학교급식에서 사용되는 식재료에 대한 학부모의 인식조사 (Parents' Perception on Using Agricultural Products in School Food Service Operations)

  • Purpose : This study was to performed to investigate on the knowledge, atitues of Parents toward the use of food materials at school fod service and to provide schol mea l management with basic data to improvement of food purchasing guideline Methods rents who have children atending in elementary school or midle, high schol. The questionnaires we re administered from July to September, 2003. For the statistical analysis, SPS(12.0) was used to conduct th e descriptive analysis.Results : The results were as folows: seventy percent of the parents important. 'nutrition' and 'education' was next. Most parents wanted using food products produced in Korea for the safe and students' health. But 60% said it could not purcha se because of expensive price. About consuming regional agricultural products for school food service, 90% of parent welcomed.Conclusion quality and purchasing criteria ned to be developed for helping parent to do fod inspection. the parent should improve their knowledges on the food quality stadards. This result sugests that efective fod supply system in school food service of central goverment and autonomy also should be prepared.

남녀 중학생의 식사 행동과 패스트푸드에 대한 인식 및 이용실태 (Dietary Behavior and Fast-Foods Use of Middle School Students in Seoul)

  • This study was to investigate the dietary behavior and fast foods use among Korean youth in order to obtain basic information of nutrition education for them. Survey was carried out through questionnaire and the subjects were 236 boys and 388 girls of 4 middle schools in Seoul. The questionnaire included use frequency of Korean and Foreign fast-foods, preference, concepts regarding prices, fullness, choice factors, dietary habits and nutritional knowledges. The results are summarized as follow:1. Overweight students(52.8%) were more than normal(43.1%) and low body weight students (4.2%), classified by Roher index. 2. Most students (78.9%) had very good or good food habit, 52.6% of boys and 44.0% of girls were having breakfast regulary. 46.1% of subjects had fast-foods once or twice in a week and girl subjects used more than boys. 3. Nutritional knowledge of the subjects was satisfiable and normal and overweight groups were better than underweight group. 4. Fast-foods most students like were duckbocki(81.1%) fried chicken(80.9%) french fried potatos(80.4%) mandoo(78.1%) kimbab(78.9%), and fried chicken(77.9%). 5. 57.9% of the subjects wished to develope Korean traditional food items into fast-food style.

Effectiveness of a combined obesity prevention program in South Korea for children from low-income families that included primary caregiver participation

  • Purpose: Obesity among children from low-income families is becoming a social problem. The aim of this study was to evaluate the effectiveness of an obesity prevention program that included physical activity, nutrition education, behavioral modification, and primary caregiver participation components among children from low-income families. Methods: The study analyzed a nonequivalent control group using a pretest-posttest design. A total of 77 children were recruited from six community childcare centers using purposive sampling. For the intervention group (n=40), the pretest was administered before the combined intervention program involving the participants' primary caregivers was conducted for 8 weeks. The posttest was conducted immediately after the program and again four weeks after the program. Results: Flexibility (F=4.64, p=.020), muscular endurance (F=11.22, p<.001), nutritional knowledge scores (F=4.79, p=.010), body image satisfaction scores (F=4.74, p=.012), and self-esteem scores (F=3.81, p=.029) showed significant differences and interactions between group and time for the intervention and control groups. Conclusion: Strategies to actively engage the primary caregivers of low-income families in children's obesity programs are needed. Obesity prevention programs for children based on the program in this study should be routinely developed, and continuing attention should be given to children from low-income families.

수도권 지역 직장인의 음식 관련 스마트폰 어플리케이션 이용 실태와 만족도 (Usage and Satisfaction of Food-related Smartphone Applications of Office Workers in Seoul Area)

  • This study was conducted to figure the usage status and satisfaction of food-related smartphone applications by generic characteristics and food purchase attributes of Seoul area workers. The results show that health vitality-oriented group, married compared to single, those with higher eating-out expenses possess more food-related applications (p<0.05). The primary reason for the usage of food-related applications was the need for food-related information (53.7%). The highest application subjects in use were restaurant-related information and recipe information. The real-life aid food-related applications utilized most were also restaurant information (60.7%) and recipe information (28.3%). Health vitality-oriented respondents especially turned out to use nutrition information and food functionality information often (p<0.01), and recipes or calories & diet information usage frequency was higher in women than in men (p<0.001). Restaurant-related information were more frequently used by singles, highly educated, and those with high income and eating-out expenses (p<0.05). Satisfaction of food-related applications was normal (3.06), showing that the satisfactory level is not yet high. Satisfaction regarding purchase attributes showed that the health vitality-oriented group (3.19) was more satisfied compared to other groups (p<0.05), and women (3.16) were more satisfied that men (2.89) were (p<0.05). Inconveniences of food-related applications were highest in usage fee (3.29), simplicity of information (3.28), lack of reliability of information and need for update (3.10). The results of this study implies that various subdivisions of food-related applications users should be implemented; at the same time, food-related applications covering diverse subjects that regard each group's characteristics should be developed in order to utilize food-related knowledge and information as a marketing tool in the food industry; this can efficiently be done by paying attention to the quality of information and updates within applications.

익산지역 비만 아동의 식습관, 체형 인식, 체중 조절 행동, 영양 섭취 상태와 혈액성상에 관한 연구 (A Study on Eating Behavior, Recognition of Body Image, Weight Control Method, Nutritional Status, and Blood Parameters of Obese Children in Iksan City)

  • The factors for the childhood onset obesity were assessed to provide informations for the nutrition education program targeting the primary school children. The subjects of this study were 529 primary school children in Iksan City, Jeon-buk Province. Children were classified into obese(236) and control(293) groups by the obesity index. Anthropometric measurement dietary intake through 24-hour recall method, blood analysis and questionnaire response including nutritional knowledge and attitude, body image recognition and eating habits were conducted The mean age of subject was 12.0 years. The average body weight(p<0.001), BMI(p<0.001), and obesity index(p<0.001) in obese group were significantly different from those in control group; their values in the former were 26.5 kg/m2 and $37.7\%$ and 43.0 kg, 19.8 kg/m2 and $3.2\%$ in the latter, respectively. The average scores of self-satisfaction were significantly different in two groups (p<0.001), 31.2, and 34.1, respectively. Among the obese subjects, $60.6\%$ were unsatisfied or very unsatisfied with their body image, and $76.5\%$ had experiences of weight control and $67.5\%$ took diet control as a weight control method Among mothers of obese subjects, $89.1\%$ were unsatisfied with their children's body image. $64.4\%$ of obese subjects had obese parents. Average intake of energy were $76.7\%$ of RDA in obese group and $74.9\%$ of RDA in control group. Average intake of cereals(p<0.01), potatoes & starch(p<0.01) and eggs(p<0.01) between obese and control subjects were significantly different; 295.4g, 76.2g, 55.6g in the former and 277.9g, 38.1g, 45.6g in the latter, respectively. The mean serum triglyceride(p<0.05), GPT(p<0.05), hemoglobin(p<0.001) concentration of the obses and control subjects were significantly different; in the former, 103.6mg/dL, 24.6U/L, 13.4g/dL, and in the latter, 93.7mg/dL, 19.9U/L, 13.1g/dL, respectively, The results suggest that practical nutrition education for the prevention of childhood onset obese should be provided to primary school children.

전주지역 고학년 초등학생의 비만판정 방법에 따른 식생활 비교연구 (A Comparative Study on Dietary Life according to the Obesity Assessment Methods of Higher Grade Elementary School Students in Jeonju)

  • This study was done for finding out if eating habits, eating behaviors were different between non-obese and obese elementary school students in Jeonju Area. Total 2568 students of 1364 male and 1204 female of the 4th, 5th, and 6th year in 5 elementary schools were surveyed and the statistics of the result was analyzed by SPSS program. The results are summarized as follows: 1. Obesity was defined as Body Mass Index(BMI) that exceeded 85th and Obesity Index(OI) that exceeded 110. First, subjects were divided into 4 groups : lean, normal, overweight and obese. Second subjects were reclassified into non-obese(lean and normal) and obese(overweight and obese) groups. Average height of male and female students were 142.5cm, 143.1cm and weight of those were 36.4kg and 37.9kg respectively. 2. As results of obesity computation, obese male students were 19.6%(overweight 11.3%, obese 8.3%) in BMI and obese male students were 25.0%(overweight 12.5.%, obese 12.5%) in OI. Especially Obesity percent rate of male student were significantly higher on that of female student in OI method. 3. Examining obesity between male and female, there were statistically different between male students and female students in OI, but there were not statistically different in BMI. With regard to grade level(4th, 5th, 6th), there were statistically different among grade levels. 4. Examining correlation between eating habits(eating behaviors) and obesity, there were statistically significant in some cases. For example, there were statistically significant correlation between fast eating habit and obesity. And the relation analysis of general environments and obesity showed that there were statistically significant in some cases. These results suggest that the number of overweight students can be increased due to the amount and kinds of food children have as well as the general causes of overweight such as genetic, environmental and psychological reason. Surveying about children's eating habits, eating behaviors this study methodically. Working with parents is necessary and comparison of eating habits, eating behaviors and nutrition knowledge between the past and their presents are also needed in a future.

대학생의 다이어트 실행 특성 분석 및 실행 여부에 영향을 미치는 요인 연구 (Analyses on the dieters' characteristics and the factors determining diet practice in college)

  • The study aims to examine college students' practice characteristics related to diet and to identify factors determining their diet practice. The subjects were college students (N=387) in Youngnam region; a questionnaire survey was conducted in May, 2007. The data were analyzed by SPSS Windows. The results are as follows: first, the ratio of female students going on a diet is higher than that of male students. Second, according to the BMI, female students more regard themselves as being overweight than male students do, although they are underweight or normal weight. Third, in the interest in diet, almost half the students think of themselves as being "somewhat" or "much" concerned about diet. Fourth, the binary logistic regression analysis shows that the significant factors affecting female students' diet practice are the variables of "grade", "interest in diet", "body image evaluation in the individuals", "information/education requirement on dietary guidelines", and "necessity to go on a diet". On the other hand, the significant variables affecting male students' diet practice are the variables of "to take diet- or health-related courses", "interest in diet", "diet knowledge", and "diet practice".

만성 폐쇄성 폐질환자의 자가관리측정도구 개발 (Development of a Scale to Measure Self-Care for Korean Patients with Chronic Obstructive Pulmonary Disease)

  • Purpose : The objective of this study was the development and validation of a scale to measure the self-care of patients with chronic obstructive pulmonary disease(COPD) in Korea. Method: Self-care scale was developed based on the self-care activities patients had to carry out in order to manage their COPD. The original scale contained 34 items rated along a five-point Likert scale and was reviewed by 18 professional nurses and 10 Korean patients with COPD for content validity. Subsequently, patients with COPD were asked to complete this 23-item scale and further tests were done with the 125 useable responses. Result: Factor analysis identified eight factors-'maintaining a clean air way', 'taking medication', 'support from family', 'preventing infection', 'managing symptoms', 'breathing exercising', and 'taking in nutrition'. The internal consistency of the total scale was Cronbach's α=0.7226. These eight factors explained 60.8% of total variance. There was correlation among Korean Self-Care Scale score, administration level, and knowledge level but there was no correlation to patients' satisfaction with medical services. Conclusion: The 23 item questionnaire positively identified 8 areas defined important for COPD patients. Further studies are required to see how these can be integrated into patient education.

미국과 캐나다의 전공전 치위생 교육과정 분석 (An Analysis of Pre-dental Hygiene Curriculum of Dental Hygiene Programs in USA and in Canada)

  • 본 연구에서는 미국과 캐나다의 치위생 교육기관의 전공전 교육과정을 분석하였다. 전공전 교육과정은 일반교육,생의학,치의학,치위생학의 네 가지의 영역으로 구성되어 있다. 전공전교육과정은 일반교육과 생의학 영역을 포함한다. 일반교육 영역은 구두 및 문서 커뮤니케이션, 사회학, 심리학 등의 교과목으로 구성되어 있다. 생의학 영역은 해부학, 생리학, 화학, 생화학, 면역학, 일반병리학, 영양학, 약리학을 포함한다. 전공전교육과정은 효과적인 의사소통과 지역사회 프로그램의 참여에 필요한 수행능력을 제공하며, 치위생 서비스와 관련된 의사결정을 돕는다.

단백질(蛋白質) 급원식품(給源食品)을 기피(忌避)하는 일부(一部) 유치원(幼稚園) 아동(兒童)의 식이형성(食餌形成)과 그 요인(要因) (A Study on the Preference on Protein Rich Foods in Kindergarten Children in Gyeong Nam Area)

  • 경남 마산시, 진해시, 창원시에 거주하고 있는 일부 유치원 아동중 단백질(蛋白質) 급원(給源) 식품(食品)을 기피(忌避)하는 103명(名)에 대(對)한 식이형성(食餌形成)과 그 요인을 조사(調査)한 결과(結果)는 다음과 같다. 1) 남여비(男女比)는 1.2 : 1로서 남아(男兒)에 다소 높게 나타나고 생활(生活)은 중류(中流)이며 어머니의 학력은 고졸(高卒), 그리고 첫째 아이가 많았고 대부분 $2{\sim}3$형제의 핵가족(核家族)이였다. 2) 단백질(蛋白質) 급원식품(給源食品) 38개중 50%이상이 기피(忌避)하는 식품(食品)은 메주콩, 꽁치, 고등어, 멸치, 조개, 굴, 된장, 명태, 북어, 납세미, 미꾸라지, 도미, 민어, 조기, 곰국, 쇠간, 돼지고기, 칼치 등 18개 식품(食品)이였고 33%이상이 먹어보지 못한 식품(食品)은 쇠간, 쇠곱창, 쇠갈비, 뱀장어. 미꾸라지 등을 들고 있었다. 3) 기피(忌避) 이유(理由)는 맛이 좋지 않아서가 43.7%로 가장 많았고 독특한 냄새가 싫어서가 29.1%를 나타내었고 어머니의 생각으로는 몸에 좋다고 억지로 먹이려한 것이 가장 큰 원인으로 (30.1%) 보고 있었고 다음이 가족이나 친구의 영향 (29.1%) 으로 보고 있었다. 4)이의 교정을 위하여 아동은 맛있고 예쁘고 골고루 해주기를 원했고 어머니들은 이에 관한 구체적인 영양교육 실시를 원하고 있었다.
