Content and Distribution of Flavanols, Flavonols and Flavanones on The Common Vegetables in Korea (국내산 채소류에 함유된 플라바놀, 플라보놀 및 플라바논에 대한 함량 및 분포 조사)

  • BACKGROUND: This study focused on the contents of flavonoid compounds in vegetables. Generally vegetables have contributed to a healthy diet, arisen from contains a large amount of fiber and functional ingredients. And flavonoid compounds are one of major functional components in the vegetables. currently research of flavonoid contents does not enough, specially in the part of homegrown vegetable. METHODS AND RESULTS: Vegetable samples were purchased in domestic market. Sample extraction by methanol, distilled water, and formic acid based solvent. Also same solvent used for mobile phase in UPLC. Eleven types of flavonoid compounds were analyzed with same kind of external standard and one kind of internal standard (galangin) for quantification. Standard calibration curve presented linearity with the correlation coefficient $R^2$ > 0.98, analysed from 1 to 50 ppm concentration. The quantitative value and multivariate analysis results were derived from the Excel and SIMCA-P11. Overall, onion has largest amount(916.5 mg/100 g) of flavonoid and also other vegetables have has significant amount[Mugwort: 138.8, Galic stem:123.6 mg/100 g etc.] of flavonoid compounds. Edible portion of vegetables per share for simulating by SIMCA-P11, root vegetables has had difference with other vegetables according to distributions and amounts of flavonoid compounds. CONCLUSION: Optionally, the results from this experiment can use to select the material for flavonoid researches. And based on these results, if this experiment will be continuously complemented, and performed, could used in various fields.

Effect of varying ethanol concentrations on the extraction properties and physiological activity of Artemisia annua L. (에탄올 농도 조건이 개똥쑥 추출 및 생리활성에 미치는 영향)

  • The present study was undertaken to compare the effects exerted by different extraction solvents on the extraction of active components, such as polyphenols and flavonoids, from the dried leaves of Artemisia annua L. Different extracts were prepared using a heating mantle. The extraction solvents used were distilled water, and 20, 40, 60, 80, and 99.5% ethanol solution. It was observed that the 40% ethanol solution yielded the most significant results in the extraction of various phytochemicals with phenol concentration of 154.8±0.28 mg of gallic acid equivalent/g and flavonoid content of 25.28±0.01 mg quercetin equivalent/g. However, based on the extraction solvent used, varying trends were observed in the antioxidant, enzyme inhibition, and bacterial inhibition analyses. It was concluded that the extraction solvent should be selected based on the purpose of use of the dried leaves of A. annua L.

Antioxidant Activity of Major Cultivars Prunus mume in Korea (국내 주요 재배 매실 품종의 항산화 활성)

  • This study examined the total phenolic and flavonoid compounds, and the antioxi dant activity of major cultivars of Prunus mume in Korea. The total phenolic content ranged from 64.13 to $93.43mg{\cdot}100g^{-1}$, with the content in 'Osuku' being higher than that in the other cultivars; a difference in the content among cultivars was observed. The total flavonoid content was $6.16{\sim}18.57mg{\cdot}100g^{-1}$, showing a significant difference, with the highest content being noted in 'Gojirou'. The DPPH radical scavenging activity was measured and was relatively high for Nanko, Kamakami, Natsuka, Dana, and Osuku cultivars. When ABTS radical scavenging activity was measured, all the cultivars showed a scavenging activity over 80%, with the scavenging activity of 'Osuku' being the highest. With respect to nitrite scavenging ability, all cultivars exhibited a high scavenging activity of over 50%, with the highest activity observed for 'Nanko' (76.03%), 'Gojirou' (70.56%), and 'Yourou' (70.32%). Based on the study results, it is considered that Prunus mume can be a useful resource because of various substances with functional physiological activities.

Antioxidant Activity and Component Change of Steaming-Drying and Fermented Gastrodiae Rhizoma (증포 천마 발효물의 항산화 활성 및 성분변화)

  • Objectives : The objective of this study is to evaluate antioxidant activity and the main component content change of steaming-drying fermented Gastrodiae rhizoma extract. Methods : The antioxidant activities were determined for total polyphenol, flavonoid contents, SOD-like activity, electron donating activity, nitrite scavenging ability and major functional components(gastrodin and 4-hydroxybenzyl alcohol content) were also measured. Results : The polyphenol content of fermented Gastrodiae rhizoma by S. cerevisiae were higher than those of fermented Gastrodiae rhizoma by A. oryzae, and when the fermentation period is extended. SOD like activity of fermented Gastrodiae rhizoma showed to be increased by fermentation with S. cerevisiae than fermentation by A. oryzae. Electron donating activity of fermented Gastrodiae rhizoma were increased at almost parallel level as vitamin C, by fermentation. Notably, fermentation by A. oryzae was moderately better than fermentation by S. cerevisiae. Flavonoid content of Gastrodiae rhizoma showed to increasing by fermentation, particularly fermentation by S. cerevisiae was proven to be more effective than by A. oryzae. The more steaming-drying or increased period of fermentation would be resulted in more gastrodin contents but under the same conditions, 4-hydroxybenzyl alcohol content of fermentation by A. oryzae in case of steaming and drying 1 time and 3 time was higher than control. Conclusions : These results has strongly hint the possible applicability of fermentation might be effective to improve the diverse biological activities of Gastrodiae rhizoma and may further supports to develop a functional food materials.

Antioxidative Activities of New Citrus Hybrid 'Hamilgam' Peel Extracts (가공용 감귤 신품종 하밀감 과피 추출물의 항산화 활성)

  • The major objective of this study was to investigate the usability as cultivar for processing of new Citrus hybrid 'Hamilgam'. We investigated various antioxidant activities, such as DPPH radical, ABTS radical, Hydroxyl radical and Superoxide anion radical effect, along with total polyphenol content and total flavonoid content of Citrus hybrid 'Hamilgam', C. unshiu, C. natsudaidai. The total polyphenol content and total flavonoid content were the highest in the Hamilgam. The major flavonoids of Hamilgam and Natsudaidai were naringin and neohesperidin, and those of Unshu were narirutin and hesperidin, as determined by HPLC. Especially, the neohesperidin content of Hamilgam showed much higher (100 times over) than that of Unshu. However, the aglycone form was not found. DPPH and ABTS radical scavenging activities were the highest in Hamilgam peels. Hydroxyl radical scavenging activity was high in the order of Unshu, Hamilgam and Natsudaidai. Superoxide anion radical scavenging of 3 cultivars peels displayed low activities compared to DPPH and ABTS radical scavenging. Based on these results, Hamilgam peel extracts possess antioxidant activities and may thus serve as potential sources of functional food, cosmetic products, etc.

Quality characteristics activities of low sugar aronia syrup added with aspartame

  • This study examined physiological activity of aronia chung with or without aspartame. High sugar content of food is recognized to induce chronic disease including diabetes and obesity. Sugar was replaced with aspartame to develop low-sugar aronia chung containing 0%, 25%, 50% and 75% aspartame based on sugar content of control in the study. Sweetness was the similar in the chungs with 0%, 25% and 50% aspartame but it was lower in the chung with 75% aspartame. pH was the highest in aronia chung with 75% aspartame as 2.95. Total phenolic content was the highest in aronia chung with 50% aspartame but it was not significantly different with 75% one. Flavonoid content increased with addition of aspartame and it was the highest in the chung with 75% aspartame as 206.60 ㎍ QEAC/mL. Reducing power also showed the same aspect with flavonoid content. However DPPH radical scavenging ability was the highest in aronia chung without aspartame and lowest in the chung with 75% aspartame. This result implies that the addition of aspartame could sustain the sweetness and improve the physiological activity of food at the same time although there is some limitation.

Physicochemical Properties of Functional Herb Mixtures (기능성 천연물 복합제의 이화학적 특성 확인)

  • The herb mixtures that are known to lower blood pressure were selected through oriental medical books and prescriptions and the physicochemical properties of their water extracts were analyzed to examine the possibility as functional food materials. The total yield of 28 water extracts was in the range of $5.33{\sim}36.71%$. Total phenolics and flavonoid content were $204.89{\sim}2543.29mg%\;and\;59.79{\sim}1430.55mg%$, respectively, and especially No. 2, 5, 9, 17, 18, 20, 22, and 26 showed high rates of above 800 mg%. Electron donating ability (EDA) was $7.81{\sim}98.18%$, and the samples that showed high values in EDA were similar to the samples with high values in total phenolics and flavonoid content. Phenolics and flavonoid compounds of the herbs are considered to perform a major role in antioxidation. Nitrite scavenging ability reached the highest at pH 1.2 ($11.70{\sim}96.47%$) and the lowest at pH 6.0 (below 12.77%), which indicates that nitrite scavenging ability decreases when pH increases.

Characteristics and Antioxidative Activity of Fermented Mixed Grain Beverages Produced by Different Microbial Species (잡곡발효물의 제조와 항산화 활성 비교)

  • The purpose of this study was to evaluate the functional characteristics of fermented mixed grain beverages obtained using different microbial species and to evaluate their suitability for consumption. Various fermented mixed grain beverages were prepared through fermentation with Aspergillus (A.) oryzae CF1003 (A), A. acidus KACC46420 (B), Rhizopus (R.) delemar KACC46149 (C), R. oryzae KACC45714 (D), R. oryzae KACC46148 (E), A-E mixed strains (F), A. oryzae CF1001 (G), A. acidus CF1005 (H) and A+H mixed strains (I). The visual appearance, flavor, taste, and the antioxidant capacity of each fermented beverage were then assessed. The chromaticity and aesthetic quality of the fermented beverage was measured and all fermented beverages appeared yellow. The C-, G-, H- and I-fermented beverages received scores of 3.319, 3.206, 3.170 and 3.025 points, respectively, following a sensory evaluation, while the others received less than 3 points. The polyphenol content of the different beverages were similar, while the flavonoid content significantly differed. In particular, the flavonoid content of the C- and E-fermented beverages was significantly higher than other beverages. Although the electron donating ability and reducing power of the fermented beverages was very low, the superoxide dismutase (SOD)-like activity of all beverages (except the E-fermented beverage) increased in a concentration-dependent manner. Specifically, the SOD-like activity from the F-fermented beverage at 10,000 ppm was more than 50%. Interestingly, the antioxidant activities of the beverages were unrelated to their polyphenol or flavonoid levels. This study also found that the aesthetic qualities of G- and H-fermented beverages were the highest and that this was completely independent of their antioxidant capacity. Therefore, our results suggest that further studies are required to develop mixed grain-derived fermented beverages that can also fulfill a useful functional purpose.

Flavonoid Content and Antioxidant Activities of Gardenia jasminoides Ellis Seed Extracts Produced by Ethyl Acetate, Distilled Water and Methanol (치자(Gardenia jasminoides Ellis) 씨 에틸 아세테이트, 물 및 메탄올 추출물의 플라보노이드 함량 및 항산화 활성)

  • The purpose of this study was to measure the bioactivity and antioxidant activity of seed from Gardenia jasminoides Ellis fructus (GJE). We determined tannin content ($1.517{\pm}0.003mg\;CE/g$, mg of catechin equivalents). The extraction yields of the GJE seed solvent were distilled water (DW) 36.61%, 70% methanol 30.10% and ethyl acetate (EA) 20.40%. The antioxidant activities of the extracts were significantly increased (0.2, 0.4, 0.6 mg/mL). Flavonoid contents (mg QE/g, mg of quercetin equivalents) were observed in the order of 70% methanol (0.799), DW (0.565) and EA (0.117). Antioxidant activities (DPPH, OH, ferrous ion-chelating capacity) were similar to the flavonoid content of each solvent. But ABTS scavenging activity and SOD like ability of DW extract were higher than 70% methanol extract. Comparing the yield and the antioxidant activity of each solvent of GJE seed, it seems to be preferable to use DW and 70% methanol solvent for extraction. As a result of this experiment, it has high antioxidant activity and physiological activity, which is expected to be highly valuable as a functional food and a natural antioxidant.

Antioxidant Activity of Methanol Extracts from the Genus Lespedeza (싸리속 식물 메탄올 추출물의 항산화 활성)

  • The genus Lespedeza belonging to Leguminosae is an annual or perennial herb, which has been used as a Chinese herbal medicine. Antioxidant activity on DPPH ((1,1)-diphenyl-2-picrylhydrazyl) and ABTS (2,2'-azino-bis(3-ethylenebenzothiazoline-6-sulfonic acid) radicals and the contents of total polyphenol and flavonoid were analyzed with 12 methanol extracts from six Lespedeza genus plants with different plant parts. The highest content of total polyphenol was detected in the leaves of Lespedeza$\times$robusta (194.6 mg GAE/g), while the highest content of total flavonoid existed in the aerial part of Lespedeza thunbergii var. intermedia (47.9 mg QE/g). Generally, the amounts of polyphenol and flavonoid compounds were higher in the leaves than in the stems. The $SC_{50}$ value of DPPH radical scavenging activity ranged from 10.16 to 90.94 ppm, of which the strongest activity was determined in the leaves of L. robusta. Most ABTS radical scavenging activities from the investigated methanol extracts were higher than that of L-ascorbic acid, implying the excellent antioxidant activity. The radical scavenging activity in this study showed high correlation with the amount of total polyphenol rather than that of total flavonoid. These data suggest that the methanol extracts from these Lespedeza spp. could be potential candidates for natural antioxidants.
