Female university students generally have a lower intake of nutrition compared to other age groups due to their adverse interests in their appearance. Drinking, smoking, too much weight control, accumulation of psychological and physical stress are causes of inadequate diet. The result is deterioration of hair health. Establishment of good diet and hair care is the foundation of a healthy hair in adulthood. For this reason, there is a great need for a healthy hair care. The data from a questionnaire survey was analyzed with 800 female undergraduate students responding. Seventeen universities were included in the study, 8 of which were from Seoul, 6 from other large cities and 3 from smaller towns. The objective of this study is to investigate the correlations of these factors and to provide preliminary data for developing an effective hair care education program. Results include the following: 1. Knowledge score of hair care based on general characteristics were higher for students in larger cites compare to small cites or regions. Also, students in higher academic year, more allowance, interest in their apparence and family income showed higher knowledge in this field. These factors had meaningful effect on the statistics of this study. 2. Attitude score towards hair care based on general characteristics were higher for students in larger cites compare to small cites or regions. Also, students in higher academic year, more allowance, interest in their apparence and family income showed higher knowledge in this field. These factors had meaningful effect on the statistics of this study. 3. Behavior score towards hair care was higher for students with greater family income, allowance, interest in appearance. These factors had meaningful effect on the statistics of this study. 4. The correlation study between knowledge, attitude and behavior showed that higher the knowledge and attitude, better the behavior. 5. The analysis of factors effecting hair care behavior showed that interest in health, acknowledgement of current hair condition, total family income were a viable factor in predicting hair care behavior. The predictability of regression model is 38.9 %($R^2$) Therefore, in order to maximize the hair care behavior, consistent and systematic study should be earned out to develope an effective education program to improve health interest.

The purpose of this paper was to evaluate the effectiveness of a salt reduction education program. Subjects participating in this study were 251 employees (166 in the "educated" group, 85 in the "non-educated" group) at 8 hospital and industry food service operations in Daegu. After the salt reduction education program was carried out, a salty taste assessment of both groups was conducted. The educated group had statistically significant differences and the noneducated group did not have statistically significant differences. In terms of nutrition knowledge, while the nutrition knowledge of the educated group was increased (p < 0.001), that of the non-educated group rose at a rate of 0.92. In terms of dietary attitude, the educated group exhibited increased preference toward less salty foods when compared to the noneducated group (p < 0.001). Regarding dietary behavior, the score of the educated group was improved (p < 0.001), thereby indicating a preference for less salty taste. This means that nutrition education had influence on dietary behavior. However, after education, sodium excretion for the educated group was not significantly decreased, compared to before education. The results show that there was a positive correlation between salty taste assessment and dietary attitude and behavior for a high-salt diet. There was a positive relationship between attitude for a high-salt diet and sodium intake; when people prefere a more salty taste, they eat more sodium. Therefore, in order to change dietary preference away from salty taste and to decrease sodium intake, a nationwide, systematic and continuous salt reduction education program is needed.
Modern society is undergoing nutritional imbalance according to the diet as the number of one person increases. This is increasing the incidence of chronic diseases such as gastrointestinal diseases and digestive diseases. This study suggests the prediction of dietary knowledge using multiple regression analysis for preventing chronic stomach diseases. The proposed method manages user's stomach diseases and dietary nutrition through the prediction of nutrition knowledge. It collects user's PHR through smart device and integrates in the health platform. The integrated data analyzes the dietary and activity of the user through multiple regression analysis. It predicts the required nutrients and provides services to users through applications. Therefore, it suggests recommended dietary components and consumed calories, appropriate dietary components based on the user's basal metabolism, and gastrointestinal levels. With the personalized health management, modern people can manage gastrointestinal diseases through a balanced diet.
This study was designed to investigate the relationships between nutrition education, nutrition awareness and nutrition knowledge of school food service employees. We analyzed 288 self-administered questionnaires. Most of the employees (89.8%) were with contract-managed food services, 45.1% were $41{\sim}50$ years old, and 45.4% had chef certification. Two-thirds of the employees received nutrition education on 'nutritionally balanced diet' and 'sources of calcium', whereas less than 50% received education on 'problems with carbohydrates', 'functions of iron', 'deficiency and sources of iron'. The degree of nutrition awareness was generally higher than the level of nutrition education experience. The mean nutrition knowledge score was 11.7 out of 20 possible points, The majority of employees correctly identified 'sources of calcium (91.8%)', 'functions of carbohydrates (91.4%)', 'sources of cholesterol (91.0%)', and 'problems with lipids (90.4%)'; less than 50% correctly answered 'sources of proteins (18.9%)', 'functions of iron (27.9%)', 'recommended dietary allowances (32.0%)', 'functions of lipids (40.2%)', and 'sources of vitamins (44.3%)'. A chi-square analysis revealed that the employees' actual knowledge did not differ significantly by nutrition education - with the exception of three topics; 'recommended dietary allowances', 'changes in vitamins during cooking', 'functions of water' - or by their nutrition awareness. Nutrition knowledge scores did not differ by sex, decreased with age, increased with academic background, and increased in careers of >10 years or that were contract managed. There were significant correlations between nutrition education scores and nutrition awareness scores (p<0.001); nutrition knowledge scores and nutrition education scores (p<0.001); nutrition knowledge scores and nutrition awareness scores (p<0.001).
The purpose of this study were to develop an web-based education program for Lung cancer patients and to test its effects on patients' self-care knowledge, compliance to medical regimen, nutrition status and pain. The program was developed by the following process: first, Lung cancer patients demand on the web-based program was investigated. and second, the program was developed with the help of various reference books and then validation of experts group. last, educations effects on the patients is evaluated and compared the differences in self-care knowledge, compliance to medical regimen, nutrition status and pain between on experimental group and a control group on before discharge 1day and 3weeks after. SPSS/Win 11.0 program was used for data analysis. It was proven with $x^2$ test and t-test, and Pearson Correlation coefficient, and Chronbach's alpha coefficient were done for the reliability of measuring instruments. 1. The summary of the Program development is as follows. The program is based on patients' questionnaire and reference material and is made for users friendly. Not only Bigger font size and bright colors but also illustrations or pictures were adopted to help enhance patients' understanding. 2. The summary of the study results is as follows. 1) Compared with control group, the web-based educated experimental group showed a statistical significant difference on self-care knowledge, Especially disease, radiation treatment, medication & analgesics, chemotherapy side effect, but there was no significant difference in the field of chemotherapy, in the fields of operation, diet & general knowledge. 2) Compared with control group, the web-based educated experimental group showed a statistical significant difference on compliance to medical regimen, especially in the field of follow up care, everyday life, diet, but there was no significant difference in the field of medication, exercise. 3) Compared with control group, web-based educated experimental group showed no significant difference in nutrition status, but partially significant difference in body weight. 4) Compared with control group, the web-based educated experimental group showed no significant difference in pain level. 5) The significantly positive correalation self-care knowledge with the compliance to medical regimen. 6) Users satisfaction with the web-based education program of the contents quality, the level of recommendation to others, content layout, medical information quality, but interesting got a low mark.

The purpose of this study was to conduct a questionnaire survey for total 503 high school female students in Wonju area, Kangwon province, and thereby determine any potential effectiveness of their trials to reduce weight in their satisfaction with their own figure, daily living practices related to weight control, nutrition knowledge and dietary behaviors. Out of all respondents, it was found that 284 girl students(58.4%) ever tried to reduce weight, and both trial group(trying to reduce weight) and no-trial group were much interested in weight control(94.7% vs. 60.7%). But 85.2% of trial group and 50.3% of no-trial group were dissatisfied at their figure. It was found that the percentage of trial group practicing regular exercise was higher than that of no-trial group doing so(21.8% vs. 5.5%). Subjects scored 14.3 out of 20 on a nutrition knowledge scale, but trial group scored significantly higher points(14.5) than no-trial group(13.9)(p<0.01). In particular, it was notable that trial group showed higher rate of correct answer in certain items such as balanced diet and knowledge about weight control. It was found that our all respondents showed moderate dietary behaviors, which is demonstrated by their mean score of 31.3 in dietary behaviors(possible score: $15{\sim}45$). Notably, it was found that there were problems exposed in their dietary velocity, intake of various diets and intake frequency for each food group(dairy products, marine plants and vegetative oil and fat). And it was found that the percentage of trial group taking diet with vegetative oil was higher than that of no-trial group.
The purpose of this study was to survey the concern for nutrition and the degree of nutritional knowledge of elementary school children's parents and their perception on the eating habits of their children. This study also investigated the effects of the concern for nutrition and the nutritional knowledge on the eating habits of their children. The questionnaire was answered by 383 mothers and fathers in the Kyonggi area. The general nutritional attitude and the perception of their children's eating habits were represented by frequencies and analyzed tv chi-square test, and Fisher's exact test. The difference of nutritional knowledge was represented tv mean and S.D. and was analyzed by one-way ANOVA test. Statistical significance was tested at the 0.05 level. The main results of the study are summarized as follows. 1) Parents had a comparatively deep concern for nutrition and a high level of knowledge. With increasing concern for nutrition, nutritional knowledge tended to be better and the higher proportion of participation in the nutritional education program increased. 2) The majority$(58.5\%)$ of the subjects thought that the eating habit of their children was not appropriate. The subjects had relatively high recognition about their children's eating habits and pointed out the unbalanced diet, snacks, and skipping a meal among their children's eating habits. Nevertheless, there were no significantly differences among the concern for nutrition of the parents and perception on their children's eating habits. As the parents' nutritional attitude, concern for nutrition, and nutritional knowledge can affect the children's eating habits, tire suggest that schools open nutritional education programs for parents in order to acquire proper food and nutrition information, and that schools and homes should be more closely connected.
Gustation, initiated by the detection of taste molecules by specific receptors expressed in taste cells, plays an essential role in food selection and consequently in overall nutrition for humans. In the past decade, a remarkable amount of knowledge of taste perception in the neurology, molecular biology, and genetics has emerged, particularly in basic tastes- sweet, bitter, sour, salt and umami. Among them, sweet, bitter and umami are recognized via the specific G-protein coupled receptors. Salt and sour are primarily mediated by apically located ion channel-type receptors. Because excessive salt or sugar consumption leads to high rates of diet-associated diseases and it comes from eating prepared or processed foods, an understanding of the underlying mechanisms in salt and sweet perception is crucial in food industry. This review will focus on recent progress of the perception of salt and sweet taste to provide basic knowledge for reducing salt and sugar consumption.
BACKGROUND/OBJECTIVES: Nutrition knowledge has been reported to have a weak positive effect on healthy eating behavior. This study aimed to determine if there was a difference in nutrition knowledge depending on the choice of science subject in high school and whether that affected the actual eating habits of college students in Japan. SUBJECTS/METHODS: The subjects were 514 college students, the majority first-year students, in 3 cities in Japan. A questionnaire survey was conducted on elective subjects in science in high school, diet (11 items), lifestyle (5 items), and nutrition knowledge (34 questions). The preliminary survey was conducted on 47 students in the fall of 2019, and the full-scale survey was conducted in May-June and October-November 2021 at the end of lectures for the first-year students. RESULTS: The students in the high-score group (24-31 points, n = 180) had a higher intake of vegetables (odds ratio [OR], 1.78; 95% confidence interval [CI], 1.12-2.82; P = 0.015) and breakfast (OR, 1.64; 95% CI, 1.03-2.60; P = 0.035), and a reduced intake of fast food (OR, 0.27; 95% CI, 0.14-0.51; P < 0.001) than those in the low-score group (6-19 points, n = 150). Only the biology and chemistry students had significantly higher nutrition scores than the other groups (all: P < 0.001), but no significant difference was found between the other groups. Understanding nutrition learned in elementary and junior high school is appropriate, while molecular structure, recommended amount, and food poisoning were insufficient. CONCLUSIONS: Knowledge of nutrition appears to have a positive effect on the actual eating habits of college students. Although biology and chemistry in high school may help students understand the foundations of good nutrition, specialized food education may be required to make informed dietary choices.

Background: The glycemic index (GI) indicates the rise in blood glucose caused by carbohydrate-containing foods. In Korea, there have been few studies on the understanding adults have of GI. Thus, this study investigated differences GI knowledge among the korean adults. Methods: A questionnaire on the perspective of GI and experience in GI education, participational intent to learn, general knowledge level, and dietary practice was conducted among those living in agricultural areas. Respondents were visitors to the health promotion center of a university hospital. Results: When asked about the GI familiarity, the standard of education, the relationships between diseases and GI, the diabetes group was better able to answer correctly than the other groups. However, the diabetes group showed either no difference or less correct responses for general knowledge of GI. With respect to their usual consideration and low GI dietary practice, the diabetes group provided higher responses than the other groups. On the whole, the diabetes group was better than the other groups for GI relative factor but none of the groups showed high levels for perspective, education, dietary practice of GI. Conclusions: The groups other than the diabetes group had a low perspective of GI, a lack of correct knowledge of GI, and did not follow a proper diet without considering GI. Even in the diabetes group the perspective, knowledge, and proper dietary practices were not adequate. Accordingly, further education of GI is necessary for diabetic patients, patients with chronic diseases and also people without diseases.
