Effects of Ethanol Extracts of Bacillus polyfermenticus SCD on Tteokgalbi Quality during Storage (Bacillus polyfermenticus SCD 에탄올 추출물이 떡갈비의 품질 및 저장성에 미치는 영향)

  • The treatments of Tteokgalbi studied were: control (no antioxidants); (T1) ethanol extracts of Bacillus polyfermenticus SCD (5%); (T2) ascorbic acid (0.06%); (T3) ascorbic acid (0.03%) + ethanol extracts of B. polyfermenticus SCD (2.5%). The pH of T1, T2, and T3 samples was significantly (p<0.05) lower than that of the control for up to 3 days of storage. Thereafter T1, T2 and T3 had a significantly higher (p<0.05) pH value than the control during storage. TBA values were significantly lower (p<0.05) in all treated samples relative to the control. The TBA value of the control rapidly increased after 6 days of storage, whereas the TBA values of the test samples did not sharply increase. T3 samples treated with vitamin C and Bacillus polyfermenticus SCD had a higher TBA value than T1 and T2 samples. The VBN values of T1, T2 and T3 sampleswere lower than that of the control (p>0.05). VBN values of the ground pork meat samples significantly increased (p<0.05) with storage time. The total microbial counts of each sample significantly increased with storage time (p<0.05). The $a^*$ values of T1 and T3 samples containing added vitamin C were significantly higher (p<0.05) than that of the control and T2 samples during storage. The $b^*$ value of T2 samples was significantly higher (p<0.05) than that of other ground pork meat products during storage.

Dynamics of Bacterial Communities of Lamb Meat Packaged in Air and Vacuum Pouch during Chilled Storage

  • In this study, the changes in microbial communities of lamb meat packaged in the air (plastic tray, PT) and in a vacuum pouch (VAC) were assessed by polymerase chain reaction-denaturing gradient gel electrophoresis (PCR-DGGE) during the storage at $4^{\circ}C$. For the PT lamb, the total viable count (TVC) was $10^7CFU/g$ on Day 5, and the dominated bacteria were Pseudomonas fragi, P. fluorescens, and Acinetobacter spp. For the VAC lamb, the TVC was $10^7CFU/g$ on Day 9, and the dominated bacteria were lactic acid bacteria, including Carnobacterium divergens, C. maltaromaticum, and Lactococcus piscium. One strain of Pseudomonas spp. also appeared in VAC lamb. The relative abundance of Enterobacteriaceae in VAC lamb was higher than that PT lamb, indicating a more important role of Enterobacteriaceae in spoilage for VAC lamb than that of PT lamb. The microbial compositions changed faster in the lamb stored in a PT than that stored in a VAC, and microbial community compositions of the late storage period were largely different from those of the early storage period for both the conditions. The findings of this study may guide improve the lamb hygiene and prolong the shelf life of the lamb.

  • The effects of packaging conditions on freshness extension of cucumber were investigated during 24-day storage temperatures $18^{\circ}C$ and $10^{\circ}C$. The storage life of cucumbers was influenced by both packaging methods (corrugated cardboard vs EPS box) and temperatures during storage. The fresh weigh, vitamin C content and Chlorophyll of cucumbers were decreased, while yellowing of cucumber peel was increased during storage. The change of vitamin C content was influenced by both packaging method and temperature during storage. The EPS box and low temperature were revealed to be effective treatments to extend the storability or cucumber fruit.

  • The dried persimmons is produced fungi and develop browning, hardening in circulation at normal temperature. To resolve such problem in commercial value preservation, the research was conducted to measure the quality changes of dried persimmons packagings at low temperature($0^{\circ}C$) during 160 days storage and the normal temperature($15^{\circ}C$) during 100 days storage. The rate of weight loss, fungi, browning, hardening were changed a little in the low temperature($0^{\circ}C$) storage and N/LDPE.

Comparisions of Bread Baking Properties Using Domastic and Imported Flour and Quality Changes During Storage (우리밀과 수입밀을 이용한 제빵 적성 비교 및 저장 기간중 특성 변화)

  • Physicochemical and consumer acceptance properties of bread baking prepared with 100% domestic and imported flour and mixtures of the two flours by 50% to 50% were investigated in this study. Quality changes of the breads during storage at $1^{\circ}C$ were also evaluated. Volume of bread made of the mixtures of flour showed significantly higher values than the other two samples. Hardness of bread made with domestic flour had significantly higher value than that of control on the first day of storage at $4^{\circ}C$. However, mixture sample showed significantly higher value than that of control after the third day of storage. Consumer acceptance test indicated that the bread prepared with 50% imported and 50% domestic flour were not significantly different from the bread prepared with 100% imported flour.

  • Accumulated photon counts in immediate measurement after irradiation of marjoram, basil and thyme were shown to be below 625$\pm$162, 577$\pm$178 and 1261$\pm$640 Pc, respectively. The accumulated photon counts increased linearly with increasing irradiation doses up to 5 kGy and slightly increased from 5 kGy to 10 kGy. This trend was similar after storage periods. According to storage conditions, the difference of the accumulated photon counts was net clearly observed. The accumulated photon counts of irradiated spice samples decreased with increasing storage periods. The rate of decrease was higher in 5 and 10 kGy irradiated samples than that in 1 kGy, and in room conditions than that in darkroom conditions. The photon counts of the irradiated spice samples measured for 120 s were higher than those measured for 60 s. The irradiated spice samples showed higher photon counts than those of unirradiated samples in both room and darkroom conditions during all the storage periods. These results indicate that detection of irradiation was still possible after 24 weeks, although the PPSL signal of all spice samples decreased with increasing storage times.

Quality Characteristics of Tofu Prepared with Lycii fructus Powder during Storage (구기자 분말을 첨가한 두부의 저장 중 품질특성)

  • This study was conducted to examine the quality characteristics of tofu prepared with Lycii fructus powder(LFP) during storage for 15 days at $5{\pm}1^{\circ}C$. The moisture content, yield rate, tofu whey content and turbidity of soaking solutions of tofu prepared with LFP increased upon the addition of LFP. The pH of tofu prepared with LFP decreased while the acidity increased lightly; however, the acidity of the tofu did not differ significantly according to the level of added LFP. The L value of tofu decreased as the amount of LFP in the formulation increased, whereas the a and b values increased. The color value of tofu prepared with LFP did not depend upon the storage period. The hardness increased significantly with the level of LFP, but it did not differ significantly according to the storage period. The microbial count of tofu prepared with LFP was lower than that of control tofu during the storage period. In terms of overall preference, the preferred tofu contained 1.0% LFP tofu.

Use of Gellan Gum and Xanthan Gum as Texture Modifiers for Yackwa, a Korean Traditional Fried Cake

  • Texture hardening of Yackwa during storage is the major quality deterioration of Yackwa. In this study the effects of gellan gum and xanthan gum on texture hardening of Yackwa during storage were studied. Instrumental hardness and sensory evaluation results showed that addition of 0.05 % and 0.1 % of gellan gum or 0.1 % and 0.5 % of xanthan gum significantly decreased the hardness of Yackwa by 32 ∼ 63 % after 4 weeks of storage. Retardation of texture hardening was obtained even at the 0.05 % level of gellan gum, indicating that gellan gum was a more potent texture modifier for Yackwa than xanthan gum. Correlation analysis between moisture content and hardness of Yackwa showed that there was high correlation between moisture content and hardness of Yackwa after 4 weeks storage ($r^2$=-0.998), regardless of the initial moisture content. These results suggest that retardation of texture hardening during storage is primarily related to moisture retention of Yackwa during storage.

Storage Characteristics and Retrogradation Property of Makphyun Containing Peach (복숭아 첨가 막편의 저장성 및 노화 특성)

  • The purpose of this study was to determine the storage characteristics of Makphyun, a kind of rice cake, containing peach and Makgeolli. The effect of peach paste (0, 5, 10 or 20%) on the storage qualities of Makphyun was evaluated during storage at $20{\pm}2^{\circ}C$ for 3 days. As the amount of peach paste increased, the loss of water in peach Makphyun decreased during storage. The sugar concentration ($^{\circ}Brix$) increased with the amount of peach paste. Textural properties by TPA showed that the hardness of Makphyun containing 20% peach paste was the lowest among the treated samples. However, the hardness of all Makphyuns increased during storage, regardless of the amount of peach paste. In accordance with texture results, DSC (Differential Scanning Calorimetry) showed that the enthalpy of Makphyun with 20% peach addition was the lowest, demonstrating the delaying effect of peach paste on the retrogradation of rice cake. From these results, it was determined that the addition of peach to Makphyn extends shelf-life by delaying retrogradation.

Storage Stability of Seasoned-Dried Pacific Saury (Imported Product) Treated with Liquid Smoke

  • In order to enhance suitable processing methods of imported Pacific saury, Cololabis saira, storage stability of seasoned-dried Pacific saury (imported product) treated with liquid smoke (T2 product) was compared with a control (C, seasoning only) and T1 (treatment of 0.05% BHT instead of liquid smoke). The histamine contents of 3 seasoned-dried products were within a stable range (9.08 ~ 12.08 mg/100 g) during storage. The water activities of all products were in the 0.698 ~ 0.755 range. The viable cell count of T2 was lower than those of C and T1 during storage. The change in color values of C, T1 and T2 were not significant with increasing storage period. The results of the sensory evaluation during storage showed that the shelf-life of T2 was extended to 60 days, while those of C and T1 were limited to up to 45 days.
