디지털 사진을 이용한 점심급식의 영양소 섭취량 분석: 예비조사 (Feasibility of Using Digital Pictures to Examine Individuals Nutrient Intakes from School Lunch: A Pilot Study)

  • The purpose of this pilot study was to examine the feasibility of using digital pictures to assess individuals' nutrient intakes from school lunch. The subjects for the study were 29 male students and 40 female students from two classes in a middle school located in Daejeon Metropolitan City, Korea. The school lunch service was self-operated and the students were allowed to portion the foods by themselves. The teacher in charge of each class took digital pictures of every student's lunch plate that was tagged with an i.d. number, before and after eating for two consecutive days. The researchers estimated the amount of food, which an individual actually consumed by comparing pre- and post-pictures of their plate with reference food pictures for better visual estimation of the food amounts. Individual energy and nutrient intakes were calculated using CAN-Pro (ver 3.0) using the food intake data visually estimated from the digital pictures and school lunch recipes. The teachers in charge reported that about 10~15 additional minutes were needed to take the pictures used for the study and this additional time did not place much burden on the service process during the lunch period. The results showed that the students' actual energy and nutrient intakes from the same school lunch menus were quite varied as the serving portions were not regulated and left-overs were not prohibited. This pilot study suggests that examination of individual nutrient intake using digital picture is a feasible method in the context of school lunch service.

농촌지역(農村地域) 국민학교(國民學校) 급식아동(給食兒童)과 성장발달(成長發達)과 식생활(食生活) 습관(習慣) (Effects on School Lunch Service Programme of Elementary School in Rural Area)

  • 농촌지역 국민학교 급식아동의 성장발달과 식생활 습관을 알아보기 위하여 경상북도 농촌지역 국민학교 중 급식 학교 6학년 아동 636명(남자 312 명, 여자 324명)과, 이들 학교 인근의 비급식학교 6학년 아동 628명(남자 306명, 여자 322명)을 대상으로 학생건강기록부에 기재된 신장, 체중 측정치를 1학년에서 6학년까지 6년간의 연속적인 자료를 조사하고, 이들의 전반적인 식생활 습관을 1992년 2월 1일부터 2월 15일까지 설문지로 조사하여 분석한 결과는 다음과 같다. 남자의 신장은 6년간 급식군이 27.8cm, 비급식군 27.1cm자랐고, 여자신장은 각각 29.9cm, 28.4cm가 자라서 급식아동이 약간 더 성장하였다. 남자체중은 급식군 15.7kg, 비급식군 14.8kg이 증가한 반면, 여자는 16.9kg 및 17.2kg이 성장해 남자는 급식아동이, 여자는 비급식아동이 더 성장했다. 1학년때는 percentile별 신장 체중의 분포가 표준정규분포 곡선형태에 가까우면서 급식군과 비급식군이 서로 비슷하였으나 6학년때는 50percentile선을 중심으로 75percentile이상에 급식아동의 분포가 더 많았다. 6학년때 체력은 남자의 경우 급식아동이 멀리뛰기, 던지기, 턱걸이, 윗몸일으키기에서 비급식아동보다 우세하였으며, 여자는 멀리뛰기 한 종목에서만 유의한 차이를 보였고 (P<0.05), 체력급수에서도 우수한 특급의 분포가 급식군에서 더 많았다. 아침식사를 매일 먹는 아동이 급식군 67.6%, 비급식군 57.8%였고, 아침을 안먹는 이유로 급식군은 습관이 돼서 (50.7%), 비급식군은 밥맛이 없어서 (58.9%)라고 답하였으며, 급식아동에서 대체적으로 싱겁게 먹는 경향이 많았다. 간식빈도는 무 군 모두 70% 정도의 아동이 하루에 1회이상 간식을 하고 있었으며, 간식장소는 급식군은 집에서 (45.2%), 비급식군은 귀가 도중 가게나 길거리에 (48.4%)한다고 답하였다. 가정에서 식사할 때 음식을 골고루 먹는 아동이 급식군에서 더 많았고 식사시 조용히 자리에 앉아서 음식을 삼킨후 이야기하며 먹는 아동이 급식군에서 더 많았는 반면, T.V를 보면서 먹는 아동은 비급식군보다 적었다. 식사전에 항상 손을 씻는 아동이 급식군은 84.0%, 비급식군 63.6%로 급식군에서 유의하게 높았고, 식사후 이닦기를 항상 하는 아동은 급식군 여자에서 많아 유의한 관련성을 보였다. 영양교육 실태에 있어서도 영양교육을 '받았다'라고 답한 아동이 급식군 78.0%, 비급식군 57.5%였다. 이상의 결과로 볼때 급식아동이 비급식아동 보다 성장발육 속도가 더 빨랐고, 체력도 더 좋다고 할 수 있으며, 식습관 및 위생습관도 양호한 것으로 나타나 국민학교 특히 농촌지역부터 학교급식을 빠른 시일내에 확대 실시토록 해야 할것이며, 교육급식으로서의 역할을 다할 수 있도록 영양 및 식생활개선교육도 강화해야 할 것이다.

제주도 대학생의 외식행동에 관한 연구 (A Study on Dining-out Behaviors of College Student in Cheju Do)

  • The purpose of this study is to investigate dining out behavior of college student living in jeju. The data obtained from 533 questionnaires returned by college student. 36.9% of students indicated over-eating, 27.2% did skipping meal, 14.8% did unbalanced diet, and 11.3% did indulging in hot and spicy food as dietary problems of food habits. Many students consumed 5,000-10,000 won/one time. In the breakfast 63.6% of students did not eat out, in the lunch only 10.5%, and in the dinner only 1.7% did not. The students ate out to take a meal in the breakfast, to meet their friends in the lunch, and to meet their friends and to haute social meeting in the supper. They considered intake nutrition and time saving in the breakfast when they ate out. But in the lunch they had various purposes- intake nutrition, time saving, making with relationships, and enjoying taste of foods. In the supper two-thirds of students considered promoting friendship. The satisfaction of eating out was different significantly from types of living and length of mealtime.

인천지역 학교급식 영양사의 가공포장식품 이용 실태 (School Dietitians′ Use of Processed and Package Foods in Incheon)

  • The purpose of this study was to investigate school dietitians' use of processed and packaged foods in Incheon. This study was carried out through a questionnaire and the subjects were 203 school dietitians in Incheon. The results are summarized as follows. Dairy product was the processed and packaged food used most frequently by the subjects for school lunch. Most subjects used processed and packaged foods for school lunch once or twice per week. The first criteria for their choosing processed and packaged foods was manufacturing company. Also major reason for their using processed and packaged foods for school lunch was saving cooking time, easy purchase, hygienical packing and less garbage. The most common information source on processed and packaged foods for school lunch was promotion of food company. The subjects checked labelling of processed and packaged foods in order of open-date, manufacturer, origin of product, nutrition facts, ingredients and food additives. Some results were significantly different among the subjects by employment school, type of meal management and cost per meal. For children and adolescents' nutrition and well-being through school lunch, it is necessary to prepare a database of the processed and packaged foods and education program concerning nutrition labelling and food safety.

전북 일부지역의 여자 중.고.대학생의 식습관 변화 (The Change on Food Habits of Girls Students Living in Jeonbuk Region)

  • The purpose of this study was to investigate the change in food habits of girl students 1985 and 1998. A similar study had been conducted in 1985 and this study was carried in May, 1998 using the questionnaires. The subjects were 746 female students in middle school, high school and university students living in Jeonbuk region. The average score of food habit was $4.11{\pm}1.63$ out of a possible 10. This averge is lower than the 4.91 score in 1985, especially the score of university students lowered from 4.80 points to $3.52{\pm}1.58$ points. The correlation coefficient between the score of food habit and standard of living, utilizing increase as compared with the 54.9% in 1985. The most preferred side-dish changed from fried food to Kimchi. The preference of snacks was not changed. Eating bread increased at breakfast but eating noodles increased at lunch. University students' lunch basket preparation ratio decreased from 32.6% to 3.3%, so they had more noodles at refectory than lunch basket. The reason for skipping breakfast did not changes, but skipping lunch changed from annoyance due to lunch basket preparation to lack of time and no appetite. Skipping supper was changed from missing time to weight control. Having supper at home decreased from 96.6% to 75.9%. Substitution food on no preparation of lunch basket was changed from bread to noodles. The preference for biscuits and snack did not changes but fewer students preftered bread and fried food. In order to improve the nutritional status of the girl students, they must establish good food habits, especially by eating 3 regular meals per day and balancing their diet they should also be notified that severe weight control is very harmful for health.

과실류 소비촉진을 위한 초등학교 급식에서의 과실류 선호도 조사 - 사과와 배를 중심으로 - (Fruits Preference of Elementary Children for Fruits Consumption Promotion in School Lunch Program - Focus on Apples and Pears -)

  • This study was performed to investigate the preference and perception on fruits especially, focusing on apples and pears served in elementary school lunch programs. The subjects of this study were 1,106 students (504 female and 595 male students)from seven elementary schools in Seoul. The survey was conducted by using self-administered questionnaire from July 10 to July 20, 2006. Based on the frequency analysis results, 45% of respondents ate fruits every day and 42% had fruits 2-3 times per week. Approximately, 53% of respondents indicated their usual time to eat fruits was after dinner and secondly 27% had fruits between lunch and dinner. Majority of respondents chose a watermelon as the most preferred fruits and the first chosen among nine fruits (apple, pear, madarin, strawberry, cherry tomato, watermelon, grape, melon, and peach). Cherry tomato was found as the least preferred fruits by 30% of students, however cherry tomato was most frequently offered fruits in elementary school lunch menu. About 50% students were satisfied with the served fruits in their school lunch program. In addition, most students said that they would have fruits more frequently in their lunch menu. However, one fifth of students addressed that they were not satisfied with the fruits in school lunch program because of kinds of fruits, freshness of fruits, taste of fruits, and quantity of fruits. Almost 71% of students preferred apples. Seventy three percents of students preferred eating apples without peel and 78% of students ate apples as slices of apples. In addition, 61% of students indicated their preference of apple salads. Many students responded they did not eat apples and pears frequently since they do not have a chance to eat them. The implications to increase the chance to eat fruits and promote elementary children's fruits consumption were discussed.

음식섭취와 관련된 제 요인들이 대학생들의 영양 및 식품섭취에 미치는 영향 (Effect of Food Behaviors on Nutrients and Food Intake in College Students)

  • This study was performed to investigate the food behaviors of college students through a food record method. In this study, one hundred and sixty seven students of Dankook university were chosen(male:77, female:90). We collected data about nutrients intake and food behaviors. Food behaviors included a frequency of both meal and snack, meal time, eating place, person with whom they ate, reason for eating, feeling after eating, and activities during mealtime. The results of the study were summarized as follows. Energy intake per day of male and female were 2201kcal and 1781kcal, respectively. Expect for the protein, vitamin C and phosphate, nutrients were not satisfied with the RDA, especially the intake of vitamin A, Vitamin B2, and calcium was very low. Average eating frequency per day was 5.1 and meal eating frequency per day was 2.6. In addition, male ate more frequently than female did. The interval between breakfast and lunch was 295 minutes, and between lunch and dinner was 373 minutes. The places where they ate the meal and snack were mostly school and restaurant at lunch and dinner, and there was not a significant different between weekday and weekend. On weekdays, the 40~50% of subjects had a breakfast with family, and most students had a lunch or dinner with friends. During weekend, although the percentage of students who had a lunch and dinner with family were increased, a lot of students had a lunch and dinner with friends or alone. In case of reason for meal and snack, the 60~70% of subjects answered that they ate the meal for hunger, and there was not different between weekday and weekend. 60~70% of subjects felt that they eat proper, but the percentage of overeat was increased for dinner. Most students were talking with others while they had a lunch. About 20% of subjects ate only food at both breakfast and dinner and 30% of subjects were watching TV. In correlation between nutrients intake and food behaviors, the higher frequency of eating, the higher carbohydrate intake in male. In case of female, protein intake and dinner time showed the negative correlation, and protein intake and mean intervals of eating had a positive correlation. In case of male, reason for eating affected the nutrient intake, but eating place, after feeling and activity for eating had no relation with nutrients intake. But in case of female, these factors affected nutrient intake. Therefore, food behaviors had an effect on nutrients intake, and the type of effect was different between male and female.

서울시내 주부들의 도시락 준비실태 및 학교급식 실시에 관한 의견 조사연구 (A study on the state of lunchbox preperation and the opinion of school lunch program of mothers with elementary school children in Seoul)

  • This research was undertaken to investigate the state of lunchbox preperation and the opinion of operating school lunch program. The subjects were 180 mothers and their children in the 6th grade of elementary school in Seoul, where a school lunch program were not operated. The results were summarized as follows ; The age of mothers were from 30's to 40's and among them over 80% graduated from a high school and 26.1% had a job. 88.9% of mothers prepared lunchbox everytime and main dish was mostly bab. The average time spent in preparing meal for one day and lunchbox were 1 hour and 58 minutes, and 28.6 minutes respectively. The number of side dishes cooked per day and for lunchbox were 9 and 3, respectively. The side dishes for lunchbox were kimchi, dried layer, ham, dried squid, egg in decreased order, which were similar to preference of children. Animal protein foods were mainly used in lunchbox than vegetables. On preparing lunchbox, mothers considered preferance, nutrition, convenience of cook, economic, appearance of food in decreased order. 92% of mothers and 75% of their children approved of operating school lunch program, and the reason, answered by their mothers, was nutritional balance of their children. In conclusion, it's needed to operate of school lunch program for optimal nutritional intake and growth of children.

식후저혈압 위험 노인의 식전 물 섭취가 식후 혈압변화에 미치는 효과 (Effect of Water Drinking on the Postprandial Fall of Blood Pressure in the Elderly)

  • Purpose: The purpose of this study was to examine preventive effects of water drinking on postprandial fall of blood pressure in the elderly. Method: Participants were 25 elders who had experienced postprandial fall of systolic blood pressure of more than 15mmHg in a previous study. Within subject repeated measures design using random order allocation was used to control extraneous variables among participants. During the experiment, each participant had to drink 400mL water before lunch, whereas when in the control, they only had their lunch. Blood pressure and heart rate were measured for both times before lunch and at 15 minutes intervals up to 90 minutes after lunch. Data were analyzed using descriptive statistics, repeated measures of ANOVA, paired t-test and Bonferroni adjustment as Post-hoc analysis. Results: Water drinking before lunch elicited significant pressor effects by increasing systolic and diastolic pressure $13.9{\pm}4.7/5.2{\pm}2.2mmHg$ compared blood pressure during the control p<.005, p<.022. Heart rate, however, did not change significantly at either time. Conclusion: Drinking water before meal is recommended for elders who experience postprandial hypotension. However, the appropriate volume of water to prevent postprandial fall in blood pressure should be further studied.

초등학생 및 그 학부모의 학교급식에 대한 만족도 -서울 지역 일부 공동조리 및 위탁경영 급식학교의 비교- (Comparisons of Children' and Their Parents' Satisfaction of School Lunch Program in Elementary School by Foodservice System)

  • The satisfaction of elementary school children and their parents with the school lunch program by foodservice system was assessed by questionnaire. 787 (347 male, 417 female) 5th grade elementary school children and 761 parents participated. Foodservice systems of the schools were of 4 types : central/commissary ; satellite /commissary ; conventional/contracted ; and delivery/contracted. The most joyful mealtime for children was identified as lunch because of eating with friends. Satiety and leftovers after lunch varied according to the foodservice system. For example , there was less satiety in the contracted system and more leftovers in the delivery system than in the others, Foods tasted better in the commissary system than in the contracted one. The contacted system , especially the delivery/contracted system, was poor for keeping rice and soup hot. The children's food habits such as eating a greater variety of foods and good table manner were improved through the school munch program. Most parents well understood the main purpose of the school lunch program to be a source of education on nutrition and table manner, as well as a way in which to provide the same meals to all students and save the time & work needed to prepare home lunches. Parents claimed that hygiene, taste, good nutrition and food amount should be improved. This was especially true for hygiene in the commissary system and taste in the contracted system. Furthermore, they stressed that better taste and hygiene are the most important criteria for good school foodservice systems. In conclusion, parents wanted the school lunch program should be selected with consideration of children's preference such as by periodical food preference tests. A nutrition education program should also be provided to correct bad food habits of childrens.
