  • In this research, we examined the shifts in determinants influencing the frequency of eco-friendly food purchases pre- and post-COVID-19. Our analysis utilized filtered 2019-2021 Consumption Behavior Survey data from the Korea Rural Economic Institute Food, excluding any irrational responses. Given the nature of the dependent variable, a multinomial logistic regression model was employed with demographic factors, variables pertaining to food consumption behavior, and variables concerning food consumption awareness as predictors. Following the onset of the COVID-19 pandemic, an individual's level of education was observed to positively influence the frequency of eco-friendly food purchases. In contrast, income level and fluctuations in food consumption expenditure did not appear to have a discernible impact on the purchasing frequency of such eco-friendly products. Irrespective of the advent of COVID-19, variables such as the frequency of online food purchases, the utilization of early morning delivery services, dining out frequency, and the intake of health-functional foods consistently demonstrated a positive correlation with the propensity to purchase eco-friendly foods. Overall, consumers prioritizing safety, quality, and nutrition over price, taste, and convenience in their procurement decisions for rice, vegetables, meat, and processed foods exhibit an increased inclination toward the acquisition of eco-friendly food products.

  • Differences in food and nutrient intake among Korean adults based on different stress levels were investigated using information obtained from 7,370 adults who participated in the 1998 Korean National Health and Nutrition Survey. The twenty-four hour recall method was used for this dietary survey. Data pertaining to indivisual stress levels were collected by means of interviews as part of the National Health Behavior Survey. Following the analysis of variance, Duncan's Multiple Range Test was used to test the differences in food and nutrient intake among groups with different levels of stress. Eighty-three percent of the study subjects were reported to have a certain level of stress. Unlike the observations made in European and American studies, there were no significant differences observed in food and nutrient intake based on the stress levels among Korean adults of either sexes. These results may imply that even though stress was clustered with other health related behavior, the association between food intake and stress among Koreans was very weak. The parenting behavior scale and demographic variables, eating habits and food frequency were administered to the subjects. In this investigation, the subjects were 396 boys and 337 girls in Chunju city in Korea, 50.1% of the mothers was in the age from 35 to 39 years and 57.8% of the mother had an occupation. Data were analyzed by using a SPSS PS package. Significant differences and correlation among variables were determined by the frequency, $x^2-test$ and pearson's correlation coefficient. Eating habits was significantly influenced by mother's employment status, but was not affected by the levels of mother's education and income. Parental behavior characteristics was significantly related to the children's snacks habits(p<0.05, p<0.01), but have no connection with dietary habits and the eating out. The survey revealed higher percentage of the children who had taken affectionate, reasonable and positively reinforced child care, answered they enjoy meals and the other groups answered they did not. Also frequency of having soup, green vegetables, fruits, dairy products had positive relationship with affective, reasonable rearing attitude, but negative relationship with neglective rearing attitude. And the survey showed children who were reared in overprotect had chocolate, candy and the like in large quantities.

  • The aim of this study was to explore the relationship between demographic characteristics and atopic dermatitis, along with adolescents' body mass index. Also, this study explored the association between dietary intakes (fruits, soda, caffeinated beverages, instant food, cracker, vegetables, and milk) of adolescents and atopic dermatitis. Korea Youth Risk Behavior Web-based Survey for 2014 was used for data analysis, in which a total of 3,532,149 middle and high school students participated. Data were analyzed by descriptive analysis and logistic regression based on the complex sample design using SPSS ver.20.0 statistics. The results showed that males had a higher prevalence rate of atopic dermatitis than females. The significant association between body mass index and atopic dermatitis was found (F=46.625, P<0.001). Students who have higher levels of body mass index showed a higher prevalence rate of atopic dermatitis. Finally, the findings showed that the intake of vegetable and milk had associations with atopic dermatitis (F=6.795, P<0.001). Greater vegetable intake was associated with less atopic dermatitis whereas greater milk intake was associated with more atopic dermatitis prevalence. Based on the above results, we found that demographic characteristics, body mass index, and some dietary food intakes of adolescents had influences on prevalence rate of atopic dermatitis.

Through a questionnaire, which consisted of 20 food behavior checklist items. These items were grouped under five factors: balance, diversity, moderation, practice and environment. All data were analyzed using SPSS 25.0. The average NQ score weighted using the five factors was 61.32 points. Among the five factors, moderation showed the lowest score, whereas environment showed the highest score. The average score of the vegetable preference was 3.36 points out of a total of 5 points. The vegetable preference was found to be highest for bean sprouts and followed by tomatoes, lettuce, spinach, Chinese cabbage, sesame leaf, pumpkin, carrot, radish, chives, lotus roots, onions, broccoli, sweet peppers, and eggplant. The results of vegetable preferences by NQ grade were 4.13±0.63 points for the high grade, 3.68±0.75 points for the medium-high grade, 3.41±0.82 points for the medium-low grade, and 2.94±0.78 points for the low grade. There was a significant positive correlation between NQ and vegetable preferences (r=0.477, P<0.001). If vegetables with high preference are frequently provided in school meals, it might contribute to improving overall food behavior.

Data on the 16,574 subjects was obtained from the sixth Korea Youth Risk Behavior Web-based Survey (2010). Only 52.2% of the subjects had regular breakfast. The rate of skipping breakfast was higher in the underweight group than in the obese group, but the rate of skipping dinner was on the contrary to this. Underweight students had a higher intake frequency of fruits, fast food, instant noodle, and snacks than the obese groups. 3.5% of underweight students considered themselves to be overweight or obese. 53.4% of obese students considered themselves to be overweight. The experience of weight control increased according to BMI, but underweight students considered weight control as an effort to be slimmer. Meal restriction was used more frequently to control weight. The perceived stress level was higher in obese student, especially due to appearance. Therefore, an appropriate, integrated and personalized high school nutrition program should be established for proper body image perception and to develop the self-esteem of female high school students.

We conducted the survey repeatedly, ten times among same 124 preschool children below 5 years old. The instruments were categorized into 3 different parts: part 1 for pre-meal food behavior, part 2 for mid-meal food behavior, and part 3 for after-meal food behavior. These were types of checklists which consisted of guideline of habit formation for daily life, especially food habit were developed on the basis of the National Kindergarten Curriculum. We Have reached the following results. $\circled1$ The group of below 3 year-old children had lunch and snacks more frequently than other age groups. $\circled2$ The children's age did playa role as one of the factors which influences on children's food behavior. The less frequency of taking meals in day care center the better their food behavior score. $\circled3$ Therefore, the age of children whose age is 3 or Jess spent more (of day) time at care center and had significantly more number of meals and snack at the care center. In such case, the food behavior was found to be not in good shape. I-ence, the children who were more exposed to feeding meal in kindergarten and day care center, were like to form unfavorable food behavior. The average food behavior score is significantly correlated with pre-mea, mid-meal, and post-meal food behavior. The study suggested that feeding program for young children at kindergarten and day care center should be systematized and developed on the basis of the status of their food behavior.
