The purposes of this study were to estimate nutritional intakes of the long-lived elderly and to obtain the data for establishing dietary guidelines that may be recommended for the general population for the sake of longevity. The subjects of the study were 300 elederly people of age over 85 years living in Kyungpook Sung-Ju area who had no problem in daily living. Four times of food consumption survey were carried out seasonally by the repeated 24-hr recall method for one year. Mean daily energy intakes and RDA percentage of energy intakes of the male and female subjects were estimated as 1222 kcal(67.9%) and 1047 kcal(65.4%) respectively. Mean daily intakes of nutrients were estimated as 38.3g for protein, 287mg for calcium, 5.8mg for iron, 314R.E. for vitamin A, 0.6mg for vitamin B1 and 0.43mg for vitamin B2 The mean RDA percentages of nutrients intake were 64.4% and 59.8% for protein in male and female, 39.8% for Ca, 48.3% for Fe, 44.9% for vitamin A, 60% for vitamin B1, and 35.8% for B2. The average PFC ratio of energy-yielding nutrients throughout the year in male and female were 15.1 : 15.2 : 69.7 and 13.8 : 13.2 : 73.0 respectively. The mean daily intakes of energy and most of nutreints were significantly high in winter season. The contribution of plant food sources to nutrient intakes were over 60% for protein and fat, 50% for calcium, and 70% for iron. Long-lived elderly people an Sung-Ju, Kyungpook showed considerably smaller physiques compared to the avergae Korean elderly, however their average BMI fell in normal range. The subjects were consuming much less energy and nutrients compared to the present Korean RDA for the elderly over age 75. The subject showed relatively good health state in spite of low intakes of energy and nutrients. Therefore it seems to be necessary to establish a set of new RDA for the elderly over age 8.5.
This study was investigated nutrient intakes and dietary evaluation index of the healthy subjects over 85 of Sunchang County to explore the improved dietary pattern for healthy aging of the elderly. The survey was conducted by personal interview to 161 elderly subjects (59 males and 102 females over 85) in 2006, and their daily dietary intake was assessed by 24-hr recalls and weighing one meal. The daily energy intakes of males were 1,335 ${\pm}$ 67 kcal, and those of females were 1,095 ${\pm}$ 38 kcal comprised of 66.8% and 68.4% of the EER for the age group of 75. The proportions of energy from carbohydrate : protein : lipid were 70.7 : 14.6 : 14.6 for males and 68.6 : 14.0 : 17.4 for females. The average protein intakes were 95.4% for males and 85.0% for females of RI, and the average calcium intakes were 54.3% for males and 43.6% for females of RI. The daily vitamin intakes were below 70% except vitamin A, vitamin $B_6$, and vitamin E. The proportion of the relative risk groups of protein, phosphate, iron and vitamin A ranged 40-49% of RI over 75 year groups. The other nutrient intakes showed that there were over 50% risk groups. Especially for nutrients such as calcium, vitamin $B_1$, vitamin $B_2$, vitamin C, folate and niacin over 70% of the subjects were under risk. The median value of all nutrient intakes did not reach AI. The INQ of nutrients were over 0.8 except for folate and vitamin C. Calcium intakes were relatively low and needed attention. However, the ratio of calcium and phosphate showed 1 : 1.6, which appeared to be superior to the other districts. The DVS were higher as the dietary balance scores, KDDS were higher, and the groups with high KDDS had high intakes of nutrients compared to the groups with low KDDS. The high risk groups as judged by simple nutrition screening test had lower nutrient intakes than the groups of middle risk or low risk groups. The subjects in Sunchang area had relatively low intakes of several nutrients. However, judging from the desirable patterns of the energy proportion from three major nutrients, ratio of calcium and phosphate and INQ of nutrients there is a possibility that extended healthy aging might be related to the quality of nutrients and relative ratio between nutrients. To improve nutrient status of the elderly of the surveyed area further application involving KDDS and DVS appeared to be required.

Studies on the effect of different secondary nutrients in different doses on the leaf yield and biochemical constituents of Terminalia tomentosa revealed that secondary nutrients have promotary effect in increasing the leaf yield and foliar constituents of Terminalia tomentosa. Among all the treatments under study, foliar application of magnesium sulphate (2g/plant, w/v) is the best in respect of leaf yield and biochemical constituents of T. tomentosa. This treatment gave 29.15% increase in leaf yield over control. Chemoassay results further confirmed significant improvement in biochemical constituents. Except crude fibre, moisture, minerals, crude protein and total carbohydrate increased significantly over control.
Contaminated marine sediment is a secondary pollution source in the coastal areas, which can result in increased nutrients concentrations in the overlying water. We analyzed the nutrients release characteristics into overlying water from sediments and the interaction among benthic circulation of nitrogen, phosphorus, iron, and sulfur were investigated in a preset sediment/water column. Profiles of pH, ORP, sulfur, iron, nitrogen, phosphorus pools were determined in the sediment and three different layers of overlying water. Variety types of sulfur in the sediments plays a significant role on nutrients transfer into overlying water. Dissimilatory nitrate reduction and various sulfur species interaction are predominantly embodied by the enhancing effects of sulfide on nitrogen reduction. Contaminant sediment take on high organic matter, which is decomposed by bacteria, as a result promote bacterial sulfate reduction and generate sulfide in the sediment. The sulfur and iron interactions had also influence on phosphorus cycling and released from sediment into overlying water may ensue over the dissolution of ferric iron intercede by iron-reducing bacteria. The nutrients release rate was calculated followed by release rate equation. The results showed that the sediments released large-scale quantity of ammonium nitrogen and phosphate, which are main inner source of overlying water pollution. A mechanical migration of key nutrients such as ammonia and inorganic phosphate was depicted numerically with Fick's diffusion law, which showed a fair agreement to most of the experimental data.
This study was conducted to identify the characteristics of Korean diet in the view of food and food group intakes. The study subjects consisted of preschool children(PC), elementary school children(EC), high school students(HS), college students(CS), and adults over 30 years old living Seoul and the surrounding areas. The subjects over 30 years old were classified to 30-49 years, 50-69 years, and over 70 years. A dietary survey was conducted using 24-hour recall method and data were collected from 2392 subjects. Rice was a major contributor to many nutrients intake because of the amount of consumption. Vegetable oil made great contribution to fat intakes and eggs, squid, and anchovy supplied much cholesterol compared to other foods in all the age groups. Milk was major contributor of fat and cholesterol as well as calcium in younger age group, and seasoning gave much contribution to iron intakes. Mean dietary variety score(DVS) was 32 for EC group and 17 for subjects over 70 years, and tended to decrease along the increasing age. EC group consumed most variable number of foods of all groups but they consumed many junk foods, therefore the MAR value was low despite their high DVS value. Mean dietary diversity score(DDS) of each age group from PC group to subjects over 70 years was 4.34, 4.28, 3.79, 3.89, 3.76, 3.56, and 3.25, respectively. Food group, which was consumed below the minimum amount, was mainly fruits in all the age groups, and many subjects in HS group and over 30 years consumed dairy products below the minimum amount. From these results, age specific nutritional problems were found. PC group and subjects over 50 years seemed to need more diverse food intake than now, EC group did nutrient dense food, and HS group and subjects over 30 years did dairy products. Pig slurry is a good soil amendment not only because of its high organic matter content, but also because of its ability to provide various nutrients. The objective of this study was to estimate the influence of raw and processed pig slurry application on pot soil over chemical fertilizer and non-amended control soil. Change in the chemical parameters (pH, organic matter (OM), organic carbon (OC), macro and micronutrients) and microbial mass of the treated soils were monitored over 30 to 90 days. Pot soil was treated with the recommended dose of pig slurry and chemical fertilizer, and was sampled after 30, 60 and 90 days of incubation. The least significanct difference (p<0.05) was observed on Fe, Cu, Zn, available P and K between treatments. All treatments increased N, P and K content and microbial mass of soil over control soil. Interestingly, no significant effects were detected on OM, OC, total bacteria, actinomycetes and fungi mass in soil irrespective of treatments given. However fungal and bacterial counts, as well as available nutrients, were found to be higher in processed slurry (PS)-treated soil compared to other soils. In general a significant correlation existed between the fungal count and OM, OC, Zn, T Kjeldahl N (TKN), available P and K of soil. A strong negative correlation was observed between pH and Fe in soil. This study clearly demonstrated that the use of processed manure as a fertilizer could be a key for sustainable livestock agriculture.
This analysis was performed to investigate the relationship between nutrition and anthropometric indices using the data from a cross-sectional survey of a large national sample, '98 Korean national health and nutrition examination survey. Subjects were selected by stratified multistage probability sampling design and completed dietary questionnares including food intakes for one day by 24-hour recall method. For this analysis, 6566 subjects were selected by age(over 20 years old). For anthropometry, height, weight, and waist- and hip- circumference were measured. They were classified by body mass index(BMI, weight(Kg)/$height^2 $($m^2 $)) and waist-hip ratio(WHR, waist circumference(Cm)/hip circumference(Cm)). The nutrients intake of subjects were compared with the recommended daily allowances(RDA). Mean adequacy ratio(MAR) was calculated. Mean heights, weights, BMIs were higher in the groups with nutrient intake over 125% of RDA than the lower intake groups for most nutrients. However, Mean WHR was the highest in the groups with nutrient intake under 75% of RDA for most nutrients excluding iron intake of women aged 20-64 years. Among women aged 20-64 years, means of MAR were 0.71 for obese individuals(BMI>30), 0.72 for subjects with underweight(BMI<18.5), and 0.76 for subjects with normal weight(18.5$\leq$BMI<25). Normal subjects has statistically significantly higher MAR than those of other groups. However, among elderly people aged over 65 years, obese group had the highest MAR, 0.68. Women with abdominal obesity(WHR>0.9) had lower MAR, 0.71 than those with normal weight(MAR=0.76). From these results, obesity and abdominal obesity seems to be the results of malnutrition including both undernutrition and overnutrition rather than simple problem of excess energy intake. Obesity in elderly people needs to be handled differently from adults.
The purpose of this study was to develop the dietary enhancement program for rural elderly. The subjects consisted of 71 normal healthy elderly aged over 60 living in rural and senior citizen center. Daily supplementation of 20g soybean powder of 3 months revealed no statistically significant elevation in serum parameters of the elderly, but resulted in the increment in the number of the subject with normal range of serum parameters and the improvement in perceptions of health status by CMI score, even though the nutrients intake had constantly lowered. The nutrients intake of rural elderly was very low: energy intake was 59-68% of RDA, that of protein 47~59%, and clacium 21~60% only. Supplementation of 20 g soybean powder per day for 3 months, did not enhance nutrients intake of rural elderly. We can recommended that constant nutrients supplementation program as well as dietary enhancement program are needed to improve the quality of life of rural elderly.
This study investigates the relationship of smoking on daily intake of nutrients and snacks in the Chungnam and Daejeon high school students. Up to date scientific nutrition education and counseling programs in the regular school system is needed for a professional nutrition education teacher. The primary objective of this study was to provide useful information to nutrition education teachers. A survey was conducted with 400 high school students in the Chungnam and Daejeon areas. 381 out of 400 questionnaires were analyzed with SPSS 12.0K. The subjects were composed of 49.8% male, 50.1% female and 40.9% regular high school students, 59.1% business high school students and smokers 43.1%, non-smokers 56.9%. 43.4% of smokers had been smoking since middle school. On analysis of daily nutrient intakes, 16 out of 19 nutrients except animal calcium, Vitamin A and Vitamin C were much more consumed by the smoking group than the non-smoking group non-significantly. Especially vegetable fat and Vitamin E were higher in the smoking group than the non-smoking group (p<0.05). The intake ratio of carbohydrates: protein: fat was similar in the two groups (smoking group 55:15:29, nonsmoking group 56:15:28). Intakes of Vitamin B1 and potassium in comparison with the Korean dietary reference intakes(KDRI) were under 50% in both groups. However, sodium was taken over 200% compared to KDRI in both groups. Intakes of Vitamin C in the smoking group were as low as 76.5% in comparison to KDRI. Smokers need to increase the intakes of Vitamin C considering that smokers need to intake Vitamin C two times than non-smokers. Nutrient intakes from snacks in the smoking group were higher than the non-smoking group. Nutrients that originated from snacks which took over 20% among daily nutrient intakes were 12 nutrients(energy, fat, carbohydrate, calcium, P, Fe, K, Vitamin $B_1$, Vitamin $B_2$, Vitamin C, Vitamin E, dietary fiber) in the smoking group compared to 7 nutrients(energy, vegetable protein, fat, carbohydrate, calcium, Vitamin $B_2$, Vitamin C) in the non-smoking group. The smoking group was significantly paying more money for snacks each month than the non-smoking group was(p<0.01). Periods of consumption were irregular in the smoking group(p<0.05) and the smoking group was used to taking snacks in the morning compared to the non-smoking group. The smoking group preferred sweets and high calorie food over other snacks in comparison of the non-smoking group. The nonsmoking group had better eating habits than the smoking group.
This study was investigated the differences in the dietary habits and quality of diet among 148 university students in Daejeon between 1993 (71 subjects) and 2000 (77 subjects). Among male students, there were increases in height and decreases in weight, but the number in the normal weight group assessed by the BMI, increased. Significant increases in meal regularity and the rate of considering a balanced diet at meal time and significant decreases in the rate of eating unbalanced meals were noted over time among the male students. The number of male students drinking alcohol and those drinking alcohol frequently decreased significantly. When considering differences in the nutrient intake of males according to the Korean RBA, the percentages of energy, iron, and Vitamin B$_2$ decreased, while those of Vitamin C, calcium, and phosphorus increased over time. The NAR (Nutrient Adequacy Ratio) of most nutrients, especially in iron and Vitamin C were higher, than those of 1993, but the NAR of calcium, iron, Vitamin B$_2$, niacin and MAR (Mean Adequacy Ratio) were lower than 0.75 in the males. The INQ (Index of nutritional quality) of Vitamin C was higher than that of 1993, and the mQ of calcium and Vitamin $B_2$ were lower than 1 among the males. Among the females, there was no change in height and weight between 1993 and 2000, but the normal weight group, as assessed by the BMI, increased as among the males. However, unlike among the males, significant decreases in meal regularity and significant increases in the rate of alcohol drinking were noted over time. The intake of energy and nutrients showed trends similar to those among the males. The NARs of most nutrients were lower than those of 1993 among in the females. The INQs of protein, calcium, Vitamin $B_1$ and Vitamin C increased significantly, but the INQs of calcium, iron, and Vitamin $B_2$ were lower than 1 among the females. From these results, we found that male students showed relatively desirable changes over time in their dietary and health-related habits and the quality of their diets, while female students showed undesirable changes in their dietary and alcohol drinking habits and the quality of their diets.
