라이프스타일에 따른 세분시장별 외식 선택속성과 소비행동에 관한 연구: 중국 낙양지역을 대상으로 (A Study on the Food Service Selection Attributes and Consumption Behaviors based on Lifestyle Market Segments: Empirical Evidences from Luoyang)

  • The purpose of this study was to examine the market segments of Chinese dining-out customers based on their lifestyle. This study focused on the selection and consumption behavior of dining-out customers. The subjects of this study were 20 years old or older diners in Luoyang, China, and the data were collected for 11 days from April 5, 2016. 400 questionnaires were distributed, and 390 copies were collected. After excluding 9 inadequate questionnaires, 381 responses were used for data analysis by using IBM SPSS 23.0, and Data analysis included frequency analysis, cluster analysis, one-way ANOVA, and cross tabulation. The results of empirical analysis showed that there was a significant difference in selection attributes, consumption behavior and demographic characteristics in terms of lifestyle market segments.

국내 소비자의 농식품 지불의사액 영향요인 분석: 국산 및 수입/국산 유기농 농식품에 대한 상대적 지불의사액을 중심으로 (An Analysis of Factors Influencing Korean Consumers' Willingness to Pay for Agri-food Products: Focusing on the Relative Willingness to Pay for Domestic and Imported/Domestic Organic Products)

  • This study investigates the factors affecting Korean consumers' willingness to pay (WTP) for domestic and organic agricultural, livestock, and processed food products. The findings reveal that obesity status, drinking frequency, and dining out frequency positively influence WTP for both domestic and organic products across all categories, while higher personal income, a convenience-seeking lifestyle, and the tendency to make shopping lists have a negative effect. The factors influencing WTP for organic products differ partially based on the country of origin, with dining out expenditure, disease symptoms, purchase of processed foods, and avoidance of risky foods show different impacts between domestic and imported organic products. The category- specific analysis shows that the perceived nutritional value of domestic products significantly affects WTP, except for livestock products. Safety certification preference has a mixed impact, lowering WTP for domestic agricultural and livestock products but increasing it for domestic organic livestock and processed foods. These results provide valuable insights for developing segmentation and differentiation strategies in the domestic agricultural market.

  • 코로나19 이후 사회적 거리두기와 비대면 서비스, 홈코노미족의 등장과 더불어 방문 외식이 비대면 외식으로 빠르게 대체되고 있다. 본 연구의 목적은 코로나19 창궐 이후 변화하는 외식산업의 트렌드에 맞춰 생활방역 중심의 안전한 외식문화 환경 조성 방안을 발굴하고 음식문화 개선 사업의 방향성 정립 및 사업의 효과성 제고를 도모함이 연구의 목적이다. 본 연구는 코로나 이전인 2018년 01월 01일부터 2019년 10월 31일, 코로나 이후인 2020년 01월 01일부터 2021년 12월 31일까지 TEXTOM을 활용하여 검색빈도 수집 및 정제, TF-IDF분석 수행 및 Ucinet6 프로그램을 활용, NetDraw를 활용한 시각화를 구현, 핵심 키워드의 노드 간 연결망을 파악하였다. 마지막으로 Concor분석을 통해 이들 간의 군집화를 수행하였다. 연구 결과, 코로나19의 이전과 이후 검색 빈도를 확인해 보면 코로나 팬데믹이 외식산업의 변화에 크게 영향을 끼치는 것을 알 수 있다.

외식소비자의 연령별 외식행동과 한식에 대한 선호도 조사연구 - 서울, 경기, 천안 지역을 중심으로 - (The Study of Dinning-out Behavior and Preference on Korean Foods by Age Groups)

  • 본 연구는 한식 소비자들의 외식행동과 한식에 대한 선호도를 연령별로 살펴봄으로써 연령에 따른 소비행동의 차이와 한식에의 선호도를 분석하였다. 연구결과에 대한 요약은 다음과 같다. 1) 연령대별 외식행동의 동기는 아침식사의 경우 전 연령층에서 시간이 없다, 식사준비가 번거롭다, 식사 때이어서 순으로 이었으며, 점심의 외식행동의 동기는 식사 때이어서라는 경우가 가장 높았으며, 40대와 50대에서는 사교적인 목적도 외식의 중요한 동기로 작용하고 있었다. 저녁의 외식행동의 동기는 연령별차이를 가장 많이 나타내었는데 30세 이하와 30대에서는 모임이나 데이트를 위한 사교적인 목적의 응답이 가장 높은 반면, 40대 이상에서는 가족과의 외식을 가장 중요한 동기라고 응답한 비율이 50%이상을 차지하여서 연령이 높을수록 가족을 중심으로 한 외식소비행태를 나타내었다. 이와 같은 가족간의 외식행동은 주 5일제 근무의 확산과 여가시간의 확대로 인한 가족중심의 공동 소비행태의 행동양식이 반영되어진 결과라고 보여 진다. 2) 각 연령대별 끼니의 유형에 따른 외식의 빈도는 전 연령층에서 주 1-2회가 가장 많이 나타났으나, 30대의 외식 빈도가 가장 높아 사회활동과 사교생활이 활발한 연령대의 특징을 잘 반영하였고, 50세 이상에서 가장 낮게 나타나 연령이 높을수록 외식 빈도는 줄어드는 경향을 나타내었다. 그러나 점심과 저녁 외식은 증가하고 있고 반면 아침외식의 빈도는 증가하는 경향을 나타내었고, 특히 30세 이하의 연령층에서는 50%이상이 주1회 이상 아침외식을 하고 있는 것으로 조사되었다. 3) 외식비 지출은 30대 이하와 30대 연령층에서는 아침과 점심식사보다 저녁식사에 더 높은 비용을 지출하는 경향을 보여주고 있는 한편, 아침과 점심 식사는 타 연령층에 비하여 지출비용의 분포가 낮은 것으로 조사되었으며 40대 이상의 연령층은 점심비용으로 더 많은 지출을 하고 있는 것으로 나타났다. 4) 끼니별 한식에 대한 선호도는 아침식사의 경우가 가장 높았으며, 이는 40대와 50대에서 높게 나타났다. 점심 식사로 가장 선호되는 음식은 중식, 일식이었으며 저녁 식사에서 가장 선호되는 메뉴는 전 연령층에서 일식, 분식류 이었으며, 한식에 대한 선택 정도는 전 연령층에서 매우 낮게 나타났다. 5) 각 연령층에서 선호하는 한식에 대한 조사에서는 된장찌개가 전 연령층에서 가장 높은 선호도를 나타내었고, 김치는 40대 이상의 선호도가 30대보다 높게 나타났으며, 흥미롭게도 30세 이하의 선호도는 30대보다 높게 나타났다. 그 외에도 떡과 죽에 대한 선호도는 전 연령층에서 낮게 조사되었다. 장아찌류의 선호도는 전 연령대에서 낮았으며 특히 30세 이하에서 매우 낮게 조사되었다. 한식의 맛에 대한 만족도 조사에서는 연령이 올라갈수록 한식의 맛에 대한 만족도는 낮아지고 있었으나, 한식의 맛에 대한 만족도가 높을수록 양과 가격에 대한 만족도는 높은 경향을 나타내었다. 전반적으로 한식에 대한 선호도는 식사 때와 식사 목적에 따라 연령대 별로 다르게 나타나고 있으나, 선호도는 성별이나 세대에 관계없이 폭 넓은 선호도를 반영하고 있으며, 이는 대학생들을 대상으로 하는 연구 등에서도 나타난바 같다. 주 5일 근무제의 확산과 초 중 고생들의 토요일 휴무와 더불어 여행과 엔터테인먼트산업은 더욱 더 발전을 거듭하고 있으며, 외식은 여행과 여가 활동의 필수적인 요소로써 그 역할을 일조하고 있다. 이와 같은 여가시간의 증가는 독신자들에게는 좀더 많은 여유시간을 가족을 이루고 있는 가족구성원들에게는 가족과의 유대를 강화하는 휴식과 오락의 소비 트렌드를 창출시켰다. 이와 더불어 외식은 식사를 해결하기 위한 단순한 수단에서 벗어나 동기와 동반자에 따라 달라지는 행동 패턴을 나타내고 있으며, 연령과 목적에 따라 세분화되는 분명한 선호도를 나타낸다. 지난 10여 년간 외국으로부터 수입된 다양한 음식과 레스토랑 업태 등은 우리나라의 외식문화 발전과 소비자들의 외식 선택 행동 등에 많은 영향을 끼쳤으며, 서구식의 패스트푸드점이나 패밀리 레스토랑 등이 외식의 주요 업태로서 비쳐지고 있는 것이 사실이다. 그러나 한식은 여전히 세대의 구별 없이 가장 선호되고 있는 음식이며, 소비자들의 높아진 외식문화 인식도와 더불어 형식적인 발전과 내용적인 발전을 꾀하고 있다. 그러므로 연령과 라이프 스타일에 따라 다르게 적용되는 다양한 소비자들의 외식 소비 행동을 분석하여 이해하고, 그들의 선호도에 알맞은 메뉴구성과 마케팅 전략을 구사함은 복합문화 공간으로의 변화를 꾀하고 있는 미래 한국 외식산업의 중요한 전제 조건이 될 것으로 기대 한다.

코로나 이후 대학생의 배달음식 간편식 외식 및 식생활 행태 변화와 식생활지침 실천 정도에 대한 단면조사연구 (Dietary guidelines adherence and changes in eating habits among college students in the post-COVID-19 period: a cross-sectional study)

  • Objectives: This study aimed to assess the adherence to dietary guidelines among college students in the post-COVID-19 era and examine the changes in their dietary habits as the learning environment transitioned from remote to in-person classes. Methods: We conducted a survey involving 327 college students in Daejeon from March to April 2023. The survey questionnaires included various factors, including age, gender, type of residence, frequency of use of delivery food, convenience food, and eating out. In addition, we investigated the extent of adherence to the dietary guidelines for Koreans and the degree of dietary changes following the post-COVID-19 shift in class format were investigated. For comparative analysis of the level of adherence to dietary guidelines in relation to dietary habit changes, an ANOVA and a post hoc Scheffe test were employed. We also performed a multiple linear regression analysis to identify dietary factors influencing the level of adherence to dietary guidelines. Results: The study revealed a high rate of convenience food consumption and a low rate of homemade food intake among students. There was a marked increase in the consumption of processed foods, convenience foods, dining out, sweet foods, high-fat fried foods, beverages, and alcohol following the transition from online to in-person classes. When examining adherence to Korean dietary guidelines, the highest scored practice was 'Hydration', and the lowest was 'Breakfast habit'. Increased consumption of convenience foods, late-night snacks, and dining out were negatively correlated with adherence levels to dietary guidelines, specifically correlating with 'Healthy weight', 'Hydration', 'Breakfast habit', and the total score of adherence. The adoption of 'regular meals' was positively associated with increased adherence levels to dietary guidelines. Conclusions: The transition from remote to in-person classes post-COVID-19 led to increased intake of convenience foods, dining out, sweet foods, high-fat fried foods, and alcohol. The rise in convenience food and late-night snack consumption negatively influenced several aspects of the dietary guidelines adherence, thereby suggesting the need for strategies to encourage healthy dietary habits among college students.

닭고기에 대한 소비자 인식도 및 소비형태에 관한 연구 (The Perception and Consumption Pattern of Broiler Chicken in Korea)

  • The most prevailing consumption pattern of chicken was "Buy fresh and cook at home (79.8%)". The frequency of eating chicken dish was about "Twice a month". Total average of degree of Preference is "2.30". It is very much close to "Like (2.0)" rather than "Average (3.0)". The degree of preference of chicken decrease as the age increase. About 30% of the housewives have the experience of buying chicken "Cut-up". But "Whole chicken (79.7%)" was still used mostly for chicken dish at home. As the education background improves or living expense increases, housewives purchase chicken "Cup-up" more frequently. The major criteria in purchasing chicken was "Hygiene (67.4%)""Quality (55.2%), "Expiration date (36.7%)" follows next. The groups of ′Above 50 years′, ′Graduate school′ and ′More than 3 million won′show greater interest about "Health" than any other groups. Major chicken dish at home in Korea was "Chopped hot chicken (70.7%)". "Boiled chicken soup (43.2%) \" and "Ginseng chicken soup (39.3%)" follows next. "Order for delivery (57.4%)" increased rapidly for chicken consumption. Croup of ′20~30 years′ order chickens for delivery more frequently than other groups. But as the age of housewives increases, they cook at home more frequently. The most preferred chicken dish for dining-out were "Fried chicken (69.4%)" and "Spicy chicken (57.4%)". The preference of Korean traditional dish for dining out was decreasing except "Chuncheon chicken rib (14.2%)".2%)".

우리 나라 일부 초.중.고등학생들의 식생활 태도 및 식행동에 관한 연구 (A Study for Dietary Attitude and Food Behavior of Elementary, Middle and High School Students of Korea)

  • The purpose of this study was to evaluate the dietary attitude and food behavior of elementary, middle and high school students in Korea. The subjects in this study were 7,698 boys and girls in large cities in Korea. The questionnaire was made and distributed to the students to answer the questions. Followings are the results of this study : 1) Father and mother's average ages were 45 and 41 years old, respectively. 2) Most students thought dietary life was more important than clothing or residentary life. Dietary habits such as irregularity of meal, frequencies of skipping meal and of eating out increased in higher grade than in lower grade, and in girls than in boys. 3) Most students, especially in elementary school, recognized that their own bad dietary habbit was unbalanced diet. Irregular meal time and eating too much were also pointed out as problems by middle and high school students. 4) Most students thought that the most effective meal for health was breakfast, but they replied the tartest meal as dinner. 5) Students tended to prefer Korean style food. Cooked rice and kimchi, ramyun, and pizza were ranked the most preferred food when they were hungry. 6) Elementary school students ate meals more regularly than higher grade students, and girls ate meals more regularly than boys. 7) Skipping rate of breakfast was higher than that of lunch or dinner, and the percentage of meal skipping students was increasing with grade elevation. No time to eat or eating between meals was the reasons of irregular meal time. 8) Frequency of dining with family was decreased, but frequency of eating out with friends was increased with increasing grade. The gravity of dining out is increasing rapidly in Korean adolescents. Therefore, nationwide nutrition education policy is necessary to constitute a right dietary environment and a desirable dietary altitude.

에스닉 레스토랑 이용객의 푸드네오포비아 성향이 레스토랑 이미지 및 고객 만족과 충성도에 미치는 영향 (Effect of Food Neophobia on Restaurant Image, Customer Satisfaction, and Loyalty in Ethnic Restaurant)

  • The aim of this study was to investigate the effect of food neophobia on restaurant image, customer satisfaction, and loyalty in ethnic restaurants. A self-administered survey for data collection 581 customers who visited an ethnic restaurant in August, 2015. Statistical analyses included descriptive analysis, t-test, ANOVA and regression analysis for SPSS 21.0. The finding of the study indicated that the differences of food neophobia score in demographic characteristics showed significant differences by age, occupation, dining-out frequency, and source of dining-out information, not by gender. The mean value of food neophilic group was significantly higher than food neophobic group in all items of restaurant image, overall satisfaction and customer loyalty. The regression analysis showed that tangible aspect, price aspect, and food aspect of restaurant image had positive effects on overall satisfaction and customer loyalty however employee service showed different result by groups. The finding of the study offer marketing strategies for ethnic restaurants to induce customer revisit.

식품소비행태조사를 이용한 COVID-19 전후 친환경식품 구매빈도 결정요인분석 (Analysis of Determinants of Eco-Friendly Food Purchase Frequency Before and After COVID-19 Using the Consumer Behavior Survey for Food)

  • In this research, we examined the shifts in determinants influencing the frequency of eco-friendly food purchases pre- and post-COVID-19. Our analysis utilized filtered 2019-2021 Consumption Behavior Survey data from the Korea Rural Economic Institute Food, excluding any irrational responses. Given the nature of the dependent variable, a multinomial logistic regression model was employed with demographic factors, variables pertaining to food consumption behavior, and variables concerning food consumption awareness as predictors. Following the onset of the COVID-19 pandemic, an individual's level of education was observed to positively influence the frequency of eco-friendly food purchases. In contrast, income level and fluctuations in food consumption expenditure did not appear to have a discernible impact on the purchasing frequency of such eco-friendly products. Irrespective of the advent of COVID-19, variables such as the frequency of online food purchases, the utilization of early morning delivery services, dining out frequency, and the intake of health-functional foods consistently demonstrated a positive correlation with the propensity to purchase eco-friendly foods. Overall, consumers prioritizing safety, quality, and nutrition over price, taste, and convenience in their procurement decisions for rice, vegetables, meat, and processed foods exhibit an increased inclination toward the acquisition of eco-friendly food products.

직업관련 특성이 여성의 음주소비에 미친 영향 (Effects of Job-related Characteristics on Alcohol Consumption among Female Workers in Korea)

  • The purpose of this study is to examine the effects of job-related characteristics on alcohol consumption among female workers. The Data was collected from a sample of 1,000 female workers by a stratified proportional quota sampling method derived from those who were working in Seoul. Drinking behavior pattern includes total amount of pure alcohol consumed during the last month (AC) measured by graduated quantity-frequency. Job-related characteristics (JRC) were measured by job-related stress, work characteristics, and organizational structure including length of working hours, number of times dining out together with workers per year, number of staff to supervise, employment status, occupational category, and proportion of female workers to male counterpart. Confounding variables include sociodemogrphic and socio-cultural attitudes toward alcohol expectancy, subjective norm of drinking, and gender-role attitude. Hierarchical multiple regression models show that the variability of AC was accounted for by some JRC including number of times dining together and employment status, with confounding variables held constant. However, the relationship between AC and JRC varied across occupational categories. Some implications were discussed in terms of health policy for female workers and further study for female drinking behavior.
