BACKGROUND: Acrylamide (CAS No. 79-06-1) is known to be a carcinogenic compound, and is classified as a Group 2A compound by the International Agency for Research on Cancer (IARC, 1994). Acrylamide can be generated during the browning process via the non-enzymatic Maillard reaction of carbohydrates such as reducing sugars and of amino acids such as asparagine, both of which occur at a temperature above $120^{\circ}C$. Potato tubers contain reducing sugars, and thus, this will affect the safety of processed potato products such as potato chips and French fries. In order to reduce the level of acrylamide in potato processed products, it is therefore necessary to understand factors that affect the reducing sugar content of potatoes, such as environmental factors and potato storage conditions, as well as understanding factors affecting acrylamide formation during potato processing itself. METHODS AND RESULTS: Potatoes were cultivated in eight regions of Korea; For each of these different environments, soil physico-chemical characteristics such as pH, electrical conductivity, total nitrogen, available phosphate, and exchangeable cation content were measured and correlations with potato reducing sugar content and potato chip acrylamide levels were examined. The reducing sugar content in potato during storage for three months was determined and acrylamide level in potato chip was analyzed after processing. The storage temperature levels were $4^{\circ}C$, $8^{\circ}C$, or $10^{\circ}C$, respectively. The acrylamide content of chips prepared from potatoes stored at $10^{\circ}C$ or $20^{\circ}C$ for one month was analyzed and the different frying times were 2, 3, 5, and 7 min. CONCLUSION: This study showed that monitoring and controlling the phosphate content within a potato field should be sufficient to avoid producing brown or black potato chips. For potatoes stored at low temperatures, a reconditioning period ($20^{\circ}C$ for 20 days) is required in order to reduce the levels of reducing sugars in the potato and subsequently reduce the acrylamide and improve chip coloration and appearance.
This study was done to examine immunomodulative effects of aged doraji (AD) in the immune-suppressed mice induced by cyclophosphamide. The immune-stimulating effects of ethanol AD extract in in vivo at 75 and 150 mg/kg body weight (BW) for AD and 2AD groups were evaluated and compared to the normal doraji group (2ND, 150 mg/kg BW) treated with a doraji without aging process. After the 10 days of oral supplement, body and immune related organ weights, serum immunoglobulin G (IgG) and cytokines levels, splenocytes proliferation rate, and splenic NK cell activity were measured as immune-related biomarkers. Body weight and serum IgG level increased in the 2AD group. But, the serum Th2 cytokine (IL-6, $TNF-{\alpha}$) levels were lower in the AD and 2AD groups, respectively. Splenic T cell and B cell proliferation and NK cell activity increased in the doraji groups and the significant increases were found only in the 2AD group. Thus, the aged doraji extract may affect body weight, serum IgG level, splenocytes proliferation, and splenic NK cell activity, and normalize the Th2 cytokine levels in the immune-suppressed mice. The results suggest that the aged doraji improves effectively immune system rather than the normal one.
피부를 탄력있고 부드럽게 하는 역할은 각질층에 존재하는 수분량에 의해 좌우된다. 피부 수분량은 냉온풍, 건조환경 등 다양한 환경 변화에 의해 영향을 받음이 알려져 있으나, 개인 피부 차이에 따른 피부 수분량 변화와 회복 정도에 대해서는 많은 연구가 이루어 지지 않은 실정이다. 본 연구에서는 온풍 조건하에서 피시험자들의 피부 수분 탈락 및 회복 정도를 비교 평가하여 새로운 피부 타입을 제시하고, 온풍 조건에서 저하되는 피부 수분량을 개선 시켜주는 효능 물질을 개발하고자 하였다. 온풍 환경 조성을 위해, 건강한 피험자(남: 10 명, 여: 39 명, 25 세 - 63 세)의 전완부에 온풍(30 cm, 40 ℃, 6 m/s)을 30 min 간 피부에 노출시켜, 피부 수분량의 변화를 평가하였다. 26명(남: 4 명, 여: 22 명, 평균 연령: 42.7 ± 9.4)이 온풍 노출 전에 비하여 온풍 노출 후 수분량이 유의하게 감소하며, 노출 후 30 min이 지나도 회복이 되지 않았다. 온풍 노출 후 수분량이 떨어지는 피험자(여: 10 명)를 대상으로 보수력이 높은 크림을 3 주간 전완부에 적용한 이후 동일 온풍 조건하에서 피부 수분량을 측정한 결과, 노출 30 min 후 피부 수분량이 온풍 노출 전 수준으로 회복됨을 확인하였다. 본 연구를 통하여 피부는 건조 조건에서 쉽게 수분을 잃어버리는 피부(탈수형 피부)가 존재하는 것을 확인하였다. 이는 앞으로 화장품 개발을 보습 기능뿐만 아니라, 이러한 환경변화에 따른 피부 수분이 쉽게 빠져나가는 피부(탈수형 피부)의 특성에 맞는 제품의 효능 개발이 필요함을 보여준다.
Purpose: The purpose of this study was to identify predictors of quality of life in burn patients. The predictors of quality of life were the subject's characteristics(marriage, income, burn size, burn site, pain and functional limitation) and personal resources(self esteem and social support). Method: 96 burn subjects who were hospitalized participated in the study. The data analysed was with descriptive analysis, ANOVA, Pearson correlation coefficient and multiple regression. Result: Burn patients who had a spouse and had higher levels of income, with smaller size of burn, no arm burn, with lower levels of pain and functional limitation, plus higher levels of self esteem and social support reported higher levels of quality of life(R2=0.5229). Conclusion: Based on the finding of this study, development of nursing intervention programs including reduction of pain and functional limitation, enhancing self esteem and social support can be suggested.
As a long-term goal for the development of new prescriptions for hyperlipidemia, OBL was examined in the present study using a rat model in which the hyperlipidemia was induced. The major parameters related to lipid metabolism were investigated and the key findings are summarized below. 1. The body weight of hyperlipidemia-induced rats was increased by 50.6% compared to control group whereas the body weight of hyperlipidemia-induced rats with OBL injection showed 33.3% increases above the control group. 2. OBL-treated animals showed significant decreases in cholesterol levels compared to control group at the time point of 4 months after OBL injection. 3. OBL-treated animals showed significant decreases in T. cholesterol levels in comparison with the control group. 4. OBL-treated animals showed significant decreases in glucose levels compared to control group. 5. OBL-treated animal group showed decreases in SGOT and SGPT levels compared to control group, but its effects were not statistically significant. 6. Levels of HDL cholesterol were increased in OBL-treated animal group compared to the control, but the difference was statistically insignificant. 7. Levels of LDL cholesterol were decreased in OBL-treated animal group compared to the control group, but the difference was statistically insignificant.
Although dietary intake of pregnant is supposed to have beneficial effects on development of infants, it may be harmful for fetal growth and development since specific food is a common source of toxicants including heavy metal. The purpose of this study was to investigate the association of maternal food intake and mid-pregnancy and their newborns blood lead levels. Pregnant women of 18-20 weeks of gestation were recruited from prenatal clinic in Seoul, Cheonan and Ulsan. In 422 pregnant women, dietary intake during pregnancy was assessed by a 24-hour recall method. Blood sample from pregnant (18-20 wks) and their cord blood at delivery were collected. Blood leas levels were analyzed by atomic-absorption spectrometry methods. Pregnant blood lead levels whose meat and meat products intake were in the highest quartile was significantly higher compared to the lowest quartile. Maternal meat and meat products intake was positively correlated maternal blood lead level (r=0.120, P=0.014). After adjusting for age, maternal blood lead level was positively correlated with their newborn blood lead level (r=0.303, P=0.030). As maternal food intake effects on blood lead levels of pregnant, careful regulation of food intake during pregnancy is perceives to be important in order to bring about desirable pregnancy outcomes.
Numerous studies have indicated that low levels of serum adiponectin are linked with the development of various chronic diseases. While some recent research has suggested that soy has a positive impact on serum adiponectin levels, the results are inconsistent. Therefore, we aim to conduct a thorough systematic review and meta-analysis of randomized controlled trials (RCTs) that investigate the effects of soy on serum adiponectin levels in adults. The search was conducted until March 2024 on PubMed, Scopus, Web of Science, and Cochrane Library databases to identify RCTs that studied the effects of soy supplementation on serum adiponectin levels. A random-effects model was used to pool the weighted mean differences (WMDs). Ten and nine RCTs were selected for the systematic review and meta-analysis, respectively. After analyzing data from 9 eligible RCTs, it was found that soy supplementation did not significantly impact the concentrations of adiponectin (WMD = -0.24㎍/mL; 95% confidence interval, -1.56 to 1.09; p = 0.72). However, there was significant heterogeneity between the studies (I2 = 89.8%, p < 0.001). Sensitivity analysis showed that overall estimates were not affected by the elimination of any study. We did not observe any evidence regarding publication bias. In conclusion, soy supplementation did not have a significant effect on adiponectin levels in adults. However, further RCTs are needed with longer intervention duration, higher doses, and studies conducted in different countries.
Rats were given nicotine (25 ppm) in their drinking water at the start of their mating period in order to study the expressions of glutamate transporter subtypes in cerebellar astrocytes following the chronic exposure of nicotine after mating. After the offspring were delivered, each group was divided into two subgroups. One group, the control group, was given distilled water only and the other group, the experimental group, was given distilled water containing nicotine. The cerebellar astrocytes were prepared from 7 day-old pups at each group. Ten days after the cells were cultured, the expression of the glutamate transporter subtypes (GLAST and GLT-1) was determined using immunochemistry and immunoblotting. During the continuous treatments, the developmental expression patterns of the GLAST and GLT-1 in the cerebellum were also determined from 2, 4 and 8 week-old rats. The expression levels of GLAST in cultured astrocytes of both the pre- or post-natally exposed groups were higher than those of the control group. However, these expression levels of the continuously exposed group were lower than those of the control group. Compared to those of the control group, the GLT-1 expression levels of all the nicotine-treated groups were higher, particularly in the continuously treated group.. According to the results from the immochemistry procedure, the cerebellar GLAST and GLT-1 expression levels of all nicotine-treated groups were lower than those of the control group at each age. However, the immunoblotting procedure showed that the cerebellar GLT-1 expression levels of all the nicotine-treated groups were higher than those of the control group, except for the rats that were continuously exposed for 8 weeks using immunoblotting. These results suggest that the expression of the glial GLAST and GLT-1 are altered differently depending on the initial exposure time and the partcicular period of nicotine exposure. In addition, nicotine exposure during gestation has persistent effects on glial cells.
Objective : To investigate the hepatoprotective effects of Gami-oryungsan on the liver damage induced by bromobenzene. Method : The development of fibrosis and acute liver injury was examined by the chemical analysis of AST, AL T, ${\gamma}$-GTP . and epoxide hydrolase glutathione S-transferase glutathione peroxidase enzyme activity, lipidoperoxide levels, glutathione levels were measured and oberved. Results : The increasing levels of lipidoperoxide was decreased proportionally according to dose of extract GO. Epoxide hydrolase glutathioneS-transferase glutathione peroxidase enzyme activity highly increased in GO pre-acupunctured group compared with the group treated with only bromobenzene. The increase of serum AST, AL T, ${\gamma}$-GTP enzyme activity of mice by bromobenzene was inhibited by the administration of GO. Lipidoperoxide levels in rat's liver decreased compared to the case of bromobenzene-treated group. The levels of Glutathione decreased by bromo benzene were increased highly in GO pre-acupunctured group. Conclusion : These results suggest that GO extract recovers the damage of liver due to bromobenzene intoxication by decreasing the lipid peroxidation AST AL T ${\gamma}$-GTP enzyme activity and increasing epoxide hydrolase glutathioneS-transferase glutathione peroxidase enzyme activity, glutathione levels.
Purpose: The purpose of this study was to compare the levels of stress, social support, and marital satisfaction between married immigrant women living in urban areas and women living in rural areas to identify ways to improve their mental health. Methods: Two hundred married immigrant women were recruited from multicultural familysupport centers located in Daejeon City and Chungcheong Province. From July, 2009 to January, 2010, data were collected using self- administered questionnaire. Study instruments were scales for acculturative stress, housewives life stress, support from spouse, and marital satisfaction. Results: Urban married immigrant women had lower levels of acculturative stress and higher levels of support from spouse and more positive marital satisfaction compared to rural women. Both groups reported similar levels of stress in life as a housewife. Factors influencing marital satisfaction in both group were lower levels of acculturative and housewives life stress, higher levels of support from spouse, and living with parents-in-law. Conclusion: Rural married immigrant women may have more problems in adjusting to Korean culture and marriage compared to urban women. Therefore, to improve the physical and psychological wellbeing and marital adjustment of married immigrant women, development of nursing strategies according to area of residence is needed.
