발아 보리가루 첨가 찹쌀 고추장의 저장 중 품질 특성 (Quality Properties of Glutinous Rice Kochujang added with Germinated Barley Powder during Storage)

  • In this study, the physicochemical and sensory properties of glutinous rice kochujang added with germinated barley powder were periodically examined during storage at $20^{\circ}C$ for 40 days. The pH level of glutinous rice kochujang added with germinated barley powder increased gradually with a higher amount of germinated barley powder, whereas it gradually decreased during storage. On the other hand, acidity showed the opposite pattern. The salinity of samples decreased gradually with a higher amount of germinated barley powder. The L-, a and b-values of samples increased gradually with a higher amount of germinated barley powder, whereas they decreased gradually during storage. Amino nitrogen content of glutinouse rice kochujang increased gradually with a higher amount of germinated barley powder, whereas they increased gradually during storage. In the sensory evaluation, glutinous rice kochujang added with 5~10% germinated barley powder was superior in color, texture and overall preference. Therefore, addition of 5~10% germinated barley powder was optimum for improving kochujang quality.

Stimulation of γ-Aminobutyric Acid Synthesis Activity in Brown Rice by a Chitosan/Glutamic Acid Germination Solution and Calcium/Calmodulin

  • Changes in the concentrations of $\gamma$-aminobutyric acid (GABA), soluble calcium ions, glutamic acid, and the activity of glutamate decarboxylase (GAD) were investigated in non-germinated vs. germinated brown rice. Brown rice was germinated for 72 h by applying each of the following solutions: (1) distilled water, (2) 5 mM lactic acid, (3) 50 ppm chitosan in 5 mM lactic acid, (4) 5 mM glutamic acid, and (5) 50 ppm chitosan in 5 mM glutamic acid. GABA concentrations were enhanced in all of the germinated brown rice when compared to the non-germinated brown rice. The GABA concentration was highest in the chitosan/glutamic acid that germinated brown rice at 2,011 nmol/g fresh weight, which was 13 times higher than the GABA concentration in the non-germinated brown rice at 154 nmol/g fresh weight. The concentrations of glutamic acid were significantly decreased in all of the germinated rice, regardless of the germination solution. Soluble calcium and GAD were higher in the germinated brown rice with the chitosan/glutamic acid solution when compared to the rice that was germinated in the other solutions. GAD that was partially purified from germinated brown rice was stimulated about 3.6-fold by the addition of calmodulin in the presence of calcium. These data show that the germination of brown rice in a chitosan/glutamic acid solution can significantly increase GABA synthesis activity and the concentration of GABA.

L-, a-, and b-values of samples increased gradually according to the amount of added germinated barley powder, whereas they decreased gradually during storage. As a result of the sensory evaluation, barley Kochujang added with 5% germinated barley powder was found to be superior in taste, viscosity, and overall preference. Sensory evaluation revealed that addition of 5% germinated barley powder was optimum for improving Kochujang quality.

발아콩가루 첨가가 인절미의 이소플라본 함량 및 특성에 미치는 영향 (Effects of Germinated Soybean Powder Addition on Isoflavone Contents and Characteristics of Injulmi)

  • The effects of the addition of germinated soybean powder on Injulmi characteristics were investigated in this study. Injulmi was prepared with five different levels of germinated soybean powder (0%, 4%, 8%, 12% and 16%)and the physical properties were examined. The moisture content decreased, while the protein, fat and ash contents increased With increasing germinated soybean powder content. Total isoflavone contents, 3.39${\sim}$15.35 mg% before cooking, slightly increased to 3.94${\sim}$15.96 mg% after cooking. Genistin, genistein, daidzin and daidzein, which are blown to be the major functional isoflavones, accounted for approximately 93% of total isoflavone contents. The color of Injulmi darkened slightly and became greenish yellow with the addition of germinated soybean powder. Textural profile analysis showed that hardness and gumminess increased, but cohesiveness and springiness decreased with increasing germinated soybean powder level. Sensory test showed that Injulmi prepared with up to 8% added germinated soybean powder was evaluated as being equally acceptable as Injulmi without germinated soybean powder.

발아 검은색 퀴노아 분말을 첨가한 국수의 품질특성 (Quality Characteristics of Noodles with added Germinated Black Quinoa Powder)

  • In this study, the quality characteristics of noodles containing different amounts of germinated black quinoa were investigated. The powder of black quinoa with the highest antioxidative activation was selected; and composite flour was prepared with 0%, 5%, 10%, 15%, and 20% of germinated black quinoa powder to produce the noodles. We evaluated the quality and sensory characteristics of the noodles, including pH, salinity, water absorption rate, volumetric expansion rate, turbidity, chromaticity, extensibility, and texture. With regards to the quality characteristics of noodles with added germinated black quinoa, the pH and salinity decreased with increasing percentage of added germinated black quinoa (p<0.001). Increasing the percentage of added germinated black quinoa resulted in decreased water absorption (p<0.01) and volumetric expansion rates and increased turbidity of the cooked noodles (p<0.001). In terms of the chromaticity, L and b values decreased and a value increased with the increasing percentage of added germinated black quinoa (p<0.001). For the texture, hardness (p<0.001), adhesiveness (p<0.01), springiness (p<0.01), chewiness (p<0.001), gumminess (p<0.001), and cohesiveness (p<0.05) decreased as the percentage of added germinated black quinoa increased; while extensibility (p<0.001) increased. Consumer testing results indicated that the noodles with 15% of added germinated black quinoa showed the best results. Collectively, the evaluation of quality characteristics and consumer acceptability indicated that adding 15% of germinated black quinoa to produce noodles is optimal.

침지액을 달리한 발아현미의 GABA와 비타민 함량의 비교 (Comparison of GABA and Vitamin Contents of Germinated Brown Rice Soaked in Different Soaking Solution)

  • It was conducted to assess GABA(${\gamma}$-aminobutyric acid) producing capacity and vitamin contents of germinated brown rice soaked in different soaking solutions. For germination, samples were soaked in 5% glutamic acid solution and 5% lactic acid solution as test group to investigate GABA producing capacity, and samples soaked in the solution without glutamic acid and lactic acid were set as control groups(rice and non-germinated brown rice). The GABA contents of the samples were $44.80\;{\mu}g/g$ for rice, $59.90\;{\mu}g/g$ for non-germinated brown rice, $146.70\;{\mu}g/g$ for germinated brown rice, $203.20\;{\mu}g/g$ for germinated brown rice soaked in glutamic acid solution and $222.5\;{\mu}g/g$ for germinated brown rice soaked in lactic acid solution, resulting in a significant difference(p<0.05). GABA producing capacity was enhanced by the addition of glutamic acid and lactic acid in the soaking solution for brown rice germination. The GABA contents of the germinated brown rice soaked in lactic acid solution greatly increased, along with increases in niacin and vitamin E contents without losing vitamin $B_1$. In conclusion, the addition of lactic acid in soaking solution is most suitable for germination of brown rice.

발아현미 첨가에 따른 국수의 제조 특성과 GABA 함량 및 항산화 활성 변화 (Quality Characteristics and Changes in GABA Content and Antioxidant Activity of Noodle Prepared with Germinated Brown Rice)

  • 발아 전과 후의 현미와 미강을 첨가한 밀가루 복합분으로 만들어진 국수의 품질 특성과 GABA 함량 및 항산화 활성의 변화를 조사하였다. 발아 전후의 현미와 미강을 각각 5, 10, 15% 첨가하여 국수를 제조하였다. 이렇게 제조된 국수는 조리 및 제면특성(cooking loss, swelling index, water holding capacity), 조리에 따른 GABA 함량과 항산화 성분(polyphenol) 및 활성(ABTS와 DPPH의 radical scavenging activities) 변화를 통해 기능성 국수로의 이용가능성을 알아보고자 하였다. 실험결과, 발아 후 rice bran의 첨가에 따른 cooking loss가 증가하는 것으로 관찰되었으며 반면에 swelling index에서는 차이를 나타내지 않았다. 발아 후 현미와 미강을 첨가한 조리 전후 국수에서 발아 전 현미와 미강을 첨가한 국수보다 높은 GABA 함량을 확인하였으며 발아에 따른 polyphenol 함량과 항산화 활성에서는 큰 변화가 없음을 확인할 수 있었다. 따라서 발아현미가 첨가된 국수는 밀가루 국수의 영양학적 가치와 항산화 기능을 향상시킬 수 있는 소재로써 이용 가능할 것으로 생각된다.

발아 녹두 추출물의 항염증 효능 및 염모제 응용 (Anti-Inflammatory Effect of Germinated Mung Bean and Hairdye Applications)

  • 본 연구에서는 발아된 녹두 추출물의 항염증 효능 및 화장품 응용에 관한 연구이다. 동일 농도인 $250{\mu}g/m{\ell}$에서 산화질소 생성 억제 비교시 발아 녹두 추출물이 가장 높은 억제 효과를 보였다. 또한 수용성 용매에 따른 결과를 비교하였을 때 1,3-부틸렌글라이콜을 사용하고, 5일간 발아시킨 녹두를 추출한 것이 가장 높은 산화질소 억제 효과를 나타내었다. 염증 반응이 많이 일어나는 염모제에 발아 녹두 추출물을 적용한 결과 발아 녹두 추출물을 포함한 염모제가 포함하지 않은 것 보다 높은 산화질소 억제 효과를 보였다. 따라서 발아 녹두 추출물은 화장품에 자극 완화제와 항염증 소재로 응용이 기대된다.

무발아(無發芽) 맥아(麥芽)의 당조성(糖組成)에 관(關)한 연구(硏究) (Study on the Sugar Composition of Non-germinated Malt)

  • 대맥(大麥)을 이용(利用)하여 무발아맥아제조시험(無發芽麥芽製造試驗)을 실시하고 이의 당조성(糖組成)을 확인한 결과(結果) 다음과 같이 요약된다. 1. 맥아수율(麥芽收率)에서 무발아맥아(無發芽麥芽)는 89.53% 발아맥아(發芽麥芽)는 83.0% 이었다. 2. 환원당량(還元糖量)에서 산처리구(酸處理區), 동결처리구(凍結處理區) 공히 발아(發芽) 4일까지는 대조구를 능가하는 당량(糖量)의 증가를 가져왔으며 이는 gluco-test 결과와도 일치하였다. 3. 무발아맥아(酸處理區)의 HPLC에 의한 당분석(糖分析) 결과(結果) fructose, glucose, maltose 등(等)이 검출되었고 이들의 함량(含量)은 3.9mg/g, 52.1mg/g, 20.1mg/g으로서 각각(各各) 초기(初期)에 비(比)해 신장이 뚜렷한 것으로 나타났다.

키토산의 분자량과 농도에 따른 발아현미내 GABA함량증진 효과 (Effects of Molecular Weight and Chitosan Concentration on GABA (${\gamma}$-Aminobutyric Acid) Contents of Germinated Brown Rice)

  • The aim of this study was to investigate the effects of molecular weight and concentrations of chitosan on the germination of brown rice. Brown rice was germinated at $30^{\circ}C$ for three days in various chitosan solutions. The germination rate of the brown rice increased with increasing concentrations of chitosan solution, and was higher in the chitosan solution than in water. GABA content increased with increasing germination time and chitosan solution concentration. As the molecular weight of the chitosan decreased, germination rate and GABA content increased in the brown rice. The GABA content of germinated brown rice using low molecular weight chitosan A in a 100 ppm solution was 5145.5 nmole/g. This is approximately a five times higher value than that of the water-germinated brown rice. Texture properties were enhanced in all the germinated brown rice samples in chitosan solution compared to the brown rice germinated in water. These results indicate that chitosan solution treatment can increase germination rate and GABA synthesis activity in brown rice during germination, and can also improve the texture properties of brown rice.
