The fruit soluble solids and acidity decreased during storage regardless of fruit size, fruit firmness decreased also, and the decreasing rate of the firmness in large fruit was higher than small. The ethylene production of fruit was increased during storage, and there was the peak of fruit respiration rate at 2 and 6 weeks after harvest. The calcium and magnesium content was the highest in peel, the lowest in flesh, and intermediate in core. Especially, the calcium content in the outer flesh was lower than in the inner flesh, and the magnesium content in the middle part of flesh was lower than in the other parts. The Ca/Mg ratio in the inner flesh and the K/Ca ratio in the outer flesh were higher than in the other parts.
To improve the breeding efficiency of oriental pear, heritability, correlation and frequency distribution of fruit ripening date were analyzed using 4,035 seedlings obtained from 15 families between 13 parental cultivars. Although variation of fruit ripening time was higher in most early-ripening parental cultivars than in late-ripening parental cultivars, according to analysis of average, standard deviation, and coefficient of ripening variation for ten years, fruit ripening time obtained from all parental cultivars was inherited narrower and more stable variation than others fruit trait, with 0.92-3.41 in coefficient of variation. The heritability of fruit ripening time was calculated to be over 0.8 in almost all crosses and average fruit ripening time of seedlings from cross combinations could be predicted based on that of the parental cultivars due to its superior heritability relative to other fruit traits. The average ripening time was earlier than the mid-parental value in families obtained from cross combinations using at least one late-ripening cultivar as parent, indicating that the early-ripening trait was more likely to be dominant compared to the late-ripening trait. By contrast, average ripening time was clustered in families of crosses not only between mid-season and early-season cultivars, but also between mid-season and mid-season cultivars. There was highly significant relationship (at 0.68) between mid-parental and progeny mean fruit ripening time. The correlation between fruit ripening time and fruit weight was also highly positive and thus, the mid-parental fruit ripening time could be a potent criterion for indirect selection of fruit weight.

These studies were conducted to investigate the extraction, purification and characterization of oriental pear (Niitaka. Pyrus pyrifolia Nak.) protease, and the results obtained were as follows: 1. Oriental pear protease was effectively extracted by the method of homogenizing pear pulp with 0.7 volume of 0.1M-sodium phosphate buffer, pH 6.5 containing 5mM-cysteine, 40mM-2-mercaptoethanol and 2mM-EDTA at 10,000 rpm for 5 min. 2. The protease was purified by ammonium sulfate fractionation, Sephadex G-100 filtration and DEAE-Sephadex A-50 column chromatography, and the purified enzyme gave a single protein band on polyacrylamide gel electrophoresis. 3. The specific activity of purified enzyme was 29.65 unit/mg protein and the yield was 7.22%. 4. The moecular weight of the protease was estimated to be about 51,000 by SDS-polyacrylamide gel electrophoresis, and the enzyme had Km value of 54.5 mg/ml for casein. 5. The purified enzyme had a maximum activity at pH 6.0 and $50^{\circ}C$, and was stable from pH 5.5-6.5 and at temperatures below $50^{\circ}C$ 6. Casein was a better substrate for this protease compared to hemoglobin. 7. The enzyme activity was markedly inhibited by p-chloromercuribenzoic acid and heavy metal salts such as $HgCl_2$ and $MnSO_4$ also considerably inhibited the enzyme activity.
The packaging of fruits is very important because appropriate packaging can optimize the maintenance of freshness of fruits during their distribution in low or normal temperatures until the products reach consumers. The focus of this study was on the use of functional packaging materials for the post-harvest maintenance of the freshness of fruits. Oak charcoal has excellent far infrared emission and ethylene absorption qualities, and we developed a charcoal-processing packaging linerboard to evaluate the possibility for the use of charcoal as a functional packaging material for pears. Oriental pears of the Niitaka cultivar used in this study account for about 70% of pears harvested every year, and are a very popular domestic fruit in Korea. Pears packaged in packaging materials processed with charcoal were of significantly higher quality (p<0.05) than those packaged with conventional packaging materials, suggesting that charcoal-processed packaging materials can be used as functional packaging material for extending the storability and distribution time of fruits. Charcoal-coated linerboard was shown to be the most appropriate packaging material based on its compression strength, ethylene absorption performance, and the firmness and minimal weight loss of pears.

Opuntia humifusa known as the Eastern prickly pear have been used as a treatment of burns, diarrhea, asthma, rheumatism, gonorrhea, and diabetes in alternative medicine. O. humifusa is widely cultivated in the middle and southern provinces of Korea and distributed in North America. The aim of this study is to investigate anti-diabetic effect of O. humifusa stem (OHS) water or 80% MeOH extract using 3T3-L1 adipocytes and db/db mice animal models. OHS 80% MeOH extract at a dose of $250{\mu}g/ml$ significantly increased the glucose uptake and lipid accumulation compared with the control in 3T3-L1 adipocytes. Blood glucose, plasma total cholesterol and triglyceride levels were significantly reduced by oral treatment of OHS 80% MeOH extract (200 mg/kg BW) for 6 weeks in db/db mice. Also, the oral treatment of OHS 80% MeOH extract slightly changed the plasma insulin and insulin resistance levels in db/db mice, but were no significance in comparison to control. Glucose transporter(GLUT)4 expressions of adipose tissue and muscle were significantly increased more than that in the control. Therefore, these results suggest that OHS 80% MeOH extract inhibits the blood glucose level through regulation of lipid profile, insulin resistance, and GLUT4 expression in db/db mice and its diabetic effect is effective more than water extract.
Objectives : This study first acknowledges that cough, which is a light symptom, can act as a link that leads to more serious disease. With this acknowledgement, the study ponders upon how the people of the past, before the introduction of western medicine, attempted to cure the first sign of cough and how to stop it from developing. Methods : China's Eumsunjungyo and Sikgamboncho, and Chosun's Singnyochanyo and Donguibogam are used mainly to analyze the food cure that were used in relation to sea water, and to discover what types of ingredients and preparation forms were used, how they were taken, what types of food cure there were, and how they were used. Results : There was no ingredient used commonly in all of the four literatures. Eumsunjungyo utilized ingredients related to lamb. Singnyochanyo and Donguibogam were both used in Chosun, but some similarities with the Chinese literatures were discovered in terms of food cure since they were put together with their Chinese counterparts as references. Ingredients that were used commonly in two or more of the literatures were ginger, taoren, xingren, honey, pear, liyu, and pig lung. Conclusions : Some staple folk remedies that later becamce cultural cuisines included drinking the water from boiling pear and honey and boiling and eating pears with peppers stuck in them. The eating of ginger together with korean traditional taffy have taken its own form and became saenggang jeonggwa and pyeongang. The oriental food cure method has been continuing among the folk people in the form of traditional food with the food philosophy of edible homologous as its basis.

Objectives: The purpose of this study is to categorize farm types and analyze the cultivated area and labor input time for each crop over a year in order to decide farm type conducting for the hazard exposure assessment. Methods: Crops ranked within the top 45 by cultivated area in Korea were selected and 15 target crops that exposure assessment had been conducted for through the Rural Development Administration(RDA) pilot research projects were selected. Labor input time was based on data investigated through RDA research surveillance. If there was no data, data from Statistics Korea was used. Data from Statistics Korea was used for total cultivated area. Results: Crops were divided into 5 types: open field crops(Chinese cabbage, Corn, Ginger, Potato), fruits (Mandarin, Pear), green house crops(Cucumber, Lily, Oriental melon, Pumpkin, Tomato), livestock(Poultry), specialty crops(Ginseng, Oyster mushroom, Tobacco). The cultivated area for potato was the largest, and lily was the smallest among the crops. Labor input time over a year was the highest with oyster mushroom and the lowest with pear. Total labor input time by crops was the highest with mandarin and the lowest with Chinese cabbage. Conclusions: To evaluate hazard factors of farm work, it's essential that crops and tasks be classified based on the size of farmers and working hours by farm type. Therefore, the priority of management should be determined based on the cultivated area and total labor time, but the characteristics of tasks in each crop should also be considered.
Oriental pear (Pyrus communis L. cv 'Niitaka') was stored at $0^{\circ}C$ for 5 months and major metabolites involved in blackening of the peel were analyzed by untargeted GC-MS and targeted HPLC methods. In this study, peels of sound and skin-blackened pears were analyzed and compared. Skin-blackened fruit was clearly characterized by a distinctive pattern in changes which included a decrease of malic acid, succinic acid, and ascorbic acid, while an increase of fumaric acid, threonine, and gluconic acid, which indicated both reduced metabolic activity and anti-oxidative capacity of the cells. Chlorogenic acid was a major phenolic compound and the peel of sound fruit showed high levels of free phenolic compounds compared than the peel of skin-blackened fruit which are believed to be related to oxidation of phenolics in skin-blackened tissue. The changes or profiling of major metabolites by targeted or untargeted analysis method could become a useful tool for understanding physiology, disorder mechanism, and identifying metabolic networks connecting primary and secondary metabolism in postharvest research.
This study used a food-frequency questionnaire to estimate fruit consumption by sex, age, and type of fruit to analyze the association between fruit type and metabolic factors. Using food-frequency-questionnaire data from 3,091 adults aged 19~64 years (1,184 men and 1,907 women) in the 2016 Korea National Health and Nutrition Examination Survey, this study analyzed weekly fruit consumption and the consumption frequency of strawberry, oriental melon, watermelon, peach, grape, apple, pear, persimmon/dried persimmon, tangerine, banana, orange, and kiwi by sex and age groups. Apple was the most-consumed fruit (459.45 g/wk), followed by pear (165.80 g/wk), watermelon (124.80 g/wk), and banana (115.32 g/wk). After adjustment for confounding factors, ED: Please give examples. in the women who ate more than the median consumption of apple, the prevalence of hyperglycemia was 27.4% (OR: 0.726, 95% CI: 0.539~0.979) (p=0.0362), and of high triglycerides, 25.7% (OR: 0.743, 95% CI: 0.564~0.978) (p=0.0340). These rates were lower than those of women who ate less than the median consumption of apple. The results of this study suggest that apple consumption helps improve metabolic indicators in Korean adults.

Objectives: The objectives of the present study were to establish the exposure monitoring method of chlorpyrifos and chlorothalonil application to pear and field red pepper by vehicle-mounted sprayer, hand-held sprayer and to assess the risk. Methods and Results: Chlorpyrifos met all of requirements of sampling and analysis method(U.S. EPA), but chlorothalonil met only dermal patch method. Potential dermal and inhalation exposure was evaluated in 42 farmers. Compared with the hand-held sprayer application, vehicle mounted sprayer demonstrated producing relatively lower dermal exposure levels with statistical significance. In dermal exposure during hand-held application, there is no significant difference between pear and red pepper. Conclusions: This results show that application method is the main factor of dermal exposure. There was no statistically significant difference between each group of respiratory exposure level. The margin of safety (MOS) was calculated to assess the risk of pesticide exposure. All Chlorpyrifos MOS values are lower than 0.2, which mean working conditions are unsafe. In order to protect farmers, big efforts to control exposure are needed.
