BACKGROUND/OBJECTIVES: The purpose of this study is to identify how level of information affected intention, using the Theory of Planned Behavior. SUBJECTS/METHODS: The study was conducted survey in diverse community centers and shopping malls in Seoul, which yielded N = 209 datasets. To compare processed foods consumption behavior, we divided samples into two groups based on level of information about food additives (whether respondents felt that information on food additives was sufficient or not). We analyzed differences in attitudes toward food additives and toward purchasing processed foods, subjective norms, perceived behavioral control, and behavioral intentions to processed foods between sufficient information group and lack information group. RESULTS: The results confirmed that more than 78% of respondents thought information on food additives was insufficient. However, the group who felt information was sufficient had more positive attitudes about consuming processed foods and behavioral intentions than the group who thought information was inadequate. This study found people who consider that they have sufficient information on food additives tend to have more positive attitudes toward processed foods and intention to consume processed foods. CONCLUSIONS: This study suggests increasing needs for nutrition education on the appropriate use of processed foods. Designing useful nutrition education requires a good understanding of factors which influence on processed foods consumption.
This study was to investigate use of functional foods and attitude on related education among adolescents. Subjects of this study were a total of 826 students in middle and high schools of Cheongju and Cheongwon area. Among the subjects, 44.8% had an experience in consuming functional foods. Among the subjects that experienced side effects possibly by the consumption of functional foods, 13.0% ignored the symptom and continued to consume the foods. Approximately one third of the subject(30.7%) obtained information on functional foods from their parents; however, few subjects(2.2%) obtained the information from the nutrition teachers or dietitians of their schools. Only 9.4% of the subjects underwent education related with functional foods, and 35.1% of the subjects demanded education on functional foods. The present study suggests that an effective education is needed for both students and their parents in order to prevent adolescents from the misuse of functional foods.
This study examined the extent of information needs regarding convenience store private brand (PB) foods and variables affecting information needs for convenience store PB foods. This study will be able to provide useful information based on determining the information content and information sources needed by undergraduate consumers for convenience store PB foods. Data analyses were conducted by frequency, mean (SD), reliability tests, and multiple regression with SPSS version 19.0. The major results of this study are as follows: First, undergraduate consumers' purchase intention toward convenience store PB foods is comparatively high, and they say they will buy the products if the PB foods' quality-related areas like taste, nutrition, or safety are favorable. Second, the general level of information needs for convenience store PB foods is comparatively high, and among general information needs, 'information needs for convenience store PB food quality' are the greatest, while in the area of comparative information needs, 'comparative information on PB food and NB food quality' is needed the most. In addition, undergraduate consumers most often want to obtain convenience store PB food information from convenience stores themselves. Third, as purchase intention and information acceptance of convenience store PB foods increase, information needs also increase. However, as quality perception of convenience store PB foods is more positive, information needs reduce.
This study examined health-functional foods intake pattern of consumers and their recognition of it to prepare a guide for the foods. The data were collected from the adults living in Busan and Gyeongnam through a self-administered questionnaire from September sixth to September thirteenth, 2005. The results of this study were as follows: Most respondents have taken one health-functional food, mainly on purpose to maintain and improve overall health condition. The average of monthly cost to purchase the foods was 79,933 Korean won, and drugstores were the main purchasing place. The value perception about health-functional foods was at the middle, and the recognition level of Health Functional Foods Act established in 2002 was very low. The most important source of information regarding health-functional foods was family, relatives and friends, and two-fifths respondents had difficulties in obtaining information. These results imply that consumers should consult with experts before they take health-functional foods and that public information regarding Health Functional Foods Act should be given to consumers.
To provide basic information for the proper usage of frozen convenience foods in elementary school foodservice operations, 51 dietitian employeed in school foodservices in Inchon were surveyed. Among the frozen convenience foods, dumpling-type foods(60.8%) and processed meats(40.4%)were used widely in school foodservice. Generally, the frequency of using frozen food items was fewer than 1 time per month. More than 15% of respondents were using pork cutlet, chicken, chickenball, dumpling stuffed with meat about 2-3 times per month. Sweet and sour pork(Tangsuyuk), kebap(Sanjuk), fish/shrimp cutlet, fried potato items were used only fewer than 1 time per month. Dietitian's age, carrier, employed status influenced the utilization rate. The grand mean of satisfaction score was 3.36 out of 5. The factors affecting satisfaction in using frozen foods were sanitation, taste, price, nutrition, food additives in order. The major reasons of utilizaing frozen convenience foods were 'improved labor productivity(4.47)' and 'meet customer preference(4.25)'. The limiting factors in using frozen foods were taste(35.3%), price(23.5%), nutrition(17.6%). The management practices of frozen convenience foods through food processing flow were assessed. Average performance rate was 64.7%. To enlarge the usage of frozen convenience foods in foodservice operations, dietitians should observe sanitary practices.
If we eat long time foods that don't suit our constitution, health is broken and we take a disease. Therefore, care of foods and taking medicine by constitutional notion have a object that is normal control of constitution. It is attained when we maintain an adequate balance of Jang and Bu(臟腑) organs functional deflection. Theory of SaSang constitution by Lee-Jae Ma provides us a proper base of theory. But, later foods and drugs classified by constitution, that is suggestied by many scholars, is some different. Therefore, it is doubtful whether choice of foods and drugs suitable to constitution is right. If we use foods and drugs suitable to constitution exactly, we can decrease a side effect arisen from unsuitableness. On this, I study by literatures in order to provide foundational data. Lee-Jae Ma classified four species constitution, I compared twelve literatures by constitution, classified profit and harmful foods, and arranged and classify drugs that literature writer suggests in common. On base of this study, I suggest that foods and drugs classified by constitution is as follows. 1. Lee-Jae Ma made SaSang constitution medicine, but didn't suggestied use of foods, therefore, commoness of foods constitutional classification must be arranged. 2. Also commoness of drugs constitutional classification must be arranged. 3. Other literatures must be compared and analyzed except those of this study, because I didn't analyze many SaSang literatures.
This study was conducted to examine the 2nd broadcasting cooking program of Gyeongseong Radio from April 26th 1933, when the 2nd broadcasting for Koreans started, to December 1941. From its opening date, there were continuously regular cooking programs such as 'Recipes' and introducing 'Japchae'. Analysis of names broadcasted in cooking programs included a total of 452 foods (328 types); specifically, 332 Korean foods, 71 Western foods, 24 Japanese foods, 18 Chinese foods, and seven other foods. Korean foods included 35 staple foods, 223 side dishes, 64 deserts, and 11 sauces. Western foods included seven soups, 25 main dishes, and 25 deserts. Main dishes included many deep-fried dishes, while diverse types of desserts were also introduced. In the case of Japanese food, there were many foods combined with Western food. Chinese food included many types of dumplings and fried rice, as well as many dishes using pork. Among people broadcasting cooking programs, there were 11 whose names were shown in the schedule, all of whom were recognized as the best cooking specialists and educators of the time.
This study analyzed in nutrient contents changes of adult's favorite foods between March 2019 and July 2020 after policy implementation nutrient-poor foods based on special act on safety control of adult's dietary life in Korea. Among adult's favorite foods manufactured or sold in 2020 as well as 2019, calories and key nutrients in breads, ice creams and pizzas were improved in comparison to those in the other food groups. However, most of the changes in calories or key nutrient contents exist. The newly introduced candies, breads showed slightly greater improvements in calories and key nutrient contents than in 2019. On the other hand, some negative changes were found in newly introduced chocolates in comparison to previous ones. Overall, policy implementation on foods seemed to induce changes in nutrient contents of adult's favorite foods. In particular, nutrition education is reported to have a positive impact on adult's frequency and preference for processed foods, and more systematic and continuous nutrition education measures should be devised to help adult as consumers selectively purchase healthy foods. This research is meaningful in that it is the first study to analyze the quality changes of adult's favorite foods since the high-calorie and low-nutrient food management policy.
This study examined the consumers' perception of edible insect foods and carried out importance-satisfaction research on the choice attributes of edible insect foods. Through this, the potential of food materials as future food resources was evaluated and foundational data was provided to devise marketing strategies required to develop products made from edible insect foods. According to the results, females had more information on edible insect foods than males (p<0.05), and males gained higher points in trying new foods (p<0.001), overall satisfaction (p<0.001), and purchase intention (p<0.01) than females. Both importance (p<0.05) and satisfaction (p<0.001) about the mean of the choice attributes of edible insects were higher in males than females. The sustenance area showed high importance and high satisfaction, including taste, smell, freshness, sanitation, safety, and shelf-life. Accordingly, to understand edible insect foods properly, it is important to deliver information constantly and publicize them aggressively. In addition, it is necessary to develop various kinds of food made from edible insect foods and functional foods utilizing their nutritive value.

The relatively new concept of functional foods is supportive of sales of food products that deliver isolated 'nutrient' or 'food compound' substances, much as is done by dietary supplements. Whether such isolated substances have benefit must be investigated in each instance; such investigations can be complex. At the same time, simply prepared natural plant foods contain a myriad of substances that, in accord with the concept of food synergy, are beneficial for health. Whole grain foods are an example of such healthy fare, based on strong epidemiologic and experimental evidence. If the concept of functional foods is to be of use for the public health, it should support the consumption of healthy traditional foods as well as promoting 'novel' foods; in this sense, whole grain foods, which have great functionality, should be regarded as functional foods.
