Rapid Determination of Ascorbic Acid in Red Pepper Leaves by Near-Infrared Reflectance Spectroscopic Analysis (근적외 분광분석법에 의한 고춧잎의 Ascorbic Acid 함량 측정)

  • The loss of ascorbic acid in dried red pepper leaves prepare with different drying methods of air-, oven-, microwave oven-, and vacuum drying with blanching or without was determined by a HPLC method. Vacuum drying showed the least loss of ascorbic acid than the other drying methods. Additionally, the feasibility of near infrared reflectance spectroscopy(NIRS) to determine the contents of ascorbic acid in the red pepper leaves was studied. NIRS was found to be an efficient way of determining ascorbic acid contents in red pepper leaves, requiring only 30 seconds of an analytical time.

Effects of the Methods of Polyethylene Glycol Impregnation and Drying on the Volumetric Shrinkage of Wood (Polyethylene Glycol 주입방법과 건조방법이 목재 부피수축률에 미치는 효과)

  • PEG (Polyethylene glycol) impregnation in wood reduces the occurrence of checking during kiln drying. The volumetric shrinkages of wood PEG impregnated by pressure (PEG-P) or soaking (PEG-S) methods, and oven-dried by vent (VD) or air-tight (AD) methods were measured and compared with the controls. The average oven-dry weight of PEG impregnated specimens was larger than that of the controls by 3.6 g, but was not influenced by the drying methods. The average of the total volumetric shrinkage of PEG-P-VD specimens was the least (2.3%), while that of CON-S-AD specimens was the largest (28.9%). Within a drying method the total volumetric shrinkage of the control was the largest followed by PEG-S and PEG-P specimens, which implied that residual PEG in wood restrained its shrinkage during drying.

Changes in Compositions of Fatty Acids According to Drying Methods of Mugwort (Artemisia asiatica Nakai) (쑥의 건조방법(乾燥方法)에 따른 지방산(脂肪酸) 변화(變化)에 관하여)

  • This study was carried out to investigate changes in the compositions of fatty acids according to the different drying methods of raw mugwort. Raw mugwort from Kang-wha was dried with four methods such as sun-drying, shady sun-drying, heated oven-drying and freeze-drying. Total contents and fatty acid compositions of the ethyl ether extracts from the dried mugworts were examined. Total contents of the ethyl ether extracts showed remarkable differences with drying methods; freeze-dried mugwort had the highest content (5.60%), while oven dried mugwort revealed the lowest content (2.45%). Eleven fatty acids and four unknown peaks were identified by gas-liquid chromatography; major fatty acids were linoleic acid, linolenic acid and palmitic acid. Fatty acids of mugworts dried by 4 different methods were the same in kinds, but different in their compositions. The content of polyunsaturated fatty acids $(C_{18:2}+C_{18:3})$ was the highest and the loss of low volatile fatty acids was the least in mugwort dried by the freeze-drying method. The volatile fatty acids considerably decreased in oven-dried mugwort. However, the contents of polyunsaturated fatty acids were a little higher in oven-dried mugwort than in sun-dried and shady sun-dried mugwort, and the lowest in sun-dried mugwort.

  • A study on the optimal drying condition by a vacuum drying oven was done using shredded tobacco lamina and commercial cigarettes ('This'). Changes in the mass of the experimental material were monitored for about 50 hrs at 6 different temperatures (5$0^{\circ}C$~10$0^{\circ}C$, 1$0^{\circ}C$ stepwise) while continuously operating a vacuum pump. After 30 hrs, small amount of samples from each material were taken sequentially to monitor changes in moisture content using a Karl-Fischer method (Metrohm KF 701 Titrino). Absolute moisture contents calculated from the measurements indicated an ideal data distribution could be obtained by drying at temperatures between 7$0^{\circ}C$~8$0^{\circ}C$. Results from cigarette products which contains humectant and tobacco lamina without it were compared.

Change in Levels of Vitamin U and Amino Acids in Korean Chinese Cabbages Under Various Drying Methods

  • S-methylmethionine, vitamin U levels were affected by cultivars, parts fo Korean Chinese cabbages, and drying methods. Among drying conditions, freeze drying method appeared the best condition to maintain bitamin U content compared to oven and air drying methods. In the case of KOrean Chinese cabbages, outward leaves have high levels of chlorphyll and fiber. From this study, the outward parts contained high levels of vitamin U in two cultivars. Leaf parts were 1.1-21.2 times higher in vitamin U levels than midribs in both cultivars. This difference was shown most distinctively in freeze dried outward parts of Winter Pride cultivar. Like vitmnin U, fee amino acids also showed much higher levels in leaves. Levels of amino acids showed irregulatoy changing patterns at different parts and cultivar of Korean Chinese cabbages with various drying methods, Alanine and threonie appeared relatively aboundant amino acids in most parts of samples. Since no distinctive trends were observed in this rsult, it seems no relationship exists between amon oacids and bitamin U levels. Levels of methionine in differnent parts and cultivars of Korean Chinese cabbages dried with various methods did no show clear relationship with tlevel of vitamin U. Moreover, emthionine was not detected in freeze dired outward leaf parts which were the hithest parts of vitamin U levels in Winter Pride and 55 days cultivar. There were simila levels of methionine between overn and freeze drying. Samples prepared by air drying showed significatly lower levels than those by oven and freeze dryting. Methionine as aprecursor of vitamin U, may play a role in an increase of vitamin U during drying of KOrean Chinese cabbages.

  • Dryers becoming commercially available for experimental and industrial use are classified to general drying oven, hot-air dryer, vacuum dryer, freezing dryer, etc. and kinds of them are various from the function, size and volume, etc. But the moisture measurement is not applied although it is important factor for the quality control and the performance improvement of products, and then now is very passive because the weight is weighed arbitrarily after dry-end. Generally the method for measuring moisture is divided by a direct measurement method and a indirect measurement method, and the former such as the change of weight or volume on the front and rear of separation of moisture, etc. is mainly used. Relatively a indirect measurement is very limited to apply due to utilize measurement apparatuses using temperature conductivity and micro-wave etc. In this research, we easily designed the moisture measurement system using the open-source based Arduino, and monitored moisture fluctuations and weight profiles in the real-time without the effect of external environment. Concretely the temperature-humidity and load cell sensors were packaged into a drying oven and the various change values were measured, and their sensors capable to operate 60℃ and 80℃ were selected to suitable for the moisture sensitive materials and the food dry. And also the performance safety using the organic samples of banana, pear, sawdust could be secured because the changes of evaporation rate as the dry time and temperature, and the measurement values of load cell appeared stable response characteristics through repeated experiments. Hereafter we judge that the reliability can be improved increasingly through the expansion of temperature-humidity range and the comparative analysis with CFD(Computational Fluid Dynamics) program.

  • Based on the selected controlled receipe, drying and frying processes were varied inculding time and temperature. According to the panel test and measurement with a texturometer on the products of different drying and frying conditions, the highly acceptable best product was the one prepared as follows. It was placed in the oven at $45^{\circ}C$ for 5 minutes and then at $23^{\circ}C$for 15 minutes. After turning upside down, this drying step was repeatedly continued for 5 hours. It was also dipped into oil at $14^{\circ}C$ for 1 minute, soaked in oil at $120^{\circ}C$for 2 minutes and then fried in oil at $190^{\circ}C$for 2 minutes. The studies using a texturometer showed the products with high acceptability in the panel test had brittleness of 1.3-2cm and number of peaks 4-6. The optimum drying times is considered as 3 hours since there was no significant difference among the products of 3 to 5 hours drying time.

Physiological Activity of Bang-A, Aster and Lettuce Greens by the Different Drying Methods (방아풀, 쑥부쟁이 및 씀바귀 나물의 건조방법에 따른 생리활성 효과)

  • This study was conducted to investigate into the effective drying method for three greens such as bang-a (Isodon japonicus), aster (Aster yomena) and lettuce greens (Ixeris dentata) Nakai. We have dried three greens using the different drying methods, have made methanol extracts and have also determined the physiological activities in $1,000mg{\cdot}L^{-1}$ extracts. Total phenolic compound contents were most increased by 65.1 and $60.2mg{\cdot}L^{-1}$ in the extracts of bang-a and aster which were frozen dried, however, that in lettuce greens were oven dried by $51.2mg{\cdot}L^{-1}$. Total flavonoid contents were extremely much more in bang-a extracts dried in the oven by $70.6mg{\cdot}L^{-1}$, however, aster and lettuce greens extracts frozen dried by 53.9 and $35.8mg{\cdot}L^{-1}$. DPPH radical scavenging activity in bang-a extracts were greatly increased by 78.8% when bang-a were frozen and dried, however, that in aster were not significant by $89.8{\sim}90.9%$. DPPH radical scavenging activities in lettuce greens extracts were became highest in the order f oven drying (91.9%), natural drying (91.0%) and freeze drying methods (90.9%). Nitrite radical scavenging activities in bang-a and aster extracts were most increased in the natural drying treatment by 73.3 and 78.2%, however, that in lettuce greens extracts were highest in freeze drying treatment by 75.1%.

Development of Kiln-Drying Schedules for Neolitsea sericea and Dendropanax morbifera Grown in Jeju Island (제주산 참식나무와 황칠나무의 건조스케줄 개발)

  • This research is to develop kiln-drying schedules for 2.7 mm thick boards of Neolitsea sericea and Dendropanax morbifera, which grow in the southern region of Korean Peninsula. These two species are lesser-known to woodcraft industry in this country. The proper USDA drying schedules for Neolitsea sericea and Dendropanax morbifera were found to be T10-C6 and T10-E6, respectively, by using the Quick Oven-drying Method. The boards dried in a kiln with the newly-developed schedules were revealed to be free from warping and checking.

Development of a Kiln Dry Schedule for Lindera erythrocarpa Grown in Hongsung, Chungnam Province, Korea (충남 홍성지역에서 자란 비목나무(Lindera erythrocarpa)의 열기건조스케쥴 개발)

  • Lindera erythrocarpa is a less utilized species in Korea although that it has straight stem and it grows up to 40 cm in diameter. A proper kiln-dry schedule is required in advance to utilize an unknown species. Terazwa's quick oven-dry method was used to find it and which was confirmed by drying 25 mm thick boards in a kiln. The average green moisture content and the average green specific gravity of Lindera erythrocarpa are 72.3% and 0.53, respectively. Prospective kiln-drying conditions obtained by Terazwa's quick oven-dry method are a initial dry-bulb temperature of $50^{\circ}C$, a initial wet-bulb depression of $4^{\circ}C$ and a final dry-bulb temperature of $75^{\circ}C$, which are in a good agreement with USDA FPL kiln-dry schedule of T5-D4. 25 mm thick boards dried in a kiln with T5-D4 kiln-dry schedule did not have any severe drying defects such as honycombing and warping. A severer kiln-dry schedule of T8-C5 was developed and applied to another kiln-drying run to confirm it.
