The Study of Associations among Serum Lipids, Anthropometric Measurements, Food Intake Frequency and Nutrient Intake in Healthy Adults (중.노년층이 섭취한 식품 종류와 영양소섭취상태, 신체지수 및 혈중지질과의 관계)

  • The purpose of this study was to investigate the association among food intake frequency, nutrient intake, anthropometric measurements, and serum lipids in 100 women and 85 men aged 40-74yrs residing in Jeonju City. Food intake frequency and nutrient intake were obtained from one-day dietary recalls. The results were as follows : The mean height, body weight and BMI were 161 cm, 62.5 kg, and 24 kg/$m^2$respectively. The mean of SBP and DBP were 118 mmHg, 77 mmHg respectively. The mean of TC and TG were 185.5 mg/dl, 153 mg/dl respectively. The mean daily energy and carbohydrate intake was 85. 7%, 91% of RDA for Koreans respectively and that protein intake was 118.5% of RDA. The TC levels of subjects less than 75%, 75-125%, more than 125% of RDA energy were 176 mg/dl, 192 mg/dl, 185 mg/dl respectively(p < 0.01). The TC levels less than 75%, 75-125%, more than 125% of RDA protein were 180 mg/dl, 190 mg/dl, 175 mg/dl respectively(p < 0.05). TC levels less than 75%, 75-125%, more than 125% of RDA fat were 181 mg/dl, 193 mg/dl, 194 mg/dl respectively(p < 0.05). Of the subjects, 18% ate mushrooms. The BMI of the mushroom eaten was 24 and that of non-mushroom eaten was 25(p <0.05). Of the subjects, 28% consumed milk and milk produce. The mean level of TC and TG in milk and milk products eaters were 181 mg/dl, 131 mg/dl and that of non milk and milk products eaters were 197 mg/dl, 159 mg/dl(p < 0.001, p < 0.05). Of the subjects, 58% ate fish. The HDL-C of the fish eaten was 50 mg/dl and that of non-fishes eaten was 45 mg/dl(p < 0.05).

The Perception and the Consumption Behavior for the Meats in Koreans (한국인의 육류음식에 관한 의식구조 및 이용행동)

  • This study was undertaken to investigate the perception and the consumption behavior for the meats in Koreans. The subjects were 491 Koreans including the ones residing in New Zealand. Most of subjects answered the meats are used for supper time. The frequency of the meats intake was affected by education and monthly income level. 69.2% of the subjects had positive response such as increased stamina and fulled stomach for psychological state after the meats intake. The use of meats recently revealed that 48% of the subjects have decreased its consumption. The main reasons diminished the use of meats were for the good health and economic state. Women were found to avoid the meats fat to a greater degree than men. The kinds of the meat used frequently were beef, pork and chicken. The younger tended to higher the frequency of the processed meats intake than the older. According to 3 level of BMI of the subjects, there were significant differences in the amount of the meat intake and perception for necessity of the meat. This study showed that the higher the preference for meat, the education and the monthly income level, the more the meat intake frequency. There were not significant differences between Koreans residing in domestic and New Zealand except the dog meat in the perception and consumption of the meat.

Liquid Intake of Female High School Students by Self-Recording Method for 3-days in Daejeon (3일간의 자기 기입식 기록법을 적용한 대전지역 여고생의 액체수분 섭취실태)

  • This study was performed to measure the liquid intake and the liquid intake difference by obesity, exercise frequency, and salty food intake score in female high school students. A total of 235 students in Daejeon area were participated, and the liquid intake was recorded for 3-days(2 weekdays and 1 weekend) by self-recording. The T-test, F-test, Pearson's correlation, and Scheffe test were exercised. The results of this study are as follows. The amount of total liquid intake was 838.5 ㎖/d. Among the 13 kinds of beverages, water was the highest 611.6 ㎖/d, 72.9% of liquid intake total, followed by carbonated drink(65.7 ㎖/d), milk(41.6 ㎖/d), fruit drink(32.8 ㎖/d), and fruit·vegetable juice(25.4 ㎖/d). The other beverages' intake were very small, ≤13.0 ㎖/d. Carbonated drink, milk, and coffee's intake were higher during weekend than weekday. There were sig. difference in water and total liquid intake by the obesity, student of BMI≥23.0 was higher than students of BMI<23.0. And only carbonated drink was sig. different by exercise frequency and salty food intake score. Exercise frequency of ≥3 d/week and salty food intake score of ≥7(very dangerous) consumed more carbonated drink than the lower counterparts. Total liquid intake of female high school students was not reach to 900 ㎖/d, the Adequate Intake in Dietary Reference Intake for Koreans 2015. The amount of milk intake was 41.6 ㎖/d, far less than the Recommended Intake of 2 serving, 400 ㎖/d. Education and promotion program may necessary to increase the liquid intake amount and to choose the nutritious beverage.

Survey on Intake of Snacks and Self-Purchased Snacks Due to Lack of Sleep in High School Students in Gwangju (광주지역 고등학생의 수면부족에 따른 간식 및 군것질 섭취에 대한 실태조사)

  • The purpose of this study was to determine conditions of dining behaviors, sleep patterns, rates of obesity and intake of snacks and self-purchased snacks deriving from the lack of sleep in academic high school students. The anthropometric characteristics, height and weight (p<0.05), and the distribution of obesity index (p<0.001) showed significant differences between males and females. Dining scores for both male and female students decreased as the frequency of day time napping increased. Although, there was no significant difference in obesity-related "lack of sleep" between males and females, the rate of "being overweight" was slightly higher in female students who indicated that they experienced a "lack of sleep" than female students that indicated "no lack of sleep". While, whether intake of snacks and self-purchased snacks or not, day time napping frequency affected not to male students. However, the frequency of day time napping among females who ate snacks one or more times a day was higher (p<0.05), and a greater frequency of eating self-purchased snacks correlated with a greater frequency of day napping (p<0.01). Consequently, lack of sleep was identified as one of the factors increasing the frequency of intake of snacks and self-purchased snacks in females. Thus, this study suggests that dining behavior guidance should be given along with systematic and continual nutrition education so that the intake of snacks and self-purchased snacks can be moderated to optimize the physical and mental growth and development of adolescents.

Preference and Consumption Pattern of Middle and High School Students on Milk and Milk Products, in Geochang Area (거창지역 중.고등학생의 우유와 유제품에 대한 기호도 및 섭취실태 조사)

  • This study was performed to investigate the preference and consumption pattern on milk and milk products of middle and high school students. The subjects were 1,195 students(590 middle school and 605 high school students) living in Geochang area. The survey was conducted by using a self-administered questionnaire in November, 2004. The results were as follows. Sixty-three point four percent of the subjects liked milk, and the main reason was 'accelerate growth and development'(55.4%). Preferred tastes of milk were 'savory taste'(35.4%) and 'sweet taste' (29.9%). Banana milk, chocolate milk, strawberry milk, ice cream, yoplait and yogurt were highly preferred. General preference for different kinds of milk was significantly higher in high school students and male students than in middle school students and female ones. With regard to preference for dairy products, cream (p<0.01) and butter(p<0.05) was preferred more by male students than by female ones, ice cream(p<0.05), yoplait (p<0.05) more by female students than male ones. The score of milk intake frequency was 3.84(3-4 times a week) out of 5 points(7 times a week) for white milk, and that of chocolate milk was 1.98, banana milk 1.96, strawberry milk 1.72, coffee milk 1.65, showing that these products were drank less then once a week. In addition, the white milk intake frequency was significantly higher in middle school students and male students than in high school students and female students(p<0.001). Preference for milk showed a positive correlation with preference for dairy products (r=0.543, P<0.001) and frequency of milk intake(r=0.429, P<0.001). This suggests that those who prefer milk high tend to prefer dairy products and to show high milk intake frequency. In addition, milk intake frequency was in a high positive correlation with dairy product intake frequency(r=0.648, P<0.001).

Estimation of Sodium Intake of Adult Female by 24-Hour Urine Analysis, Dietary Records and Dish Frequency Questionnaire (DFQ 55) (24시간 소변 분석, 식사기록법 및 음식섭취빈도조사에 의한 여자 성인의 나트륨 섭취량 조사)

  • This study assesses the sodium intake of adults by 24-hour urine analysis, dietary records review and a food intake questionnaire. Subjects were 236 adult female in Daegu. The results are summarized as follows: Sodium intake as indicated by the 24-hour urine analysis was $5,805.4\;{\pm}\;3836.8\;mg$. This was significantly higher than intake indicated by dietary records ($4415.4\;{\pm}\;1935.1\;mg$) and the dish frequency questionnaire (DFQ 55) ($4293.5\;{\pm}\;1526.5\;mg$). The results of the 24-hour urine analysis and DFQ 55 showed that sodium intake was higher for the 65-to-74-year-old age group than for other age groups (p < 0.05, p < 0.05). Review of dietary records to examine typical sodium intake by food groups showed that 53.7% of the sodium consumed by subjects in all age groups came from seasonings and spices ($2399.0\;{\pm}\;1526.5\;mg$). The analysis of sodium intake by food groups using DFQ 55 showed 34.2% of their sodium came from consumption of kimchi (p < 0.001) and kimch, soup, stew and fish jorim accounted for 57.8% of total sodium intake. The results indicate positive correlation between age and sodium intake, as shown by the 24-hour urine analysis and food intake questionnaire (p < 0.05). Therefore, these results would be valuable as basic data for planning nutrition education for sodium intake reduction.

Comparison of Dietary Methods for the Determination of Energy Intake (열량섭취량 측정을 위한 식사섭취 조사방법의 비교)

  • The purpose of this study was to choose the assessment method of usual energy in take for epidemiological study. Energy intakes of 30 female college students estimated by frequency questionnaires and energy balance method were compared with that obtained by dietary record. The results are summarized as follows. Assessment of mean energy intakes by dietary record frequency questionnaires energy balance method were 156.2Kcal, 1517Kcal, 1878.0Kcal respectively. There was no significant difference between energy intake by dietary record and that by frequency questionnaire. Frequency questionnaire covers 4 weeks energy intake and it can be substituted for dietary record. Although energy intake by energy balance method was significantly different from that obtained by dietary record it shows high correlation with anthropometric and obesity indices and energy expenditure of the subjects.

Relationships between Nutrient Intake Status and Sugar-containing Food Intake of Elementary School Students in Daegu-Kyungbook Area (대구경북지역 초등학생들의 영양소 섭취상태와 가당식품 섭취와의 관련성)

  • This study was conducted to investigate the association of nutrients intake with sugar-containing food consumption of elementary school students in Daegu-Kyungpook area. We analyzed the dietary information from 164 elementary school students (82 boys, 82 girls) participated in "Dietary Intake Survey of Infants, Children and Adolescents" conducted by Korea Food & Drug Administration and Korea Health Industry Development Institute. Information on habitual dietary intake of sugar-containing foods was collected by food frequency questionnaires. Daily nutrients intake of each subject was calculated from 24-hour recall data for two non-consecutive days. As a result of average daily intake of major foods of elementary school students was analyzed from 1 to 50 ranking that show up higher ranking of white milk and white rice but include many kind of sugar-containing food. Dietary intake of energy, carbohydrate, Ca, P, Fe and riboflavin were significantly lower for girls with higher sugar-containing food frequency scores. Significantly negative associations between Index of Nutrition Quality (INQ) and sugar-containing food frequency scores were observed for calcium (r = -0.34) and iron (r = -0.32) among girls. Mean Adequacy Ratio (MAR) was significantly lower for girls with higher sugar-containing food frequency scores (r = -0.26). Our results indicated that nutrition education for elementary school students should focus on the importance of reducing the sugarcontaining food consumption with more attention for girls.

Estimated Carotenoids Intake in Korean Adults Using Food-frequency Questionnaire: Association with Smoking, Drinking and Other Life-style Factors

  • The aim of this study was to determine the association between, smoking, exercise, sex, and dietary carotenoids ($\alpha$-carotene, $\beta$-carotene, $\beta$-cryptoxanthin, lutein + zeaxanthin, lycopne) intake in Korean middle-aged adults. Food-frequency questionnaire were analyzed from 304 healthy adults (115 men, 189 women) aged 20 - 59. The self-administered questionnaire contained subject s habitual diet and alcohol intake were the previous 3 months. Data on frequency of 102 foods, including vegetables, fruits, beverages and legumes were analyzed. Total dietary carotenoids intake were 27.13 $\pm$ 3.09 mg/d for men and 26.71$\pm$ 2.82 mg/d for women. It was found that smoking had no significant contribution to the dietary intake of carotenoids. Among other lifestyle factors that had significant correlation was the amount of exercise time. The increases in exercise time was associated with increase in carotenoids intake (r= 0.121, p : 0.04). The major contributors of $\alpha$-carotene and $\beta$-carotene were carrots consumed as single-food item or carrot juice. Lutein and Zeaxanthin intake mainly came from spinach and most lycopene intake was derived from tomato products not fresh tomatoes. Persimmon was the major contributor of $\beta$-cryptoxanthin. These findings provide valuable information on understanding the unique pattern of dietary intake of Korean, which might help identify the risks for developing various diseases.

A Study on the Calcium and Sodium Intakes and Urinary Calcium Excretion of Preschool Children in Busan (부산지역 학령전 아동의 칼슘 및 나트륨의 섭취와 소변중 칼슘배설상태에 관한 연구)

  • To assess calcium and sodium and urinary excretion of preschool children in Busan and to evaluate the relationship of intakes of food and nutrient with urinary calcium excretion, calcium and sodium food frequencies of 25 common foods affecting intakes of calcium and sodium per week, nutrient intake by 24hr recall and 24hr urinary calcium and sodium excretion were measured with 97 preschool children. The mean calcium intake was 436.11mg and below RDA. The mean sodium intake was 1890.11mg. The mean urinary calcium and sodium excretion were 42.88mg and 735.25mg respectivery. The mean urinary calcium/creatinine ratio was 0.20. The urinary calcium excretion showed positive significant correlations with weight, intake frequency of pizza consumed per week and urinary sodium excretion (p<0.05, p<0.05, p<0.001). The urinary calcium excretion per milligram of creatinine showed positive significant correlations with intake frequencies of pizza and common squid consumed per week(p<0.01, p<0.05) and negative correlation with intake frequencies of pizza and common squid consumed per week(p<0.01, p<0.05) and negative correlation with age(p<0.05). No significant relations were found between urinary calcium and intakes of calcium, protein and phosphorus. Urinary sodium was found to be the most important determinant of urinary calcium excretion. Intake frequency of pizza consumed per week was found to be the most important determinant of urinary calcium excretion per milligram of creatinine. Based on the results, urinary calcium excretion was related to intake frequency of pizza consumed per week and urinary sodium excretion. Low calcium intake and increase of calcium loss in the urine potentiated by sodium intake during growth may reduce peak bone mass. So nutritional education is needed in order to increase calcium intake and decrease sodium intake, especially from food like pizza.
