  • An experiment on strawberry (Fragaria Grandflora EHRH) was conducted in order to compare the effect of two compound fertilizers made for this crop, by Kyonggi Chemical Crop. LTD. with that of muriate of potash, sulfate of potash and ammonium nitrate in a farmer's vinylhouse during the winter period of 1984 to 1985. Results obtained are as follows; 1. The effect of compound fertilizers on the growth, number of inflorescences and yield of strawberry showed no significant difference from the effect of muriate of potash, sulfate of potash and ammonium nitrate. But the former increased the content of reduced, and total sugars soluble in diluted acid in the juice of strawberry. 2. As a whole, sulfate of potash increased sugar content in strawberry juice more than muriate of potash, which became the reason to increase the sugar content in the strawberry juice harvested from the compound fertilizer plots.

Changes in the Constituents of Citrus Juice by Ultrafiltration (한외여과에 의한 온주 밀감주스의 성분 변화)

  • The citrus juice obtained from Jeju mandarines, Citru unshiu, was filtered to remove 20% of its original volume through the hollow fiber ultrafiltration systems equipped with various pore sizes of membranes. As the results of ultrafiltration, the contents of total acids, ascorbic acid, ascorbic acid, free sugars and neohesperidin in retentate showed the tendencies of gradual decreases with the increase of membrane pore sizes from 10K to 100K daltons, but tendencies were inverted when the membrane with 500k was used. The changes of color, soluble solids, total nitrogen, amino-nitrogen, naringin and hesperidin were not consistent with the membrane pore size. Considering all the data obtained using various pen sizes of membranes, the filtration system with NMWC 500K daltons was the most effective to produce citrus juices with hither quality.

Processing Conditions of Functional Anchovy Snack (기능성 멸치 스낵의 제조조건)

  • In order to manufacture the high-quality products as well as to promote their consumption, processing conditions for anchovy snacks were investigated. Seasoning juice-1 were made for 7% sugar, 2% salt, 5% soy sauce, 2% ginger, 1% pepper, 5% garlic, 5% onion, 2% glasswort extract and 0.5% taurine with water. Seasoning juice-2 were made for 15% frying powder, 15-20% starch syrup, 10% soybean powder and 2% sesame powder with water. Sensory evaluation revealed that overall acceptability of anchovy snacks with 30% moisture before popping, 15% frying powder and 15-20% starch syrup in seasoning juice-2 with 20 seconds popping time exceeded other groups of samples.

Enzymatic Solubilization of Thermally Treated Jujube Tissues (효소에 의한 열처리 생대추 조직의 수용화)

  • Jujube paste was prepared by autoclaving the fresh jujube at 1.2 atm and $120^{\circ}C$ for 30 min and removing the skin and cores. In order to increase the juice yield, the paste was treated with pectinase, cellulase and their combinations. The soluble fractions of enzymatically treated jujube paste were characterized in terms of yield, pH, titratable acidity, color, Bx, transmittance and sugar compositions. The original paste exhibited the water soluble fraction of 57.3%. Of various quality factors, the clarity was the most significantly distinguished between pectinase and cellulase treatments. The cellulase treatment produced the cloudy juice with the yield of 83.60%. On the other hand, the clear juice was produced by the pectinase and combined treatments due to degradation of pectins, whose yields were 79.47% and 85.39%, respectively. The results clearly demonstrated that the pectinase treatments improved the solubilization efficiency and clarity.

Quality Characteristics and Antioxidative Activity of Mung Bean Starch Gels Added with Carrot, Spinach and Mulberry Juice (당근, 시금치, 오디즙 첨가 녹두전분 겔의 항산화 및 품질 특성)

  • This study was conducted to evaluate the quality characteristics of mung bean starch gel (MBSJ) containing carrot (CMBSJ), spinach (SMBSJ), and mulberry (MMBSJ) juice. The moisture contents of MBSJ, CMBSJ, SMBSJ and MMBSJ were not different significantly. The color of MBSJ was in good accordance with the $L^*$, $a^*$, $b^*$ values and hue angle of the material juices. The hardness levels of CMBSJ, SMBSJ, and MMBSJ were lower than that of MBSJ, but the springiness, cohesiveness, and chewiness of CMBSJ and SMBSJ were higer than those of MBSJ. Antioxidative activities of CMBSJ, SMBSJ, and MMBSJ were greatly increased compared to those of MBSJ. The syneresis and hardness of colored the MBSJ decreased during storage at $4^{\circ}C$. In the sensory evaluation, colored MBSJ scored the highest in taste, shine, elasticity, and overall acceptability. Based on the above results, we expect that mung bean starch gels with carrot, spinach and mulberry juice have good quality characteristics and antioxidant activity.

Establishment of Quality Control Standardization for Pomegranate Vinegar (석류식초의 품질 관리 규격 확립)

  • This study investigated alcohol and acetic acid fermentation conditions for the quality control of pomegranate vinegar In the alcohol fermentation process, alcohol content was the highest at a pomegranate juice concentration of $16^{\circ}Brix$, but suitable to fruit vinegar standards at a concentration of $12^{\circ}Brix$. In the concentrated pomegranate juice alcohol fermentation free sugars, fructose and glucose were detected at the beginning of fermentation; at day 4 of fermentation only glucose was detected and decreased as time passed. Organic acids were also detected, including oxalic, lactic, acetic, and citric acid, and they did not change greatly during the alcohol fermentation process. In the acetic acid fermentation process, total acidity increased from 1.56% to 5.54%, where acetic acid increased; however, oxalic, lactic, and citric acids changed only slightly. In conclusion, pomegranate vinegar can undergo alcohol and acetic acid fermentation processes using concentrated pomegranate juice of $12^{\circ}Brix$.

Quality Characteristics of Seasoned Pork with Fermented Oenothera biennis Juice (달맞이꽃 발효액 첨가 양념 돈육의 품질 특성)

  • The quality characteristics of seasoned pork with sauces containing different concentrations of fermented Oenothera biennis juice such as 5% (5-SP), 10% (10-SP) and 15% (15-SP) during storage for 15 days at $10^{\circ}C$ were investigated. The pH level decreased after storage for 6 days and pH 4.83~4.90 after storage for 15 days in all tested seasoned pork. The titratable acidity increased significantly after 6 days but did not show significant differences between seasoned pork. The total bacteria of seasoned pork were $10^7CFU/g$ (control) and $10^6CFU/g$ (5-SP and 10-SP) after storage for 9 days. The total bacteria showed a lower 1~2 log cycle in seasoned pork with fermented Oenothera biennis juice compared to control. The volatile basic nitrogen contents of seasoned pork were 18.02 mg% (control), 15.41 mg% (5-SP), 14.47 mg% (10-SP), and 17.51 mg% (15-SP) after storage for 15 days at $10^{\circ}C$, respectively. The a value (red) of pork seasoned with fermented Oenothera biennis juice was higher than that of control and decreased during storage. Cooking loss and water holding capacity of 5-SP and 10-SP were better than those of control and 15-SP during storage. The 5-SP showed the best sensory score in taste (4.00), color (4.00), flavor (3.91), and overall acceptability (4.09) among various seasoned pork groups.

Free Radical Scavenging Ability and Quality Characteristics of Yanggaeng Combined with Grape Juice (포도즙을 첨가한 양갱의 품질특성 및 유리기 소거능)

  • We investigate the quality characteristics and free radical scavenging ability of yanggaeng prepared with different amounts of grape juice (GJ). GJ was incorporated into yanggaeng at different levels (containing 50, 100, 150, and 200 g of GJ in yanggaeng, respectively) based on the total weight of water. Sugar contents showed a significant increase; however, pH showed a decrease with increasing levels of GJ. In terms of color, lightness and yellowness decreased significantly but redness increased with increasing levels of GJ. In a texture profile analysis, hardness were increased; however, springiness, cohesiveness, gumminess, and chewiness decreased with increasing levels of GJ. Total polyphenol content and 1,1-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity increased significantly as the GJ concentration increased in the formulation. The sensory evaluation indicated that yanggaeng containing the 150 g level of GJ showed the best preference in terms of color, taste, texture, flavor, and overall acceptance. These results suggest that grape juice may be a useful ingredient in yanggaeng to improve quality and antioxidant potential.

Prevention of quality deterioration of concentrated blueberry juice by means of pH regulators during thermal treatment (pH 조절제를 이용한 농축 블루베리주스 열처리 시 품질저하억제)

  • This study was conducted to minimize the quality degradation of concentrated blueberry juice after $90^{\circ}C$ treatment for 5 min by means of citric acid (CA) and acidic sodium metaphosphate (ASM) as pH modifiers. The highest anthocyanin content was observed at 1% CA+1% ASM (65.747 mg per 100 g) followed by 1% CA (46.022 mg per 100 g) and control (30.864 mg per 100 g). The DPPH radical scavenging activities of 1% CA+1% ASM, 1% CA and control were 87.338, 75.486 and 67.983% in respectively. The elastase inhibitory activity at 1% CA+1% ASM, 1% CA and in the control was 87.338, 75.486 and 67.983%, and the tyrosinase inhibitory of these samples were 77.891, 67.598 and 26.375%, respectively. Anthocyanin contents, DPPH radical scavenging, elastase inhibitory and tyrosinase inhibitory activities were significantly different (p<0.05) between the 1% CA+1% ASM treatment and control. During the heat treatment, quality degradation of concentrated blueberry juice was reduced by the 1% CA+1% ASM treatment, as expected for new acidulants.

Quality Characteristics of Starch Oddi Dasik Added with Mulberry Fruit Juice (오디즙을 첨가한 녹말오디다식의 품질특성에 관한 연구)

  • This study was carried out to investigate of the quality characteristics of the starch Oddi Dasik(MSOD) manufactured with various addition levels (0, 5, 10, 18 and 28%) of mulberry fruit (Oddi) juice (MFJ), with various levels(55%, 50%, 45%, 37% and 27%) of sucrose syrup, and with the ratio of rice powder: mungbean starch (1:4) according to the traditional Korean Dasik (a kinds of cookie) methodology. The nutritional components of Oddi and MSOD were examined, and sensory evaluation and physical tests of MSOD added MFJ were conducted. The results are summarized as follows. In Oddi, the contents of moisture, crude fat, crude protein, crude ash, and vitamin C, and the levels of acidity, pH and sugar were 88.45%, 0.245%, 2.23%, 0.88%, 53.20 mg%, 8.00%, 4.41 and 11.0 Brix%, respectively. In MSOD (Oddi 10%), the contents of moisture, crude fat, crude protein, and crude ash, were 22.8%, 0.117%, 9.2% and 0.8%, respectively, and were all increased with increasing MFJ amount. In MSOD (Oddi 10%), the contents of Ca, Mg, K and Fe were 63.2 mg%, 70.9 mg%, 376.0 mg% and 7.7 mg%, respectively. and were increased with increasing MFJ amount. For the establishment of the additional amount of MFJ, sensory evaluation and physical tests were conducted. From the total characteristics of sensory evaluation, the MSOD with 10% MFJ was judged as the best. Color L and b values of MSOD significantly decreased and a value increased with increasing MFJ percentage. Hardness, gumminess, adhesiveness and chewiness among the texture characteristics of MSOD were significantly increased with increasing MFJ amount. However, there were no significant differences in springiness and cohesiveness of the MSOD. In conclusion, the optimal added amount of MFJ for the manufacture of the MSOD was proposed to be 10% of the total weight.
