Work Analysis and Time Measurement of Dietians in Employee Feeding Facilities by Work Sampling Methodology (워크샘플링에 의한 사업체 급식소 영양사 업무 분석 및 소요시간 산출)

  • The purposes of this study were to: a) investigate the percentage distribution and the time spent of dietetic activities and b) estimate dietitian's staffing needs in employee foodservices. In 6 employee foodservices, the dietetic activities were analyzed by work sampling methodology. The results of this study were as follows: 1. The percentage distributions of dietetic activities, delay and non-dietetic activities were 79.06, 20.39, and 1.55%, respectively; 2. The major activities of dietitians in employee foodservice were production management 21.00%, purchasing management 16.73%, record keepig 14.40%, and menu management 6.30%, 3. The total labor time per week was 3,310 min (55.16 hr) and specially the time spent on 13 dietetic activities was 2,626 min (43.77 hr). 4. The time spent per week on major activities of dietitians such as production management, purchasing management record keeping, and menu management were 693.93, 554.83, 483.99, and 205.22 min, respectively.

Foodservice and Nutrition Survey of Children of Day Care Centers in Gyeongnam Area (경남지역 일부 보육시설 원아의 영양섭취에 관한 연구)

  • Investigation of foodservices was carried out in 7 different day care centers in Gyeongnam area and no trition survey of their 481 children were undertaken between October 5 and November 3, 1994. The results were summarized as follows: Conditions of most equipments and facilities used in the kitchen were very defective especially in dishwashing and sterilizing step. Number of cooks and assistant cooks in foodservices was 1 or 2. Purchasing of foods and planning of menu were mainly done by the manager or the secretary. Menu was cycled weekly. None of the day care centers has empolyed a dietitian. Mean values of height and weight of children showed slightly over the standard of Korean children. Mean intakes of energy and all the nutrients from the lunch, which was served by day care centers, were below 30% of the Korean RDAs. Mean value of protein, thiamine and niacin were above 25% of the RDAs. Intakes of Ca, Fe and Riboflavin were lower than the ones of other nutrients. It is suggested that dietitians should be empolyed to take care of meal services and nutrition education for the children.

Effectiveness of Center for Child-Care Foodservice Management for Menu Management and Dietary Variety (어린이급식관리지원센터 지원에 대한 효과 평가: 메뉴관리 및 식사다양성)

  • The purpose of this study was to evaluate the effectiveness of Centers for Child-care Foodservice Management (CCFSM)'s support on menu management in child-care centers and kindergartens by comparing two perspectives of pre-support vs. post-support and established vs. non-established. To evaluate dietary variety, we used methods that considered both Dietary Diversity Score (DDS) and Dietary Variety Score (DVS). For surveying pre-support and post-support state by CCFSM, we collected and analyzed menus of June and September, 2012, targeting 7 CCFSM supported institutions. Meanwhile, for surveying state in CCFSM established and non-established areas, we collected and analyzed menus of June, 2012, which were implemented in institutions in CCFSM established (181 places) and non-established (106 places) areas. The results of evaluation on the dietary support by CCFSM showed that post-supporting state by CCFSM (95.3%) was significantly higher than pre-supporting state (77.2%) (p < 0.001) and established areas (87.4%) were significantly higher than non-established ones (77.2%) (p < 0.05) on 'Meeting the DRI for infant'. Evaluation of dietary variety between pre- and post-support state by CCFSM showed that post-support state (total 77.3 point) was higher than pre-support state (total 76.4 point). Evaluation of dietary variety between established and non-established areas showed that established areas (total 81.1 point) were significantly higher than non-established ones (total 77.1 point) (p < 0.001). Therefore, it is considered that dietary support service conducted by CCFSM contributes to improve variety level of diet provided by child-care centers and kindergartens.

The Effect of Physical Environment of Family Restaurants on Customers' Satisfaction (패밀리 레스토랑의 물리적 환경이 고객만족에 미치는 영향)

  • We researched the previous study about the restaurant's physical environment and had made up questionnaires. The purpose of this study is to analyze the effect of physical facilities of family restaurants on customers' satisfaction. The result was as follows: First, customers visited with friends or family irrespective of days $2{\sim}3$ times a month. Second, the physical environment factors of family restaurants were interior design, interior, making atmosphere and exterior. Third, it was the interior factor(0.268), making atmosphere factor(0.353) and exterior factor(0.244) that affected customers' satisfaction in family restaurants(p<0.001). $R^2$ change was 0.659 and the regression model was suited to our study(F=56.475). To increase customers' satisfaction, the physical environment of family restaurants needs remodeling in proper time.

A Study on Perceptions and Utilities of Korean Festive Food of Dietitians in Elementary School (한국절식(節食)에 대한 초등학교 영양사의 의식조사 -서울과 인천지역을 중심으로-)

  • The purpose of this study was to investigate perceptions and uses of Korean festive foods by dietitians in elementary school food service. Questionnaires were distributed to 217 dietitians in Seoul (117) and Inchon(100), Statistical data analysis was completed by SAS package program Results were as follows ; 1. Most dietitians (89.8%) who answered the inquiry had knowledge about korean festive foods. 2. Most respondents applied Korean festive foods to their menu planning. 3. More than 85% of respondents used festive foods, especially Ddukguk, Mandu, Yaksik, Yukgaejang, Galbiggim, Tangpyungchae, Patjuk, among the 43 kinds considered for their menu planning. 4 The higher the perception of traditional foods, the more the respondents applied them to their menu planning, especially Injulmi, Shikhae, Yaksik, Bamchoe, Jeongpyun, Kalkuksu, Torantang, Hobakgigim, Namul. 5. Respondents got information sources about traditional foods from books, school, home, massmedia, and etc, in the order. 6. Most respondents (88.3%) wanted to simplify festive foods' cooking method or standardize the recipes. 7. On the necessity of education about festive food for children, 81.5% of respondents and festive foods were considered to be cultivated and developed to uphold the Korean traditional dietary life.

A Study on Garlic Utilization Practice of Business and Industry Foodservice - Menu Analysis , consumed quantity of garlic and its content in each meal - (사업체 급식소의 마늘 소비실태 - 제2보 식단분석과 마늘의 소비량, 음식별 함유량 조사 -)

  • This study was performed in order to measure consumed quantity of garlic and its content in each meal. Statistical data analysis was performed utilizing SAS package program. The results of this study can be summarized as followed ; 82% of foodservice surveyed has served garlic seasoned with soy sauce or vinegar etc. Kimchis was included in each meal in 98% of them and only 13.7% of them served Kimchis made by themselves. The Unit price of meal makes significant differences in the number of side dishes and the serving frequency of beverages and rice cakes. The content of garlic in meal were 2.6g in Soups, 2.9g in Stews, 1.9g in Namuls, 2.4g in Panbroiled foods, 3.0g in Hardboiled foods, 4.0g in Smothered dishes, 3.7g in Kimchis, respectively. Consumed garlic quantity makes significant differences by unit price of meal and consumption style of Kimchis(p<0.05).

Foodservice Management Systems of Home-Delivered Meal Service Program for Home-Bound Elderly (재가노인을 위한 가정배달 급식관리체계 및 급식서비스 현황 조사)

  • The purposes of this study were to : a) examine the current foodservice management practices of twenty-one seniors centers in charge of hoke-delivered meal programs, b) evaluate the attitudes of one hundred and ten recipients of meal service program, and c) provide feedback for the efficient and effective foodservice management for the elderly. Statistical data analysis was completed using the SAS package program for descriptive analysis, T-test, and ANOVA. The results of quantitative analysis indicated that the costs of meals, containers and special foods were mostly dependent on the support from local government(Seoul city). The centers where the volunteers were over seventy five p ercent of the workers were frtty-eight percent and sixty-seven percent of the subjects in food preparation and food delivery to the homebound clients, respectively. Meal preparation and food purchasing were mainly practiced by social welfare worker. Standardized recipes were not developed and meal preparation was controlled under the cook' and volunteers' experiences. The survey results of recipients who participated the home-delivered meals program showed that the mean of meal satisfaction score was rated over three point five in the five-point scale. There were significant differences between dependent variables(volunteer's kindness, plate waste, menu variety) and independent variables(sex, receiving periods and family type of the subjects). Survey on Elementary School Student's Perception and Preference of Chungkukjang in Seongnam Area (청국장에 대한 성남지역 일부 초등학생의 인지도와 선호도 조사)

  • The principal objective of this study was to assess perceptions and preferences of chungkukjang in elementary school children who used a school foodservice. In this investigation, 583 elementary school students(300 boys, 283 girls) in the Seongnam area were surveyed via questionnaire, and the collected data were analyzed using the SAS package. The results demonstrated that 82.0% of students responded that they were aware of chungkukjang. Female students were more aware of chungkulgang than were male students, and children of the nuclear families were more aware of those of the extended family. With regard to the origins of their interest in chungkulgang, 51.8% of the subjects answered 'through home education' and 35.5% learned about chungkukjang 'through mass media'. Most students recognized chungkulgang as a 'healthy food' and a 'Korean traditional food'. Approximately 44% of the students ate chungkukjang in the school foodservice once per month, and 41.7% preferred this menu. Therefore, in order to increase elementary school students' knowledge and intake of chungkulgang, the school should attempt to foster the quality of chungkulgang in nutrition education, to serve chungkukjang frequently in school foodservices, and to develop recipes for tastier chungkukjang foods for children.

Importance and Performance Analysis of Customers' Selection Attributes for Social Enterprises Type Cafe (사회적 기업 형 카페 선택속성의 중요도 및 수행도 분석)

  • The purpose of this study was to investigate the consumers' selection attributes of social enterprises type cafe by IPA(Importance-Performance Analysis). Data were collected through a self-administered questionnaire by 309 random consumers in several social enterprises type cafes in Seoul and Gyonggi area. The data was analyzed using SPSS windows(ver. 17.0) for descriptive analysis, t-test, one-way ANOVA and factor analysis. The importance of cafe's selection attributes were divided into five factors including 'promotion and menu', 'service quality and atmosphere', 'location', 'taste', and 'brand name'. The mean scores of importance and performance for cafe selection attributes were 4.01 and 3.68 out of 5, showing a significant difference between importance and performance. According to the IPA results of 17 selection attributes for social enterprises type cafe, the selection attributes with relatively low performance but high importance(II quadrant) was 'easy accessibility'. The factor to be improved through the IPA was accessibility factor, showing that the consumers had a low satisfaction compared to the significance of cafe's location.

Relationships Between Characteristics of Foodservice and Job Satisfaction of the Korean Dietitian (급식형태와 우리나라 영양사의 직무만족도의 관련성에 관한 연구)

  • This study was carried out to investigate relationships between characteristics of foodservice and job satisfaction of Korean dietitians. The subjects were 2987 dietitians who responded to the questionnaire distributed at the annual education program of the Korean Dietetic As-sociation in 1995. The results were followings; 1)The level of jov satisfaction of Korean dietitians was low for payment work environment and value achievement as a dietitian while it was relatively high for the relationship with col-leagues. The other parts of job satissatisfaction such as work load work contents supervision by the superiors participation of policy decision and selp disccertion were just below average. 2)The type of operating style menu style and serving time in foodservise were not sig-nificantly related to all fields of job satisfaction but the kinds of meals served a day and the to-tal number of persons served a day were significantly correlated. 3) The dietitians who had to provide meal plans such as breakfast+dinner and + snack or all day serving had significantly lower job satisfaction in all fields. 4)Job satisfaction was significantly higher when the total number of persons served a day was between 500-700.(Korean J Community Nutrition 2(2) : 232~245, 1997)
