Effect of Dietary Fat on Metabolism of Albino rats (식이내 지방이 흰쥐의 체내대사에 미치는 영향)

  • The present study was undertaken to determine the metabolic effect of various levels and kinds of fat in the diet. Body lipid metabolism at different period of rat's life was also studied by sacrificing rats and collecting samples initially, at second and fourth week of experimental period. Body weight, FER, PER were low in the group fed 30% fat diet. The weight of internal organ and epididymal fat pad was low in high fat diet group. The level of total serum cholesterol of rats in butter group showed higher than that of soybean oil group when the level of dietary fat content was same. The ratio of total cholesterol and total lipid in serum of rats in butter group appear to be higher than that of soybean oil group.

  • This study was conducted to investigate the effects of chitosan, chitosan oligomer and beef tallow of different levels on lipid metabolism in rats, Seventy male rats of the Sprague-Dawley strain were blocked into 10 groups according to body weight , and were raised for 4 weeks. Dietary fat levels were 20% en and 40% en, and chitosan and chitosan oligomer were given at levels of 05, 3%, and 5%(wt/wt) of diet. The results are summarized as follows, chitosan oligomer supplement decreased serum total lipid, as chitosan 양, and exhibited a tendency to decrease serum total cholesterol. Chitosan oligomer supplement tended to increase the HDL cholesterol ; total cholesterol ration as chitosan did. Liver total lipid and triglyceride concentration were lower in high fat groups than in low fat groups. Liver total lipid concentrations was decreased slightly by chitosan and sigfnificantly by chitosna ligomer. Epididymal fat pad total lipid. total cholesterol and triglyceride concentration were slightly decreased by chitosan and chitosan oligomer supplement, especially in high fat groups. fat absorptivity was decreased by low fat level, chitisan and chitosan oligamer supplement. Fecal excretion of total lipid and triglyceride were increased by high fat level, chitosan and chi샌무 oligomer supplement. However, fecal excretion of total cholesterol was increased by high fat level and chitosan supplement. This indicated that chitosan and chitosan oligomer were effective in interfering with lipid and triglyceride absorption, In conclusion, chitosan oligomer at levels of 3% and 5% has more effective lipid, cholesterol and triglyceride lowering activity than chitosan.

  • Since it has generally been considered that high-hat diets promote carcinogenesis, fat intake of less than 30% of total calories has been recommended to reduce the risk of cancer. Specific dietary guidelines for fat intake to reduce the risk of colon cancer have not yet been established. In order to determine the level of dietary fat needed the risk of colon cancer, rats were fed one of four experimental fat diets, very low(7% of total calories from corn oil, VLC), low(15% LC), medium (30%, MC), and high fat(45%, HC).   • This study was carried out to evaluate the effect of Ganoderma lueuidum (GL) water extract on fat accumulation in the fatted rats Induced by the oral high fat administration for six weeks. Total cholesterol, neutral fat and epididymal fat pad of GL groups were lower than the control group. On the other hand, high density lipoprotein(HDL) -cholesterol was somewhat higher in GL than In the control group. In addition, the same result as the above case was obtained when examining adipose for liver and epididymal fat components. During the feeding experiment, level of low density lipoprotein(LDL) and very low density lipoprotein (VLDL) increased while HDL was decreased in the control group as compared with normal group. The decree of LDL and VLDL was decreased, but HDL was increased in GL group as compared with the control group. Experiment group showed the Increased excretion as compared with the control group, in the excretion. Based on the above results, It was shown that it is possible to improve fat accumulation induced by high fat dietary through using the oral administration of Ganoderma lueidum boiling extract solutions.

  • This study was carried out to investigate the effect of dietray carbohydrate level on the lipid and Ca metabolism, and on immune response in the process of aging. Sprag\ulcornerue - Dawley male rats of 12 months of age were fed either high carbohydrate or low carbohydrate diet for 9 months. With increasing age from 12 months to 21 months, there was no significant increase in body weight, however, the epididymal fat pat weight and total serum lipid tend to become higher, and the inorganic/organic matterratio in bone tends to become lower. This suggests that body fat accumulation increase and bone mass decrease with age. Rats fed low carbohydrate diet showed the higher epididymal fat pat weight, and the lower Ca content in femur and scapular compared to high carbohydrate diet fed rats. The immune response was also lower in low carbohydrate diet group judged by the lower thymus and spleen index and by the lower response to PHA and ConA stimulation. The results of this study suggests that the dietary level of carbohydrate and fat may play an important role in the process of aging. It could be recommended to practice high carbohydrate -low fat diet for the elderly to reduce the risk of degenerative diseases.

Effects of the Addition of Cauliflower Powder on Low-Fat Chicken Breast Sausage Quality (콜리플라워 분말의 첨가가 저지방 닭가슴살 소시지 품질에 미치는 영향)

  • This study investigated the quality characteristics of low-fat chicken breast sausage with cauliflower powder to replace the fat. Cauliflower was freeze-dried and then ground into powder form. Sausagebatter was prepared separately according to the amount of fat and cauliflower powder added. 1) Control, sausage with 20% of pork fat, 2) LF, sausage with 3% of pork fat, 3) C0.5, sausage with 3% of pork fat and 0.5% of cauliflower powder, 4) C1.0, sausage with 3% of pork fat and 1.0% cauliflower powder. The prepared sausage batter was heated to a final internal temperature of 75℃. The pH of sausage batter increased with the addition of cauliflower powder (P<0.05). Storage loss and cooking loss increased in low-fat samples but decreased as the amount of cauliflower powder added increased (P<0.05). The hardness measured on the 30th day of storage decreased in LF but increased with the content of cauliflower powder (P<0.05). The redness and yellowness of the sausage increased with the addition of cauliflower powder. The malondialdehyde content of chicken breast sausages decreased at C0.5 and C1.0 on the 30th day of storage. The sausages with cauliflower powder received lower scores in sensory evaluation (P<0.05). Therefore, the addition of cauliflower powder to low-fat chicken breast sausage reduced overall sensory acceptability but improved water-holding capacity and oxidative stability.

A Comparison of the Methodologies in Food Consumption Surveys and Daily Dietary Fat Intake between America and Korea (한국과 미국의 식품 섭취 조사 방법 및 지방섭취량의 비교)

  • The nutritional status is America has been monitored by National Monitoring System since 1960's, mainly conducted by United States Department of Agriculture. The data from these programs were computerized and distributed to researchers. Researchers have manipulated and recalculated the data to produce meaningful results. Korean nutritional status has been investigated by National Nutrition Survey ever year, including food consumption, biochemical measurements and demographic variables. The Korean Nutritional Survey has not been organized and integrated as much as the nutritional survey in the United States and its results have been presented no more than as a report. Its raw data should be distributed to researchers and researchers could use the data to get more information. The purpose of this study is to compare the measurement of food consumption in Korean and America using Korean Nutrition Survey and Continuing Survey of Food Intake by Individuals(CSFII), respectively, and to compare the consumption of fat and foods with a high fat content. The fat consumption in the Unite States has been decreased from more than 40% of total energy intake to 35%, while Koreas have consumed more fat according to the economic growth. However, the fat consumption in Korea was still much lower than that in the United States. Korean should pay attention to saturated fat consumption(animal fat), especially rich middle aged men, since they ate meat as much as much as men in the United States according to a recent study. In America availability of food with a low fat content(e.g. low-fat milk) and new recipes along with nutritional education has decreased fat consumption, especially animal fat, any more. Also, each consumption of polyunsaturated fat and saturated fat should be measured since the ratio of them are more important for preventing heart disease and some cancers.

Cholesterol Content , Calories and Production Costs of Low Fat Ground Beef Manufactured with the Addition of Cooked Old Rice (취반 재고미를 첨가하여 제조한 저지방 분쇄우육의 Cholesterol 함량 및 열량과 생산원가)

  • Four low fat ground beef groups containing 10% fat plus 0, 5, 10 and 20% additional cooked old rice and a control ground beef containing 30% fat were prepared and their cholesterol contents, calories and production costs were investigated to find out the appropriateness of addition of cooked old rice. There were no differences in pHs with the variations in fat content and the content of cooked old rice. As the amount of added cooked old rice increased from 5 to 20%, cook yield of ground beef also increased. When the fat content of beef was reduced from 30 to 10%, the cholesterol content of beef was not reduced but with the fat content fixed to 10% and the content of added cooked old rice increased from 5 to 20%, the cholesterol content of ground beef decreased. Calories of ground beef were reduced by approximately 50% with the reduction of fat content from 30 to 10% and production costs decreased with the increase in the content of added cooked old rice.

  • Background: A reasonable weight reduction is to reduce fat-body mass while preserving free-fat mass. Recently, many people in Korea have been trying reckless diet therapy for weight reduction by low calory and protein diets, which gave rise to many side effects consequently. For reasonable weight reduction, this study was undertaken to investigate the influential diet factors that change body composition during short-term low calory diet. Methods: 26 healthy obese women aged 23-27 years whose BMI was greater than 24volunteered for the 6 week diet therapy from January to April in 2003. All subjects were instructed to eat approximately 1200kca1/day and write dietary diary. In the beginning of the study, the 3rd week and the 6th week, subjects' body weight and fat body weight were measured by BlA. In the 6th week, the analysis of dietary diary was conducted. Results : There was significant positive correlation between protein intake per ideal bodyweight in the first 3 weeks and free fat mass increase in the later 3 weeks (P<0.05). At the same time, fat intake in the first 3 weeks had positive correlation with free fat mass in the second 3 weeks, too(P<0.05). But, we could not find any significant values that had effect on free fat mass increase in multiple regression analysis. Conclusion: The protein intake in the first 3 weeks helps preserve fat free mass in the later 3 weeks, and has positive effects.

Rheological, Physical and Sensory Evaluation of Low-Fat Cupuassu Goat Milk Yogurts Supplemented with Fat Replacer

  • The use of skim milk is a strategy to increase goat milk yogurt acceptability. However, it can negatively affect yogurt rheology because fat plays a vital role in dairy structural integrity. Thus, this study aimed to investigate the effects of fat replacers on the rheological, physical, and sensory parameters of low-fat cupuassu goat milk yogurts during refrigerated storage (28 days). Five goat milk yogurts formulations were carried out: whole yogurt (WY), skim yogurt (SY), skim yogurt with inulin (SIY), skim yogurt with maltodextrin (SMY), and skim yogurt with whey protein (SWY). Treatments were subjected to bacterial counts, chemical composition, pH, water holding capacity, instrumental color and texture, rheological and sensory analyses. All samples showed reducing pH values, water holding capacity, and L* and b* value during storage. Regarding texture, the firmness and consistency decreased during storage. On the other hand, the viscosity index significantly increased during refrigerated storage time. Moreover, all treatments exhibited viscoelastic behaviour. In addition, SIY and SMY showed the highest apparent viscosity. Furthermore, SIY, SMY, and SWY formulations exhibited positive sensory scores for appearance, color, aroma, texture, and viscosity. However, the overall acceptability and purchase intention did not differ statistically between WY and the fat-replacement treatments (SIY, SMY, and SWY). These results indicate that fat substitutes improved the quality of skimmed formulations. Thus, inulin and maltodextrin have the potential as functional fat replaces to produce low-fat goat milk yogurts.
