양식 가물치(Channa argus)에 대한 Saprolegnia sp.의 병리학적 특성과 물곰팡이의 생장을 제어하는 정유의 영향 (Pathological Characteristics of Saprolegnia sp. to Snakehead and Effect of Essential Oils to the Growth of the Water Mold)

  • 양식 가물치로부터 Saprolegnia sp.를 분리하고 그들의 일부 생리학적 특성과 제어를 위한 식물 추출물(精油)을 탐색하였다. 분리된 Saprolegnia sp. 영양체 생장 최적 온도는 $25^{\circ}C$이었고, 최적 pH는 6.0이었으며, 최적 NaCl 농도는 0%이었다. 또한 phosphate 10 mM 농도와 casamino acid 10mg/L농도에서 균사의 생장은 잘되었다. Saprolegnia sp.의 제어 정도를 조사하기 위해 쑥, 편백, 측백나무로부터 정유를 분리하여 10, 100, 500, 1,000, 1,500, 2,000ppm에서 처리한 결과 쑥 정유는 처리농도 10 ppm 이상 농도에서부터 억제 양상이 나타나다가 농도가 높아질수록 더 많은 억제양상을 나타냈다. 측백과 편백나무 정유를 처리한 것에서는 10ppm이상 처리 농도에서부터 억제되기 시작하여 그 이상의 처리 농도에서는 상당한 균사 생장 제어 효과를 나타내다가 500 ppm 이상 처리 농도에서는 완전한 제어 효과를 나타냈다. 또한 Saprolegnia sp.에 감염된 가물치의 조직 병리학적인 조사를 실시한 결과 균사가 감염된 근육조직 부분에는 깊은 곳까지 균사가 침투하였고, 아가미의 세포는 곤봉형태를 나타냈으며, 간조직 세포에서는 일부가 괴사되었고 부분적으로 ceroid 물질이 침착되어 있었다. 또한 비장조직 세포에서는 일부 괴사된 세포를 관찰하였고, ceroid 물질의 침착을 볼 수 있었다. 신장조직은 세뇨관의 상피세포에서 일부 괴사를 관찰하였고, 조혈 조직에는 ceroid 물질의 침착상태가 나타났다.

강동구 어린이급식관리지원센터 등록 시설의 식품알레르기 관리 현황 (Management of Food Allergy in the Facilities Registered at Center for Children's Foodservice Management in Gangdong-gu)

  • Objectives: We examined the common allergenic foods, symptoms and management of food allergies in children attending the facilities registered at Center for Children's Foodservice Management in Gangdong-gu, Korea. Methods: The survey was conducted among the directors or head teachers of 186 children's food service facilities with 7,591 children in 2019. The questionnaire consisted of three parts, including general information about food service facilities, information related to food allergies and allergenic foods and symptoms in individual children. Results: The number of children with food allergy was 271 (3.6%), and the proportion decreased with the increase of age. There were 91 children (33.6%) with a medical certificate, and these children had a significantly higher number of allergenic foods and symptoms than those without a medical certificate. Allergenic food groups included meat, fish, eggs and legumes (59.1%), fruits (12.4%), milk and dairy products (8.9%), cereals (7.8%), vegetables (6.2%), processed foods (3.8%) and oils and sugars (1.9%). Eggs accounted for 22.1%, followed by peanut and tree nuts (18.6%), fruits (12.4%), milk and dairy products (8.9%), shellfish (8.6%), vegetables (6.2%), fish (5.7%), cereals (4.3%) and meat (1.1%). The common allergenic foods were eggs, peanuts, walnuts, kiwi, shrimp, milk, tomatoes, mackerel, blue-green fish, peaches, shellfish (clams and abalone), buckwheat, wheat and soybeans. The most common allergic symptoms were skin and mucous membrane symptoms, such as hives, rash, itching and oral angioedema. Meal management for children with food allergies showed different trends depending on the causative food. Conclusions: The objective diagnosis by an allergist should be done for food allergy management in children's catering facilities. A system for systematic meal management of causative foods should be prepared.

Effects of Monensin and Fish Oil on Conjugated Linoleic Acid Production by Rumen Microbes in Holstein Cows Fed Diets Supplemented with Soybean Oil and Sodium Bicarbonate

  • The present study was conducted with four ruminally canulated Holstein cows to observe the effects of monensin or fish oil on diet fermentation and production of conjugated linoleic acids (CLAs) in the rumen when fed diets supplemented with soybean oil and sodium bicarbonate. Cows of the control treatment were fed a basal diet (CON) consisting of 60% commercial concentrate and 40% chopped rye grass hay. Cows of other treatments were fed the same diet as CON, but the concentrate was supplemented with 7% of soybean oil and 0.5% of sodium bicarbonate (SO-B), SO-B supplemented with monensin (30 ppm, SO-BM) or concentrate supplemented with 6.3% of soybean oil, 0.5% of sodium-bicarbonate, 30 ppm of monensin and 0.7% of fish oil (SO-BMF). Dry matter (DM) intake of the cows was significantly (p<0.011) reduced by feeding the SO-BMF diet compared to the other diets which did not differ in DM intake. Whole tract digestibility of major dietary components was significantly (p<0.004-0.027) higher for SO-BMF than the other supplement-containing diets. Dietary supplements did not clearly affect rumen pH and ammonia concentrations compared to the CON diet. Significantly reduced (p<0.05) total VFA concentration was obtained by the addition of fish oil to the diet (SO-BMF) compared to other diets. No differences, however, were obtained in major VFA proportions as well as in total VFA between the supplemented diets. The SO-BM diet increased (p<0.01-0.05) the concentrations of trans-11 $C_{18:1}$ and linoleic acid in rumen fluid. Total CLA concentration was also increased by the feeding of SO-B and SO-BM diets during early fermentation times (up to 3 h) post-feeding. Cis-9, trans-11 CLA concentration in rumen fluid was highest (p<0.05) for SO-B up to 1 h while the highest (p<0.01) value for SO-BM occurred at 3 h post-feeding. An increased trans-10, cis-12 CLA concentration was obtained from the SO-B and SO-BM diets at 1 and 3 h post feeding compared to the other diets. Supplementation of oils with monensin and sodium bicarbonate increased (p<0.05) the proportions of $C_{18:1}$ and CLA in the plasma of cows, but the effect of monensin and/or fish oil was limited to trans-10, cis-12 CLA.

고도불포화지방산 함량이 높은 유지를 섭취시킨 흰쥐에서 양조간장과 멜라노이딘의 지질산화 억제효과 (Protective Effect of Soybean Sauce and Melanoidin on Lipid Oxidation in Rats Fed High PUFA Oils)

  • In vitro와 in vivo에서 양조간장과 glucose-lysine 모델 멜라노이딘의 항산화효과를 조사하여 다음과 같은 결과를 얻었다. In vitro에서 양조간장과 멜라노이딘의 항산화효과를 linoleic acid emulsion계를 이용하여 비교하였을 때 양조간장과 멜라노이딘은 대조군에 비해 우수한 항산화활성을 나타내었고 특히 양조간장의 효과가 더 우수한 것으로 나타났다. DPPH 라디칼 소거활성 역시 멜라노이딘에 비해 양조간장의 효과가 큰 것으로 나타났다. 지방산 조성이 상이한 옥수수기름과 어유를 섭취시킨 흰쥐에 10% 양조간장 및 멜라노이딘을 5주간 섭취시켰을 때 간의 지방산 조성은 섭취 지방산에 따라 차이가 뚜렷하였으나 양조간장과 멜라노이딘의 효과는 대조군과 유사하였다. 지질 과산화물 생성정도를 TBARS로 측정하였을 때 불포화지방산 함량이 높은 어유 섭취군에서 지질과산화가 증가하였으며 간장과 멜라노이딘은 지질과산화를 억제하는 효과를 나타내었다. CL(chemilurninescence)-HPLC 방법을 이용하여 간과 혈장의 막 인지질 PCOOH 함량을 측정한 결과, 어유의 섭취는 옥수수기름 섭취 군에 비해 지질 과산화를 월등히 증가시켰고 양조간장과 멜라노이딘의 섭취는 유의적으로 지질 과산화를 억제한 것으로 나타났다. 특히 양조간장의 효과가 멜라노이딘 보다 우수하여 이는 콩유래 항산화물질인 수용성 펩티드나 저분자 단백질들이 효과적으로 항산화활성을 나타낸 것으로 여겨지며, 불포화지방산이 높은 식품의 섭취시 간장을 소스로 이용하는 것이 지질의 과산화를 억제할 것으로 기대되어진다.

청소년의 성별에 따른 식생활 태도 및 식품기호도 (A Study of the Dietary Behavior and Food Preference of Adolescents)

  • The purpose of this study was to provide the guidelines for the dietary lift by analyzing and studying the dietary behavior and food preference based on the gender. In the questions whether students' food preference is similar to their parents' or not, girls answered their food preferences were similar to them (M = 3.36), but boys not (M : 2.90). In the question if the knowledge learned in school has an effect on the choice of food, girls and boys answered it did not affect them, but there was a slight difference according to the gender; boys(M = 2.54) were under less influence than girls (M = 2.88). According to the gender, there was a meaningful difference in the food preference in meat, eggs, fish and shell, beans, milk and milk products, anchovies, fruits, fats and oils, beverage, and processed food. School education had a little influence on the habits of dietary life, only 8.0%. So more practical nutrition education was needed.

Recent Developments in High-performance Liquid Chromatography of Lipids

  • The possibilities for HPLC analysis of lipids have been revolutionised by the availability of evaporative light-scattering detectors, with which the response is independent of the nature of the mobile phase and does not depend On the presence of specific chromophores in the lipids. It was thus possible to develop an HPLC procedure, involving ternary gradient elution, for separating all the lipid classes in animal tissues in a single step. Although reversed-phase HPLC has been widely used for the analysis of molecular species of lipids, sliver ion chromatography can be a valuable alternative. For example, a stable silver ion column for HPLC was developed which permitted resolution of molecular species of triacylglycerols, even from such complex samples as fish oils, again With light-scattering detection and gradient elution. The capacity for HPLC resolution of diastereomeric diacyl-sn-glycerol derivatives, prepared from triacylglycerols. has lead to a new simple method for stereospecific analysis of the latter.

인천지역 집단급식소의 식용유 소비실태 (Consumption of Edible Oil Food Service Institutions in Inchon)

  • Consumption of edible oil at food service institutions in Inchon was surveyed to provide basic data for continuous education of dietitians. Manufacturing industry was the major food service institution(78.8%) in Inchon followed by schools, hospitals and social welfare service centers. Most dietitians were at the age of twenties and college graduates with professional careers of 1-5 years. Oil was purchased on the basis of its quality within 1-3% of total food costs four times a month. Proper frying temperature was determined by dropping salt or food coating materials into the oil. Soybean oil was the most frequently used and commercial frying mix powder and flour and eggs in water were the most common food coating materials. Fish and commercial frozen foods were the most frequently used materials for frying. Fried foods were stored with covers in a basket and consumed within 30 minutes after cooking. Frying oils were used one more time after filtering and color was the index for determination of re-use.

Molecular Species Composition of Phosphatidylcholine Isolated from Chum Salmon Meat Oil

  • Chum salmon (Oncorhynchus keta) meat oil contained high amounts of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) compared to oils extracted from other tissues of the fish. EPA and DHA occupied more than 25% of the total fatty acids in chum salmon meat oil. The main lipid classes in the meat oil were triacylglycerides and phospholipids. The major fatty acids of the molecular species composition of phosphatidylcholine isolated from the meat oil were DHA and EPA. DHA and EPA were the major molecular species in the phosphatidylcholine of chum salmon meat oil, representing 44% and 17%, respectively.

  • w-3계 linolenic acid가 풍부한 들깨기름 및 EPA와 DHA가 함유된 말쥐치기름의 혈청 및 간장의 지질성분에 미치는 영향을 구명하기 위해 지방산조성이 다른 몇가지 유지를 고콜레스테롤 식이 흰쥐에 식이하므로서 혈청 및 간장중의 지질농도에 미치는 영향을 비교 실험하여 다음과 같은 결과를 얻었다. 1. 사료섭취량과 증체량은 전 시험군간에 있어 별다른 차이가 없었다. 2. 혈청의총 cholesterol농도는 soybean oil perilla oil및 file fish oil 식이군이 대조군에 비해 유의적으로 낮았다. HDL-cholesterol 농도는 file fish oil 식이군이 가장 높았으며, perilla oil 식이군도 약간의 상승효과가 있었다. 총 cholesterol에 대한 HDL-cholesterol의 비율은 file fish oil식이군이 가장 높았다. 3. 간장의 총 cholesterol농도는 전 시험군간에 유의적인 차이는 없으나 file fish oil 및 perilla oil 식이군에서 약간 낮은 경향이었다. 4. 혈청의 triglyceride농도는 soybean oil 및 perilla oil식이군이 대조군에 비해 유의적으로 낮았다. phospholipid의 농도는 file fish oil식이군이 가장 낮았으며, soybean oil 및 perilla oil식이군에서도 대조군에 비해 유의적으로 낮았다. 5. 간장중의 triglyceride및 phospholipid의 농도는 전시험군간에 유의적인 차이는 없으나, perilla oil식이군이 약간 낮은 경향이었다. 이상의 결과로 미루어 보아 perilla oil 및 file fish oil은 혈청의 총 cholesterol, 및 phospholipid의 농도저하 효과가 다소 있는 것으로 사려된다.

비정제유 첨가가 참치유 보강 에멀젼의 산화방지활성에 미치는 영향 (Effects of Adding Unrefined Oil on the Antioxidant Activity of a Tuna Oil-Enriched Emulsion)

  • This study was conducted to evaluate the effects of adding unrefined oil on the antioxidant activity of a tuna oil-enriched emulsion by determining DPPH radical scavenging activity, reducing power, and inhibition of low-density lipoprotein (LDL) oxidation in vitro. The emulsion consisted of tocopherol-stripped canola (18.3 g) and tuna (9.1 g) oil, one of the unrefined oils (4.6 g), such as extra virgin olive, mustard, perilla, or sesame oil, 0.5% acetic acid (64 g), and egg yolk powder (4 g). The control emulsion contained only canola (21.4 g) and tuna oil (10.6 g), as oil sources,with the same composition of the remaining ingredients. The emulsion with added unrefined oil, particularly mustard oil, showed higher radical scavenging activity and reducing power than those of the control emulsion. The radical scavenging activity and reducing power of the emulsion with added unrefined oil were higher at 1,000 ppm than at 500 ppm thus, the effect was concentration-dependent. Adding sesame or perilla oil to the tuna oil-enriched emulsion resulted in higher inhibition of LDL oxidationwhereas adding olive oil increased LDL oxidation. The results clearly showed that adding roasted mustard, sesame, or perilla oil improved the antioxidant activity of a tuna oil-enriched emulsion by increasing free radical scavenging activity, reducing power, and inhibiting LDL oxidation. The results also suggest that adding unrefined oils produces a healthier fish oil-enriched salad dressing recipe.
