The purpose of this study was to investigate the food habits, dietary intakes and GTTs (glucose tolerance tests) of female college students according to BMI in the Kyunggido area. Questionnaire surveys, 24 hr dietary recalls, and GTTs were conducted with 108 students (36 under-weight students, 42 normal weight students, and 30 over-weight students). The results were as follows: The under wt. and over wt. groups had lower frequencies of eating breakfast but higher frequencies of eating lunch than the normal wt. group. The ratio of students having dinner everyday was low in the order of under wt. > normal wt. > over wt.. The over wt. group skipped breakfast mainly due to lack of time and the need to get to school, and the under wt. group had a high ratio (48.1%) of lunch skipper as a result of having brunch. The over wt. subjects had poor habits of eating fast and overeating, but the under wt. students ate their meals slowly. The under wt. group had a high ratio of students who ate snacks and fast-food. All subjects wanted to immediately improve their poor habit of overeating. Plant oil, animal Fe, and vitamin E intakes were lower in the under wt. group than in the other groups. For the GTT, the over wt. students had significantly lower blood glucose levels after 30 min. than the other groups. BMI was negatively correlated with blood glucose level after 30 min, but positively correlated with crude fiber, ash, Ca, plant Ca, P, animal Fe, Na, K, $\beta$-carotene, vitamin $B_6$, niacin, and vitamin E.
Increasing numbers of Korean adults, especially women, are adopting vegetarian diets for various reasons. In this study, the characteristics of vegetarianism among females residing in Seoul were examined. In addition, the dietary habits and eating behaviors between vegetarians and non-vegetarians were investigated. A total of 148 females (73 vegetarians, 75 non-vegetarians) were recruited and questionnaires regarding their demographic characteristics and eating habits were completed. The eating behavior and daily intake of food groups was assessed using the three factor eating questionnaire-R18 (TFEQ-R18) and food frequency questionnaire, respectively. The ages, BMI, education, and religious affiliation were not significantly different between the two groups. More than 30% of vegetarians had followed a vegetarian diet for longer than 24 months. The most common motivations for vegetarianism in study participants were 'health or weight control' (46.6%) followed by 'environmental concerns or animal welfare' (24.7%). Vegetarians had a lower intake of cereals, Kimchi, and soda, but a higher intake of potatoes and sweet potatoes, vegetables, mushrooms, seaweed, and fruits compared to non-vegetarians. Significant differences in eating behavior scores were also found between the two groups; in particular, vegetarians reported higher levels of restrained eating and emotional eating than non-vegetarians. Scores of uncontrolled eating, however, were not significantly different between the two groups. In conclusion, these results suggest that while vegetarianism is associated with healthy dietary habits, it is associated with restrained eating behaviors which may increase the risk of eating disorders in women.
Objectives: This study was designed to find out factors that are needed to be improved for the Buddhist training environment of Sramanera Sramanerika monks, who have been newly adapted for their life style after becoming a monk, and to provide basic data for the development of the standard diet in Buddhist temples. Methods: A self-administered questionnaire was applied to 365 Sramanera Sramanerika monks at 11 Buddhist monk universities. The questionnaire was designed to investigate their dietary habits, dietary evaluation, satisfaction of food service, and food preferences. Results: The study population consisted of 52.6% men, and 47.4% women. The subjects who had a vegetarian diet before joining the Buddhist priesthood were 27.7% women, and 13.5% men (p<0.01). 42.2% of the total subjects felt that they are healthy now and 19.4% felt weak. The most difficulty of dieting adaptation as soon as entering the priesthood was the strict diet rules (42.9%). The subjects considered health or nutrition (40.0%) highly when having meals. 94.8% women, 84.1% men ate breakfast every day (p<0.001). Women (55.4%) frequently ate snacks more than men (26.6%) (p<0.001). The results of the dietary evaluation indicated that the intake of milk, soy milk or dairy products and beans or tofu received lower than 3 points and women had lower point result than men (p<0.001). Foods with higher preference were grilled mushrooms, grilled laver, miso stew, sweet and sour mushrooms, steamed tofu with seasoning. Conclusions: Women were more interested in their health than men but they also required to improve the nutritional eating habits. It appeared that the lower intake rates of the calcium containing food (milk and dairy), and proteins (beans and tofu) could result in nutritional imbalance. Therefore, it is necessary to offer food based on the standard menu plan with consideration given to their food preferences in order to maintain their health and desirable dietary habits.
The purpose of this study was to investigate the food behaviors and food preferences of teenagers by regional groups. The subjects were composed of 365 third grade students in middle schools from urban, rural and fishing areas in Kyungpook province. The data was collected by using a survey questionnaire. The results of the study are summarized as follows: Eating habits of 21-47% of the subjects, according to the regions, were poor and female students in large city showed the best eating habits while female students in fishing village showed the poorest eating habits. Out of the three regional groups studied, the subjects from the fishing villages had the highest rates of skipping meals and eating between meals. Out of all the people investigated, thirty to forty percent had unbalanced diets, the highest percentage coming from the urban areas and the lowest from the fishing villages. All together an allergic reaction to food was the highest in the fishing villages' subjects and female students were more sensitive compared to the male students. Students from the urban area had higher frequency of symptoms of lactose intolerance. Upon the investigation of the subjects 'food preferences, they preferred boiled rice to any other rice as a staple food. Cha jang myun was the most preferred out of all noodles and breads. It was found that teenagers preferred one course meal such as fried rice to a rice-centered regular meal. Out of all various meat soups, beef soup and beef-rib soup were preferred the most. As for subsidiary foods the most preferred were soybean paste stew and cuttlefish stew which they ate daily. There was a very high preference for fried foods, the most favored being pork cutlet followed by fried vegetables, sweet potatoes, and minced meat. The most preferred cooked vegetables were bean sprouts and seasoned cucumber. Seasoned cubed radish roots were the most preferred kind of kimchi. For desserts there was a very high preference for the following fruits: apples, plums, strawberries, and oranges. For beverages the most popular choice were chocolate drinks followed by orange juice, apple juice, milk and tomato juice. According to these investigations, most teenagers liked daily foods which they are used to. The study showed that on the whole the teenagers had poor eating habits. A problem that needs immediate attention is that female students and students from the fishing villages have a high rate of skipping meals. It is expected that the results of this food preference test of teenagers could be useful in the meal planning of middle school lunch programs in the future.
A study was conducted in order to develope HACCP model in school lunch in Korea. Results: 1. Of 22 menus 4(18%) were non heating processes (#1), 2(9%) were food handling by using hands (#2), and 16(73%) were heating processes (#3). Of 279 menus 36(12.9%) belong to process #1, 8(2.9%) to process #2, and 235(84%) to process #3. 2. The critical control points for process #1 were contamination by hands of food handlers, and unsanitary food preparation habits of food handlers. Those for process #2 were improper heating temperature, contaminations by food handlers' hands, and unsanitary food handling habits, and cross contamination by unclean utensils and equipment. 3. Management criteria for the CCPs were conditions of food storage, refrigeration, freezing, food cooking temperature, personal hygiene, washing and sanitization of utensils and equipment. 4. Monitoring criteria for CCPs were observation, temperature checking, inspection of utensils and equipment, and practice of good personal hygiene. 5. Corrective actions were refusal of unsafe products, correction of improper temperature, proper cleaning and sanitization, and proper reheating time and temperature.
A study on the dietary habit and the food perference of Pre-school Children was made in order to identify the state of their dietary life and provide the data of dietetic education which can help the children to live a desirable food life, by analysing the present dietry life into the dietry habits, food preference, the actual condition of nutrition intake and table manners. 1. The Diet Habits. Both boys and girls were fond of dinner best and tended to neglect breakfast and lunch. 64.2% of the total children took meals regularly. 2. Food Preference. The most favorite food was beef, ham, Dupoo (beancurd), squid, ice-cream, bananas, watermelon, sweet potatoes, corn, Ingeolmi (cake form glutinous rice), doughnuts, JJajangmyon (Chinese noodles), Coke, fried chicken. 3. The Actual Conditions of Nutrition Intake. The frequency of intake of meat and its processed food was the lowest and that of fishes, shellfishes, fats and vegetables was low, too. 4. Table manners and Sanitary Conditions. The average mark of table manners and sanitary conditions is 12.49${\pm}$2.65. The children didn't practice well in the following points; talking at table, beginning to eat after the beginning of elder person's, brushing their teeth after taking meals, keeping a straight posture.
The purpose of this study is to provide basic informations for satisfaction degree for school lunch program of elementary school students in Yongin city. The questionnaire for the 646 subjects of the investigation included degree of satisfaction in school lunch program, sufficiency of the amount of foods provided, time of supplied milk intake, the greatest effects on food habits after receiving school lunch program, and primary factors of effects on food preferences and food habits. More than $70\%$ of the subjects were satisfied about the school lunch program(p<0.05). Female subjects felt more sufficient about the foods provided. Categories for the sufficiency of the food amount had higher ratios in lower grade subjects indicating some necessities of adjustments for the amount of food between the higher and lower grade subjects(p.0.05). About $68\%$ of the subjects drank milk after the 1 st class. The greatest effect of school lunch program was to provide subjects various new foods, well-balanced diets and finishing the supplied foods up. The school lunch had good effects on the food preferences of the elementary school students indicating the importance of the program.
The objective of this study was to investigate the dietary behavior and preference of vegetable food and to provide preliminary data required for menu promotion for middle school students' proper diet habits for their health. A survey was conducted for one week(2007) in Kyounggi province(Ansan and Seoul). The result was as follows. Three times a day was the highest in the number of eating meals and boiled rice. In the preference of food items, the meat food was more preferred than the vegetable food. In case of vegetable preference, males were higher than females. Many students recognized one dish of vegetable food in their meals. 72.4% of students ate less than provided in the food service system. Also, 7% of students did not eat vegetable foods entirely. They have had 1/2 dish(35.2%) of Kimchi in their meals and only 10.6% of students didn't eat Kimchi at all. The reason that students ate vegetable provided was 'for eating rice'(47%). Also, the reasons that students do not eat vegetable provided were 'bad taste' and 'unfavorite vegetable'. The above results indicated that it was needed to understand the importance of vegetables and education about the nutrients of vegetables.
The purpose of this study is to examine the effects of pre-school children's past lactation types and food habits on dental health status. This study was carried out by analyzing the information obtained from oral inspection of 163 preschool children and questionnaires answered by their mothers. The results are as follows: 1. 80.4% of the preschool children have decayed and filled teeth. 2. The older they are, the more decayed and filled teeth they have 3. The earlier they started to have weaning foods, the more decayed and filled teeth they have. Preschool children who started weaning foods after 12 months of their birth have significantly more decayed and filled teeth. 4. Preschool children who had weaning foods by using milk-bottles have significantly more decayed and filled teeth than others. 5. Preschool children who had weaning foods regularly have significantly less decayed and filled teeth. 6. Preschool children who have frequently skipped breakfast have the least decayed and filled teeth. 7. Preschool children who would like to have sweet things have significantly more decayed and filled teeth than others.
The purpose of this study was to analyze the dietary habits by age groups, based on the nutrition counseling data of medical health examination. The subjects were 5,811 adults(3,258 males and 2,553 females) who took comprehensive medical test in Gyeonggi area, and they were evaluated from January 1 to December 31 in 2005. Survey samples were divided by age groups 30>, $30{\sim}39,\;40{\sim}49,\;50{\sim}59,\;60{\sim}69,\;70{\leq}years$. The subjects were composed of 56.1% male and 43.9% female. The results showed that the dietary habits of $50{\sim}59$ group were relatively good. On the other hand, in 30>, $30{\sim}39\;and\;40{\sim}49$ age groups, since they had irregular meals and high ratio of skipping breakfast. and they had meals out frequently, nutritional unbalance in these age groups was expected for the future. Therefore the correct nutritional facts should be taught to them so that they have a healthy dietary habit.
