A Bibliographical Study of Korean Fan Fried Side dishes(Jeon) in Korean Literatures before the 1900s (1900년대 이전 문헌에 기록된 전 조리법의 문헌적 고찰)

  • Jeon refers to a type of Korean cuisine used as a side dish, made with various ingredients such as meat, vegetables, or fish, mixed with flour batter and coated with egg batter and then pan-fried on both sides with oil so that heat spreads through them well. The aim of this study was to provide a cornerstone of further research on Korean dietary life, by reviewing types, recipes and names of Jeon recorded in ancient cookbooks (Korean literatures) and by analyzing changes in recipes to make Jeon, which our ancestors used wisely as one type of side dish. Considering developments and changes recorded in old documents, the Jeon recipe appeared relatively later than the recipes for grilling, steaming et al, which had been developed much earlier, and it had not been recorded until the 1600s. Changes of Jeon recipes by time period are as follows. In the 1600s, there were three recipes: frying only with grain batter after preparation of ingredients, frying right after preparation of ingredients, and putting ingredients on already fried watery batter. These three recipes were still used in the 1700s, in addition to a new recipe, in which ingredients were oil-fried to be skewered. Today's recipe in which prepared ingredients are fried after getting coated with flour and egg only appeared in 1800s. This has been the main recipe for Jeon ever since. In that time period, there was more variety of recipes and ingredients than before. For instance, Jeon was used for soup or steamed dishes instead of being served as a dish itself. Buchimgae with mixed ingredients was also considered Jeon. In the 1900s, there appeared more names for Jeon as more sorts of ingredients got used, even though there were no new recipes for Jeon. The above-mentioned historical records show that traditional recipes for Jeon have been applied to various dishes, using diverse ingredients, and it might be a smart solution to today's problematic dietary habits involving excessive intake of nutrients, in that it provides a healthy way to add fat. In the same sense, the recipe for Jeon can play an active role in internationalization of Korean foods, in which healthiness is a main feature. According to ancient documents, the recipes for Jeon were used even for meals that were not side dishes, such as Jun-Gwa (Jung-Gwa), Jun-Yak and fried rice-cake. Also, there were dishes using the same recipes even without carrying the name of Jeon, like Buchim or Jijim. This might be worthy of further examination in culinary science.

Characteristics of White Pigments Used in Jiho Oh and Bonung Gu's Paintings Produced in Modern and Contemporary Period (근·현대 시대 오지호와 구본웅 유화작품에 사용된 백색계 안료의 특성 연구)

  • To investigate the pigments used in modern and contemporary oil paintings, thirty-two paintings by Jiho Oh and Bonung Gu were selected. The white pigment found in the ground and painting layers was identified as lead white (hydrocerussite), zinc white (zinc oxide), titanium white (titanium dioxide in anatase or rutile forms), calcite (calcium carbonate), and barite (barium sulfate). Further, this indicated that pigments differ according to the artist and date of the painting's creation. However, both Oh and Gu used zinc white during the modern and contemporary period, while lead white was replaced by titanium white, barite and calcite. Compared with the overseas studies on pigments and oil paints, the change patterns of pigments were the same with them but the periods of the use were partially different. It seems to be due to the fact that South Korea is linked to the historical background of the art material which was imported from Japan instead of Western countries. Therefore, it is inevitable that any change in the white pigments used for domestic oil paintings occurred at a different time from global transitions. If the results of this study are used in the analysis of art works it is suggested that a database recording such aspects as material properties of oil paints, artistic techniques, and chronology would become important for future conservation science and the study of art history.

A Study on the Publication and Composition of JujaDaejeon Anthologies in the Joseon dynasty (조선시대 『주자대전』 선집서의 간행과 구성에 관한 연구)

  • The purpose of this study is to examine the publication, composition, method of composition, and acceptance patterns of JujaDaejeon anthologies edited by Joseon scholars in the Joseon dynasty. When a large amount of JujaDaejeon was published in the 16th century, anthologies of JujajaDaejeon was compiled, published and learned as a way to understand it. A total of 13 kinds of JujajaDaejeon anthologies were published, including six kinds in the early Joseon period and seven kinds in the late Joseon period. And the composition of main anthologies showed a trend that was supplemented by Jeong Gyeong-se's Jumunjakhae from Lee Hwang's Jujaseojeolyo, and aggregated into Song Si-yeol's Jeoljaktongpyeon(boyu). JujaDaejeon consists of total 3,645 works except for poems. Among them, 1,734 works were selected by 13 anthologies. The theme of a work with a high cumulative number of selections is the virtue and attitude of the king, policy proposals, the appointment of talent, the duty of subjects, criteria for evaluating historical figures, opposition to harmony with Jin and territorial restoration, and academic discussions. This study is expected to be meaningful in the field of the research on the acceptance of the foreign books and acceptance of the Zhu Xi's works in the Joseon dynasty.

The explanations of the circulative system of the self-guarding energy and demon since Jin and Tang Dynasty can be summarized as follows (진당(晋唐) 이후 인신(人神)의 운행과 침약총신의기(鍼藥叢辰宜忌)에 관한 연구(硏究))

  • First, during Jin and Sui dynasty, It is possible that the theory of the contraindications of needling according to whereabouts of the self-guarding energy and demon, affected considerably to the practise of acupuncture and moxibustion, but the detailed situations are unknown. Only, there are some records of the process about circulation of the self-guarding energy and demon by a periodicity of 30 days in the "The prescriptions of Fan-Wang" by Fan-Wang in Jin dynasty and "Hua Tuo Fa" by a nameless person. But the theory differs form the theory of "Huang Di Xia Mo Jing" in some respect. Also, there is the contraindications of needling to abscesses according to whereabouts of the self-guarding energy and demon by every year in the "Liu Juan Zi Gui Yi Fang". but the book has no specific rule in use. Second, during Tang dynasty there were a vasty development on the contraindications of needling according to whereabouts of the self-guarding energy and demon. In the medical works in Tang dynasty, the contents of the contraindications of needling are included in various periodicities and directions such as 12 regions according to the year, 9 regions according to the year, 9 palaces in the body according to the year, whereabouts of the self-guarding energy and demon according the four seasons, every 10 days, every 12 days, every 30 days, and every dozen hours. Also, during Tang dynasty period, the contraindications of needling according to whereabouts of the self-guarding energy and demon were formulated through several adjustments and modifications by many medical scholars. Third, the period between Jin and Tang dynasty, because of historical situations, the documentary data are insufficient in the study of the recommendations and contraindications on the acupuncture, moxibution, and herb medicine according to the specific days and times. And the detailed informations are unknown. Only but once in Tang dynasty the considerable and theoretical adjustments were performed in the "Qian Jin Yao Fang". In Song dynasty, there were also much theoretical fluctuations in the study of the choice of the favorable or the injurious days and times or directions in the acupuncture, moxibustion and the prescription and processing of herbs. Fourth, contraindications on the acupuncture, moxibution, and herb medicine did not include acute and serious disease among the effect province, only include chronic and not serious disease. If the doctors had treated a surgical patients and abscess patients with deeply attached contraindications on the acupuncture, moxibution, and herb medicine, the patients would have became more serious. So the theory was not used for treatment by doctor.

Drought Forecasting Using the Multi Layer Perceptron (MLP) Artificial Neural Network Model (다층 퍼셉트론 인공신경망 모형을 이용한 가뭄예측)

  • In order to minimize the damages caused by long-term drought, appropriate drought management plans of the basin should be established with the drought forecasting technology. Further, in order to build reasonable adaptive measurement for future drought, the duration and severity of drought must be predicted quantitatively in advance. Thus, this study, attempts to forecast drought in Korea by using an Artificial Neural Network Model, and drought index, which are the representative statistical approach most frequently used for hydrological time series forecasting. SPI (Standardized Precipitation Index) for major weather stations in Korea, estimated using observed historical precipitation, was used as input variables to the MLP (Multi Layer Perceptron) Neural Network model. Data set from 1976 to 2000 was selected as the training period for the parameter calibration and data from 2001 to 2010 was set as the validation period for the drought forecast. The optimal model for drought forecast determined by training process was applied to drought forecast using SPI (3), SPI (6) and SPI (12) over different forecasting lead time (1 to 6 months). Drought forecast with SPI (3) shows good result only in case of 1 month forecast lead time, SPI (6) shows good accordance with observed data for 1-3 months forecast lead time and SPI (12) shows relatively good results in case of up to 1~5 months forecast lead time. The analysis of this study shows that SPI (3) can be used for only 1-month short-term drought forecast. SPI (6) and SPI (12) have advantage over long-term drought forecast for 3~5 months lead time.

Analysis of Sea Surface Temperature Simulation in the Northwestern Pacific and the East Asian Marginal Seas using HadGEM2-AO (HadGEM2-AO를 이용한 북서태평양-동아시아 해역의 표층 수온 모의 특성 분석)

  • In this study, we evaluated the model performance with respect to Sea Surface Temperature (SST) and Net Heat Flux (NHF) by considering the characteristics of seasonal temperature variation and contributing factors and by analyzing heat budget terms in the Northwestern Pacific and East Asian Marginal Seas ($110^{\circ}E-160^{\circ}E$, $15^{\circ}N-60^{\circ}N$) using the HadGEM2-AO historical run. Annual mean SST of the HadGEM2-AO is about $0.065^{\circ}C$ higher than observations (EN3_v2a) from 1950 to 2000. Since 1960, the model has simulated well the long-term variation of SST and the increasing rate of SST in the model ($0.014^{\circ}C/year$) is comparable with observations ($0.013^{\circ}C/year$). Heat loss from the ocean to the atmosphere was simulated slightly higher in the HadGEM2-AO than that in the reanalysis data on the East Asian Marginal Seas and the Kuroshio region. We investigated the causes of temperature variation by calculating the heat budget equation in the two representative regions. In the central part of the Kuroshio axis ($125^{\circ}E-130^{\circ}E$, $25^{\circ}N-30^{\circ}N$: Region A), both heat loss in the upper mixed layer by surface heat flux and vertical heat advection mainly cause the decrease of heat storage in autumn and winter. Release of latent heat flux through the heat convergence brought about by the Kuroshio contributes to the large surface net heat flux. Positive heat storage rate is mainly determined by horizontal heat advection from March to April and surface net heat flux from May to July. In the central part of the subtropical gyre ($155^{\circ}E-160^{\circ}E$, $22^{\circ}N-27^{\circ}N$: Region B), unlike Region A, vertical heat advection predominantly causes the decrease of heat storage in autumn and winter. In spring and summer, surface heat flux contributes to the increase of heat storage in Region B and the period is two times longer than the period for Region A. In this season, shoaling of the mixed layer depth plays an important role in the increase of SST.

Media Role in the Transition and Consolidation Period of Democracy: A Comparative Study of Korea and Spain (민주주의의 이행 및 공고화 과정에서 미디어의 역할: 한국과 스페인의 비교)

  • This article presents a historical account of media role in the transition and consolidation period of democracy. Despite the assumption that media plays a important role in the construction of democracy, it is less clear how the media can affect the process of political change itself. This article seeks to answer some of these question, based on the Mill's macro-social comparative 'method of difference' of Korea and Spain. It is widely agreed that both states achieve democracy through transaction from above(pacts). Media role, however, differs significantly in accordance with authoritarian legacies and civic representativeness of the pacts. Whereas Korean dailies is deepening given market oligopoly and prior practices after democratization, Spain dailies market entirely changed in both structural and spiritual respects. As a result, Korean dailies substantially lacks in civic representativeness as before, contrary to Spain. Spain television settled a sort of the external pluralism. Korean television is pursuing the BBC type of internal pluralism. In Korea, television is more commercial than Spain. Consequently, Spain media serve the consolidation of democracy more than Korea on the whole.

The Locational Characteristics of Cultural Sites Found in South Korea (남한에 분포하는 유적의 분포 특성)

  • Cultural remains distribution maps have been published in 172 volumes of books, and the information about the remains in South Korea is also disclosed via the Internet to those who are interested in conducting archeological examinations or to those who are planning the national land use for various purposes. The purpose of this study is to statistically review the locational characteristics of the sites appearing in cultural sites map, and to determine the locational characteristics of these remains or sites. The location of sites was statistically analyzed based on the point density function of geographic information system of 87,859 sites found in cultural site maps. The results of this study show that the sites found in South Korea are mainly distributed around historical cities and the distributions are closely related to their proximity to rivers. Given that the period of time and type is very important to archeological studies, the results of this study indicate that detailed period of time and type may be necessary for further analysis. This study has highlighted that the research into the spatial analysis and interpretation of cultural heritage sites can contribute to the field of archeological studies.

A Bibliographical Study on the Buddhist Scriptures Published in Temples Located in Hwanghae-do Province (황해도 사찰 간행불서의 서지적 연구)

  • This study analyzes periodic phenomena on publication and characteristics of Buddhist scriptures engraved on woodblock in temples located in Hwanghae Province during the Joseon Dynasty period in bibliographic approach. There are total 85 Buddhist scriptures published in Hwanghae Province, 5 scriptures among them including Yonggamsugyeong appear to be engraved on woodblock only in temples in Hwanghae Province. They, published in 64 printings during the early days of the Joseon Dynasty, occupy 75% of total Buddhist scriptures, and are analyzed to be intensively published with the support of royal family members such as Queen Munjeong in the reign of King Myeongjong. However, as the publication displayed a sharply declining tendency in the late Joseon period after the Japanese invasion, it is understood to be identical with historical fact that the people's livelihood in Hwanghae Province closed to ruin through invasions from Japan and Manchuria. In addition, the analysis on characteristics of these Buddhist scriptures by subject indicates that over 80% of them are generally sacred books and dogmas. In fact, woodblock engraving works in temples emphasize on the duty of an engraver, and many engravers are investigated that they engraved only 2 to 3 Buddhist scriptures in temples located in Hwanghae Province. Doseong and Suyeon can be regarded as remarkable itinerant monks as they were appeared to engrave Buddhist scriptures in not only Hwanghae Province and also other regions by moving from one place to another. This study is expected to be meaningful as a paper that can be used on future studies to compare Buddhist scriptures engraved on woodblock in other regions in North Korea.

The Periodical Change and Regional Distribution Characteristics of Regional Speciality Products in Chungcheongbuk-do (충청북도 지역특산물의 시기별 변화와 지역적 분포 특성)

  • Regional specialty products should be representative of the regional characteristics for a long time, this was not done for geographical research. This study examines current the regional specialty products on 12 web-site of the cities counties in 2013 and the products registered on the Tosan(土産) category from old Jiriji(古地理誌) in Chungcheongbuk-do. Futhermore, the study analyzed periodical change and regional distribution characteristics of regional specialty products. Major findings are as Follows. First, current the regional specialty products types are 4 products(crops, marine products, forest products, livestock products) and 3 manufactures (processed food, handicraft, cosmetic products). Among the regional specialty products, various crops and processed food were distributed in all the regions. Second, the traditional products types are 5 products(crops, marine products, forest products, livestock products, mineral products) and 1 manufactures(handicraft) that registered on the old Jiriji in the Joseon Dynasty period. The jujube, ginseng and honey were cultivated in the most regions. Third, the traditional products types are 4 products except for marine products and 1 manufactures(handicraft) that registered on the old Jiriji in the period of Japanese colonial rule. Its total item numbers of the regional specialty products are greatly decreased, but items of handicraft relatively increased in the Danyang and Goesan regions. Finally, regional analyzing of current local items shows that there are only a few regional specialty products(18 items) that have historical traditionality.
