Analysis of Quality and Color Properties according to the Gas Composition (Modified Atmosphere Packaging) of Pork Sous-Vide Ham Preserved in Natural Brine

  • The purpose of this study was to analyze whether seawater has positive effects on appearance characteristics, such as CIE a*, and to determine the gas composition concentration that is suitable for maintaining it. Pork hind meat was cured with four types of curing agent for 5 d at 4℃. The different curing agents comprised the control salt, control nitrite pickling salt (CN), treatment brine, and treatment bittern (BT). The cured hams were cooked at 65℃ for 4 h and packaged at O2:N2 gas ratios of 7:3, 8:2, and 9:1 for 3 wk. The physicochemical properties were assessed immediately after heating the sample, and the color properties were measured after a 3 wk storage period. Based on the correlation results of the physicochemical properties, BT had a higher curing and cooking yield than the other treatments, owing to its high salinity. Results of color properties for BT (7:3) and CN (8:2) showed similar color CIE L*, CIE a* chroma, and hue angle values. Therefore, BT can be said to be a sous-vide curing agent suitable for preserving the color of ham, and a high nitrogen concentration of 30% helps to maintain the appearance of seawater sous-vide ham.

  • In this study, we present a power-efficient driving method for gas sensor systems based on the analysis of input signal characteristics. The analysis of the gas sensor output signal characteristics in the frequency domain shows that most of the signal portions are distributed in a relatively low frequency region when extracting the gas sensor signal, which can lead to further performance improvement of the gas sensor system. Therefore, the proposed gas signal extracting technique changes the operating frequency of the read-out circuit based on the frequency characteristics of the output signal of the gas sensor, resulting in a reduction of power consumption at the whole system level. The proposed sensing technique, which can be applied to a general-purpose commercial gas sensor system, was implemented in a printed circuit board (PCB) to verify its effectiveness at the commercial level.

  • 식품 보관 용기로서 옹기의 기능성을 설명하려는 하나의 시도로서 옹기의 열특성과 수분 흡착 및 기체 흡착 특성을 측정하였다. 옹기의 열전도도와 열확산도는 기공율이 증가함에 따라 감소하였으며, 비열은 기공율보다는 구성 흙의 조성에 의존하는 것으로 나타났다. 옹기의 열차단성은 유리와 비슷하였으며, 금속포장재보다는 높은 열차단성을 가지나, 종이 및 플라스틱보다는 낮은 열적 차단성을 가졌다. 옹기는 상대습도 90% 기준에서 원료 흙에 관계없이 약 0.0005 g/g 건물 기준의 수분을 흡착할 수 있었으며, 약간의 $CO_2$ 및 에틸렌 가스를 흡착할 수 있었다 ($CO_2$$17{\mu}g/g$, 에틸렌 가스 약 $2.6{\mu}g/g$). 옹기의 열특성과 기체 흡착특성은 식품보관에 이용될 수 있는 독특한 특성을 가지는 것으로 평가되었다.

이산화염소 자체 방출 스마트 샤쉐의 제조 및 특성 연구 (Preparation and Characterization of ClO2 Self-Releasing Smart Sachet)

  • 본 연구에서는 PEBAX/PEG-CA 복합필름을 제조하여 내부에 아염소산나트륨 분말을 포함한 스마트 샤쉐를 제작하였다. 또한, TGA, DSC, FT-IR, UV-vis를 통해 샤쉐의 화학적 구조 및 열적 특성과 더불어 샤쉐 적용성 평가를 위해 이산화염소 가스 방출량을 측정하였다. PEBAX/PEG-CA 복합필름은 친수성 및 혼화성을 바탕으로 매트릭스 내에서 강한 화학적 상호작용을 하는 것을 확인하였다. 특히, 구연산의 함량이 높아질수록 복합필름의 열 안정성이 저하되었지만, 저온 및 상온의 유통환경과 필름 제작 온도 범위(<℃)에서 열분해가 발생하지 않았으므로 샤쉐의 제작 및 적용이 가능할 것으로 사료된다. 본 연구의 핵심인 이산화염소 가스 방출량 측정에서는 스마트 샤쉐가 측정 기간인 14일 동안 내부 아염소산나트륨의 이산화염소 가스 방출을 지속적으로 활성화했으며, 산층의 구연산 함량이 높아짐에 따라 방출량이 증가하는 것을 확인하였다. 따라서, 스마트 샤쉐 내부의 아염소산나트륨 함량 및 산층의 구연산 함량 조절 또는 포장크기의 변경 등을 통해 이산화염소 방출량을 효과적으로 조절할 수 있으며, 이는 별도의 설비 및 고가의 장비 없이도 살균 효과를 연장시키는 이점이 있다. 위 실험 결과에 따라 제품 특성 및 포장 용적에 따라 스마트 샤쉐의 응용 적용이 가능할 것으로 판단된다. 하지만, 확실한 소비자 안정성 확보와 스마트 샤쉐의 적용 확장성을 확인하기 위해 항균성 및 저장성 측면에서 향후 연구가 필요하다.

가스 제거제 첨가에 따른 필름 포장 청매실의 저장 중 무기질 및 펙틴 성분 변화 (Changes in Mineral and Pectic Substances of Korean Mature-Green Mume (Prunus mume Sieb. et Zucc) Fruits Packaged in Plastic Films with Gas Absorbents during Storage)

  • 기체투과성이 우수한 플라스틱 필름(0.03 mm LDPE)에 청매실을 담고, 각기 이산화탄소 제거제, 에틸렌 제거제와 이들의 혼합 제거제를 첨가하여 밀봉 포장한 후 상온에 저장하면서 무기질 및 펙틴 성분 변화를 측정하였다. 전반적으로 청매실은 저장 중 과실조직의 연화와 함께 알콜 불용성 고형물 및 가용성 펙틴의 Ca와 Mg 함량이 감소하였다. 또한 총 펙틴에 대한 가용성 펙틴의 구성비에 있어서 수용성 펙틴은 증가, 염산가용성 펙틴은 감소하는 경향을 나타내었다. 그러나 다른 포장구와 비교하여 에틸렌 제거제를 첨가한 포장구의 경우 무기질 함량의 감소가 현저하게 적었고 가용성 펙틴 구성비도 저장초기와 거의 비슷한 수준을 유지하였으며 저장 중 가용성 펙틴의 저분자화도 현저히 억제되었다. 이상의 결과로부터 기체투과성 플라스틱 필름과 에틸렌 제거제를 병용하는 포장방법이 상온 유통용 청매실의 과육 연화억제에 매우 효과적임을 확인할 수 있었다.

Gas Diffusion Tube Dimension in Sensor-Controlled Fresh Produce Container System to Maintain the Desired Modified Atmosphere

  • Modified atmosphere (MA) of reduced $O_2$ and elevated $CO_2$ concentrations has been used for keeping the quality of fresh produce and extending the shelf life. As a way to attain the beneficial MA package around the produce, a gas diffusion tube or perforation can be attached onto the container and controlled on real time in its opening/closing responding to $O_2$ and $CO_2$ concentrations measured by gas sensors. The timely-controlled opening of the gas diffusion tube can work in harmony with the produce respiration and help to create the desired MA. By use of the mathematical modeling, the effect of tube dimension on the controlled container atmosphere was figured out in this study. Spinach and king oyster mushroom were used as typical commodities for designing the model container system (0.35 and 0.9 kg in 13 L, respectively) because of their respiration characteristics and the optimal MA condition ($O_2$ 7~10%/$CO_2$ 5~10% for spinach; $O_2$ 2~5%/$CO_2$ 10~15% for mushroom). With a control logic for the gas composition to stay as close as possible to optimum MA window without invading injurious low $O_2$ and/or high $CO_2$ concentrations, the atmosphere of the sensor-controlled container could stay at its lower $O_2$ boundary or upper $CO_2$ limit under certain tube dimensional conditions. There were found to be the ranges of the tube diameter and length allowing the beneficial MA. The desired range of the tube dimension for spinach consisted of combinations of larger diameter and shorter length in the window of 0.3~2 cm diameter and 0.2~10 cm length. Similarly, that for king oyster mushroom was combinations of larger diameter and shorter length in the window of 0.9~2 cm diameter and 0.2~3 cm in length. Clear picture on generally affordable tube dimension range may be formulated by further study on a wide variety of commodity and pack conditions.

Au/Au-Sn 이종접합 적용 레이저 패키징을 통한 Vapor Cell 신뢰성 연구 (Study on Reliability of Vapor Cell by Laser Packaging with Au/Au-Sn Heterojunction)

  • As packaging processes for atomic gyroscope vapor cells, the glass tube tip-off process, anodic bonding, and paste sealing have been widely studied. However, there are stability issues in the alkali metal which are caused by impurity elements and leakage during high-temperature processes. In this study, we investigated the applicability of a vapor cell low-temperature packaging process by depositing Au on a Pyrex cell in addition to forming an Au-Sn thin film on a cap to cover the cell, followed by laser irradiation of the Au/Au-Sn interface. The mechanism of the thin film bonding was evaluated by XRD, while the packaging reliability of an Ne gas-filled vapor cell was characterized by variation of plasma discharge behavior with time. Furthermore, we confirmed that the Rb alkaline metal inside the vapor cell showed no color change, indicating no oxidation occurred during the process.

Thin and Hermetic Packaging Process for Flat Panel Display Application

  • This paper presents a study on the tubeless Plasma Display Panel (PDP) packaging using glass-to-glass electrostatic bonding with intermediate amorphous silicon. The bonded sample sealing the mixed gas with three species showed high strength ranging from 2.5 MPa to 4 MPa. The glass-to-glass bonding for packaging was performed at a low temperature of $180^{\circ}C$ by applying bias of 250 $V_{dc}$ in ambient of mixed gases of He-Ne(27 %)-Xe(3 %). The tubeless packaging was accomplished by bonding the support glass plate of $30mm{\times}50mm$ on the rear glass panel and the capping glass of $20mm{\times}20mm$. The 4-inch color AC-PDP with thickness of 8 mm was successfully fabricated and fully emitted as white color at a firing voltage of 190V.

Ablation of Polypropylene for Breathable Packaging Films

  • A Polypropylene (PP) film was ablated using a femtosecond laser with a center wavelength of 785 nm, a pulse width of 184 fs and a repetition rate of 1 kHz. Increments of both pulse energy and the shot number of pulses lead to co-occurrence of photochemical and thermal effect, demonstrated by the spatial expansion of rim on the surface of PP. The shapes of the laser-ablated PP films were imaged by a scanning electron microscope (SEM) and measured a 3D optical measurement system (NanoFocus). And, the oxygen transmission rate (ORT) of periodically laser-ablated PP film were characterized by oxygen permeability tester for modified atmosphere packaging (MAP) of fresh fruit and vegetable. Our results demonstrate that femtosecond pulsed laser is efficient tools for breathable packaging films in modifying the flow of air and gas into and out of a fresh produce container, where the micropatterns are specifically tailored in size, location and number which are easily controlled by laser pulse energy and pulse patterning system.

한국.중국.일본 한약재 포장 및 유동에 관한 연구 (Study on Herbal Medicine Packaging and Currency in Korea, Japan and China)

  • Objectives : The purpose of this report was to provide the information packaging of herbal medicines by analyzing papers. We investigated the packaging materials, packaging methods and expiration date of herbal medicines by analyzing papers of the Korea, Japan and China. Methods : We survey herbal medicine-related law and crude drug monograph of compendium in each three country, we purchased herbal medicine of the Korea, Japan and China in the market and verify the expressed-item in packing paper. In case of Japan, we examine packaging materials, packaging methods, and expiration date of herbal medicine in pharmaceutical company. Results : The pharmaceutical company in japan used the methods of nitrogen gas pouring, vacuum packing for the herbal medicine packaging. The expiration date of the herbal products in Japan is generally 3 to 5 year after packaging. And packaging materials were aluminium and polyethylene. In Korea, pharmaceutical company used airtight packing for the herbal medicine packaging and expiration date of the herbal product were generally 3 year after packaging. Packaging materials were polyethylene, nylon or polyethylene-nylon mixed materials. In China, pharmaceutical company also used airtight packing for the herbal medicine packaging, and the expiration date were generally 5 year after packaging. Packaging materials were polyethylene, wrapping paper-used parcel or tea leaves filter paper. Conclusion : This results can present the basic data for expiration date and preservation methods of the herbal roots in Korea.
