Vitamin D: Hormone-like nutrient (비타민 D: 호르몬 같은 영양소)

  • Purpose: The aim of this review is to comprehensively summarize the definition of vitamin D as a nutrient as well as a hormone-like molecule and its new function in prevention of various chronic diseases. Methods: The review was written by the method for systematic reivew writing. Literatures from the various sources, including research articles, book chapters, proceedings and electronic materials as appropriate, were screened first and then reviewed and analyzed for the review. Results: Vitamin D was originally considered as the essential nutrient as a vital carbon compound and was first discovered among children with osteomalacia, also known as ricket disease, characterized by poorly calcified bones which were easily bent rather than broken. Since that time, vitamin D has been known as the key nutrient to improve bone health. However, recently emerging study findings have shown that vitamin D acts as the hormone-like nutrient since it is synthesized like a hormone when our body needs and this particular vitamin also acts like a cell signaling ligand which regulates gene expression of various proteins. So far positive effects of vitamin D have been suggested for the action of anticancer, anti-immune function, and anti-cardiovascular disease, as well as antidiabetic function, etc. In this review, the definition for vitamin D as a nutrient vitamin as well as a hormone-like molecule, cell signaling mechanism of vitamin D, and finally the potential role for the prevention of chronic diseases are discussed. Conclusion: Vitamin D is now being considered as a vital nutrient as a vitamin and as a potential substance for prevention of several chronic diseases.

Effects of Chongkukjang Intake on Lipid Metabolism and Liver Function in Ethanol Consumed Rats (청국장을 급여한 식이가 알코올 섭취쥐의 지질대사 및 간 기능개선에 미치는 영향)

  • This study was performed to investigate the effect of chongkukjang intake on lipid metabolism and liver function in ethanol consumed rats. Twenty one Sprague-Dawley male rats aging 4 weeks old were used as experimental animals, which were divided into three dietary groups; casein diet(CA), soybean diet(SB) and chongkukjang diet(CJ). Alcohol was consumed with water as 25%(v/v) ethanol solution. After 4 weeks of experimental period, rats were sacrificed to get blood and liver samples for analysis of lipids, lipid peroxides, antioxidative enzymes and biochemical indices of liver function. The mean body weight, food intake and liver index were not significantly different among three groups. Serum level of total lipid, triglyceride and total cholesterol of chongkukjang diet group was the lowest among three groups although the difference was not significant. HDL-cholesterol level was significantly(p<0.05) higher in chongkukjang diet group than that of casein diet group. LDL-cholesterol level of chongkukjang and soybean diet group was significantly(p<0.05) lower than that of casein diet group respectively. Liver TBARS of chongkukjang and soybean diet group was significantly(p<0.05) lower than that of casein diet group respectively. The superoxide dismutase activity of chongkukjang diet group was significantly(p<0.05) higher than that of casein diet group. Catalase activity was not significantly different among three groups. As indices of liver function, glutamic oxaloacetic transminase(GOT), glutamic pyruvic transminase(GPT), $\gamma$-glutamyl transpeptidase($\gamma$-GTP) and lactate dehydrogenase(LDH) were not significantly different among three groups. Serum alcohol concentration and activities of alcohol dehydrogenase(ADH) and aldehyde dehydrogenase(ALDH) were not significantly different among three groups. The chongkukjang diet seems to give a beneficial effect for improving lipid metabolism by increasing HDL-cholesterol level and SOD activity while reducing liver TBARS level. However, effect on liver function has to be investigated further.

  • The purpose of this study was to explore the health concept of college women and their pattern of health behavior, The research was a descriptive method using a self-report questionaire which include open-ended questions. The subjects were 195 college women ages from 19 to 25 years. The results of this study were as follows : 1. Perceived health concepts by college women were physical well-being, powerfulness, ability of role performance, ability of social adaptation. emotional stability, satisfactory life, harmony. 2. Health behaviors cleanliness by college women were : taking food selectively, maintaining cleanliness, making an effort to be healthy, avoiding stimulents. living positively, relaxing physically, endeavoring to maintain physical function.

Current Status and Regulation Issues of the Functional Dairy Products in European Countries and the United States of America (기능성 유제품의 생산 현황 및 관리제도 - 미국.유럽을 중심으로 -)

  • This work has been conducted as a part to set up the regulations and the scientific evaluation systems for the functional dairy products with health claims in Korea. Toward this end, current regulations, requirements, and all kinds of provisions related to the functional dairy products overseas were taken into accounts and feasible recommendations of new initiatives on the current regulations as well. By doing so, not only protecting hopefully the innocent consumers from the false labeling statements and fake advertisements, but also eventually to revitalize the stagnated domestic dairy industries. Currently, functional daily products are simply regarded as "Dietary Supplements" in the United States, and subjected to the regulations under the Dietary Supplement Health and Education Act, established m 1994. Manufacturers and sales distributors should notify their products to the FDA, which is in charge of the dietary supplements on nutrition and labeling, in advance when they start marketing a new dietary ingredient or any foods containing it in the States. For EU countries, there exists keen interests about the functional food products between the member countries of the European Union even though the products are categorized into "Food Supplements" similar to those in the United States. Therefore, they maintain a cautious attitude in applying the health claims to the functional food products. On the other hand, under the Japanese health food system, functional foods are qualified to the functional health foods in terms of legal status as long as any traditional foods can meet the legal standards in its effectiveness, safety as well as quality, along with significant scientific evidences related to the products, thus categorized into "Foods for Specified Health Uses and "Foods with Nutrient Function Claims". Through this study, we may have some expectations and potential utilizations as follows: Legal regulations of dietary supplements especially for the dairy products will be implemented by the outcomes of this research and proposed a tentative amendment of functional ingredients for the sake of consumer protection from the false advertisements and overstatement labeling. Current regulations on the animal foods processing and advertisements will be amended and supplemented in order to revitalize the current downturn dairy sales and to harmonize the international Codex recommendations. The results obtained from this study will make the consumers a wise selection of the dairy products with health claims and be utilized for consumer education and advertisement of the functional products as well.

Evaluation of the Estrogenic and Antioxidant Activity of Some Edible and Medicinal Plants (식용 및 약용자원의 에스트로젠 활성과 항산화능 평가)

  • Estrogenic and antioxidant activities of ethanol extracts of 45 edible and medicinal plants were evaluated by ${\beta}-galactosidase$ assay, and DPPH radical scavenging assay, and TBARS inhibition rate, respectively. Total polyphenol contents were in the range of 8.6 (Panax notoginseng Buck F.H. Chen.)-594.7 (Amomum globosum Loureiro) mg/g. Direct correlation between the DPPH radical scavenging activity and polyphenol content $(r^2=0.61)$ was established through simple regression analysis, whereas no correlation was observed between TBARS inhibition rate or ${\beta}-galactosidase$ activity and polyphenol content. Among medicinal plants screened, Glycyrrhiza glabra L. and Rheum undulatum L. showed strong antioxidant and estrogenic activities. Results of this study could be used as fundamental data for selecting potential phytoestrogen candidates.

Health Risk Assessment of Lead Exposure through Multi-pathways in Korea (납의 다경로 노출에 의한 건강위해성평가 : 우리 나라 일부 지역 성인들을 대상으로)

  • This paper describes a set of multi-pathway models for estimating health risk to lead. The models link concentrations of an environmental contaminant (lead) in air, water and food to human exposure through inhalation, ingestion, and dietary routes. Exposure is used as the foundation for predicting risk of health detriment within the population. The process of estimating exposure using often limited data and extrapolating to a large diverse population requires many assumption, inferences, and simplification. This paper is divided into four section. The first section provides lead contaminant levels on obtaining environmental concentration of air, tap water, and foods. The second section provides a discussion of exposure parameters and uncertainty associated predicting human health risk of contaminants. The third and fourth section illustrate lifetime average daily exposure (LADE) and excess cancer risk (ECR) based on exposure parameters. The relationship between concentration of lead in an environmental medium and human exposure is determined with pathway exposure factors (PEFs). The calculation of LADE and ECR is carried out using Monte-Carlo simulation with probability density function of exposure parameters. Examination of the result reveals that, for lead exposure, ingestion (food) is the dominant route of exposure rather than inhalation (air), and ingestion (tap eater).

A Method for Making Kimchi Containing Snow Crab in a COVID-19 Environment

  • Purpose: The purpose of this study is to develop a kimchi recipe for immunity enhancement using snow crab, which has high food value in the era of COVID-19. Research design, data and methodology: The snow crab kimchi manufacturing method of this study includes the steps of preparing a kimchi seasoning containing snow crab seasoning and chitosan powder. Kimchi seasoning is made by adding 5 parts by weight of crab seasoning and 1 part by weight of chitosan powder to 100 parts by weight of the basic kimchi seasoning prepared by mixing radish, minced garlic, minced ginger, onion juice, anchovy sauce, red pepper powder and glutinous rice paste. Results: It was possible to develop new flavors, possibilities and characteristics of snow crab kimchi by extending the health and functional effects, taste, and preservation period without significantly changing the unique manufacturing method, taste and function of kimchi, including snow crab. Conclusions: Snow crab kimchi was excellent in taste and aroma while enhancing the health functions of the body, such as improving people's immunity. The developed snow crab kimchi manufacturing method can not only improve people's health, but also expand the choice of preference for kimchi taste and shelf life.

Effects of Job's Tears(Yul-Moo) Extracts on Mouse Splenocyte and Macrophage Cell Activation (율무 추출물의 마우스 비장세포와 대식세포 활성 효과)

  • Job's Tears(Yul-Moo) is a grass crop long-used as a traditional medicine; it is also a nourishing food. There are reports of its anti-inflammatory, stomachic, antiallergic activity, and antispastic effects and Job's Tears has been used in China to treat rheumatism, and neuralgia although its warts, rheumanism remains unclear. Thus, the present study was performed to investigate the in vitro effect of Job's Tears extracts on immune function. Here mouse splenocyte proliferation and cytokine production$(IL-1{\beta},\;IL-6,\;TNF-{\alpha})$ by peritoneal macrophages cultured with ethanol and water extracts of Job's Tears were examined. splenocytes proliferation increased with Job's Tears water extracts supplement at concentrations investigated The cytokine production$(IL-1{\beta},\;IL-6,\;TNF-{\alpha})$ by ELISA using a cytokine kit And $IL-1{\beta}$, IL-6 and $TNF-{\alpha}$ production increased water extracts supplementation. This in vitro study suggests that supplementation with Job's Tears water extracts may enhance immune function by regulating the splenocyte proliferation and enhancing cytokine production of activated macrophages.

Effects of Codonopsis lanceolata Extracts on Mouse Immune Cell Activation (더덕 추출물이 마우스 면역세포 증식에 미치는 영향)

  • Codonopsis lanceolata has long been used as a seasonal food and as a traditional tonic medicine with anti-inflammatory and anti-oxidation properties. The present study investigated the in vitro effect of Codonopsis lanceolata extracts on immune function in mice. After preparing a single cell suspension splenocyte proliferation was determined by the MTT(3-[4,5-dimethylthiazol-2-y]-2,5-diphenyl terazolium bromide) assay. The cytokines IL-1${\beta}$, IL-6, and TNF-$\alpha$ were not secreted by macrophages stimulated with or without LPS as determined by an ELISA cytokine kit assay. After a 48-hr incubation with the mitogens ConA or LPS there was an increase in splenocytes proliferation and in the production of IL-1${\beta}$, IL-6, and TNF-$\alpha$ in the suspensions supplemented with 50, 100, 250, 500 ${\mu}g/m{\ell}$ Codonopsis lanceolata water extract. The results suggest Codonopsis lanceolata water extract may enhance immune function by regulating splenocyte proliferation and stimulating cytokine production.

Effect of Nelumbo nucifera Gaertn Water Extracts on Mouse Spleen and Cytokine Cells Activation (연근 열수추출물 투여가 마우스의 비장세포와 사이토카인의 분비량에 미치는 영향)

  • Nelumbo nucifera Gaertn has been usedas a traditional remedy and food source in South Korea. It promotes gastrointestinal function and controls blood pressures. Nelumbo nucifera Gaertn water extracts supplement at 5, 10, 50, 100, 250, 500, $1,000{\mu}g/mL$ after a 48 h pre-treatment with the mitogen (ConA or LPS) increased the mouse splenocytes proliferation. Water extract supplement also increased the cytokine production ($IL-1{\beta}$, $TNF-{\alpha}$ and $IFN-{\gamma}$), measured by a cytokine ELISA kit. For the result of in vitro study, the proliferation of splenocytes and cytokine production activated by peritoneal macrophages increased when water extracts were supplemented in the range of $50{\sim}500{\mu}L/mL$ concentration. Specifically, the levels of the splenocytes proliferation, $IL-1{\beta}$, $TNF-{\alpha}$ and $IFN-{\gamma}$ were the highest at $250{\mu}L/mL$ concentration. This in vitro study suggestedthat supplementation with Nelumbo nucifera Gaertn water extracts may enhance the immune function by regulating the splenocyte proliferation and enhancing the cytokine production activating macrophage in vitro.
