  • A rapid increase in urbanization and industrialization brings about a change in economic status which results in considerable changes in lifestyle including food habits and disease and mortality patterns. The purpose of the present study was to investigate recent food habit changes if any, reasons for food habit change, current food consumption patterns, and breakfast practices among urban adults with middle and upper income levels. Three hundred men and women, aged 20-60 years, were randomly selected and interviewed individually by trained interviewers. Among the twenty food groups studied, subjects reported that, compared to two years ago, they are now eating more fast foods, meats, fish, vegetables and fruits, and less rice, noodles, pastries, and salt. The changes in fast foods, fruits, and rice consumption patterns varied significantly between age, sex, income level, and BMI groups. The two most primary reasons for food habit changes were 'for my own health' and 'for my family's health', which shows that health seems to be the major concern in changing food habits. Among meals, the breakfast meal was rated as the most important one, and was not affected by the sociodemographic variables. However, the average rate of skipping breakfast was found to be as high as 33% with a greater rate in younger age groups. The rats of breakfast skipping was found to vary between different income, education, and BMI groups. Among the subjects who eat breakfast meals daily, a traditional Korean breakfast of rice and soup was found to be still a predominant choice, although younger age groups, upper income groups, and people with more education choice, although younger age groups, upper income groups, and people with more education tended to eat a western-style breakfast more frequently. These findings are applicable at the planning and implementation stages of various nutritional improvement projects as a part of the National health Promotion Law.

  • Children are an important target of health promotion activities due to the life long effects. Therefore, the purpose of this study was to evaluate a nutrition education program offered to primary school students by community health centers. Eight hundred and twenty-six children from 4 primary schools in Seoul voluntarily attended the program. Teachers taught the classes with materials that were provided to them. The subjects were asked to fill out a questionnaire before and then after completion of the program. The data were analysed by SPSS. The results showed that there were significant positive differences in the children's nutrition knowledge scores after the program (p<0.001). In terms of dietary attitude, the rate of 'yes' responses, as a desirable answer to many questions, had increased (p<0.001); however, this positive change in scores was not statistically significant. For dietary habit changes, it was shown that the proportion of children regularly eating breakfast five days a week had improved to 3.3%. And the proportion of children eating fast foods and instant foods decreased. There was no change in fruit intake, but vegetable intake increased (p<0.001). However, the children's overall dietary habit scores did not show a significant change. In the evaluation of the program, 52.3% of the subjects answered that was helpful, and they viewed 'fast food' as the most interesting topic, whereas 'nutrition labeling' was the most difficult topic in the program. The program's effectiveness was positive in terms of enhancing the 'nutrition knowledge', 'dietary attitudes', and 'dietary habits' of the children. Therefore, the above results indicate that this type of program, provided by community health centers, was effective for nutrition education.

  • The purpose of this study was to measure using a six-step solution for taste recognition threshold and using a Wet-Test for salivary flow amount of the adults who reside in Daegu area and are more than their 40's old to find out the relationship between DMFT index and OHIP-14. The study result revealed that the practice of oral health gave an effect to taste recognition threshold, dietary habit gave an effect to salivary flow amount, and sweet and sour taste of taste recognition threshold and salivary flow amount gave effects to the DMFT index. Therefore, it was found that the person with good practice of oral health and dietary habit had good taste, salivary flow amount and DMFT index. According to this result, it is necessary to increase the practice of oral health, increase the sensitivity to taste recognition threshold, improve dietary habit, increase salivary flow amount and decrease DMFT index in order to improve OHIP-14. Dietary habit education has been performed without the evaluation on the individual's level of taste recognition threshold. Therefore, it is necessary to develop the education program to measure and notify the taste recognition threshold in the oral health education so that individual can adjust it by himself.

Especially, schoolchildren period, an important lifetime to develop both physically and mentally needs to be helpful to promote the growth of the body and keep well-balanced mind through balanced and nourishing diet. The purpose of this study was to develop nutrition education contents for discretional activities in elementary school. The present educational contents about food and nutrition was analysed in the curriculum of elementary school. The results showed the Korean language(20.8%) included an highest ratio in educational contents about food and nutrition, the next was the courses of physical education and wise life(18.1%, each). As the educational contents about food and nutrition in the textbook were dealt with food information (20.8%), Health․Disease(15.3%), and correct dietary habits by order. We could found more contents in the text for the higher classes than for the lower classes. But the most of the contents appeared lack of structure, profundity and continuity for the systematic nutrition education in its entirety. The developed nutrition education contents for discretional activities in this study consist of korean dinning cultures and foreign dinning cultures, correct dinning etiquette, how to choose healthy food, personal sanitary and health, nutrients and food tower, and problem for children’s nutrition as main subject. This six main subjects were composed of 23 subtitles. The teaching manual consisted of the educational goal, background, teaching plan and effect-evaluation plan, and the notice point for the effective lesson. The teaching plan was made for 30 hours and consisted of cooking course, singing/making lyrics, games in nutrition, debate on dietary habit, and role play etc which are oriented to practical learning. We intended to develop this program that attempts to improve in dietary habit of schoolchildren. It is because once formed an adults dietary habit is difficult to change. Schoolchildren’s period is the best adjustable stage. Therefore, nutrition education in elementary stage can change to dietary habit and build the awareness of health.

Food habit, eating behavior and health status were investigated by using a questionnaire answered by the mothers of 312 children aged 6 to 7 years old who lived in Uiwang. The average height, weight, Kaup index were 115.08cm, 21.41 kg, 16.13, respectively, for boys 111.37 cm, 19.93 kg, 15.72 for girls. Results showed that 72.16% of subjects skipped the breakfast meal. One of the main reason fur skipping breakfast was 'no appetite'(53.14%). It was found that 49.67% of the subjects belonged to 'good' in health status. The eating behavior of 'watching TV or playing a toy during meal' and 'can eat the rice by oneself were significantly higher score in girls than in boys(p<0.05). Food attention of the parents for the health of children was the highest in 'keep regular meals a day'(92.65%). Health status showed significantly negative correlations with kaup index and eating behavio(p<0.001). Kaup index(p<0.05) and health attention(p<0.001) were positively related with eating behavior. Based on this study, nutritional education program for preschool children would be required for the dietetics teacher to guide the children and more attention should be paid to the nutritional education of food habits in this age group and their mothers.
