Design and Construction of Analysis System using R (R 을 이용한 분석 시스템 구축 방안 및 설계)

  • In recent years, many analysts have been using Python and R to analyze data using efficient analysis and statistics. However, it is difficult to solve the requirement to express various analyzes in real time through the web system using only two languages. In addition, it is possible to confirm that the extracted P-Value is different from the value in R because there is no corresponding algorithm in Java or the corresponding source is not verified. Therefore, in this paper, we propose a method to apply analyst 's analysis algorithm contents directly to his system using R in other languages.

Effect of Ecklonia cava Powder on Color and Texture of Sugar-Snap Cookies

  • Freeze-dried Ecklonia cava powder was incorporated into cookie dough at 5 levels (0%, 1.5%, 3%, 4.5%, and 6%, w/w) by replacing equivalent amount of wheat flour of the cookie dough. After aging and sheeting, cookies were baked at $185^{\circ}C$ for 14 min in a convection oven. The baked cookies were cooled to room temperature for 30 min and packed in airtight bags prior to all measurements. Lightness $(L^*)$ decreased significantly as the E. cava powder content increased (p<0.05) and a decreasing trend in both redness ($a^*$-value) and yellowness ($b^*$-value) was observed. On the other hand, firmness increased significantly with an increase in E. cava powder content (p<0.05). Increases in E. cava powder concentration up to 6% in the cookie formulation significantly increased the intensities of all sensory attributes such as color, flavor, taste, and firmness (p<0.05). Correlation analysis indicated that the E. cava concentration correlated significantly with most of the properties except for $a^*$-value (p<0.01, 0.05, or 0.001). Properties such as firmness and sensory color and firmness correlated positively while $L^*$- and $b^*$-value correlated negatively with E. cava concentration. Sensory color correlated negatively with $L^*$- and $b^*$-value. Sensory firmness correlated positively with mechanically measured firmness.

Quality Characteristics of Snow Crab Cream Soup with Yam and Potato as a Thickening Agents (참마와 감자를 농후제로 사용한 홍게 크림수프의 품질 특성)

  • This study was carried out to investigate the quality characteristics of snow crab cream soup in order to seek the possibility of using fresh yams and potatoes instead of roux as thickening agents. The highest crude lipid(p<.05) and moisture(p<.001) were examined for the snow crab cream soup with yams and with potatoes as thickening agents($S_1$),($S_2$). The highest pH levels of $S_2(5.75)$ for the snow crab cream soup with yams and with potatoes were 75% and 25%. respectively. The highest lightness of 71.51(L value) was found in the 100% potato as a thickening agent($S_5$)(p<.001). The redness(a value) and yellowness(b value) were increased by adding potatoes to the snow crab soup(a=p<.001), (b=p<.01). Viscosity was increased by potato contents, and highest for the snow crab cream soup($S_5$) (p<.001). In sensory evaluation, the highest sensory scores for flavor and texture(p<.001) of mean 5.11 and 5.05, respectively, were obtained from the snow crab cream soup with yams(75%) and with potatoes(25%)($S_4$). The highest overall acceptability of mean 5.11 was found in the snow crab cream soup with yams(50%) and with potatoes(50%) as thickening agents($S_3$)(p<.001).

The Effects of Social Commerce Attributes on the Satisfaction and Repurchasing Intention for a College Women Student according to Restaurant and Food Choices (여대생들의 소셜커머스를 통한 음식점과 식품 구매 속성이 만족도와 재구매 의도에 미치는 영향)

  • Social commerce is becoming an increasingly popular shopping method among college women students. This study focuses on the influence of the satisfaction lavels and repurchasing intentions by consumers for restaurant and food choices according to social commerce attributes. In this survey, 351 valid surveys are being used to test the hypothesized (183 users and 168 non-usesr within 6 months), in order to ensure validity and reliability. As a result, factors such as perceived value, product diversity & information, delivery, ordering convenience, site character, price competitiveness, time pressure, and real time information are all being found. Factors of perceived value (p<0.001), price competitiveness (p<0.001), product diversity & information (p<0.05), delivery (p<0.05), and site character (p<0.05) significantly influence the customer satisfaction rates. Factors of perceived value (p<0.001), price competitiveness (p<0.001), time pressure (p<0.001), and site character (p<0.01) significantly influence the repurchasing intentions. In addition, it has been found that the customer satisfaction rates significantly influence repurchase intentions.

Effect of the Dye Bath and Mordants on the Dyeing of Silk Fabric using Cochineal (견섬유의 코치닐 염색에서 염욕의 액성의 매염제가 미치는 영향)

  • Using buffer solutions, consisting of pH 4, 5, 6, 7, and 8, silk fiber fabric specimens, pre-mordanted with one of the mordanting agents, Sn, Al, Cu, Cr, and Fe, were dyed using cochineal dyestuff. The color of the dyed silk fabric specimens was predominantly red(R) for the acidic range of pH 4 and 5, and predominantly purple(RP) for the neutral range of pH 6,7, with 8, with the pH boundary differentiating between the shades being between pH 5 and 6. As a general trend, the chroma value decreased as the pH changed from acid to alkali, and the highest chroma value us attained between pH 4 and 5. Regardless of the mordanting conditions, the trend was that $ {\Delta}E$ showed the highest measured value in the acidic range of pH 4 and 5, and it dropped abruptly after the pH 6.

  • This study was investigate correlation of moisture content, relative humidity, pH, color difference, myoglobin(Myo), oxymyoglobin(Oxy) and metmyoglobin(Met). The moisture content, relative humidity of loin and shank were not changed uniformly during storage, the pH was raised according to storage period. The L value was raised at the closing stage of the storage period, the surface of the b value was higher than interior. Between Myo and Met were positive correlation in common with loin and shank. The surface and interior of loin were negative correlation between Oxy and Met, the surface and interior shank were positive correlation between Myo and L value and were negative correlation between Myo and Oxy. The moisture content, relative humidity, pH and color was not correlation uniformly.

Effect of Broccoli Powder Incorporation on Physicochemical Properties of Cookies

  • Freeze-dried broccoli powder was incorporated into cookie dough at 5 levels (0, 1, 2, 3, and 4%, w/w) by replacing equivalent amount of wheat flour of the cookie dough. After aging and sheeting, cookies were baked at 170${^{\circ}C}$ for 8 min in an oven. The baked cookies were cooled to room temperature for 1 hr and packed in airtight bags prior to all measurements. The pH and moisture content were ranged 6.74-6.90 and 2.67-4.12% (wet basis) depending on the broccoli powder level, respectively. Lightness (L$^{\ast}$-value), redness (a$^{\ast}$-value), and hardness decreased while yellowness (b$^{\ast}$-value) increased significantly as the broccoli powder content increased (p<0.05). Spread factor of the control was significantly lower than that of samples containing broccoli powder regardless of the concentration (p<0.05) and increased significantly with increase in broccoli powder content (p<0.05). The broccoli concentration correlated significantly with most of properties except for pH and spread factor (p<0.05 or p<0.01). Hardness correlated negatively with moisture content (p<0.05) but correlated positively with spread factor (p<0.01).

Quality Characteristics of Cookies Made with Flaxseed Powder (아마씨 가루를 첨가한 쿠키의 품질특성)

  • This study was conducted to investigate the quality characteristics of cookies added with different levels of flaxseed powder. Cookies were prepared with four different levels (0%, 6%, 12% and 18%) of flaxseed powder and the physicochemical properties were examined. The pH of cookie dough was higher in cookies containing flaxseed powder. The spread factor of control cookie was lower than that of cookies containing 6%, 12% and 18% of flaxseed powder. The incorporation of flaxseed powder in cookies lowered lightness and yellowness but increased redness values. Rheology testing showed that cookies with 6%, 12% and 18% flaxseed powder had significantly lower hardness value than control cookies (p < 0.05). Consumer acceptance test revealed that overall preference score was the highest in cookies containing 12% flaxseed powder. During storage at $55^{\circ}C$ for 60 days, peroxide value increased until 30 days of storage and decreased thereafter, while acid value steadily increased and there was no significant difference in peroxide value and acid value between control cookies and flaxseed added cookies.

The Effect of Work Value, Psychological Ownership and Nursing Working Environment on Intention of Retention in Hospital Nurses (간호사의 일 가치감, 심리적 주인의식 및 간호근무환경이 재직의도에 미치는 영향)

  • Purpose : This study aims to assess the extent of work value, psychological ownership, the nursing work environment, and retention intention, examine the correlation between these variables, and identify the factors that influence retention intention. The goal is to provide foundational data to enhance retention intention. Method : The study involved 159 nurses employed at a tertiary general hospital and a general hospital. Data were gathered through structured questionnaires and analyzed using an independent t-test, one-way ANOVA, Scheffé test, Pearson correlation coefficient, and multiple regression analysis with a simultaneous stepwise method, all conducted using the SPSS 26.0 software. Results : The intention to remain in the profession was found to have a positive correlation with work value (r = .45, p < .001), psychological ownership (r = .37, p < .001), and the nursing work environment (r = .27, p = .001). Significant factors influencing the intention to stay included total clinical career (𝛽 = .17, p = .016), work value (𝛽 = .38, p < .001), and psychological ownership (𝛽 = .19, p = .020). These variables accounted for 24.1% of the variance in the intention to remain in the profession (F = 17.71, p < .001). Conclusion: To enhance the intention of hospital staff to remain in their positions, it is crucial to identify and bolster positive psychological competencies, such as a sense of work value and psychological ownership.

Quality Characteristics and Distribution of Early Harvesting Mandarin Oranges (조생 감귤의 품질 특성 분포 연구)

  • To get basic data for quality grading of Mandarin oranges, the oranges were collected from five major areas distributed in Cheju Island, Korea for 3 years and the quality characteristics such as greenness, size, weight, uniformity, sweetness, pH and titratable acidity and its distributions were analyzed. The mean value of greenness (100- yellowness) of peel color in Mandarin oranges was 2.58% and its variation was very large, 9.04%. The average height and diameter of the oranges were 47.51 mm and 56.05 mm, respectively. The average weight was 82.24 g and its variation was 29.92g. The sweetness varied between 5.60$^{\circ}$Brix and 17.2$^{\circ}$Brix and its average value was 10.53$^{\circ}$Brix. The average values of the pH and total acidity of the oranges were 3.90 and 0.71 %, individually. In quality characteristics of Mandarin oranges according to the cultivated areas, area D had the lowest value in the strength of greenness, 1.14% and area D had the highest value, 3.53%. The highest values of the height and diameter in Mandarin oranges were 49.35mm and 57.48mm for area A and the lowest values of them were 46.35mm and 54.87mm for area E, respectively. The highest value of the weight in Mandarin oranges was 87.61 g for area A and the lowest value was 76.77g fer area E. Although the sweetness ranged from 10.2$^{\circ}$Brix for area E to 10.75$^{\circ}$Brix for area D, the difference by the areas was insignificant. For pH values, area B had the highest value, 3.96, while area E showed the lowest value, 3.78. Area A and E in titratable acidity were the areas shown the highest value, 0.75%, whereas area B marked the lowest value, 0.64%.
