This study was performed to investigate dietary habits and nutritional intake according to body mass index (BMI) of female college students. The subjects were 1361 students with a mean age of 20.4 years residing in Seoul and Kyonggui area. BMI (kg/) between $\geq$ 18.5 to $\leq$ 23 was considered as nonnal, < 18.5 as underweight and > 23 as overweight. The subjects had a mean BMI of 20.0 kg/$m^2$ and 25% of them were classified as underweight group, 67% as normal group and 8% as overweight group. Dietary intake was assessed by food frequency method and consumption of foods and nutrients was analyzed. Frequency of meal skipping was higher in the overweight group, 16.1 % of the overweight group skipped dinner. Also, the frequency of snack intake was lowest in the overweight group. The overweight group consumed less meat and fish than the normal and underweight groups. The total number of foods consumed in a day was also significantly lower than that of the underweight and normal group. The overweight group consumed less energy, protein, fat, phosphorus and niacin than the underweight and normal groups. The overweight group took iron and sodium intake lower than the normal group. Mean intakes of nutrients except clacium and iron in all three groups were over Korea RDA. The NAR (nutrient adequacy ratio) value of all nutrients, except calcium, was lower in the overweight group when compared to the normal and underweight groups, and the MAR (mean adequacy ratio) of the overweight group was 0.89, which was lower than 0.92 of the underweight and 0.93 of the normal group. The above results indicated that the deficiency of major nutrients such as calcium and iron could be inducde by less kinds of consumed foods and frequent meal skipping including dinner in the overweighted group. Therefore, balanced nutrient intake is required to maintain skeletal health and prevent anemia in overweighted female college students aged twenties.
The purpose of this study was to find the relationship between osteoporosis and various factors such as general personal background, physical activity, menstruation, daily life and dietary habit. The following are the results of this study: 1. In the relationship of osteoporosis status with general personal background, the risk of osteoporosis increased with age. Active women with higher education, high income and jobs tended to have less risk of osteoporosis. Women with earlier menarche had a tendency of having thicker bone mineral density. 2. As for disease related to bone mineral density, stomach disease, thyroid, bone damage, and bad teeth conditions were significant factors affecting bone mineral density. Women with those diseases and family history of osteoporosis were more likely to have osteoporosis. 3. In relation to food intake regular diet of dairy products, anchovy, or meat showed significantly less risk of osteoporosis. 4. In relation between dietary habits and bone mineral density, unbalanced diet had statistically less probability of osteoporosis. It is important for genetically disposed women to prevent osteoporosis in advance by considering acquired factors like life-style and medication.
To determine that Paragonimus sp. is actively transmitted in a tropical area of the Pacific region of Ecuador where human cases of pulmonary paragonimiasis have recently been documented, a total of 75 freshwater crabs were collected from 2 different streams in the Pedernales area of $Manab\acute{i}$ Province, Ecuador. All collected crabs were identified as Hypolobocera guayaquilensis based on morphological characteristics of the male gonopods. The hepatopancreas of each crab was examined by compressing it between 2 glass plates followed by observation under a stereomicroscope. Excysted Paragonimus metacercariae were detected in 39 (52.0%) crabs and their densities varied from 1 to 32 per infected crab. There was a positive relationship between crab size and metacercarial density. Sequences of the second internal transcribed spacer region of the ribosomal RNA gene of the Paragonimus metacercariae obtained in this study were identical to those of Paragonimus mexicanus deposited in the DDBJ/EMBL/GenBank database. Thus, the present study is the first to confirm that the crab species H. guayaquilensis is the second intermediate host of P. mexicanus in $Manab\acute{i}$ Province, Ecuador. Because this crab might be the possible source of human infections in this area, residents should pay attention to improper crab-eating habits related with a neglected parasitic disease, i.e., paragonimiasis.
This study was conducted with 20 female gymnasts to examine the relationship between eating patterns, diet menstrual function and hematological status. According to the baseline data a nutrition counseling and education program was developed and evaluated improved the nutritional status and health of female gymnasts. Mean body weight at the onset of the study was 42.1$\pm$7.0kg and was reduced to 41.8$\pm$6.1kg after the nutrition counseling and education program. The percent of body fat was significantly reduced from 13.9$\pm$3.7% to 13.1$\pm$3.1%(p<0.01) skinfold thickness of subscapular and thighs was reduced significantly(p<0.01, p<0.05) Mean daily intake levels of energy, protein calcium iron thiamin riboflavin and niacin were significantly elevated after the nutrition counseling and education program but were lower than the Recommenced Dietary Allowances. Teacher's satisfaction with school lunch programs run by foodservice(FS) management types were surveyed with questionnaire at 5 middle and 4 elementary schools. The 88 middle and 104 elementary school teachers who participated and schools' FS management were of 5 types : self/conventional, contracted/conventional, contracted/commissary and contracted/dosirak delivery. Most teachers knew correctly their schools' present FS management types and thoroughly understood the main reasons for needing school lunch program with proper nutrition, better taste and balanced diets in addition to the first reason its less work than preparing homelunches. Teacher's satisfactions with their present school FS were high in self/conventional and contracted/conventional and was very low in contracted/commissary and contracted/ dosirak Taste, hygiene, nutrition and dining facilities in turn were pointed out to be improved : firstly hygiene in the self and firstly taste in the contracted. Conclusively most teachers emphasized school lunch programs to be continued and preferred self-managed types and contracted/conventional types as the second best in having less work to manage, better, taste, nutrition and hygiene, less cost and better nutrition education in turn. And they thought school founders should handle the finances needed to newly establish or repair the school FD facilities, otherwise provided with the partial aid of student's parents.
The amount of salt intake of Korean people is 11.4 grams per a day, which is 2.3 times of the recommended daily salt intake by WHO - 5 grams of salt a day. The relationship between high salt consumption and increased risk of high blood pressure, observed not only in hypertensive but also in normotensive patients. High salt intake is also associated with an increased risk of heart attack, cerebral ischemia and osteoporosis. Therefore, this research is for developing a salt taste sensor to reduce sodium consumption and improve meal habits for the perception of a more bland taste of most foods. When the sensor was put into food sample, current intensity achieved with distribution cables. Current intensity was correlate with a simple equivalent of salt taste stimulus intensity. The salt taste sensor consists of salinity & temperature measuring probe, signal processing circuit and LCD display & LED warning light. When salinity is going over a set point, LCD displayer indicate salt taste on LCD panel by percent value (%), and at the same time, blue LED light change to red LED light. So we could know the grade of salt taste in soup before meals conveniently and objectively. The results show that operating range of 10 to $80^{\circ}C$ and accuracy of ${\pm}0.1%$ were achieved with an analysis time of about 2 or 3 sec. Moderate reductions in salt intake can help to avert adult diseases and lead a healthy life.
This experiment was carried out to examine the seasonal changes in feed intake and feeding behavior in Korean spotted deer under farmed condition to obtain basic information for efficient feeding management. The seasonal daily gain was the highest (p<0.05) in summer and the lowest (p<0.05) in winter. Dry matter intake (DMI) was the highest (p<0.05) in spring (2,685 g/day) and the lowest in winter (1,929 g/day). Intake of roughage in the DMI was the greatest in spring and that in winter was significantly lower (p<0.05) than in spring. Also DMI, expressed in terms of metabolic body weight ($kgW^{0.75}$), was 85.5 g, 70.6 g, 70.9 g and 65.1 g for spring, summer, autumn and winter, respectively, and thus was the highest in spring and the lowest in winter (p<0.05). Deer exhibited similar eating patterns, comparatively short and frequent periods, in all seasons. They showed comparatively intensive patterns of rumination during midnight for autumn and winter and relatively continuous patterns of chewing activity during spring and summer. There were no significant differences in seasonal eating time and ruminating time. However, exercise time was the greatest for winter and the lowest for summer and there was a significant difference (p<0.05) between summer and winter. Although not significant, eating time per 100 gDM ingested tended to be short in spring and summer and long in autumn and winter. Ruminating time per 100 gDM ingested was the shortest (p<0.05) in spring compared with in other seasons. The conclusion can be drawn that since deer have seasonal differences in feed intake and feeding habits, it is necessary to establish and develop an efficient feeding system for deer.
This study is an analysis on how current elementary teachers think about nutrition education, how they are teaching it, and problems that have occurred. The main purpose of this analysis was to deal with future problems in nutrition education by analyzing the present situation . The survey was done on 544 currently working elementary school teachers. from the 9 education departments within Seoul, 2 schools were chosen from each department by stratified random sampling. The survey used a questionnaire that was passed out personally to teachers from September 1, 1997 to the 19th. The 544 usable questionnaires were analyzed by using the teachers had nutrition education training and the average score of nutrition knowledge was 13.30 $\pm$2.73 out of 20. Nutrition education was being taught as apart of other subjects in 87.9% of the schools, and mainly by lecture. Audio visuals aids were used by 53.7% of the teachers and the most common was the VTR. Nutrition education was taught as a part of physical education and 41.5% were using teacher guides to help them. 91.9% of the teachers supported the idea of nutrition education in elementary schools. Nutrition education was supported by 80. 0% of teachers to begin when children are in kindergarten, proving that early nutrition education is supported. The analysis showed that nutrition education should be taught by parents(29.4%) , teachers(29.2%), and nutritionists(25.9%) relating that family , education, and school lunch programs should tie in with each other. 96.7% of the teachers responded that they would teach nutrition education. However, 41.0% disagreed with having a separate course for nutrition education . Proper eating habits, nutrition and its diseases, and growth with nutrition were the main categories within nutrition education and the most effect method was thought to have audio visuals, guides for teachers , and to link the subject matter with school lunch programs. The teachers main responses to problems with children were that they are too much instant food, did not eat in a variety , and had no manners in eating. Ironically, the believed that malnutrition, fainting and growth stunt were not important nutrition problems.
University students tend to have various dietary problems including undesirable dietary behaviors, inadequate intakes of nutrients and biased habits of liquid consumption. This study was conducted to find dietary behaviors (n = 357) by questionnaire survey and to examine dietary nutrient intakes (n = 60) and liquid consumption (n = 853) by food record method for 3-days among university students attended in K University of Chungnam province in Korea. Most subjects lived in the dormitory or self-boarding house, and they skipped breakfast most frequently and took breakfast most irregularly among three meals. Dietary mean intakes of energy, Ca, vitamin B2 and folate were lower than the KDRI (37-85%), and those of males were poorer than those of females. Ratios of energy intake among three meals and snacks were not distributed evenly, so the mean energy intake from snacks was higher and that from breakfast was lower than the ideal ratio, respectively. Daily mean consumption of liquid was 1,526.4 mL/d for males and 1,151.5 mL/d for females, and these intakes were more than the KDRI (1,300 mL/d for males and 1,100 mL/d for females). However, their sources of liquid consumption were not desirable because alcohol, soda, juice of fruit or vegetable and beverage mixed with fruit juice and/or vegetable juice were major sources of liquid as well as drinking water. These findings show that university students have poor dietary behaviors including frequent skipping of breakfast, irregularity of meals, inadequate intakes of nutrients and undesirable pattersirablliquid consumption including high portion of alcohol and soda as alliquid source, and these trends were stronger for males than for females. Therefore, we should endeavor to correct their meal problems id ated to dietary behaviors, nutrient intakes and liquid consumptions through nutrition education.
Golestan province has a reputation for relatively high incidence rates of gastric cancer in Iran. Along with dietary, lifestyle and environmental influential factors, soil selenium and high levels of pesticide used may exert influence in this region. The present study was designed for modeling the influential predictors on incidence of gastric cancer in Golestan. All registered cases of gastric cancer from March 2009 to March 2010 (49 females and 107 males) were investigated. Data were gathered by both check list and researcher made questionnaire (demographic, clinical and lifestyle characteristics) and analysed using logistic regression. Mean (${\pm}SD$) age at diagnosis was $62.9{\pm}13.8$ years. CIR and ASR of gastric cancer showed 9.16 and 13.9 per 100,000 people, respectively. Based on univariate logistic regression, a history of smoking (OR= 2.076), unwashed hands after defecation (OR= 2.612), history of cancer in relatives (OR= 2.473), history of gastric cancer in first-degree relatives (OR= 2.278), numbers of gastric cancers in first-degree relatives (OR= 2.078), history of X-ray and dye exposure (OR= 2.395), history of CT scan encounter (OR= 2.915), improper food habits (OR= 3.320), specific eating behavior (OR= 0.740), consumption of probable high risk foods (OR= 2.942), charred flesh (OR= 1.945), and animal fat (OR= 2.716) were confirmed as a risk factors. Changes in lifestyle may be expected to increase gastric cancer incidence dramatically in the near future. Therefore, appropriate educational interventions should be designed and implemented by competent authorities.
