharides for 7 days. These results indicate that L. edodes can enhance type-1 helper T cell-mediated cellular immunity.
Solvent-extracted volatile components from dry powder prepared from Citrus unshiu products such as immature Citrus unshiu (PCU), mature Citrus unshiu (MCU), Citrus unshiu peel (CUP), and citrus juice processing wastes (CJPW), were examined. Also, solvent-extracted volatile components from mushroom mycelia of Pycnoporus coccineus (PC), Lentinus edodes (LE), Pleurotus eryngii (PE), Hericium coralloides (HC), Panellus serotinus (PS), and Ganoderma lucidum(GL), all cultivated using citrus pulp solid media, were assayed. Twenty-nine volatile components were identified in dry powder prepared Citrus unshiu and 18 volatile components were characterized from mushroom mycelia. Of these, ${\beta}-elemene$, germacrene-D, and ${\delta}-cadinene$, were derived from CJPW, but caryophyllene, hexadecanoic acid, decanoic acid, and tetradecanoic acid were synthesized by mushroom mycelia.

The retrotransposon marY1 is a gypsy family retroelement, which is detected ubiquitously within the fungal taxonomic groups in which mushrooms are included. To utilize marY1 as a molecular marker for the DNA fingerprinting of mushrooms, oligonucleotides marY1-LTR-L and marY1-LTR-R were designed on the basis of highly conserved regions from the multiple sequence alignment of 30 marY1 sequences retrieved from a nucleotide sequence database. In accordance with $\underline{Re}trotransposon$$\underline{M}icrosatellite$$\underline{A}mplified$$\underline{P}olymorphism$ (REMAP) fingerprinting methodology, the two oligonucleotides were utilized together with the short sequence repeat primers UBC807 and UBC818 for polymerase chain reaction using templates from different mushroom genomic DNAs. Among the tested oligonucleotides, the marY1-LTR-L and UBC807 primer set yielded the greatest amount of abundance and variation in terms of DNA band numbers and patterns. This method was successfully applied to 10 mushroom species, and the primer set successfully discriminated between different commercial mushroom cultivars of the same strains of 14 Pleurotus ostreatus and 16 P. eryngii. REMAP reproducibility was superior to other popular DNA fingerprinting methodologies including the random amplified polymorphic DNA method.
The two most common mushroom species grown in Korea are pearl oyster mushroom (Pleurotus ostreatus) and king oyster mushroom (P. eryngii). In recent years, the production of king oyster mushroom greatly increased due to the automation of the cultivation facilities, and it became a major export mushroom owing to its excellent shelf life. However, the increase in the production of king oyster mushroom led to a decline in its market price; thus, necessitating the development of new mushroom species that could replace king oyster mushroom, to diversify the mushroom market for the benefit of both, the producers and the consumers. The Mushroom division at the National Institute of Horticultural & Herbal Science (NIHHS) reported the development of a new interspecific hybrid between P. ferulae and P. tuoliensis, referred to as 'Creamy.' Two parental strains KMCC00430 (Bisan2ho, P. ferulae) and KMCC00461 (P. tuoliensis) were selected based on the results of genetic resource analysis, and their monokaryons were collected. About 1,000 Mon-Mon crosses were performed and 73 of them were selected. Following repeated cultivation tests and strain analyses, we selected strain 7773, which had a bright creamy pileus and a thick straight stipe, and named it 'Creamy.' Optimum temperature for mycelial growth of Creamy was 25-30℃, and that for fruiting body growth was 16℃. The pileus, which had a brighter creamy color, was small in size with a diameter of 61.2 mm. Although it was cultivated in suboptimal conditions, such as low temperature and high CO2 concentration, Creamy was characterized by its straight and smooth stipe. Field production tests and further analyses indicated that the yield of Creamy was 5% higher than that of Baekhwang. It is expected that Creamy, the new interspecific hybrid with a bright creamy pileus and a pleasant flavor, will help create new opportunities for mushroom farmers and diversify the mushroom market.
This study was performed to provide the basic knowledge about the mushroom cultivation facilities. Classified current status of cultivation facilities in Gyeongnam province was investigated by questionnaire. The structure of Pleurotus eryngii cultivation facilities can be classified into the simple and permanent frame type. The simple frame structures were mostly single-span type, on the other hand, the permanent frame structures were more multi-span than simple structures. And the scale of cultivation facilities was very different regardless of structural type. But as a whole, the length, width and ridge height were prevailing approximately 20.0 m, $6.6\~7.0m$ and $4.6\~5.0m$ range, respectively. The floor area was about $132\~160\;m^2$, and floor was built with concrete to protect mushrooms from various harmful infection. The roof slope of the simple and permanent type showed about $41.5^{\circ}\;and\;18.6\~28.6^{\circ}$, respectively. The width and layer number of growing bed for mushroom cultivation were around $1.2\~1.6m$, 4 layers in common, respectively. Most of year round cultivation facilities were equipped with cooler, heater, humidifier, and ventilating fan. Hot water boiler was the most commonly used heating system, the next was electric heater and then steam boiler. The industrial air conditioner has been widely used for cooling. And humidity was controlled mostly by ultra-wave or centrifuging humidifier. But some farmers has been using nozzle system for auxiliary purpose. More then $90\%$ of the mushroom house had the independent environment control system. The inside temperature was usually controlled by sensor, but humidity and $CO_2$ concentration was controlled by timer for each growing stage. The capacity of medium bottle was generally 850 cc and 1100cc, some farms used 800 cc, 950 co and 1,250 cc. Most of mushroom producted has been usually shipped to both circulating company and joint market.
Potential of consumer unit packaging was investigated for quality maintenance during export simulation in king oyster mushrooms (Pleurotus eryngii). Mushrooms were harvested in late May, precooled to $4^{\circ}C$ within 6 hours, and then packaged for shipping in two ways: 2 kg bulk packaging in a polyethylene (PE) bag or three types of unit packaging methods such as 400 g in polypropylene film bag (PPB), 200 g on styrofoam tray + PE shrinkage film wrapping (STW), and 200 g in polyethylene terephthalate (PET) containers (PETC). For local distribution of bulk-packaged commodity, mushrooms were sorted again and packaged into 3 consumer units in the same way as for the initial shipping packages. Simulation of refrigerated container shipping was performed in a walk-in type pilot storage at $0.5^{\circ}C$ for 5 weeks, while local marketing simulation was carried out on the shelf at $7^{\circ}C$ for 7 days. During the shipment simulation, creation of modified atmosphere (MA) was substantial in 2 kg bulk packages with low $O_2$ below 2% and high $CO_2$ over 15% whereas, in PPB and PETC unit packages, relatively higher $O_2$ concentrations were observed. On the shelf at $7^{\circ}C$, $CO_2$ concentrations rapidly increased in PPB and PETC packages despite the short marketing period. Overall marketability evaluated by off-flavor, browning, and texture rating was maintained at excellent level when 2 kg bulk packaging in PE or unit packaging in PPB and PETC were used for shipment. In contrast, establishment of MA was very slight in STW packages during shipment and local distribution resulting in poor quality after export simulation. The results suggested that shipment using adequate consumer unit packaging is more practical and economically beneficial than using bulk packaging in the export program consisting of 5-week shipment and 7-day local distribution.

Ten to thirty percent of ginko leaf pomace(GLP) were added to pine sawdust to investigate mycelial growth. Mycelial growth on the medium with GLP was 86~101(mm/28 days) and was slower than that of the control without GLP as, 102(mm/28 days). Mycelial growth time on medium of sawdust with 10 to 20% GLP was similar to the control without GLP as 29 days but that on medium with 30% GLP was delayed for 2 days. The time of pinhead formations of sawdust with 10 to 20% GLP was 7 days, the growth time to harvest was 11 days. These results were similar to those of the control without GLP. The sizes of pileus of treatments with 10 to 30% GLP were tend to be smaller compared with the control. The length of stipe of 10% GLP treatment was 98mm which was longer than that of the control with 91mm. The thickness of stipes of 10 to 30% GLP treatments were 45 to 48mm which were tend to be thicker than that of the control with 45mm. The hardness of stipe were 35,062($g/cm^2$) to 4,1065($g/cm^2$)) which were harder than that of the control with 32,156($g/cm^2$)). GLP treatments seem to be favorable to store or distribute. Yields per volume of GLP added treatments were 88.7g to 95.6g, which was increased 3 to 12% compare to 85.8g of the control without GLP.

This study was conducted to set up a proper replacement cycle of High Efficiency Particulate Air (HEPA) filters by observing the microbial populations in the air of the cultivation house of Pleurotus eryngii, before and after HEPA filter replacement at different periods. The density of bacteria and fungi in the air during each cultivation stage was measured using a sampler before the replacement of the HEPA filter. The results showed that airborne microorganisms had the highest density in the mushroom medium preparation room, with 169.7 CFU/㎥ of bacteria and 570 CFU/㎥ of fungi, and the removed old spaun had 126.3 CFU/㎥ of bacteria and 560 CFU/㎥ of fungi. The density of bacteria and fungi in the air at each cultivation stage before the replacement of the HEPA filter was 169.7 CFU/㎥ and 570 CFU/㎥, and 126.3 CFU/㎥ and 560 CFU/㎥, during the medium production and harvesting processes, respectively. After the replacement of the HEPA filter, the bacterial density was the lowest in the incubation room and the fungal density was the lowest in the cooling room. The microbial populations isolated at each period consisted of seven genera and seven species before the replacement, including Cladosporium sp., six genera and six species after 1 month of replacement, including Penicillium sp., 5 genera and 7 species after 3 months of replacement, including Mucor plumbeus, and 5 genera and 12 species, 5 genera and 10 species, and 5 genera and 10 species, 4, 5, and 6 months after the replacement, respectively, including Penicillium brevicompactum. During the period after replacement, the species were diversified and their number increased. The density of airborne microorganisms decreased drastically after the replacement of the HEPA filter. Its lowest value was recorded after 2 months of replacement, and it increased gradually afterwards, reaching a level similar to or higher than that of the pre-replacement period. Therefore, it was concluded that replacing the HEPA filter every 6 months is effective for reducing contamination.
This study investigated the major components of citrus juice processing wastes (CJPW) as well as mushroom mycelia that were cultivated with the CJPW, such as Pycnoporus coccineus (PC), Lentinus edodes (LE), Pleurotus eryngii (PE), Hericium coralloides (HC), Panellus serotinus (PS) and Ganoderma lucidum (GL). The organic acid contents of the mushroom mycelia were similar to or less than those of the CJPW, but the free sugar contents of the mycelia were lower than those of the CJPW. The narirutin contents of the mushroom mycelia ranged from 448.67-932.98 mg% and were similar to or less than those of the CJPW. However, the hesperidin contents of the mycelia ranged from 3019.94-4980.94 mg% (except for the PC mycelium) and were 17.81-52.61% greater than the CJPW. The dietary fiber contents of the mycelia were similar to or more than those the CJPW. With the exception of PE, the electron donating abilities (EDA) and nitrite scavenging abilities (NSA) showed a tendency to decrease.
This study was carried out to investigate the recognition, preference of mushrooms and mushroom processed foods among general consumers in order to develop new mushroom processed foods. The questionnaires are consists of general questions, health status, intake frequency of mushrooms, reason for prefer mushrooms, have purchased experience or not of mushroom processed foods and prefer mushroom processed foods to want development by age. A total 1173 questionnaires were analyzed for statistical analysis. The statistical analysis was completes using SPSS Win program (Version 14.0) for descriptive analysis and $X^2$-test. Main results of this study were as follow: Most of respondents prefer mushrooms and 28.5% of the respondents like Pleurotus eryngii most. The most reasons for the prefer mushrooms are freshness. The frequency of intake mushrooms was 6-8 times per months. The most consideration factor in purchasing mushrooms was freshness/hygiene. 55.6% of the respondents had purchasing experience of mushroom processed foods to eat. The most purchased mushroom processed foods were soup and hor cereal. The most consideration factor in purchasing mushroom processed foods was improvement of taste.
