대학급식 영양정보 표시에 관한 대학생의 인식 조사 (College Students' Perception toward Nutrition Information at University Dining Services)

  • The purpose of menu labeling is to offer eating environments with improved healthy food selection. Similar to U.S. policies, the Korea government enforces the Special Act on Children's Food Safety and Nutrition for provision of nutritional labeling in chain restaurants. Considering the importance of dining services for college students and their interests in health, this study examined college students' perception toward nutrition information provided by university dining services. A survey was conducted for university students. Students' recognition of nutrition information for university dining services was lower than recognition of nutrition information for commercial food services. The most common reason cited by students for considering nutrition information of university dining services was customer rights, followed by health maintenance. Students showed a high tendency to use nutrition information of university dining services. College students' motivation for knowing nutrition information of university dining services included health and value interests. Students' knowledge of nutrition had a positive effect on their intention to know nutrition information. The findings of this study offer university administrators and contract food service management companies directions for developing menu labeling for university dining services.

전북지역 대학생들의 식생활 습관과 건강 관련 식행동에 관한 연구 (A Study on the Eating Habits and Healthy Eating Behaviors of the University Students in Jeonbuk Area)

  • The purpose of this study was to investigate eating habits, healthy eating behaviors, food preference etc. of university students for them to enjoy delightful and healthy campus life and offer preliminary data to the related educational facilities and households for them to make use of the data for making out a menu. We conducted survey aiming at 4-year-course students in Jeonbuk area and survey period was from May 6th of 2013 to May 24th of 2013. The result are as followings. First, food habit evaluation with 10 questions shows that they are inclined to have refreshments, water, vegetables, fruits, grains and protein food often and also eat food blandly. So, we consider this finding is generally positive. Second, through the research on their healthy eating behaviors, we learned their interests in healthy food is average and their selection criteria for healthy food is nutrition value. Information sources for healthy food are mainly TV or mass media and good healthy food in their opinion is Korean food. Third, the findings of food preference show university students like the white rice most but don't like the rice with beans most in terms of rice type. We also found their favorite food is fried rice, favorite noodle is spaghetti, favorite soups are thick beef soups, favorite broth is potato and pork rib broth, favorite stew is kimchi stew, favorite steamed dish is braised short ribs and favorite meat is pork.

  • The purpose of this study was to explore the marketability by developing a fresh HMR product for improving hyperlipidemia and dieting for elderly chronic disease patients and young people pursuing healthy beauty. The diet menu increased the ratio of fresh vegetables and mushrooms, and chicken breast and cheese were used as protein sources. By using whole grains, the supply of vitamins and minerals was strengthened while minimizing calories. Regarding the recipe, the diet menu was mainly prepared in the form of salads, risotto, and pasta. In the hyperlipidemia improvement menu, the proportion of fresh vegetables was increased, and as protein sources, pork shank, tofu, seafood, etc. with minimal fat were used. As a carbohydrate source, whole grains were mainly used to minimize calories while strengthening the supply of vitamins and minerals. In the recipe, it was prepared in the form of steamed or bibim-myeon, and it was also produced in a form such as paella. As a result, the developed menu was analyzed as low-calorie and evenly comprised of essential nutrients, which can satisfy palatability and nutrition.

영양균형식단 작성을 위한 식품교환표와 식사구성안 개발 (Development of a Food Exchange Table and Food Pattern for Nutritionally Balanced Menu Planning)

  • Objectives: The purpose of this study was to develop new meal planning tools for a nutritionally balanced diet. Methods: Based on the food exchange list for diabetes, we adjusted the food group classification system to reflect the suggested nutritional factors for chronic disease prevention and health promotion. We developed a nutritionally balanced dietary profile for adults and compared it with the dietary reference intakes for Koreans (KDRIs) and the food pattern recommended by the Korean Diabetes Association. Results: The newly developed menu planning tools are the LOHAS food exchange table and the LOHAS food pattern. Our recommended daily 1,800 kcal dietary composition for adults is as follows: The carbohydrate food group consists of 4 'whole grains', 3 'refined grains', 2 'sugars', 9 'vegetables', 3 'starchy vegetables', 2 'fruits' and 1 'high sugar fruits'. The protein food group includes 3 'plant protein foods', 3 'animal protein foods (low-fat)', and 1 'animal protein foods (high-fat)'. The fat food group consists of 2 'oils and nuts' and 1 'solid fats'. The total number of calories is estimated at 1,840 kcal and the energy ratio is 62% carbohydrate, 18% protein, 20% fat, 6.8% saturated fat and 13.2% sugars. Using the LOHAS food exchange table, it is possible to estimate values of saturated fat, unsaturated fat, dietary fiber, and sugars besides carbohydrate, protein and fat. It is also possible to compose a dietary design considering carbohydrate, sugars, saturated fat and dietary fiber. The LOHAS food pattern provides benefits for the management of both institutional food services and individual meals, as it can help reduce the levels of saturated fat and sugar intake and help develop healthy meals rich in unsaturated fats and dietary fiber. Conclusions: The LOHAS food exchange table and LOHAS food pattern are expected to be practical tools for designing and evaluating nutritionally balanced diets.

전국 주요 사찰 제공 식단의 영양적 평가 (Nutritional Evaluation of Served Menu in Korean Temples)

  • This study was performed to evaluate served menu in Korean temples. Among available temples in the nation, 34 temples were carefully selected considering location and the gender characteristics. A five consecutive day menu was collected to analyse by interview between Jan 2004 and Aug 2004. Mean energy content of menu was 1633.8 kcal, with 67.3% of energy supplied by carbohydrate, 14.8% by protein and 17.9% by fat. Beans and bean products were the major contributing dishes for most nutrients. Contents of most nutrients except energy, protein and vitamin B were higher than RDA. Nutrient adequacy ratio (NAR) were 0.9-1.0 and mean adequacy ratio (MAR) was 0.9 for temples. Total number of dishes from menu was 7.3. Dietary variety score (DVS) was 26.4 and buddhist monk temples offered more diverse foods than buddhist nun temples. KDQI (Korean diet Quality Index), overall diet quality index were 0.67 and those of buddhist nun temples were better than those of buddhist monk temples. From the result of this study it was concluded that the temple diet is nutritionally well balanced, rich in dietary fiber and low in cholesterol. So it can be a healthy diet for the modern person. This is the very first study attempting the nationwide investigation of temple diet in Korea. It will be used as fundamental data to improve quality of diet to prevent modern chronic disease.

영양분석 API를 이용한 메뉴 라벨링 시스템 (MLS) 개발 (Development of Menu Labeling System (MLS) Using Nutri-API (Nutrition Analysis Application Programming Interface))

  • 본 논문에서는 영양분석 소프트웨어 인터페이스인 Nutri-API (Application Programming Interface)를 활용하여 영양표시를 위한 메뉴 라벨링 시스템을 개발하였다. 영양표시에 표시되는 각 항목들은 영양성분이 추가 또는 변경이 될 수 있도록 유연한 설계를 하였으며 본 메뉴 라벨링 시스템은 다양한 변경사항들을 사용자가 직접 수정 할 수 있도록 설계되었다. 또한, 식품단위의 정보제공뿐만 아니라, 음식 또는 식단의 영양표시 정보도 제공한다. 주요 내용을 요약 하면 다음과 같다. 식품 및 메뉴 검색 메뉴 라벨링 시스템의 식품 및 메뉴의 검색은 유의어 검색 기능과 의미 정보 및 분류 정보를 통한 검색 기능을 가지고 있으며 영양소를 검색할 수 있으며 영양소 함량 정보가 없는 경우에는 missing 표시 (-)을 하였다. 메뉴작성 및 식품관리 메뉴 라벨링 시스템은 기존 데이터베이스화된 기본 식품만을 사용하여 영양 표시에 사용하는 것뿐만 아니라, 식품의 조합인 메뉴를 포함하여 정보를 제공하였으며 Nutri-API의 NutriMenu 기능을 확장하여 메뉴 작성 기능과 추가 및 관리기능을 추가하였다. 메뉴 라벨링 시스템에서 제공되는 정보로는 메뉴설명, 메뉴이미지, 재료중량, 열량 등의 영양소, 3대 영양소비율과 원그래프 제공뿐만 아니라, 메뉴의 구성분류에 따른 영양소 정보도 제시하고 있다. 메뉴 라벨링을 위한 영양소 정보로는 농촌진흥청 모든 영양소를 포함하여 당류, 포화지방, 트랜스지방, 콜레스테롤 등이 있다. 그리고 메뉴의 영양섭취기준과 영양소기준치에 대한 비율 (%) 정보도 제공하며, 동시에 메뉴의 그리고 메뉴의 구성분류의 식품이나 중량 등을 입력/수정/변경 할 수 있다. 식품 추가 기능 본 시스템에서는 기본으로 제공되는 식품 정보 외에 시스템에서 제공하고 있지 않은 식품 또는 식품의 정보를 수정을 위해 식품 추가 기능을 제공하고 있으므로 새로운 식품을 추가하여 식품설명, 사진과 영양소 정보를 입력하여 저장할 수 있다. 기본 제공되는 식품과 구별하기 위해서 사용자 식품으로 별도 저장 및 관리한다. 메뉴 라벨링 정보 메뉴 라벨링 정보에서는 메뉴의 식품재료 중량뿐만 아니라 메뉴의 조리 후 중량, 1회 제공량 (portion size), 총 제공량 (total serving size) 등의 정보를 제공하도록 하였다. 메뉴 라벨링을 위해 추가된 식품 및 메뉴는 라벨링 항목에서 추가 및 수정이 가능하다. 메뉴 라벨링에서 추가 및 수정된 정보는 기본 메뉴 정보와는 별도로 저장 및 관리한다. 메뉴 라벨링 형식으로는 사용자는 표준형, 가로형, 선형, 쌍방형, 영양성분 전면표시형으로 출력할 수 있으며 식당의 메뉴판 영양표시형태도 출력할 수 있다. 메뉴 및 라벨링 관리 사용자가 작성한 메뉴 및 라벨링 정보의 지속적인 관리를 위해 별도의 관리기능을 제공하고 있어서 메뉴의 히스토리뿐만 아니라 이미 작성된 메뉴를 복사하여 새로운 메뉴를 작성하거나, 새로운 메뉴를 구성하는 기본 메뉴로 사용할 수 있다.

한식 레스토랑 메뉴품질속성이 재방문의도에 미치는 영향에 관한 연구 - 프랑스 파리 지역 한국인 유학생을 대상으로 - (A study in the Effects on the Quality Attributes of Korean Restaurants menu on Revisit Intention - Centering on Korean Students who are Studying in Paris, France -)

  • 본 연구는 프랑스 현지 유학생들을 대상으로 한식레스토랑의 메뉴품질속성에 따른 중요도와 만족도의 차이와 이를 바탕으로 IPA 분석을 실시하여 한식레스토랑 메뉴품질속성의 강점, 약점, 저 순위, 과잉에 대해 실증분석하고 한식레스토랑의 메뉴품질속성이 재방문의도에 미치는 영향에 대해 실증분석 하였다. IPA 분석결과 약점으로 음식의 시각적 요소, 강점으로 메뉴의 가격, 메뉴의 온도, 음식의 맛, 음식의 양, 음식의 청결성, 음식의 신선도, 요리의 향기, 저 우선순위로 메뉴의 계절성, 메뉴의 정통성, 메뉴의 독창성, 음식의 크기, 요리의 색깔, 요리의 질감, 요리에 대한 설명, 건강식의 유무, 재료와 조리법, 음식용기의 적절성, 기존음식과의 차별성으로 나타났다. 메뉴품질에 있어 메뉴의 속성, 메뉴의 관능, 메뉴의 성격, 메뉴의 설명에 대해 높게 지각할수록 재방문 의도가 높아진다고 볼 수 있다. 그리고 메뉴품질 속성이 재방문의도에 미치는 영향력의 차이를 분석한 결과 메뉴의 설명, 메뉴의 관능, 메뉴의 성격, 메뉴의 속성 순으로 재방문의도에 영향을 미치는 것으로 나타났다. 한국 외식기업이 현지 메뉴를 파악해서 마케팅 전략 수립에 유용한 자료를 제공하여 한식 세계화에 실무적인 시사점을 제공할 수 있을 것으로 사료된다.

레스토랑 이용자들의 건강자각도에 따른 외식 태도 (Healthy Dining Out Attitude of Restaurant Diners by Self-Rated Health Status)

  • The objective of this study was to compare the healthy dining out attitude of restaurant diners by self-rated health status. Using healthy dining attitude and behavior questionnaire and a single question describing self-rated health status, the needs and importance of healthy dining out was detected. Mean age of the 182 respondents was 38.9${\pm}$11.37 years old and 37.4% of the respondents answered their mean monthly income was over 6,000,000won showing the subjects belonged in high income diners. The needs of healthy dining measured by five scales and offering healthy menus(3.80), labeling foods about original country(3.79), using environmentally friendly foodstuffs(3.71) and labeling nutrients on menu board(3.62) show higher score than others. A total of 76.4% of the respondents assessed their health status as 'good-rated Health' and 23.6% was 'poor-rated health'. There was no difference in frequency of eating out by self-perception of health status but, the 'poor-rated health' group need more nutrition information in restaurant specially for calorie(p<0.05), cholesterol(p<0.05), fiber(p<0.05), functional nutrients(p<0.001) showing significant differences comparing to 'good-rated health' group. In good-rated health group, selection of Korean cuisine for eating out was more frequent than the poor. The results shows the needs of healthy dining can be varied by diner's health status and therefore restaurateur should focus on understanding of the needs of diners with various health status.

대도시 젊은이들의 라이프스타일 유형별 외식서비스 인카운터 중요 속성 연구 (The Important Attributes of Foodservice Encounters According to Life-style Types as Offered by Young Metropolitan Customers)

  • Life-style factors often include social relationships as well as consumption, entertainment and dress patterns. They also typically reflect an individual's attitudes, values and worldview. Life-style types have become and an important factor for segmenting customer markets ever since significant relationships between life-style and customers' behavior was proven. This study examined the relationships between the life-styles of young customers' and the important attributes of foodservice encounters. Factors analysis with VARIMAX and K-means cluster analysis were conducted to group the subjects by life-style. According to the factors analysis, four underlying dimensions were identified and labeled: (1) 'actively fashioned', (2) 'luxury picky', (3) 'healthy toward', and (4) 'utilitarian leisure'. Based on the factor scores derived from the factors analysis, the K-means cluster analysis classified three groups as statistically significant using ANOVA(p<0.05). The overall mean score for the 3rd cluster 'trendy-active picky' was higher than the other two clusters, and represented very picky attitudes about foodservice attributes. The 3rd cluster also seemed to apply higher standards to all of the foodservice attributes. By order of importance, the most important attributes of the 2nd cluster 'pursue-utilitarian leisure' were food serving time, automation systems, server's hygienes, employee kindness, time in line, and menu variety. In spite of low concerns for the life-style attributes, the first cluster 'passively indifferent' recognized menu variety, food sanitation, food serving time, server's hygiene, menu price, air circulation, and room temperature as important. These results suggest that young diners in Korea could be classified by their diverse life-styles that are represented as trendy, utilitarian, and indifferent and will hopefully contribute to the foodservice industry's ability to segment customer characteristics by different life-styles in Korea.

지역 급식소 성격에 따른 이용 노인의 영양소 섭취수준 및 급식 만족도 비교 : 유료 및 무료 급식 (Comparison of Nutrient Intake and Meal Service Satisfaction of Elderly at the Local Community Centers : Free and Reduced Meal Service Charge)

  • The purpose of this study was to compare the nutrient intake and foodservice satisfaction of homebound elderly had lunch at the local community centers by the difference of meal service charge. Two local community center with cons-regate meal service program located in Daegu and Gyongsan were selected; one with free of meal service charge (F), and the other with 500-1,000 won for meal service charge (K), According to the dietary assessment, energy and nutrient intakes of the 156 elderly subjects were as a whole under the Korean Recommended Dietary Allowance (RDA). Elderly or F service conte. showed higher $\%$ RDA for the selected nutrients and MAR (mean adequacy ratio) than those of K service center (p<0.001). Participants were satisfied with most of the congregation meal service from community conte. with different reasons such as 'tasty (K service center)' and 'free of charge (F service center)'. In conclusion, elderly had the lunch at the community center with free of meal service charge was poor nutrition status and lower socioeconomic level than the other type of community center in this area. Therefore, healthy menu for elderly should be developed and managed by professional dietitian, as well as its impact on health status of this group, and congregate meal service system might be extended to the homebound elderly of whole community with free of charge.
