Sap Collection and Major Components of Acer okamotoanum Nakai Native in Ullungdo (울릉도 자생 우산고로쇠나무의 수액채취와 주요성분)

  • The collecting amount by DBH class and contents of mineral and free sugar in the sap of Acer okamotoanum Nakai being autogenous in Ullungdo were investigated. The total amount of sap was 376 l Sap of A. okamotoanum were increased with increasing DBH, 67 l (18%), 121 l (32%) and 188 l (50%) from small (below 18 cm), middle $(20{\sim}28\;cm)$ and large (above 30cm) diameter tree, respectively. Amounts of sap was required by big temperature fluctuation in day and night. The contents of solid, ash and sugar were 3.04%, 0.06% and 3.06% in the sap of A. okamotoanum. Free sugar determined in the sap was sucrose with 30.6 g/l, but glucose, fructose and maltose were not detected. The sap of A. okamotoanum was composed of seven kinds of mineral. The prominent minerals in the sap were Ca and K, and the concentrations of Ca and K were 522 mg/l and 309 mg/l, respectively.

  • The collecting amount of sap by DBH class and contents of mineral and free sugar in the sap of Acer mono in Mt. Jiri were investigated. The total amount of sap throughout the study period was 315 L. Sap of A. mono were increased with increasing DBH, 67 L(21%), 104 L(33%) and 144 L(46%) from small (below 18㎝), middle (20-28㎝) and large (above 30㎝) diameter tree, respectively. This may be due to increase in crown width and extension of root system. Amounts of sap was required by big temperature fluctuation in day and night. The contents of solid, ash and sugar were 1.90%, 0.02% and 1.64% in the sap of A. mono. Free sugar determined in the sap was sucrose with 16.4 g/L, but glucose, fructose and maltose were not detected. The sap of A. mono was composed of seven kinds of mineral. The prominent minerals in the sap were Ca and K and the concentrations were 548㎎/L and 303㎎/L, respectively.

Fermentation and Quality Characteristics of Soy Yogurt incorporating Insoluble Components of Domestic Soybeans (국내산 대두의 불용성 물질을 포함한 두유 요구르트의 발효 및 품질 특성)

  • The objective of this research was to determine the fermentation and quality properties of soy yogurt incorporating insoluble components fermented with Streptococcus thermophilus (S. thermophilus) and Lactobacillus bulgaricus (L. bulgaricus) for 24h. Boiled soybeans were ground and reconstituted into equivalent total solids (18%). After soymilk was homogenized with sugar, it was pasteurized in a water bath at $90^{\circ}C$ for 30 min. Two kinds of lactic acid bacteria were inoculated into two types of soymilk after cooling down $40{\sim}45^{\circ}C$ and fermentation at $37^{\circ}C$ for 24h. Titrable acidity, pH, viscosity, sugar content, and number of viable cells were determined in triplicate. Soy yogurt fermented with L. bulgaricus did not reach pH 4.5, where as S. thermophilus was considered good for achieving pH 4.08 and titratable acidity of 2.27% for 24 h. Soy yogurt fermented with S. thermophilus had a higher viscosity and lower sugar contents than that fermented with L. bulgaricusas incubation time increased. Total viable count was $1.80{\times}10^{10}CFU/mL$ on S. thermophilus and $2.16{\times}10^8CFU/mL$ on L. bulgaricus after 24 h at $37^{\circ}C$. However, there was no significant difference in sensory intensities and preference between the two samples. As a result, S. thermophilus was identified as a better culture than L. bulgaricus for the manufacture of soy yogurt incorporating insoluble components.

  • In order to identify the sugars of saponin originated from Korean ginseng, experimentations were made on the four kinds of ginseng. The results are summarized as follows. 1. The starch content of Ginseng-tail, White-ginseng 3 and 6 years old-whole ginseng were 10.4, 31.5, 8.2, 25.6% and total sugar of its were 37.0, 61.5, 64.5, 62.5% and free sugar were 7.6, 10.5, 11.3, and 10.7% respectively. 2. Saponins were separated from Ginseng-tail, White-ginseng, 3 and 6 years old-whole ginseng by modified SHIBATA method. looms of crude saponin was used for the Thin layer Chromatography (TLC) and thirteen to twelve spots of saponin were isolated by double development $(Solvent:\;CHCL_3\;:\;MeOH\;:\;H_2O=65\;:\;35\;:\;10)$ and by two dimensional development. $(Solvent:\;nBuOH\;:\;HOAC\;:\;H_2O=4\;:\;1\;:\;5)$ The Pattern of spot was not significantly different according to Ginseng sample. 3. Glucose was identified from the acid-hydrolyzate of Ginsen-tail saponin by paper chromatography and isolated the unknown chromatogram seems to be pentose.

Quality Characteristics of Various Honeys from Different Sources (밀원을 달리한 다양한 꿀의 품질 특성)

  • This study was carried out to investigate the quality characteristics of various honeys originating from different sources, and to identify factors potentially useful for distinguishing the honey sources. The sugar composition, moisture content and total acidity of twenty six honey samples were analyzed. The moisture contents were lowest in honeys from Acacia and were not greatly different with regard to honey sources. Fructose content was highest, followed by glucose, sucrose and maltose in all kinds of honey. Sugar composition did not show any reliable criterion useful for identifying the sources of honey samples. The fructose/glucose ratio did not differ among samples, however the ratios in honeys from Acacia and Chestnut were higher than honey from poly floral sources. The total acidity of honeys ranged 10.30-12.45 meq/kg regard-less of the source, thus acidity is not a useful criterion for identifying the honey source.

Selection of Drought Tolerant Plants by Drought the Physiological Characteristics and Biochemicals Material about the Compositae Plants (건조 생리특성 및 생화학적 물질을 인자로 한 국화과 식물의 내건성 식물 선발)

  • This study was selected drought tolerant plants, by observing the physiological characteristics and biochemical materials from the 9 kinds of the Compositae plants. After selecting plants of the similar size, and then drought stress was induced by the irrigation stopping. Survival rates, chlorophyll values, relative water content(RWC), excised-leaf water loss(ELWL), proline, reducing sugar were measured after 30 days of stopping irrigation. The species that had high rates of survival were Ainsliaea acerifolia Sch. Bip, Aster koraiensis, Aster scaber, Dendranthema zawadskii(S), however other 5 species were dead. The remaining factors have been determined based on plant species showed a higher survival rate. However, chlorophyll content showed high values in A. acerifolia, A.altaicus var. uchiyamae, A. koraiensis, and will have been determined that has no correlation with survival rates, except for A. acerifolia and A. koraiensis. On the other hand, A. scaber, A. acerifolia, A. koraiensis were determined to be relatively high drought tolerant plants in RWC, ELWL, proline, reducing sugar, it showed a similar correlation with survival rate. As a result of 9 kinds of the Compositae plants A. scaber, A. acerifolia, A. koraiensis were considered relatively higher drought tolerant plants.

Quality Characteristics of Apple Vinegar using Various Acetic Acid Bacteria (초산균을 달리하여 제조한 사과식초의 품질특성)

  • To develop farm-made high effective vinegar, this study prepared apple vinegar using four kinds of acetic acid bacteria isolated from a natural fermentation liquid of 'Cheongsoo' grapes and analyzed vinegar samples fermented 93% apple juice and 7% alcohols at 30℃ for 20 days. To accomplish this, quality characteristics such as pH, total acidity, reducing sugar, organic acid, color, total polyphenol contents, and antioxidant activity contents were determined. The pH decreased while total acidity of all samples gradually increased during fermentation period. The vinegar with AP 21 strain tended to increase the total acidity quicker than other stains. Reduced sugar content remained high until the last fermentation day. Furthermore, reduced sugar contents of all vinegars increased as fermentation progressed by decomposing sucrose present in apples. When physiological activities were compared, apple vinegars fermented with AP 21 and 30 strains had higher total polyphenol and flavonoid contents than other samples. However, there was no significant difference in antioxidant activity between samples. These results indicate that strain 21 is the most suitable starter as acetic acid bacteria for producing farm-made vinegar.

The Quality Characteristics of Beef Jerky According to the Kinds of Saccharides and the Concentrations of Green Tea Powder (당의 종류와 녹차가루 첨가량에 따른 육포의 품질특성)

  • The purpose of this study was to investigate the characteristics of beef jerky adding of many kinds of saccharides and three levels of green tea powder. Color and hardness were increased with the addition of green tea powder while tenderness was decreased. Moistureness Gf beef jerky added honey was higher than that of sugar, oligo saccharide. In color, the lightness was decreased with increasing concentrations of green tea Powder. Redness and yellowness values were increased. In measurement of texture, hardness were increased with the addition of green tea powder. The hardness of beef jerky by adding of honey appeared to be higher than that of sugar, oligo saccharide. Gumminess and brittleness were increased with the addition of green tea powder while springness was decreased. Springness in addition of 3% green tea powder was higher than control. The beef jerky added with 3% green tea powder and sugar had good overall perference.

A Study on the Standardization of Sugar-preserved Prunus mume Manufactured in Ha-Dong (하동지역 매실 당절임의 표준화 방안 연구)

  • Prunus mume is rich in organic acid, and excels in antioxidant activity. However, development of processed foods using Prunus mume is very limited, and characteristics of its products are different according to the region they are processed in. In this study, we collected 13 kinds of sugar-preserved Prunus mume home-made products in Hadong, and investigated their physical and manufacturing characteristics to select a superior product. 5 kinds of sugar-preserved Prunus mume products were selected according to results of sensory evaluation, and the overall acceptability of product No.13 was superior. Moisture contents of the 5 samples ranged from 45.2~53.3%, and pH and acidity showed similar values at about 2.8 and 0.4%, respectively. Sugar content of product No.13 were slightly lower than other products. Crude protein and lipid contents were similar at about 0.4 and 0.5%, respectively. Hardness value of product No.13, selected by its texture in sensory evaluation, was higher than others. The main components of organic acids were oxalic, malic, citric and fumaric acid, and citric acid content occupied more than 60% of total organic acid content. Also, the main components of free sugar were glucose and fructose.

Changes of Chemical Components during Fermentation of Pear(Pyrus pyrifolia Nakai) Wine (신고배(Pyrus pyrifolia Nakai)를 이용한 배술 제조 과정 중 성분 변화)

  • For increasing the consumption of pear, the pear wines were made by using eight different kinds of yeast. The chemical properties, such as pH, acidity, ethanol and sugar contents, and the consumer acceptance of various pear wines were analyzed. In analysis result of chemical properties, the value of pH was decreased and the acidity was increased until few days, and then retained during fermentation. The ethanol content was increased and the sugar content was decreased during fermentation. The pear wine brewed by B yeast (Lalnin, Saccharomyces cerevisiae) among eight different kinds of yeast had the highest content of ethanol, also this wine was represented the most consumer acceptance by the panels who consist of two age groups such as 20's to 30's and 50's to 60's. Therefore, we chose the yeast B for analyzing the effect of additives during fermentation. As the additives, the $K_2S_2O_5$ and ammonium phosphate as the disinfectant and hemicellulase and pectinase as fermenting conditioner were added into the pear wine brewed by yeast B. When additives are added, the chemical properties were the same as followed. Te values of pH was lower than when additives were not added(control). The acidity was he highest when ammonium phosphate was added, but the acidity was not changed after 4 day fermentation. Sugar contents when added $K_2S_2O_5$ 350ppm was shown the fastest deceasing, and it was orderly decreased as control, ammonium phosphate, hemicellulase, pectinase, and $K_2S_2O_5$ 175ppm. The decreasing rate of sugar content of these 6 test groups during fermentation gradually decreased without a big changes and the after 7 day fermentation, sugar contents were seldom decreased and the final sugar content was $9.5{\sim}9.8^{\circ}Brix$. In terms of change of the content of ethanol, all test groups generated 11~12.4% ethanol after 7 day fermentation. The group where ammonium phosphate was added generated 12.4% alcohol, which is the fastest speed and the group, which hemicellulase additive was added, showed generally slow alcohol generation rate. In terms of ethanol contents, the non-additive group and $K_2S_2O_5$ additive group showed 0.05%, which is very low, and hemicellulase and pectinase additive group is more than 0.5% which is rather high.
