농촌 수유부(授乳婦)의 식품(食品) 및 영양섭취(營養攝取)조사 (A Food and Nutrient Intake Study of the Lactating Women in Rural Korea)

  • Almost all Korean women in rural area breast feed their children for average 18 to 24 months. Since they breastfeed their children for long period the need for the lactating mot­hers to be nutritionally refurnished becomes evidently great. However the studies on the nutrient intake level of these mothers has been very scarce. We have studied the food and nutrient intake level of 93 lactating women randomly selected from rural areas of South Korea. Thirty one well trained and experienced surveyors conducted the dietary survey by the. combination method of precise weighing and interview for two 'consecutive days. Briefly stating the findings 1) The dietary pattern of the lactating women in rural Korea was not different from the ordinary Korean diet-i.e no conscientious effort to improve the quality of the diet was apparent. 2) Consequently over 90% of the total food intake was made up with the typical rice­kimchi diet. 3) The quantity of the total food intake was greater than the national average sufficient intake of calorie was observed. 4) No milk or the milk products were consumed by the lactating women in rural Korea. 5) Average intake of protein was 88 grams. Only 5% of these was provided by the animal foods. 6) Mean daily intakes of niacin, thiamin and ascorbic acid exceeded the recommended allowances. But vitamin A intake was 1171 IU-about 33% of the RDA-and the riboflavin intake was 0.92 mg. which is about 54% of the recommended level for the lactators. 7) Average calcium intake was 490 mg.-41% of the RDA. The iron intake was adequate.

삼척지역 특산물인 곰치, 풍덕구이, 곰취, 곤드레의 향토식품 소재화를 위한 영양적 특성 연구 (Nutritional Properties, as Food Resources for Menu Development, of Cubed Snailfish, Shaggy Sea Raven, and Two Kinds of Wild Vegetables that are Staple Products in Samcheok)

  • 본 연구에서는 강원도 삼척지역에서 생산되는 농 수특산물인 곰치, 풍덕구이, 곰취, 곤드레의 화학적 영양학적 조성을 평가하고 이를 메뉴에 적용함으로써, 이들 4종의 식품소재 및 이를 활용한 메뉴의 식품영양학적 가치를 평가하고자 하였다. 겨울철에 수집된 삼척산 곰치와 풍덕구이는 일반성분 조성에 있어 유기물에 해당하는 단백질과 지방의 함량이 다소 낮은 경향이 관찰되었고, 이는 계절적 인자, 즉 산란기와 연관되어 있을 것으로 해석하였다. 삼척산 건조 곤드레는 100 g 당 조단백질 24.2 g, 칼슘 1356.0 mg, 철 33.9 mg이 함유되어 있었고, 이는 전국 규모로 수집되어 평가된 식품성분표 상의 수치보다 각각 4.3배, 15배, 13배나 높은 함량이었다. 또한, 필수 미량원소 중 하나인 아연은 삼척산 곤드레에서 정선산보다 6.2배나 높은 함량인 26.2 mg/100 g이 함유되어 있었다. 건조 곤드레와 더불어 곰취 나물의 경우에도 칼슘의 함량이 높았는데, 이는 삼척 지역이 석회석 생산지라 토양 내 칼슘 함량이 다른 지역보다 높다는 사실과 관련되어 있을 것으로 해석하였다. 아미노산 조성 평가에 있어서는, 4종의 식품 소재 모두 풍미와 직접적으로 관련된 아미노산인 glutamic acid, aspartic acid, glycine, alanine이 전체 아미노산 중 높은 비율을 차지함으로써, 메뉴의 단맛과 감칠맛에 기여할 것으로 평가되었다. 또한, 곰치와 풍덕구이는 n-3 PUFA와 n-6 PUFA로 구성된 고도불포화지방산(PUFA)에 속하는 지방산들이 전체 지방산 중 각각 30.6%와 31.6%를 차지하였고, 특히 곰치는 n-3 PUFA의 함량이 n-6 PUFA보다 2배 이상 높게 함유되어 있어, 지방산 조성과 연관된 영양 지표인 n-6/n-3 비율을 기준으로 한 식품의 가치 평가에서는, 영양학적으로 우수한 식품이라 할 수 있다. 앞서 평가한 이들 식품소재의 영양학적 가치가 메뉴로 적용 가능한지를 탐색한 두 번째 단계의 연구에서는, 기존 상용 메뉴의 주재료를 삼척지역 농·수 특산물로 대체하여 음식을 제조한 후 영양학적 측면에서 이들 메뉴를 평가하였다. 그 결과, 칼슘과 아연의 함량이 높았던 삼척산 곤드레를 주재료로한 곤드레 해장국은 단백질, 칼슘, 철분, 아연의 함량이 1일 권장섭취량(RI) 대비 31.5%, 49.3%, 100.0%, 77.8%로 각각 평가됨으로써, 단백질과 무기질의 함량이 매우 높은 메뉴로 확인되어 한국인의 건강식으로 개발될만한 가치가 있다고 평가되었다. 또한, 곰치어죽, 풍덕구이 조림, 곰취 산채 찜만두 1인분은 낮은 열량 임에도 불구하고 단백질과 철분의 제공량이 1일 권장섭취량의 30%를 초과하는 것으로 나타나, 빈혈 발생이 높은 성장기 어린이와 가임기 여성, 임산부 등을 대상으로 하는 영양성이 강조된 차별화된 메뉴 개발의 가능성을 시사하였다.

장년기 남자의 에너지 과잉섭취와 주류 또는 육류구이 섭취량간의 관련성에 관한 연구 (Caloric Intake to Fat or Alcoholic Drink Intake in Middle-Aged Men Is Highly Co-related than Those in Young Men)

  • In order to find the relationships of nutrient intakes and food consumptions to calorie intake for young and middle-aged men, a study was peformed using the data of Korean National HealthㆍNutrition Survey in 1998. Data from 659 young men (20 to 29 years) and 1,697 middle-aged men (30 to 49 years) were analysed for percent of recommended daily allowance (%RDA), index of nutritional quality (INQ) and nutrient adequacy ratio (NAR) in order to evaluate one's Quality and quantity. We found that energy and nutrient intakes were not significantly different between young and middle-aged groups. Their calorie and nutrient intakes were below their RDA. The most insufficiently consumed nutrient (less than 75% of RDA) was calcium followed by thiamin vitamin A, and calorie. The lacks of calorie, protein, iron, vitamin C, and niacin were more widely-spread in the twenties than the middle-aged. The mean nutrient adequacy ratio of the middle-aged was better than that of the young, even though some INQ were worse. Only for the subjects consumed sufficient energy, there were positive relations between grains, meats or alcoholic drinks to calorie level in middle-aged men but there were positive relations between broiled fish/shell or fats/oils to calorie level in young men. It seemed that both middle-aged men eating alcoholic drinks, broiled meat, and grains and young men eating cake/cookies, rice cake/potato cake, grains, and sugars could consume enough calorie with nutritional imbalance.

철결핍빈혈 영·유아에서 어머니의 이유지식 (A study of mothers knowledge of weaning of infants with iron-deficiency anemia)

  • 목 적 : IDA로 진단된 영유아의 어머니를 대상으로 수유 방법과 이유 진행사항 등의 실태를 조사하였고, 설문지 답변을 통하여 어머니가 가지고 있는 이유식에 대한 지식을 알아보았고, 그들의 이유식 관련 지식과 실제 나타나는 현실과의 차이점을 분석하였다. 방 법 : 2006년 3월부터 2007년 5월까지 인하대병원 외래 또는 입원한 영유아 중 IDA로 진단 받은 6-40개월 환아 111명(남:여=1.6:1)의 어머니를 대상으로 이유 실태 조사 및 이유지식에 관한 설문조사를 하여 다음과 같은 결과를 얻었다. 결 과 : 1) 혈액학적인 분포는 Hb는 $9.5{\pm}1.0g/dL$이었고, Hb 8 g/dL미만이 8.1%이었고, 9 g/dL 미만이 27.9%에 달하였다. MCV 70미만이 92명(82.8%)이었다. IDA가 분명한데도 페리틴 10 ng/dL 이상인 경우가 54명(48.6%)에 달하였다. 2) 이유식을 3개월 또는 그 이전에 이유식을 시작한 경우는 한 예도 없었고, 7개월 이후에 시작한 경우가 33.3%에 달하였다. 이유식의 평균 시작시기는 6.4 개월이었으며, 4-6개월에 시작한 경우(n=74)의 Hb은 $9.6{\pm}1.0g/dL$으로서, 7개월 이후에 시작한 경우(n=37)의 Hb $9.3{\pm}1.0g/dL$에 비하여 유의하게 높았다. 3) 이유식의 시작 시기가 늦을수록 Hb 수치가 낮게 나타났고, 생후 6개월까지 모유수유만 하고 이유식을 시작하지 않은 영유아들의 Hb 수치가 낮게 나타났다(P<0.05). 4) 처음 시도하는 이유식으로는 미음(82.6%), 과일즙(10.8%), 선식(4.5%) 등 순이었고, 주로 먹는 이유식의 종류는 야채죽(38.7%), 미음(36.9%), 과일즙(17.1%)의 순이었다. 주로 사용한 이유식은 집에서 만든 것이 87명(78.3%)이었고, 상품화된 이유식 사용은 7명(6.3%)이었다. 5) 어머니의 이유지식 점수는 대졸이상 그룹과 고졸 그룹 사이에 유의한 차이를 보이지 않았다. 또한 이유지식이 IDA중증도에 미치는 영향도 유의하지 않았다. 6) 이유식을 시도하여 4주 이내에 완성된 경우가 56명(50.4 %) 이었고, 나머지는 1개월 이상 걸렸으며, 3개월 이상 걸린 경우도 22명(20.0%)에 달하였다. 결 론 : 급성 감염이나 발열시에 페리틴 측정만으로 철결핍 및 IDA 진단을 내리기에는 한계가 있으며, 소구성 적혈구증 역시 IDA를 판정하는 중요한 지표가 될 수 있을 것이다. 많은 어머니가 이유지식이 부족하였고, 또한 상당한 이유지식을 가지고 있음에도 그 자녀에서 IDA가 발견되었으므로, 현재와 같은 이유식 방법을 지양하고, 이유식에 관한 교육 및 홍보를 강화한 좀더 개선된 방법이 모색되어야 할 것이다.

일제하(日帝下)(1920년대) 조선인수형인(朝鮮人受刑人)의 식생활상황(食生活狀況)과 그 배경(背景) (Dietary Life Status of Korean Prisoners' and the Background during the Period of Japanese Ruling)

  • The objects of this study are to find out (1) real situation of the food supply in prison under Imperial Government of Japan more cleary (historical meaning) and (2) which might help in understanding wrong present food consumption patterns in Korea which causes environmental as well as health problems. It is generally known that the length of the Japanese occupation for Korea is 36 years. However, it is concluded in this study that it was longer (70 years ; from 1875 to 1945 from when Japanese Army attacked and occupied Yungjongdo and Kanghwado island to e time when they were defeated on World War II.) Korea was annexed by Japan in 1910 then the Imperial Government of Japan dismissed the Korea Army, controlled the Office of Justice and the management of prison by force. Since then about 50% of all land was fell into Japanese Government ownership and 80% of Korean farmers became as tenant. After this change, Korea farmers were forced to pay extremely high rent (up to 80% of its harvest). Forced immigration, low price procurement of grain by Japanese government up to more than 30%of their production, was practiced. Accordingly, the food situation of Korean farmers became miserable, which may caused more violations of Imperial Japanese Law. Malnutrition, epidemic diseases, mortality rate of infants soared and average life expectancy shortened to 20-30 years old. This was the period of World Economic Crises and Food Crises in Japan. It was said then that if one Japanese comes to Korea then 200 Koreans will starved to death. Meanwhile, Proconsul Bureau of Chosun requested to the Department of Medicine, the Imperial University of Kyungsung to survey food supply situation of Koreans in prison throughout Korea. Objectives of the survey then was not only to find out scientifically whether it is agreeable in maintaining prisoner's health and also find out the possibility to save food during food crisis. Survey was started from 1923 and ended in 1945, and it focussed on prisoners in the Seodaemoon Prison. This report is the outcome of the first survey. They concluded that the food supplied was nutritionally (had) no problem, in compare with those of workers in the factory, students in the dormitory in Japan and with those of prisoners in Taiwan, France and Germany. Amount of grain supplied were different according to their work lord and was divided into 9 different levels. Total grain was consisted of 50% millet, 30% soybean and 20% indica rice(variety). However, there were no difference in the amount of supply of side dishes between work groups. For the highest working group, 3280g of boiled grain per day was supplied to make stomach full but as a side dishes, salty fermented bean paste, fermented fish and salty soups, etc. was supplied. Deficiency of animal protein were observed, however, high intake of soybean may possibly caused animal protein deficiency problem. On the contrary, the intake of water soluble vitamins were insufficient but the level of calcium and iron intake seems to be sufficient, however, imbalance of intake of nutrition may caused low absorbtion rate which might caused malnutrition. High intake of dietary fiber and low intake of cholesterol may possibly prohibited them from so called modem disease but may caused the defect in disease resistancy againist epidemics and other traditional disease. Over intake of salt(20-30g per day) was observed. Surveyors who attended in this survey, mentioned that the amount of food intake may nutritionally be sufficient enough but the quality of food(and possibly, the taste of food) were like that of animal feed. For the officials who received this report might consider that considering the war situation and food crisis, the supply situation of food in the prison may considered to be good enough(because they are not starving). But as a Korean who studied this report, one feel extremely pity about those situation because (situation of) those period were very harsh under the Imperial Law and keeping the Law by Koreans were almost impossible, therefore, about one third adult violated the Law and were put into jail. And they were treated like animals.

초등학교 급식의 유형(도시형/농촌형)및 식단의 지방 에너지 비율에 따른 주요 영양소의 공급량 및 급원식품 평가 (Amounts and Food Sources of Nutrients of Elementary School Lunch Menus by the Type of Foodservice and the Percent Energy from Fat)

  • This study was conducted to assess macro- and micronutrient compositions in school lunch menus based on the 'Dietary Guideline' for School Lunches. Ninety-five dieticians in elementary school in Chungbuk were asked to complete a questionnaire on characteristics of the school lunch program(such as type of foodservice, food production system), the information about dietitians(such as age, education, and job history), and the extent of the use of processed foods and frozen foods. Dey were asked to return the questionnaire with the menus including the name and the quantity of every food ingredient offered during a week. A total of 554 lunch menus provided for a week of June 2004 were analyzed. Average nutrient content per meal was as follows; 660kcal, energy; 92.9g, carbohydrate; 26.7g, protein; 21.1g, fat; 287 ${\mu}gRE$, vitamin A: 0.5mg, thiamin; 0.5mg, riboflavin; 29.3mg, vitamin C: 338.2mg, calcium; 3.9mg, iron; and 97mg, cholesterol. Average percentages of energy from carbohydrate, protein and fat was 56.2%, 16.2%, and 29.0%, respectively. The mean nutrient content per meal was higher in rural-type than in urban-type schools. The weekly menu of 40% of the schools provided <55% of energy from carbohydrate, and 39% of the schools offered lunch that provided ${\geq}30%$ of energy from fat. The micronutrient content was generally high when the percent energy from fat was less than 25%. Our results showed that only 52.6% of the schools provided lunches with the energy composition as in the 'Dietary Guideline' of School Lunches. Whole Milk was the major contributor to fat, saturated fatty acid and cholesterol. We suggest that school foodservices start to provide low fat milk instead of whole milk to reduce fat, saturated fatty acid and cholesterol. If low fat milk is served instead of whole milk, percentage of energy from fat and saturated fat can be reduced from 29% to 25%, and ken 10.2% to 9.1%, respectively, and cholesterol could be reduced from 97mg to 79mg. Efforts to meet 'Dietary Guideline' for School Lunches should be made, especially to reduce fat intake, while maintaining essential nutrient intake at sufficient levels for childen.

충남 일부지역 대학생의 식이섭취 및 식습관 실태조사 (A Study on the Nutrient Intake and Food Habits of College Students in Chung-Nam Area)

  • The study examined nutritional conditions to enhance the quality of meals and to provide the basic data for more proper dietary life of college students. Our analysis was based on the body measurement, food intake and food habits for 200 students of Chung-Nam. The nutrient intake was examined using the 24-hour recall method. The data were analyzed by the Computer Aided Nutritional Analysis Program and then the diet quality was estimated using the Mean Adequacy Ratio(MAR), the Nutrient Adequacy Ratio(NAR) and the Index of Nutritional Quality(INQ). The average weight and height of male students were $67.57{\pm}8.66kg,\;174.64{\pm}5.87cm$, while those of female students were $53.46{\pm}6.86kg,\;159.10{\pm}4.19cm$, respectively. The total energy intake of the male students was $3221.71{\pm}200.39kcal$, while that of the female students was $1884.67{\pm}100.93kcal$. The male students are higher than female in % of RDA. The percentages of carbohydrate, protein and lipid for male students were $57.18{\pm}7.83%,\;15.15{\jpm}3.36%\;and\; 27.67{\pm}6.68%$, while those of female students were $58.77{\pm}7.68%,\;15.51{\pm}4.55%\;and\;25.72{\pm}6.20%$, respectively. There was no significant difference in calcium intakes for both groups, however they are less than the RDA. In terms of iron, the male students took $16.98{\pm}5.57mg$ and the female students took $11.35{\pm}2.68mg$, with significant difference (p<0.001). The male and female students showed sufficient intake of vitamins, with significant difference between two groups except for vitamin A. The mean MAR, an index of overall dietary quality, was significantly higher in the male students than female students(p<0.01). Male and female students enjoying two meals or more a day were 59%, and those having enough time for one meal or less a day were 36.5%. Male and female students having no breakfast were 39%. Male and female students having vegetables intake were 53.5%, and having milk or milk products every day were 29.5% of them. In conclusion, nutritional education is recommended to increase the calcium intake and fruit and vegetable consumption for dietary fiber, and to emphasize regularity of meal time.

일부 젊은 성인여자의 Fe, Zn, Cu, Mn, Se, Mo 및 Cr의 식사섭취, 혈청농도 및 소변배설 (Dietary Intakes, Serum Concentrations, and Urinary Excretions of Fe, Zn, Cu, Mn, Se, Mo, and Cr of Korean Young Adult Women)

  • This study was conducted to investigate dietary intakes, serum concentrations, and urinary excretions of iron (Fe), zinc (Zn), copper (Cu), manganese (Mn), selenium (Se), molybdenum (Mo), and chromium (Cr) of Korean young adult women. A total of 19 apparently healthy young adult women aged in their twenties or thirties participated voluntarily. One-tenth of all foods they consumed for 3 consecutive days were collected, all urine excreted for the same 3 days was gathered, and fasting venous blood was withdrawn for the trace mineral analyses. Of the food, blood, and urine samples, the contents of Zn, Cu, Mn, Se, Mo, and Cr were analyzed by inductively coupled plasma-mass spectroscopy (ICP-MS) and that of Fe by inductively coupled plasma-atomic emission spectroscopy (ICP-AES) after wet digestion. The intake of Fe, $6.94{\pm}2.18mg$, did not meet the estimated average requirement (EAR) for Korean women aged 20-29 years old. On the contrary, the intakes of Zn ($9.35{\pm}4.95mg$), Cu ($1.18{\pm}0.26mg$), and Mn ($3.69{\pm}0.69mg$) were sufficient for each respective EAR. However, some of the subjects did not take the EAR for Zn. The Se intake, $41.93{\pm}9.28{\mu}g$, however, was almost similar to the EAR for Se. Although there are no references for Mo and Cr, the intakes of these minerals ($134.0{\pm}49.1\;and\;136.5{\pm}147.9{\mu}g$, respectively) seemed to be excessively sufficient. Serum Fe concentration, $88.7{\pm}36.8{\mu}g/dL$, seemed to be a little bit lower than its reference median but within its normal range. Approximately one-fourth of the subjects were in anemic determined by Hb and Hct and below the deficiency serum level of Fe, $60{\mu}g/dL$. In addition, serum Se concentration, $3.73{\pm}0.60{\mu}g/dL$, was also below its reference median and normal range. However, serum concentrations of Zn ($99.6{\pm}30.6{\mu}g/dL$) and Mo ($0.25{\pm}0.10{\mu}g/dL$) were fairly good compared to each reference median. The status of Cu could be determined as good although its serum concentration ($91.6{\pm}14.6{\mu}g/dL$) was slightly below its reference median. Since there are no decisive reference values, it was not easy to evaluate serum concentrations of Mn ($0.93{\pm}0.85{\mu}g/dL$) and Cr ($8.60{\pm}7.25{\mu}g/dL$). But Mn and Cr status seemed to be adequate. Urinary Fe excretion, $4.48{\pm}1.98{\mu}g/dL$, was pretty much lower than its reference and that of Se, $2.45{\pm}1.17{\mu}g/dL$, was also lower than its average. On the other hand, those of Zn ($42.95{\pm}20.47{\mu}g/dL$) and Cu ($5.68{\pm}1.50{\mu}g/dL$) were flirty good. In case of Mn, urinary excretion, $0.31{\pm}0.09{\mu}g/dL$, was much greater than its reference. Urinary excretions of Mo ($7.48{\pm}2.95{\mu}g/dL$) and Cr ($1.37{\pm}0.41{\mu}g/dL$) were very higher compared to each reference. The results of this study revealed that Korean young adult women were considerably poor in Fe status, a bit inadequate in Se status, partly inadequate in Zn status, and flirty good in Cu, Mn, Mo and Cr status. However, there was a problem of excessive intakes of Mo and Cr. It, therefore, should be concerned to increase the intakes of Fe, Se and Zn but to decrease Mo and Cr consumption for young adult women.

근로자의 건강검진 과정중의 영양상담 실시와 영양교육 프로그램 활용방안에 관한 연구 ( I ) (A Study on the Necessity and Development of Nutritional Consultation during Medical Examination of Employees and of Worksite Nutrition Programs)

  • In Korea, nutritional services have not been included in the periodic medical examinations for employees. Naturally, the practice of individual dietary treatment, or nutrition education, has not yet been implemented, specifically for employees who are expected to encounter health problems. This study was designed to evaluate the necessity and development of nutritional consultations during medical examinations of employees and of worksite nutrition programs. One hundred and five employees from three companies were chosen as subjects for this study. As a result, the average intake of nutrients were found to be sufficient for male employees but female employees were found to be deficient in their intake of total calories, calcium, iron, vitamins A and $B_2$. Also, most of employees did not recognize their own blood cholesterol levels, blood pressure, or blood sugar level. Many employees thought that they needed nutritional consultation during periodic medical examinations and during worksite nutrition programs that also include programs for the whole family. According to the results, clinics for weight control were urgently demanded among several nutrition programs. It should be noted that weight problems, high blood cholesterol levels, diabetes, and other health problems were frequently found in companies whose employees had relatively minimal knowledge about nutrition information. In an effort to prevent disease, the worksite nutrition programs and other nutritional services for employees are critical. This study, therefore, suggests to include nutritional services in medical examinations and to develop efficient worksite nutrition programs.

일부농촌지역(一部農材地域) 노인(老人)들의 영양상태(營養狀態)에 관(關)한 연구(硏究) (A Nutrition Survey of the Rural Elderly in Hwaseung' Kyeonggi Province)

  • 경기도 화성군 팔탄면에 거주(居住)하는 60세(歲)이상 노인(老人) 50명(名)을 대상(對象)으로 영양섭취실태(營養攝取實態), 혈액분석(血液分析), 임상증세(臨床症勢) 등을 조사연구(調査硏究)한 결과는 다음과 같다. 1. 식품섭취실태(食品攝取實態) 곡류(穀類)에서 에너지의 82.1$\sim$84.8%를 섭취(攝取)하고 있으며 일반적으로 식물성식품(植物性食品)에서 거의 모든 영양소(營養素)를 섭취(攝取)하고 있었다. 2. 영양소섭취실태(營養素攝取實態) (1) 60$\sim$64세(歲) 남자(男子)의 경우 에너지 섭취(攝取)는 권장량(勸奬量)의 77.2%이었고 vitamin A 를 제외하고는 모든 영양소가 권장량(勸奬量)에 미달되었다. (2) 65세(歲) 이상의 남자(男子)는 에너지가 권장량(勸將量)의 84.1%를 섭취(攝取)하고 있었고 vitamin A, ascorbic acid를 제외하고는 모두 권장량(勸奬量)에 미달되었다. (3) 60$\sim$64세(歲) 여자(女子)의 경우 남자(男子)들보다 권장량(勸奬量)에 대한 에너지섭취(攝取)가 많으나 vitamin A, ascorbic acid를 제외하고는 모두 권장량(勸奬量)에 미달되었다. (4) 65세(歲) 이상 여자(女子)의 경우에서는 모든 영양소섭취(營養素攝取)가 권장량(勸奬量)에 미달되고 있다. 특히 칼슘섭취(攝取)는 권장량(勸奬量)의 4.6%로서 가장 낮은 비율(比率)을 타나내고 있다. (5) 전체 에너지섭취(攝取)에 대한 탄수화물, 지방, 단백질(蛋白質)의 구성비율(構成比率)은 79 : 10 : 11로서 탄수화물에 의한 에너지섭취(攝取)가 높게 나타났다. 3. 혈액분석(血液分析) Serum cholesterol, triglyceride level, cholesterol level, triglyceride level의 平均値는 각각 212.6mg/100ml, 122.3mg/100ml로서 각각 220mg%, 140mg%를 기준으로 할 때 조사대상자(調査對象者)의 52.0%가 고지혈증(高脂血症)을 나타내었다. 4. Blood pressure Systolic, diastolic blood pressure의 평균치(平均値)는 각각 141.2mmHg 96.4mmHg로서 160/95mmHg 를 준으로 할 때 32%가 고혈압(高血壓)에 해당하였다. 5. 임상증세(臨床症勢) 식욕지수(食慾指數) 및 식사(食事)의 balance에 따른 영양섭취실태(營養攝取實態) (1) 임상증세(臨床症勢) : 임상증세(臨床症勢)를 많이 가진 사람일수록 영양소섭취비율(營養素攝取比率)이 낮았다. (p<0.05) (2) 식욕지수(食慾指數) : 식욕(食慾)이 좋을수록 권장량(勸奬量)에 대한 영양섭취실태비율(營養素攝取比率)이 증가(增加)하였다. (p<0.05) (3) 식사(食事)의 균형도(均衡度) : 식사(食事)의 balance가 높을수록 영양소섭취비율(營養素攝取比率)이 증가(增加)하였다.
