Barriers to participation in a worksite wellness program

  • The purpose of this research was to determine barriers that prevent participation in an employee wellness program, Wellness Wednesdays: "Eat & Meet" About Healthy Living, conducted at East Carolina University (ECU) in Greenville, North Carolina. All ECU ARAMARK employees (n = 481) over the age of 18 were eligible to participate in the wellness program. Weekly 30 minute classes, taught by a Registered Dietitian, on various nutrition- and health-related topics were conducted for 10-weeks. Five question knowledge quizzes were administered to participants at the end of each class to determine the comprehension of material presented. Qualitative interviews (n = 19) were conducted with employees (participants and non-participants) and the program organizer after the completion of the 10-week program to identify barriers to program participation. A total of 50 (10.4% of the total number of potential participants) ECU ARAMARK employees, managers, and leadership team directors attended Wellness Wednesdays at least once during the 10-week program. Employees, on average, scored 71-100% on the weekly knowledge quizzes administered at the end of each class. The most common barriers to participation reported included (most often to least often reported): insufficient incentives, inconvenient locations, time limitations, not interested in topics presented, undefined reasons, schedule, marketing, health beliefs, and not interested in the program. Results showed that employee wellness programs can be effective in increasing knowledge of employees on nutrition- and health-related topics. However, program planning that addresses identified barriers including insufficient incentives, inconvenient locations, and time limitations may facilitate higher participation in future worksite wellness opportunities.

지역사회 노인을 위한 식생활 개선 프로그램 개발 항목에 대한 타당성 연구 (Feasibility Study on the Dietary Improvement Program Development for Senior Citizens)

  • Objectives: The purpose of the study was to develop dietary change program items that could be used to improve dietary life of the elderly and investigate their validity. Methods: The survey was were analyzed by SPSS program (Ver. 21) and descriptive statistics was performed; a t-test, ${\chi}^2$ test, One-way ANOVA and Friedman test were used to determine the priority. Results: Programs for feeding senior citizens that need to be newly established are largely divided into two fields, namely, application of welfare facilities and application of home care, classified into large, medium and sub-classes. The large class was divided into nutrition management, sanitary control, and other health management. The medium class of nutrition management was divided into nutrition education, nutrition intervention, and menu management and supply. The sub-class was composed of division into application of welfare facilities for the elderly and application of home care for the same age group. Responses showed high rate saying that all the categorized items were necessary and valid. With respect to expectation effect on a community program for old people feeding, 'yes' was 65 people (55.6%) showing very high expectation toward the question whether a community program for old people feeding are newly set up. Conclusions: It is believed that nutrition for the aged will be improved and it will be a help not only to a small facilities without obligation of employing a dietician but also to the aged at home if a community program for old people feeding are newly established.

인터넷을 이용한 영양교육 프로그램 개발 및 평가 (Development and Evaluation of Nutrition Education Program through Internet)

  • This study was undertaken to develop and evaluate a nutrition education program with internet for students. A survey was conducted to find out needs for nutrition education program with 430 college or high school student in October, 1997. Eighty four point eight percent of female and 36.0% of male students had a plan to reduce their weight in a near future. Forty four point four percent of subjects obtained information about weight control from mass media, 28.6% of subjects obtained from their neighbor's recommendation. The information wanted to know were high-calorie foods, answered by 42.1% of females, and calorie expenditure of exercise, answered by 31.9% of males. The obese group showed higher preferrence to sweet foods, salty foods, hot foods, convenience foods, processed foods, animal foods, fried and oily foods, and eating-out than normal group(p<0.05). The obese group also showed a tendency of bad food habits, low intake of seaweeds, high intakes of animal fat, cholesterol-rich foods and salty foods. Amount of food intakes was inappropriate in obese group. An internet program for nutrition education was developed using the results of the survey and juvenile nutrition programs. The program consisted of 6 steps ; step 1 was to check one's physical status, step 2 was explanation about good food habits, step 3 was about food management, step 4 was methods of exercise for health, step 5 included how to maintain ideal weight, and step 6 was related-internet site. Pre-education test and post-education test was conducted to evaluate the nutrition education through internet. The score of nutrition knowledge increased from $74.2{\pm}7.4$ to $77.2{\pm}9.6.$ The score of food attitude did not change. The subjects wanted more information about nutrition from internet. Therefore, internet program of nutrition education with specific and interesting topics should be developed more.

대전지역 유아대상 영양플러스 사업 효과 - 유아 영양개선과 보호자 영양지식 및 태도에 미친 영향 - (The Effect of NutriPlus Program among 1-5 Year Children in Daejeon Area - The Improvement in Nutritional Status of Children and Nutrition Knowledge and Attitude of Parents -)

  • This study investigated the effect of nutritional improvement of 1-5 year children participated in NutriPlus program. The program was carried out at Public health Center, Daedeok-gu, Daejeon from March 2009 to April 2011. The subjects were selected among applicants for low-income family financing of the government and included 90 children and their parents. they were divided into 2 groups (less than 6 months and more than 6 months of participation in the study). We analyzed the effects of NutriPlus program and nutrition education in both study groups. The results of this study were summarized as follows: The number of children with less than 10th percentile in height and weight and weight for height was decreased. The anemia prevalence rate was reduced from 64.4% to 8.9%. NAR value of subjects increased for energy, protein, calcium, iron, vitamin A, riboflavin, niacin and vitamin C. The education program improved knowledge and attitude of the parents. In nutrition knowledge according to the income level, there were greater changes in the group of less than 100% compared to the subsistence. In nutrition attitude according to the education level, there were greater changes in the group of middle school graduates than in high school graduates or college graduates. There were no difference between less than 6 months group and more than 6 months group in improvement of hemoglobin level, anthropometric data and nutrients intakes. Based on these results, we conclude that providing supplementary food to children and nutrition education brought positive effects on growth of the children.

Effects of a nutrition education program on metabolic syndrome risk factors in middle-aged Korean adults: an intervention study

  • Objectives: This study was conducted to evaluate the effects of a nutrition education program on metabolic syndrome in middle-aged Korean adults. Methods: A total of 411 Korean adults 30-59 years of age were allocated randomly into three groups: the nutrition education group for promoting Han-sik consumption (HG), the nutrition education group for eating balanced diet (EG), and the control group (CG). The HG and EG received four face-to-face nutrition education sessions over 16 weeks to improve nutritional problems based on the individual's usual diet. Effectiveness of the program was evaluated with the differences of self-reported dietary behaviors, dietary intakes, anthropometric measurements and biochemical indices between the baseline and the end of the nutrition education program. The changes within groups were analyzed using paired t-test and McNemar test and effectiveness among three groups was analyzed by repeated analysis of variance. Results: After the nutrition education, the percentages of participants who achieved the recommended food group consumption in the Korean Food Guidance Systems significantly increased in HG (P = 0.022). Body weight (P = 0.007), body mass index (P = 0.002), and triglycerides (P = 0.002) significantly decreased in HG. Waist circumference and diastolic blood pressure decreased in all three groups (P < 0.05). Conclusions: This study found that tailored nutrition education program for middle aged Korean adults showed beneficial effects on improving dietary behaviors and metabolic syndrome risk factors. Further studies are needed to assess the long-term effects of the nutrition education programs on metabolic syndrome risks.

사회인지론과 건강신념모델을 적용한 저소득층 아동 대상 영양교육 프로그램 개발 (The Development of a Nutrition Education Program for Low-income Family Children by applying the Social Cognitive Theory and Health Belief Model)

  • Objectives: Based on individual and environmental characteristics of low-income children, we developed a nutrition education program for school-aged children from low-income families according to effective use in social welfare centers. Methods: We conducted in-depth group interviews to assess program needs in 28 participants, 10 low-income school-aged children and 9 of their care givers, 9 social workers and 9 care-givers. Theoretical backgrounds of our program were heath belief model and social cognitive theory considering motivation, action and environment characteristics. Results: Based on the findings of this qualitative study, we developed major program themes and contents. Five selected key themes were 'balanced diet', 'processed food', 'food hygiene and safety', 'Korean healthy traditional diet', and 'family cooking' to induce changes in dietary behaviors. Main findings of in-depth group interviews included 'child's active participation', 'simple and easy to understand messages', and 'environmental constraints' such as a lack of child care at home, limited budget of social welfare centers, and less qualified educators for nutrition and health. Each lesson was constructed as a 1-hour program particularly emphasizing activity-based programs, including cooking and teamwork exercises. Program contents in each session consisted of activities that could induce outcome and value expectations, self-efficacy, perceived benefits, and barriers and cues to actions regarding diet behavior. Conclusions: We developed a nutrition education programthat is rarely available for low-income children in Korea, considering theoretical bases. Further studies are needed to validate our program.

여고생 대상 가임여성 보건 영양교육 프로그램 평가 (Evaluation of Public Health Nutrition Education Program for High School Girls)

  • Impact and process evaluations were performed in order to verify the effectiveness of a public health nutrition program developed for child-bearing aged women in Korea. Participants included 58 high school girls who were divided into two groups. Each group received four 50 - 60 minute nutrition education lectures regarding healthy eating, osteoporosis, constipation and nutrition labeling in every two weeks. Each session took 50- 60 minutes. Regarding nutrition knowledge, there was a significant increase of degree of perception (p = 0.0004) , but no change in degree of accuracy after implementation (p = 0.9522) . Nutrition education was also effective in attitude change, showing more participants were ready to change their eating behaviors in terms of meal regularity (p = 0.0455) and less processed food intake (p =0.0143) . After implementing nutrition education, effective behavioral changes were observed in milk consumption (p =0.0037) and meal regularity (p = 0.0882) as well as daily activity such as stair use (p = 0.0701) . However, nutrition education had no effect on body mass index and perceived health status. In process evaluation conducted by a 9 item questionnaire, grand mean score was $4.17 \pm$0.72 out of 5. Proportion of items with scores higher than 4 ranged $68-91\%$. These results suggest that the nutrition education program used in this study was effective and useful. For a wider use of this program, more research was recommend for a strategy development of program diffuse. (Korean J Nutrition 38(10): 873$\sim$879,2005)

유치원 영양지원을 위한 영양교육 프로그램 개발과 효과 평가 (The Development and Effect-Evaluation of nutrition Education Program for Nutrition Support in Kindergarten)

  • This study was developed the nutrition education program for kindergarten children and was evaluated its educational effect by 'Non-equivalent control group design'. Nutrition education program was developed on the basis of the concept which consisted of nutrition, nutrients, food handling, life cycle and social$.$psychological needs. And it was developed on the basis of the theme which consisted of kind of foods, relation between food and body, importance of food, food and sanitation, food and environment, Korean traditional food and good table manners. Subjects consisted of 157 kindergarten children, with 48 in control group and 109 in treatment group. All the subjects completed a pretest and a posttest and the posttest means between control and treatment group were compared. The control group had a adjusted posttest mean score of nutrition knowledge of 50.64 and the treatment group had that of 75.19 and the difference was significant(p<0.001). The control group had a adjusted posttest mean score of food attitude of 65.49 and the treatment group had that of 85.40 and the difference was significant(p<0.001). 채소를 주제로 한 유아대상 식생활교육 프로그램 개발 및 적용 (Development and Application of Dietary Education to Improve the Vegetable Intake of Preschoolers)

  • The purpose of this study was to develop and apply the dietary education program for prescehoolers to improve their vegetable intakes. In this study, 134 mothers of preschoolers were surveyed about the problem of unbalanced food habits in children. A nutrition education program was developed based on the survey results, and then applied in the field to evaluate the effects of nutrition education. Most preschoolers (79.9%) had a relatively low intake of vegetables. The main reason for their unbalanced eating of vegetables was due to texture (34.6%) and taste (30.8%). The activity-based nutrition education program to increase vegetable intake consisted of four lessons. After the nutrition education program was administered for 43 preschoolers, their nutrition knowledge score significantly increased (P<0.001). Preschoolers found the lessons fun (90.9%) and interesting (81.4%), and said they would eat more vegetables in the future (88.4%). This study demonstrates that the unbalanced diet of preschoolers could be modified through the proper introduction of an education program.
