대구지역 여대생의 영양소 섭취 상태가 체성분 및 골밀도에 미치는 영향 (Effects of Nutrient Intake of College Women in the Daegu Area on Body Content and Bone Mineral Density)

  • Body content bone mined density and nutrient intake status of 129 college women in Daegu area are analyze4 The mean age was 23.1 years. Bone mineral density was measured in their right heel by SONOST-2000 ultrasound bone densitometer, and nutrient intake was assessed by a Questionnaire. Diet intake data were obtained by using a 24 hours recall method to evaluate the subject's usual diet. The average energy, Ca, Ee, Zn and folate intakes were 64.2, 47.5, 54.7, 62.9 and $57.4\%$ of RDA, respectively. Ca/P and Ca/Protein ratio were 0.46 and 6.7, respectively. The mean adequacy ratio(MAR), an index of overall dietary quality wag 0.6. The index of nutritional quality was under 1.0 for protein(0.7), vitamin A(0.9), E(0.7), $B_1(0.8)$, niacin(0.8), $B_6(0.6)$ and phosphorus(0.6). The less the protein and energy intake, the less the bone mineral density(p<0.05). The intakes of protein(p<0.05) and that of phosphorus(p<0.001) were positively correlated with bone quality index(BQI). The calcium intake was positively correlated with Z-score(p<0.05). The phosphorus intake was positively correlated with T-score(p<0.001) and Z-score(p<0.0001). In conclusion, this study indicates that nutrient intake of the college women is considerably lower than the RDA. Also the BQI is lower than standard.

골감소증 여대생의 영양소 섭취실태와 이소플라본 보충이 골밀도에 미치는 영향 (Nutrient Intake and Effects of Isoflavone Supplementation on Bone Mineral Density in Female College Students with Osteopenia)

  • The principal objective of this study was to assess the effects of soy isoflavone supplementation on bone mineral density in 36 female college students with osteopenia for 12 weeks. The subjects were divided into three groups on the basis of bone mineral density. The experimental groups were provided supplements of either 80 mg of isoflavone (Iso-80) or 40 mg of isoflavone (Iso-40). To the placebo group, 40 mg of powdered glutinous rice was administered. It was determined that many subjects with osteopenia evidenced lower levels of activity as compared to the control group. Isoflavone supplementation was more effective in controlling total cholesterol and LDL-cholesterol than was observed in the placebo group. We noted no significant differences in serum osteocalcin concentration between Iso-40 and the placebo group, but significant differences in osteocalcin concentration were detected between Iso-80 and the placebo group. Bone quality indices (BQI) were correlated positively with mineral content, lean body mass, muscular mass, and blood components including albumin, Ca, Mg, ALPase, and osteocalcin. Both Iso-40 and Iso-80 supplementation for 12 weeks significantly increased protein and mineral content in the body. As lower intakes of Ca and folate were noted in the subjects, emphasis should be given to adequate intakes of these nutrients in the subjects. In conclusion, 12 week isoflavone supplementation in young females with osteopenia exerted positive effects on bone mineral density and bone turnover markers.

국내 시판 유아용 고형 조제분유의 비타민 함량에 관한 조사 (Study on the Vitamin Contents of Commercial Powdered Infant Formula)

  • 시판되고 있는 성장단계별로 10종의 영아용 조제분유(0-5개월용, 6-12개월용)의 수용성 및 지용성 비타민 함량을 표시된 첨가수준을 이용하여 비교 분석하였다. 조제분유 100 g 및 100 kcal 내 비타민 함량을 제품별로 분석하고 한국인 영양섭취기준에 의거하여 적합성을 고찰한 결과는 다음과 같다. 분말형 조제유 100 g당 각 비타민 함량은 전반적으로 조제분유 기준에 충족됨을 알 수 있었다. 100 kcal를 기준으로 영양소 적정량을 제시한 Codex 규격과 비교 분석한 결과 역시 모든 비타민이 Codex 기준 함량을 모두 충족하였다. 영아의 에너지 필요추정량을 기준으로 한국인 영양섭취기준과 비교, 분석한 결과, 본 실험에 사용한 고형분 조제분유의 비타민 함량이 섭취기준의 충분섭취량을 충족함을 알 수 있었다. 0-5개월용 고형분 조제분유의 경우, 지용성 비타민 A, D, E, K는 각각 영양섭취기준 충분섭취량의 약 178.6%, 205.3%, 208.4%, 976.3%를 함유하였으며, 수용성 비타민의 경우, 비타민 C, 티아민, 리보플라빈, 니아신, $B_6$, 엽산, $B_{12}$, 판토텐산 및 비오틴은 각각 충분섭취 량의 약 173.15%, 237.22%, 269.75%, 295.9%, 431.55%, 165.75%, 1186.25%, 203.77%, 408.33%를 함유하고 있다. 6-11개월용 고형분 조제분유의 경우, 지용성 비타민 A, D, E, K는 각각 영양섭취기준의 충분섭취량의 약 199.2%, 262.3%, 220.5%, 626.46%를 함유하였으며, 비타민 C, 티아민, 리보플라빈, 니아신, $B_6$, 엽산, $B_{12}$, 판토텐산 및 비오틴은 각각 충분섭취량의 약 179.46%, 210.18%, 264.65%, 241.54%, 205.95%, 166.86%, 699.54%, 246.95%, 475.03%로 함유됨을 알 수 있었다.

한국인 상용 수산물 식단의 비타민 B9과 B12 함량 (Contents of vitamin B9 (folate) and B12 (cobalamins) in commonly consumed seafood menus in Korea)

  • 본 연구는 한국인이 주로 상용하는 수산물을 이용한 다소비 메뉴 39종을 선정하고, 이를 기준 레시피로 조리한 후 이들에 대한 비타민 B9 (엽산)과 B12 (코발라민류) 함량을 분석하였다. 국가식품영양성분 데이터베이스 자료로 활용하기 위한 데이터의 신뢰도 확보를 위해 비타민 B9(trienzyme-L. casei법)과 B12 (immunoaffinity-HPLC/PDA) 분석법의 유효성을 검증하였으며 분석품질관리를 수행하였다. 각 성분 분석법의 정확성, 정밀성, 특이성, 상관성, 검출한계 및 정량 한계를 분석한결과 모두 AOAC 가이드라인 수용 기준에 충족되는 결과를 얻었으며, 분석품질관리도표를 전 분석 기간 동안 작성하여 확보된 분석 데이터의 신뢰도를 확보하였다. 상용 수산물 메뉴의 비타민 B9과 B12 함량을 분석한 결과 각각 1.83-523.08 ㎍/100 g과 0.11-38.30 ㎍/100 g의 범위로 사용된 재료와 조리법의 특성에 따라 다양하게 나타났다. 비타민 B9 함량은 구이류의 김구이 (523.08 ㎍/100 g)가 가장 높은 함량을 보였으며, 볶음류에서 건새우볶음 (128.34 ㎍/100 g)과 잔멸치볶음 (121.53 ㎍/100 g)이 높은 함량을 나타내었다. 비타민 B12함량은 찜·조림류의 꼬막찜 (38.30 ㎍/100 g)이 가장 높은 함량을 보였으며, 구이류의 김구이 (29.79 ㎍/100 g)와 볶음류의 멸치마늘종볶음 (18.99 ㎍/100 g)으로 높은 함량을 나타내었다. 유사 재료의 조리법에 따른 비타민 B9과 B12 함량을 비교하면 비타민 B9의 경우 물 사용량이 많은 국·탕·찌개류는 다른 시료군 (볶음, 찜, 조림, 구이, 튀김 및 무침)에 비하여 비교적 낮은 함량을 나타내어 수산물과 다양한 채소류를 함께 볶는 볶음 메뉴가 비타민 B9 섭취에 도움을 줄 것으로 보인다. 비타민 B12의 경우 식물성 식품에는 발견되지 않고 주로 동물성 식품에만 존재하는데 본 연구 결과 김 및 미역과 같은 해조류 메뉴는 채식주의자들에게 비타민 B12의 좋은 급원메뉴가 될 수 있을 것으로 보여진다. 본 연구는 분석법 검증 및 품질관리를 통하여 분석 신뢰도를 확보하였으며 이와 함께 제공된 한국 상용수산물 메뉴의 비타민 B9과 B12 함량데이터는 한국인의 보건영양 정책 수립을 위한 국가식품영양성분 데이터베이스 자료로 활용될 수 있을 것으로 사료된다.

자연산과 양식산 참조기의 식품학적 품질평가 (Biochemical Composition of the Wild and Cultured Yellow Croaker (Larimichthys polyactis) in Korea)

  • The biochemical composition of wild and cultured yellow croaker, Larimichthys polyactis, was analyzed in this study. The moisture contents in wild and cultured yellow croaker was high: $75.2{\pm}1.60%$ and $79.5{\pm}1.95%$, respectively. The crude lipid contents of wild and cultured yellow croaker were low; moreover, the crude protein and ash contents did nol differ significantly (P>0.05). The total amino acid content of wild and cultured yellow croaker did not differ significantly; however, the cystine content of wild yellow croaker was higher than than of cultured yellow croaker. The essential /nonessential amino acid (E/NE) ratio in wild and cultured yellow croaker was $0.76{\pm}0.01$ and $0.77{\pm}0.02$, respectively. The free amino acid and extractive nitrogen contents of cultured yellow croaker were high and differed significantly. The water soluble vitamin ($B_1$, $B_2$, $B_6$, $B_{12}$, C and folate) and fat-soluble vitamin (A and E) contents did not differ significantly. expect for niacin. The niacin content of cultured yellow croaker was higher than that of wild yellow croaker. The fatty acid composition of wild and cultured yellow croaker did not differ significantly The sodium, magnesium, and copper contents in wild yellow croaker were relatively low. In comparison, the calcium, phosphorus and iron contents in cultured yellow croaker were relatively high. Overall, the biochemical composition of wild and cultured yellow croaker did not differ significantly.

Vitamin contents and antioxidant characteristics of red and gold kimchi cabbages (Brassica rapa. L. ssp. pekinensis)

  • Kimchi cabbage is widely consumed in Korea, with the popularity of this pickled vegetable dish growing internationally due to its health benefits. In this study, the physical (size, color), functional (antioxidant activity, total polyphenol, and flavonoid content), and nutritional (water- and fat-soluble vitamins) characteristics of two new kimchi cabbage varieties, namely red and gold kimchi cabbages (RKC and GKC, respectively), were analyzed and compared with those of the common kimchi cabbage (CKC). There were no significant differences in the thickness or length of the three kimchi cabbages, although RKC had the narrowest outer leaves among the three varieties (11.94 cm). Regarding chromaticity, yellowness was highest in GKC (29.86), whereas redness was highest in RKC (9.31). Furthermore, RKC had the highest recorded vitamin B6 and B9 (1,288.5 ㎍/100 g and 776.7 ㎍ dietary folate equivalent/100 g, respectively). On the other hand, the fat-soluble vitamins vitamin A (β-carotene) and K (Phylloquinone) were both highest in GKC (907.1 ㎍/100 g and 712.2 ㎍/100 g, respectively). Generally, all kimchi cabbage samples contained high levels of vitamin E (1.8-4.9 mg α-tocopherol equivalent/100 g). RKC attained the highest antioxidant activity and total polyphenol and total flavonoid contents among the three kimchi cabbages. These results show that gold and red kimchi cabbage can be used as raw materials in the food-processing industry.

한국 미취학 아동의 영양성 빈혈에 관한 연구 (A Study on Nutritional Anemia of Pre-school Children in Korea)

  • Nutritional anemia is an important nutritional problem affecting large population groups in most developing countries. Nutritional anemia is caused by the absence of any dietary essential involed in hemoglobin formation or by poor absorption of these dietary components. The most likely causes are lack of dietary iron, and folate, vitamin $B_{12}$ and high qualify protein. Anemia is considered to be a late mainfeastation of nutritional deficiencies, and even mild anemia is not the earilest sign of such a deficiency. Therefore, the object of therapy is to correct underlying deficiency rather than merely its manifestation. Iron deficiency anemia is generally much the most common form of anemia. And it is very prevalent particularly in pregnant women and young children, especially under five year of life. According to the rapid growth rate of infants, dietary iron should he provided for infants over three months of age in adequate amounts for the synthesis of hemoglobin required by the increasing blood volume and for the demands of newly formed cells. The principal causes of iron deficiency anemia are an inadequate dietary iron content, interference with absorption of iron from the intestine, excessive losses of iron from the body, disturbance of iron metabolism by infection, and social and cultural environments. The present study is planned to obtain informations concerning nutritional anemia through anthropometric and biochemical determinations for the assessment of nutriture in pre-school children. Determination was taken in 226 pre-school children in ruraI arae in 1968, 122 pre-school children in 1970, and 1526 hospitalized pre-school children in 1970. The results of this study are as follows; (1) According to Iowa Malnutrition Borderline (85 percentile) for weight, the proportions of underweighed pre-school boys and girls in rural area were 47.2% and 46.2% in1968, and were 36.1% and 51.8% in 1970. According to Iowa Malnutrition Borderline for height, the proportions of underheight boys and girls in rural area were 30.5% and 33.7%, and were 26.2% and 21.8% in 1970. Malnutrition scores of underweight for height values of boys and girls in rural area were 19.3 and 17.3 in 1968, and the scores of boys and girls were 15.6 and 15.5 in 1970. (2) The mean hemoglobin values of boys and girls in rural area were $11.2{\pm}1.8g/100ml\;and\;11.4{\pm}1.6g/100ml$ in 1968. In 1970, the mean values of boys and girls in rural area were $11.3{\pm}1.3g/100ml\;and\;11.7{\pm}2.4g/100ml$. The mean hemoglobin values of hospitalized boys and girls were $11.9{\pm}2.2g/100ml\;and\;11.7{\pm}2.4g/100ml$ in 1970. It is found that 92 of 215 children (42.7%) in rural area had concentrations of hemoglobin less than 11.0g/100ml in 1968. In 1970, 55 of 121 children (45.4%) in rural area and 559 of 1526 hospitalized children (36.6%) had concentrations of hemoglobin less than 11.0g/100ml. (3) The mean hematocrit levels of hospitalized boys and girls were $35{\pm}26.8%\;and\;35.4{\pm}6.4%$ in 1970. And 443 of 1334 hospitalized children (33.2%) had hematocrit values below 33%. (4) The average mean corpuscular hemoglobin concentration levels of hospitalized boys and girls were $32.4{\pm}2.2\;and\;32.3{\pm}2.2$ in 1970. And 1016 of 1352 hospitalized children (75.1%) had the mean corpuscular hemoglobin values below 34. (5) The mean iron values of young children in rural area and hospitalized children were $62.0{\pm}6.3{\mu}g/100ml\;and\;60.7{\pm}22.8{\mu}g/100ml$. The proportions of anemia cases below $50{\mu}g/100ml$ in rural area was 37.9%, and 34.3% in hospitalized children. (6) The mean total iron binding capacity of young children in rural area was $376{\pm}57.88{\mu}g/100ml,\;and\;342.2{\pm}6.15{\mu}g/100ml$ in hospitalized children. (7) The average transferrin saturation percentage of young children in rural area was $16.9{\pm}4.7%,\;and\;18.0{\pm}8.4%$ in hospitalized children. The proportions of anemia cases below 15% of young chi1dren in rural area and hospitalized children were 48.3% and 41.2%. Therefore, authors wish to recommend that the following further studies should be undertaken: (1) Standardization of simplied laboratory examination of nutritional anemia. (2) The prevalence of nutritional anemia and the requirements of iron, folate, and vitamin $B_{12}$ of pre-school children. (3) The content and absorption of iron in Korean food. (4) The pathogenesis of nutritional anemia and prevention of parasitic disease. (5) Maternal health and nutrition education.

문제 행동을 가진 초등학생의 영양 상태와 모발 미네랄 함유량 (Nutritional Status and Hair Mineral Content of Elementary School Children with Behavioral Problems)

  • This study was performed to assess the nutritional status and hair mineral content of children with behavioral problems and compare the values with a gender, age-matched control group. The subjects were recruited from S elementary school children in Seoul, Korea. Students scored higher than 60 points were diagnosed with behavioral problems according to the Korean-Child Behavior Checklist. Nutritional assessment of the two groups (behavior problem group: male n=15, female n=24; $9.6{\pm}1.6$ years, control group: male n=16, female n=18; $9.5{\pm}1.9$ years) was performed using a nutritional survey and by measuring hair mineral contents. In the results, food frequency questionnaire analysis showed that the intakes of anchovy (P<0.05), soybean curb (P<0.01), radish (P<0.05), bean sprouts (P<0.05), spinach (P<0.05), carrot (P<0.05), pumpkin (P<0.05), lettuce (P<0.05), cabbage (P<0.01), apple (P<0.05), and milk (P<0.01) were higher in the control group than the behavior problem group, whereas intakes of ramyeon (P<0.05), cookies (P<0.05), and coke (P<0.01) were higher in the behavior problem group than the control group. Intakes of most nutrients such as plant-derived protein (P<0.05), fiber (P<0.05), plant-derived calcium (P<0.05), phosphorus (P<0.05), plant-derived iron (P<0.05), vitamin B2 (P<0.05), vitamin B6 (P<0.05), vitamin C (P<0.01), vitamin E (P<0.05), and folate (P<0.05) were significantly higher in the control group than the behavior problem group. Hair analysis showed that the levels of arsenic (P<0.05), mercury (P<0.001), uranium (P<0.05), iron (P<0.001), boron (P<0.01), and germanium (P<0.001) were lower, but the levels of phosphate (P<0.05), chromium (P<0.001), sodium (P<0.05), and sulfur (P<0.001) were higher in the behavior problem group than the control group. Conclusively, behavioral problems constitute a complicated condition in which nutritional factors may play major roles. However, it is still under investigation as to whether or not modification of dietary habits or nutritional supplementation can improve children's behavior, since symptoms require a broad understanding of the environmental and genetic interactions.

재배조건, 수확시기 및 열처리에 따른 갯기름나물의 영양성분 변화 (Nutritional quality of Peucedanum japonicum Thunb. leaves in relation to ripening time, growing condition and blanching)

  • 본 연구에서는 재배조건(하우스재배, 노지재배), 수확시기(어린잎, 성잎) 열처리에 따른 영양성분 및 항산화활성의 변화를 비교 분석하여 국가표준성분표 발간을 위한 기초자료로 활용하고자 하였다. 일반성분 4종(수분, 지질, 회분, 단백질), 무기질 5종(칼슘, 철, 마그네슘, 칼륨, 나트륨), 비타민 3종(비타민 C, 엽산, 베타카로틴)의 영양성분을 분석하였고 폴리페놀 화합물과 DPPH 라디칼 제거능을 각각 측정하였다. 연구결과 일반성분의 경우 시료 간에 유의적인 차이를 나타내지 않았으나 무기질의 경우 Ca, Mg, Na은 하우스 재배가 노지재배 보다 유의적으로 높은 함량을 나타내었다. 비타민함량과 폴리페놀 함량 및 항산화 활성의 경우 수확시기보다는 재배방법과 열처리에 의해 함량변화가 큰 것으로 나타났다. 하우스보다 노지 재배된 갯기름나물의 비타민 C, 엽산, 폴리페놀 화합물과 항산화활성이 증가하였으며 열처리할 경우 비타민 C, 베타카로틴, 폴리페놀 화합물, 항산화활성이 각각 증가하였다. 비타민 C의 기존 보고된 이론과 상이한 결과가 도출되어 다양한 열처리온도와 시간을 적용한 성분 변화 연구가 필요할 것으로 생각된다. 베타카로틴과 폴리페놀 화합물의 열처리에 의한 증가는 산화가수분해 효소의 불활성화와 세포조직의 견고성 저하로 인한 활성물질의 추출 효율증가로 설명될 수 있다. 따라서 나물을 데쳐서 섭취할 경우 미생물 오염방지 등 안전성을 확보할 수 있을 뿐만 아니라 나물 세포조직이 연해져 베타카로틴과 같은 우리 몸에 유익한 성분의 소화흡수율이 증가될 것으로 생각된다.

Achyranthes japonica Nakai-Rice Pilsner 맥주박 열수 추출물의 영양성 및 기능성 (Nutritional and Functional Properties of Water Extracts from Achyranthes japonica Nakai-Rice Pilsner Byproducts)

  • 본 연구는 지역특산자원인 우슬과 발아벼를 이용하여 Achyranthes japonica Nakai-Rice Pilsner(ARP) 맥주를 제조하고 얻어지는 맥주박의 활용가치를 평가하여 소규모 맥주 제조사의 부가가치 생산과 제품개발을 위한 기초자료로 활용하고자 수행되었다. ARP 맥주 제조 시 당화 및 농축공정에서 얻어지는 맥주박 brewer's spent grain(BSG, 맥아와 미아)와 brewer's spent material(BSM, 우슬)의 $25^{\circ}C$, $60^{\circ}C$, 그리고 $100^{\circ}C$ 열수 추출액을 제조하고 이들의 영양성 및 기능성을 평가하였다. ARP 맥주박 BSG와 BSM의 열수 추출액의 유용성분 추출량은 추출온도와 시간에 따라 차이를 나타내었으며 ${\gamma}-aminobutyric$ acid(GABA), 사포닌, 나이아신 성분은 $60^{\circ}C$에서 3시간 이상의 추출에서 함량이 높게 나타났지만, 총폴리페놀 성분과 항산화능[1,1-diphenyl-2-picrylhydrazyl(DPPH) 라디칼 소거능 및 환원력]의 경우 $100^{\circ}C$에서 1시간 추출 시 가장 높은 값을 나타내었다. 엽산의 경우 BSG는 $100^{\circ}C$에서, BSM은 $60^{\circ}C$에서 추출된 시료가 높은 함량을 나타내었다. 전체적으로 영양성과 기능성을 모두 고려해볼 때 $60^{\circ}C$에서 3시간의 열수 추출조건이 바람직한 조건으로 보인다. 이 조건하에서 BSG 추출액의 경우 GABA $186.1{\mu}g/100mL$, 나이아신 $67.9{\mu}g/100mL$, 엽산 $80.9{\mu}g/100mL$, 총폴리페놀 $198.8{\mu}g$ gallic acid equivalent(GAE)/100mL, DPPH 라디칼 소거능 $90.0{\mu}g\;GAE/100mL$, 환원력 $8.4{\mu}g\;GAE/100mL$, BSM 추출액의 경우 사포닌 $300.2{\mu}g$ diosgenin equivalents/100 mL, 나이아신 $1,209.7{\mu}g\;GAE/100mL$, 엽산 $18.0{\mu}g\;GAE/100mL$, 총폴리페놀 $270.4{\mu}g\;GAE/100mL$, DPPH 라디칼 소거능 $1,049.9{\mu}g\;GAE/100mL$, 환원력 $505.5{\mu}g\;GAE/100mL$를 보이는 것으로 나타났다. BSM의 열수 추출액은 BSG 추출액에 비하여 수용성 비타민의 경우 약 4~18배, 총폴리페놀 함량은 1.4배, 항산화능은 약 11~60배 높게 나타나 영양성 및 기능성 모두 우수한 것으로 나타났다. 본 연구 결과를 볼 때 ARP 맥주박은 영양성 및 기능성 면에서 우수한 자원으로 $60^{\circ}C$에서 3시간 열수 추출물을 향후 제품 개발에 활용 가능할 것으로 판단된다.
