The Effect of Eating-Out Motives on Restaurant Attributes at Shopping Mall

  • Purpose - This study is to investigate the effects of consumption motives of restaurant customers on the perception of the importance of restaurant attributes, and to determine the influence of the consumption motives on the empirical and functional attributes between Vietnam and Korea. Research design, data, and methodology - Questionnaire items from previous studies were revised to fit the research purpose of the present study. From August 1 to August 25, 2017, questionnaires were simultaneously administered in Korea and Vietnam using both on-line and off-line survey methods (including SNS and e-mail). With 381 surveyed questionnaires in Vietnam(219) and Korea(162), this study was conducted by using SPSS 22.0 to verify the reliability and validity of the measured variables. Structural equation model (SEM) was employed as a statistical method for the hypotheses test of this study. Results - The results showed that hedonic eating-out motive has more influence on the importance of empirical attribute than that of functional attribute in restaurant. In addition, utilitarian eating-out motive has more influence on functional attributes than empirical attributes. However, these relationships showed the difference between countries in Vietnam and Korea. As for in Korea, consumers' hedonic and utilitarian motives of eating-out were more influential on experimental and functional attributes. Conclusions - This study analyzed the influence on the importance of the eating-out motives of restaurant attributes and how this differed between Vietnamese and Korean.

외식 소비동기가 레스토랑 선택속성 중요도에 미치는 영향: 패션 프리미엄 아울렛을 중심으로 (Motivations of Selecting Restaurants for Eating-out: Focus on Fashion Premium Outlets)

  • Purpose - This research examined the effect of hedonic and utilitarian eating-out motivations on the evaluation of restaurant selection attributes in a fashion premium outlet. Additionally, the influence of experimental and functional attributes on customers' preference for hedonic eating-out motives and utilitarian eating-out motives, and variation of moderating effects through the gender was examined. Research design, data, and methodology - A survey was conducted to verify the established research hypothesis. The questionnaire items for the research were modified to fit the situation of the present study. In order to elaborate the questionnaire, the literature of the previous researchers was reviewed and supplemented. The survey conducted 207 online questionnaires for consumers who have visited domestic fashion premium outlets from July 4, 2017 to July 27, 2017. A total of 207 questionnaires were collected, and a total of 206 questionnaires were used for the empirical analysis after excluding one inappropriate response. In order to verify the reliability and validity of the measured variables, exploratory factor analysis and reliability analysis were performed using SPSS 20.0. Next, the structural equation model (SEM) statistical method was used to test the hypotheses of the study. Results - Hedonic motivation had more influence on experimental attribute importance than the functional attribute importance of the restaurant. However, this result was different depending on the gender. The effects of hedonic motives on empirical attributes were more influenced by female groups, and when influencing functional attributes, male groups were more influenced. However, it was statistically significant (p <0.05) in the female group only when the hedonic eating out motives influenced empirical attributes. Conclusions - This study analyzed the effect of eating-out motivation on the restaurant preference attributes and suggested practical implications. First, customers with hedonic eating-out motivations were evaluating experiential attributes to be more important than functional attributes. Second, for customers who are motivated to use practical eating-out habits, companies should provide services that meet practical and economic needs. In particular, female customers visiting restaurants need differentiated marketing strategies that make them feel new experiences rather than practical ones. In addition, it is necessary to study more complex and integrated studies which will influence restaurant selection attributes of premium outlets customers by adding various eating out motives and selection attributes.

도시지역 직장인들의 외식행동에 관한 연구(I) - 일반적 특성과 외식행동과의 관련성 중심으로- (A Study on the Eating-out Behavior of City Workers (I) -The Relationship between General Characteristics and Eating-Out Behavior-)

  • This study was carried out to investigate the relationship between demographic characteristics and conscious behavior of 287 workers. The results of the study are as follows: The participants of the study were composed of 139 males $(48.4\%)$ and 148 females $(51.6\%)$. 75 workers are 25 years old or younger $(26.1\%)$. Regarding the frequency of eating out, 211 workers $(73.6\%)$ answered that they had eating out ever once a week. Males ate out more frequently than females (p<0.001). The motives for eating out was mostly for meals. This response was more frequent for female than male. To the contrary, more males answered that they ate out for the purpose of social intercourse. As the level of average monthly income increases, the purpose of eating out changed from the purpose of meals to the purpose of social intercourse (p<0.001). For cost of eating out, the older workers and those who had higher monthly income spent significantly more expenditure. However gender difference didn't make any significant difference in the eating out expenses per person. The average monthly eating out expenses were significantly higher for female than male, for the order workers than the younger, for the married than the single, and for those who have higher monthly income than lower. However, the expenses were not significantly different in occupation. Regarding the types of restaurants that the workers preferred for eating out, the most workers preferred Korean restaurant. The types of restaurants that workers preferred significantly related to all the demographic characteristics (p<0.01). In general, participants had eating out with their family. However, younger, single, and low income workers seemed to more eat out with their friends. The most preferred menu was pork dishes. Male rather than female, the married rather than the single, and those who have a professional occupation appeared to like it more. It is necessary to research the major customers' demographic characteristics and their preferences, and then to develop new goods which fit to the customers before entering the restaurant business. It may be concluded that it should be important to develop nutritious, safe, and delicious foods.

Factors affecting emotional eating and eating palatable food in adults

  • BACKGROUND/OBJECTIVES: The aim of this study was to determine the relationship among emotional eating behavior, tendency to eat palatable foods, and several risk factors. SUBJECTS/METHODS: This study was carried out on 2,434 persons (1,736 women and 698 men) aged between 19 and 64 years. A questionnaire form was used as a data collection tool, which consisted of items for the socio-demographic characteristics, anthropometric measurements, Emotional Appetite Questionnaire (EMAQ), and the Palatable Eating Motives Scale (PEMS). RESULTS: A positive significant correlation was observed between the BMI groups and the negative emotions, negative situations, and negative total scores of EMAQ (P < 0.01). The regression results on negative subscales showed that a one unit increase in BMI resulted in a 0.293 unit increase in negative situations scores, a 0.626 unit increase in negative emotions scores, and a 0.919 unit increase in negative total EMAQ scores. When the BMI groups and PEMS subscale scores were examined, a significant relationship was found in the social motives, rewarding, and conformity subscales (P < 0.01). A one unit increase in BMI increased the coping motives scores by 0.077 units. CONCLUSION: The emotional states have a significant effect on the eating behavior. On the other hand, an increase in eating attacks was observed, particularly in people who were under the effect of a negative emotion or situation. Nevertheless, there were some limitations of the study in terms of quantitative determination of the effects of this eating behavior depending on the BMI.

20대 미혼직장인의 패밀리레스토랑 선택속성이 소비자만족 및 재방문의도에 미치는 영향 -라이프스타일 및 이용동기를 중심으로- (Effect of the Attributes of Selection Toward Family Restaurants on the Consumer's Satisfaction and Intention of Revisiting the Restaurant Among Single Workers in Their 20's -Focusing on Lifestyle and Motives-)

  • The purpose of this study was broken down into four sections. First, this study identified both single workers' lifestyles and their motives for going to restaurants. The study classified the consumers and then confirmed the attributes of selection that the consumers considered important when eating out at family restaurants. Second, the study analyzed the consumers' lifestyles, motives for going to restaurants (user motive), and the attributes of selection for the restaurant. Third, the study analyzed how the attributes of selection toward the family restaurant affect the consumer's satisfaction and the consumer's intention of revisiting the restaurant. Fourth, the study analyzed how consumer satisfaction affects the intention to revisit the family restaurant. After the execution of the aforementioned four steps, the study was successful in meeting its purpose: to provide information to enhance the satisfaction of the consumer and to provide foundation material for consumer policy. In regards to the analytical method, this study performed a Frequency Analysis, Factor Analysis, Reliability Analysis, Cluster Analysis, ANOVA Analysis, and Multiple Regression Analysis. The analytical results from the study are as follows. Lifestyle was categorized into 4 factors and 4 clusters. User motive was grouped into 3 factors and 4 clusters. The attributes of selection for family restaurants were categorized into 4 factors. Based on the lifestyle cluster, the attributes of selection for family restaurants showed a statistically significant difference. In addition, based on the cluster of user motive, the attributes of selection for family restaurants showed a statistically significant difference. Lastly, the attributes of selection for family restaurants were found to affect both the intention of revisiting the restaurant and consumer satisfaction after the consumers used the restaurants.

Food Choice Questionnaire 방법을 적용한 식품선택 동기요인 분석 (Analysis of the Motives for Food Choice Using Food Choice Questionnaire)

  • The purpose of this study was to analyze the motives for food choice using a Food Choice Questionnaire (FCQ). A FCQ, an instrument that measures the reported importance of nine factors underlying food choice, was administered to a representative sample of 157 adult respondents from 21 to 27 October 2013. Statistical analyses such as Descriptive statistics, Factor analysis, Reliability analysis, Pearson correlation, independent samples t-test, and analysis of variance (ANOVA) were performed on the data using the SPSS PASW Statistics 18.0 for Windows. According to the results, five food choice motivation factors were discerned: health, sensory and mood, convenience, price, and familiarity. The most important factors reported were price, sensory and mood, convenience, health and familiarity. We found that food choice motivation is distinguished by age, frequency of eating out, and consumption of HMR. Females in this study gave higher importance scores to health, sensory and mood, and familiarity. There were higher correlations between 'health' and 'sensory appeal and mood'.

보건관련학과 대학생들의 인터넷을 통한 건강관련 정보활용도 (Utilization of Internet Health Information Sites by Undergraduates at Colleges Related to Public Health)

  • The purpose of this study was to examine the utilization of Internet health information sites by undergraduates at colleges related to public health. A self-administered questionnaire survey was carried out by 2,400 student from university and colleges in Taegu and Kyongsangbuk-do area from March 11, 2002 to March 31, 2002. 58.8% of the subjects responded that once connected rate of health information sites on the internet for year. In the connection rate of health information sites on the internet, the low class($\leq$300%), the middle class(40-70%), and the high class(80%$\leq$) accounted for 89.8%, 9.0%, and 1.2%, respectively. A ranking of internet health information sites, diseases are ranked frist and exercise is ranked second and obesity is ranked third. The motives Students submit reports 36.1% and obtained knowledge 22.8%. Sufficiency of health information sites on the internet, sufficient 19.6%, common 56.3%, and insufficient 24.1%, Satisfaction of health information, satisfied 18.4%, common 63.1%, and dissatisfied 18.4%. With regards to the health behavior of the subjects that contacted Internet health information sites, the nonsmoking rate was 86.2%, the nondrinking rate was 28.9%, the rate of exercise practice was 22.6%, the rate of normal sleep was 66.3%, the rate of eating breakfast was 37.1%, the rate of not eating between meals was 4.8%, and the standard BMI was 14.3%. With regards to the health behavior of the subjects that had not contacted Internet health information sites, the nonsmoking rate was 84.9%, the nondrinking rate was 26.0%, the rate of exercise practice was 18.5%, the rate of normal sleep was 72.1%, the rate of eating breakfast was 34.3%, the rate of not eating between meals was 5.0%, and the standard BMI was 17.0%. In the frequency of health behavior, the subjects with the Breslow Index of 0-3, 4-5 and 6-7 accounted for 80.9%, 18.8%, and 0.2%, respectively. The average score of health behavior was 2.80 out of 7. In conclusion, Internet health information sites are required for students to understand proper, reliable, interesting information and there is a need to develop simple criteria that the general public can understand and utilize.

직장인의 외식소비 행동에 관한 연구;주5일 근무제 및 주6일 근무제를 기준으로 (A Study in Food Service Consumption Behavior of Company Workers)

  • 본 연구는 주5일 근무제와 주6일 근무제를 분리하여 직장인을 상대로 외식 선호일에 대한 설문을 구하고 설문의 결과를 토대로 소득수준과 외식 선호일, 가족구성과 외식 선호일을 가족과의 외식과 친구들과의 오식으로 구분하여 각각의 범주들이 어떠한 방식으로 상호 분포되어 있는가를 분석하여 살펴보았다. 분석결과는 주5일 근무제 및 주6일 근무제 모두, 가족 및 친구와 외식 시 소득수준을 기준으로 내용을 살펴보면, 소득수준의 차이 불문하고 모두 주중을 선호하는 것으로 나타났다. 그러나 그 비율에서는 가족과의 외식보다 친구와의 외식에 대한 주중 선호비율이 월등히 높았다. 가족구성 형태에 따라 가족 및 친구 외식시는 독신자, 부부가족 및 기타 모두 주중을 선호하는 것으로 나타났다. 그렇지만 그 선호 비율에서는 친구와 외식 시 주중 선호 비율이 월등히 높아 직장인은 주로 가족은 주말, 친구는 주중을 주로 선호하는 것으로 나타났다. 주5일 근무자와 주6일 근로자의 외식 소비 행동은 큰 차이는 없으나 그 선호 비율은 주5일 근무자의 경우 가족과 외식시 주말, 친구와 외식시는 주중으로 선호 비율이 주6일 근로자 보다 상대적으로 높게 나타나고 있음을 알 수 있다.

프랜차이즈 레스토랑 선택속성이 방문의도에 미치는 영향에 관한 연구 - 소비자 태도를 조절변수로 - (A Study on the Effect Franchise Restaurant Selection Motives on Visiting Intention - Focusing on the Moderator Effects of Consumer Attitude -)

  • 본 연구는 프랜차이즈 레스토랑의 고객들의 선택속성이 방문의도에 어떠한 영향을 미치는지 알아보고, 또한, 소비자 태도가 어떠한 조절효과가 있는지 알아보기 위해 2016년 4월 1일부터 4월 30일에 이르는 한 달간 조사기간을 두어 실시하였고 자료 수집은 서울을 포함한 수도권의 프랜차이즈 레스토랑에서 방문하는 고객에게 자기기입식으로 응답하게 하였다. 첫째, 프랜차이즈 레스토랑 선택속성이 소비자들의 방문의도에 미치는 영향을 분석하기 위해 회귀분석을 실시한 결과, 친절성은 B=0.597(p<.001), 독특성은 B=0.210 (p<.001), 청결성은 B=0.230(p<.001)로 소비자 구매의도에 유의적인 정(+)의 영향력이 있었다. 둘째, 프랜차이즈 레스토랑 선택속성이 외식소비자의 방문의도 간에 소비자 태도의 조절효과를 검증은 분석 결과, 1단계에서는 결정계수는 0.630, F=128.612(p<0.01)로 모형은 유의적으로 나왔다. 2단계 모형에서는 소비자태도의 추가로 인한 설명력의 증가는 6.1%이고, 이에 대한 F=58.656(p<0.01)으로 소비자태도의 추가는 유의적으로 나왔다. 3단계에서는 레스토랑 선택속성*소비자 태도의 추가적인 투입으로 인한 설명력의 증가는 0.6%이고, 이에 대한 F=1.585(p<0.01)로 조절효과는 유의적으로 나왔다. 프랜차이즈 레스토랑 선택속성과 소비자태도의 개별적인 조절효과를 보면 음식맛은 정(+)의 영향력이, 독특성은 유의적인 부(-)의 영향력이 있었고, 친절성과 청결성은 아무런 조절효과가 없었다.
