Perception and Utilization of Food Labels Depending on Educational Experience with the Food Labeling System in Middle School Students (식품표시 관련 교육경험에 따른 중학생들의 식품표시에 대한 인식과 활용실태)

  • This study was performed to investigate the effect of food and nutrition label education on the perception and utilization of nutrition labels on food packaging, and to suggest the importance and necessity of food and nutrition label education in the school curriculum. 811 junior-high school students participated in this study and completed self-administered questionnaires regarding general characteristics, and the perception and utilization of nutrition labels. Knowledge of nutrition labels was tested by 13 questions on the questionnaire. Data was analyzed (using SAS package program) based on the educational experience with nutrition labels. Significant differences in each variable were tested using the $X^2$-test and t-test. Students who had learned about the food and nutrition labeling system had more knowledge of nutrition labels and were more likely to check the nutrition label before purchasing food. In addition, students who had been educated about food and nutrition labels in the school curriculum had a significantly higher understanding and recognition of the nutrition label system. These results suggest that education concerning the food and nutrition label system increased the students' interest in nutrition labels and helped them choose healthy food. Therefore, it is necessary to include an education program about food and nutrition labels in the school curriculum to help students use label information and make healthy dietary choices.

  • The purpose of this study was to develop a software system for menu planning program in an institutional food service. In this research, a Qnix-7700/AT(16 bit personal computer) compatible with IBM-PC/AT was used and all the files and programs were created by using COBOL. This study provides food service managers with more effective management system by personal computerized menu planning program. Software programs developed in this study were summerized as follows : (1) Programs for outputing standard amounts of the basic food groups. (2) Programs for inputing the cooking type code, the food code and the food amount of the menu. (3) Programs for outputing distribution of the basic food groups of the computerized menu. (4) Programs for calculating the price of each food and menu. (5) Programs for calculating the nutrient content of each food and menu. (6) Programs for outputing the purchasing amount of food. (7) Programs for outputing the menu table. (8) Programs for inputing and modifing the food composition in the food composition file. (9) Programs for inputing and modifing the cooking types in the cooking types file. (10) Programs for inputing and modifing the food prices in the food prices file.

Effects of FSSC 22000 Food Safety Management System Characteristics on Business Performance: Mediating Effects of Organizational Capabilities (FSSC 22000 식품안전 경영시스템 특성이 기업 경영성과에 미치는 영향: 조직역량의 매개효과를 중심으로)

  • Purpose: This study aimed to examine the impact of FSSC 22000 food safety management system characteristics on the business performance of food-related companies and to verify the mediating effect of organizational capabilities in the relationship between them. Methods: To achieve this, a survey was conducted among employees of food companies in Seoul and the metropolitan area that have implemented the FSSC 22000 food safety management system, and the following main results were derived. Results: First, the FSSC food safety management system factors, such as measurement/analysis and improve- ment, documentation, management responsibility, and service and product realization, were found to have a significant positive (+) impact on organizational capabilities. The relative impact was in the order of measurement/analysis and improvement, documentation, management responsibility, and service and product realization. Second, organizational capabilities were found to have a significant positive (+) impact on business performance. Third, the FSSC food safety management system factors, such as measurement/analysis and improvement, management responsibility, resource management, and documentation, were found to have a significant positive (+) impact on business performance. The relative impact was in the order of measure- ment/analysis and improvement, management responsibility, resource management, and documentation. Fourth, the factors of management responsibility, resource management, measurement/analysis and improvement, and documentation, excluding resource management factors, were found to have a positive impact on business performance through the mediation of organizational capabilities. Conclusion: The results of this study may provide important implications for the implementation and efficient operation and management of the FSSC 22000 food safety management system in enhancing the business performance of food-related companies.

  • The aims of this study were to develop the suitable "system software" in chemical ranking and scoring (CRS) for the food hazardous chemicals associated with environmental emission and to suggest the priority lists of food contamination by environmental-origined pollutants. Study materials were selected with reference to the priority pollutants list for environment and food management from domestic and foreign research and the number of study materials is 103 pollutants (18 heavy metals, 10 PBTs, 10 EDs, and 65 organic compounds). The Food-CRS-Korea system consisted of the environmental fate model via multimedia, transfer environment to food model, and health risk assessment by contaminated food intake. We have established that health risks of excess cancer risks, hazard quotients (HQs) by chronic toxicity and HQs by reproductive toxicity convert to score, respectively. The creditable scoring system was designed to consider uncertainty of quantitative risk assessment based on VOI (Value-Of-Information). The predictability of the Food-CRS-Korea model was evaluated by comparing the presumable values and the measured ones of the environmental media and foodstuffs. The priority lists based on emissions with background-level-correction are 15 pollutants such as arsenic, cadmium, and etc. The priority lists based on environmental monitoring date are 17 pollutants including DEHP, TCDD, and so on. Consequently, we suggested the priority lists of 13 pollutants by considering the several emission and exposure scenarios. According to the Food-CRS-Korea system, arsenics, cadmium, chromes, DEHP, leads, and nickels have high health risk rates and reliable grades.

A Survey on the Recognition and Satisfaction of Food Labeling System in Seoul and Geongsangnamdo Area (서울, 경남 일부지역 가공식품 표시기준에 대한 인지도 및 만족도 조사)

  • This study was carried out to establish the consumer-centric food labeling system by investigating usage state, importance evaluation, problems and satisfaction, etc. on the current food labeling system by consumer. For usage state of checking the food label, 50.2% of respondents were replied ‘mostly check the label’, and they were indicated a significant difference on ‘education level(p<.05)’, and in case of married respondents, most were relied 'absolutely check the label', For the reason to check the food label, 61.8% of respondents were replied 'to determine whether it is stable or not', and they were indicated a significant difference on age(p<.01), marital status(p<.01), and job(p<.01). For the item considered as important things on the label of the whole food, 49.8% of respondents were replied that 'expiration and manufacture date is important', and they were indicated a significant difference(p<.001) on age, marital status, job. For item considered as important things on the label of each food, it was indicated that they considered food company as important thing in case of snack, soft drink, edible oils, and noodles, and food company in case of ice cream, and expiration and manufacture date in case of milk product and meat product. For the problems on the current food labeling system, the clauses 'Poor marking on food additives and materials contents' and 'untrue marking of nutrition contents' were indicated a significant difference on age(p<0.05, p<0.001), and the clause 'untrue marking of nutrition contents' were indicated a significant difference on marital status(p<.01) and job(p<.01).

  • Feed industry began to demand that beyond simple feeds to meet the needs of customers with a premium catering by economic development situation and, depending on the user's convenience and customer needs. But tableware introduced in the feed system, the introduction of RFID. High and low temperatures and salinity problems that RFID chips, the feed system malfunction. In this paper, infused with IT Convergence Technology was carried out for a smart lunch by putting RFID chips in the Food Court distribute food. Food court meal to ensure stability of the system was a smart lunch that Hot food ($125^{\circ}C$) and cold ($-40^{\circ}C$) and salinity reflecting foods in High temperature, low temperature experiments, through salt spray test. In addition, the existing straight distribute food, scramble distribute food, Marketplace distribute food, Food Court and the advantages of a comparative analysis of distribute food investigated. Through this paper distribute food will contribute to the Food Court. IT convergence technology (RFID, LCD, S/W, H/W) to apply the feed industry in the development of Smart Food Court.

  • This study assessed the development of Japanese food distribution system in response to changes in the needs of consumer population the current food concepts can be divided into "processed" and "perishable" foods we expended the current concept introducing "processed perishable foods" and "perishable processed foods", and how this modified term contributed to more effective food distribution system in Japan. We further assessed the effects of changes in the needs and perception in Japanese consumer population on food distribution system, which included PB goods development as well as diversification of chain system. Our study in the development of Japanese consumer population and food distribution system can be compared to that of Korea, providing a direction for systematic and effective food distribution system.

  • In this paper, the expert system to reduce the amount of food waste is proposed. The method of material flow analysis (MFA) is applied. Exploring a zero food waste system for sustainable residential buildings in urban areas

  • This study explores the environmentally innovative and low-impact technology, a zero food waste system (ZFWS) that utilizes food waste and converts it into composts or biofuels and curtails carbon emissions. The ZFWS not just achieves food waste reductions but recycles food waste into fertilizer. Based on a fermentation-extinction technique using bio wood chips, the ZFWS was employed in a field experiment of the system installed in a large-scale apartment complex, and the performance of the system was examined. The on-site ZFWS consisted of three primary parts: 1) a food waste slot into which food waste was injected; 2) a fermentation-extinction reactor where food waste was mixed with bio wood chips made up of complex enzyme and aseptic wood chips; and 3) deodorization equipment in which an ultraviolet and ozone photolysis method was employed. The field experiment showed that food waste injected into the ZFWS was reduced by 94%. Overall microbial activity of the food waste in the fermentation-extinction reactor was measured using adenosine tri-phosphate (ATP), and the degradation rate of organic compounds, referred to as volatile solids, increased with ATP concentration. The by-products generated from ZFWS comply with the national standard for organic fertilizer.
