Effect of nutrition education in reducing sodium intake and increasing potassium intake in hypertensive adults

  • BACKGROUND/OBJECTIVES: Hypertension is the major risk factor for cardiovascular disease, a leading cause of deaths in Korea. The objective of this study was to evaluate the effect of a nutrition education in reducing sodium intake and increasing potassium intake in hypertensive adults. SUBJECTS/METHODS: Subjects who participated in this study were 88 adults (28 males and 60 females) who were pre-hypertension or untreated hypertensive patients aged ≥ 30 yrs in Gyeonggi Province, Korea. These subjects were divided into 2 groups: a lowsodium education (LS) group and a low-sodium high-potassium education (LSHP) group. Nutrition education of 3 sessions for 12 weeks was conducted. Blood pressure, blood and urine components, nutrient intake, and dietary behavior were compared between the two education groups. RESULT: Blood pressure was decreased in both groups after the nutrition education (P < 0.05). In the LSHP group, levels of blood glucose (P < 0.05), total cholesterol (P < 0.01), and lowdensity lipoprotein-cholesterol (P < 0.05) were decreased after the program completion. Sodium intake was decreased in both groups after the nutrition education (P < 0.05). However, Na/K ratio was only decreased in the LS group (P < 0.05). Intake frequency of fish & shellfish was only significantly reduced in the LS group (P < 0.05), while intake frequencies of cooked rice, noodles & dumplings, breads & snacks, stew, kimchi, and fish & shellfish were reduced in the LSHP group (P < 0.05). Total score of dietary behavior appeared to be effectively decreased in both groups after the education program (P < 0.001). CONCLUSIONS: This education for reducing sodium intake was effective in reducing blood pressure and sodium intake. The education for enhancing potassium intake resulted in positive changes in blood glucose and serum cholesterol levels.

祭需에 관한 문헌고찰 (A Study on Foods for the Ancestral Rites)

  • Originally, ancestral rites is a ceremony to pay filial piety to ancestors continuously even though they died, and this is a startingpoint based on the thought of paying respect to ancestors and 'root consciousness' which Korean people have. In the earliest days, Korean people worshipped nature and the sacrificial rituals were performed mainly for the fods of the skies and the earth. After the end-Koryeo Era introduced [Juja-Garye]ancestrial rites of forefather in home generalized. By the way, the foods for ancestrial rites on the original literature centering the [Sa-Rye-Pyon-Ram]are as follows: raw meat(saeng: 牲), rice and broth(ban, gaeng: 飯羹), fruits(果), slice meats(po: 脯), salted dry fish(jaban(佐飯), rice punch(sikhye: 食醯), soup(tang: 湯), fish and meat, roasts beef (jeok: 炙), roast vegetable(sookchae: 熟菜), rice cake(pyon: 餠), noodles(麵), soy(醬), Kimchi(沈菜), drink(酒), green tea(cha: 茶) etc. Today, ancestral rites, basically with this conception, has a function to bind the family and relatives as one. But as double income family are increasing, most housewives have heavy burden mentally and financially to prepare the food for the ancestral. The foods for ancestral rites can be said a way to express the internal true heart, and a basic medium to practice the filial piety. Many documents let us know that a few days before the ancestral rites, we should prepare the food for it with careful and pious attitude. And, they stress that our sincere attitude in preparing food is important rather than its quantity. In this industrial society, we have lots of difficulty preparing and observing the same service as it in the traditional socity. But I think that housewives can be freed from the burden they have to some degree when they realize what the true meaning of ancestral rites is and that the food for it plays a role an external expression.

농축(濃縮) 생선단백질(生鮮蛋白質)로 보충(補充)된 국수의 단백질(蛋白質)의 질(質)에 대(對)한 연구(硏究) (Protein Qualify of Noodles Supplemented with Fish Protein Concentrate)

  • 농축생선단백질(Fish Protein Concentrate, FPC)로 보충된 국수의 영양가를 연구하기 위하여 25일된 쥐를 사용하여 4주 동안 동물 실험을 하였다. 각각 10마리씩 네 group으로 나누어 0, 10, 15% FPC와 표준 casein diets를 주고 매일 섭취량을 기록하고, 매주 동물의 체중을 재서 Protein Efficiency Ratio (PER)를 계산함으로써 단백질의 질(質)을 평가하였다. 4주 후에 동물의 간을 취하여 수분과 지방의 양을 측정하였다. 또한 농축생선 단백질로 보충된 국수가 음식으로서의 적응도를 측정하기 위하여 어른 10명과 아이들 5명에게 관능 검사를 실시하였다. FPC 15% diet group의 체중은 4주 동안에 157.2g이 증가했고, FPC 10%는 135.7g, casein은 103.0g, FPC 0%(plain noodle)은 25.8g 밖에 되지 않았다. 이것들의 PER은 FPC 15% diet group 이 3.83으로 제일 높았고, 다음이 FPC 10%로 3.35였고, casein은 이보다 낮은 3.31이였다. 간의 지방양은 FPC 15% diet group이 2.94%로 제일 낮았으며, FPC 10%가 3.98%, casein이 5.57%의 순서였다. 지방의 양이 적을수록 단백질의 질(質)이 높다는 것을 말하며, 5%정도가 보통이다. PER, 동물의 체중과 지방의 양으로 단백질의 질(質)을 측정한 결과 FPC 15% 국수가 질(質)이 제일 좋다는 것이 판명되었다. 관능검사 결과 전체적 계수는 FPC 15% 국수가 제일 낮은 2.7 (1.0에서 5.0까지 사용)이고 다음이 FPC 10% 국수로 3.5였으나 plain noodle만 못하였다. 특히 색갈(color)에 많은 차이를 보였기 때문이며, 맛(flavor)과 질(texture)에는 별 차이가 없었다. FPC 15% 국수는 색갈이 plain noodle에 비해 검은 편이였으나 모밀국수 보다는 색갈이 희므로 그렇게 문제가 될것 같지는 않다. 어린 아이들에게는 닭 국물에 국수를 넣어 주였더니 라면과 맛이 비슷해 아주 좋아했다.

원행을묘정리의궤(園行乙卯整理儀軌) 중(中) 조리면(調理面)에서 본 반과상고(盤果床考) (A Study of Cookery of Daily Meal (Bankwa Sang: Fruit Table) in Wonheng Ulmyo Jungri Euigwae (1795))

  • To analyze dialy meal of royal meal, studied Bankwa Sang(Fruit Table) were on record Wonheng Ulmyo Jungri Euigwae (1795). Historic book 'Jungri Euigwae' described the king's visit to his father's royal tomb 'Hyun Neung Won', during the domain of Cheung Jo, the 22nd king of Choson Dynasty. The results obtained from this study areas follows. The fruit table, which similar in concept to desert in the west but quite different in service, was prepared for a guest. The table consisted of two kinds of trays, on which serveral kinds of fruit were stacked to a height of between 4 chon (4寸 : about 12 cm) and 1 chuk(1尺 : about 30.3 cm) according to Korean measurement system. The table was decorated with beautiful artificial flowers made of paper and silk. The number of sets to be arranged on the table were different according to the royal status of the eater: 12 sets-25 sets for king's mother, 7 sets-11 sets for the king. Soy sauce mixed with vinegar and pine-nu meal, mustard were ruled out from kind of sets. Kinds of dishes served with a meal generally were noodles (麵), soup (湯), fried fish (煎油花), fried meats and vegetables (花陽灸), slices of raw fish (魚膾), minced raw meat (肉膾), slices of boiled beef (片肉), stew (蒸), rice cake (餠), sweet rice dish (藥飯), patterned savory cake (茶食), fried cake made of wheat flour, honey and oil (藥果), fried glutinous rice cake (强精), various fruits preserved in honey (正果), sugar candies (各色糖), fruits (果物) honey (淸), soy sauce mixed with vinegar and pine-nut meal (醋醬), mustard (莽子).

  • To examine the main party of royal family in the Man Kyong Jeon, the authors analyzed“Jin Chan Eui Gue”, which is a historical record published in 1887(King Go-Jong). The results obtained from the study were as follows, 1. The dining tables were divided into two:fixed arranging tables(131) and taking-away tables. 2. Food and flowers were distributed to the 1238 attendants. 3. According to the status or class of the attendants, the pattern or size of table settings were differentiated in the kinds of food, hights of food, flowers china ware etc. 4. The seat of the King's Grand Mother was located facing the south. 5. Red silk table cloth was used in the main party. 6. At the main party for the King's Grand Mother, dishes were arranged in the following sequence, the first line : cakes made of flour, oil and honey etc. the second : oil and honey pastry the third : fruits the fourth : rice cake etc. the fifth : cooked meat and fried fish etc. the sixth : sliced raw fish and beverage etc. the seventh : noodles, soup and soy bean sauce the eighth : spoon and chopsticks. 7. In the arrangements of tables for the King's Grand Mother, the heights of food on the dishes were as following level, a dish : 1 chok and 5 chon (1척 5촌) 27 dishes : 1 chok and 3 chon (1척 5촌) 7 dishes : 1 chok. 여대생의 식물섭취(소비) 패턴에 관한 연구 (Studies on the Food Consumption Pattern of College girls in Pusan Area)

  • 여대생의 평일 및 일요일의 식생활에서의 식사구조의 기본패턴을 파악하기 위하여 섭취된 식물을 16식품군으로 분류하여 식품 및 영양소섭취량과 16식품의 인자분석을 행하여 얻는 결과를 다음과 같이 요약한다. 1. 식품섭취량에서 16식품군 중 두류, 육류, 음료를 제외한 13식품군의 섭취량은 평일의 식사에서보다 일요일의 식사에서 더 높았다. 2. 식품군간의 상관행렬에서 밥은 평일 및 일요일식사에서 여러 식품군과 정(正)의 상관을 가졌고, 특히 일요일의 경우는 평일보다 정(正)의 상관을 가지는 식품군이 더 많아 섭취된 식품이 다양함을 나타내었다. 또 빵 면류는 평일의 경우 과자 사탕류와, 일요일의 경우는 우유, 난류와 정(正)의 상관을 가지므로 평일은 간식형으로, 일요일에는 식사대용으로 이용된 것으로 볼 수 있다. 야채류, 김치류, 난류, 음료는 평일 및 일요일의 경우 거의 같은 종류의 식품군과 정(正)의 상관을 나타내었다. 평일은 어류, 육류, 유지류가, 일요일은 해조류, 과일류, 우유가 여러 식품군과 정(正)의 상관을 나타내었다. 3. 상관행렬을 인자분석하여 얻은 제1인자는 평일 및 일요일의 경우 한국형의 전통식사(밥식)인자로 해석되었고, 야채류, 감자류, 해조류, 김치, 난류 등의 식품군은 일상 섭취하고 있는 것으로 나타났다. 평일의 경우 두류, 어류, 유지류가, 일요일에는 밥, 육류, 해조류가 식사패턴에 깊게 관련되는 인자로 나타났다. 제2인자는 평일에서는 조절소인자, 일요일에서는 한국형식사인자이었고, 제3인자는 평일에는 간식 대용식인자, 일요일에는 조절소인자로 나타났다. 제4인자에서 평일은 부식인자, 일요일은 열량원인자이었고, 제5인자에서 평일은 밥식인자, 일요일은 빵식인자로 나타났다. 4. 평일 및 일요일의 2차원공간도에서 제1주성분은 평일 및 일요일에서 한국전통식(밥식) : 서구식(영양이 고려되지 않은 대용빵식), 제2주성분은 평일에서는 조절소 : 주식(열량)공급원, 일요일은 식사형 : 간식형을 나타낸 것으로 풀이되었다. 5. 영양소섭취량에서 아침식사의 경우 평일은 열량과 구성소영양소의 섭취량이, 일요일은 조절소영양소의 섭취량이 높았다. 점심식사에서는 일요일의 경우가 평일보다 모든 영양소의 섭취량이 높았다. 간식에서 일요일의 경우 당질, 섬유소, 비타민 C를 제외한 영양소의 섭취가 많았으며, 특히 비타민 C, 동물성에너지, 지질, 칼슘, 당질은 1일 평균영양소섭취비로 볼 때 간식에서 높은 섭취비율을 나타내었다. 저녁식사는 평일은 일요일보다 열량, 지질, 당질, 철분 이외의 타 영양소 섭취가 많았고, 일요일의 1일 평균영양소섭취량은 비타민 $B_1$ C, 동물성단백질을 제외한 영양소가 평일의 그것보다 높았다. 또 RDA와 비교한 영양소섭취비는 평일 및 일요일에서 열량(각각 77.4%, 82.3%), 철분(82.8%, 90.6%)이 RDA에 미달되었고, 그 외 영양소는 RDA를 상회하였다.

  • To analyse wedding feast dishes of royal prince of Chosun Dynasty(1744, 1819), the author studied historic book-GareDogamEuigwae, in which the wedding feast dishes of King and Prince in Chosun Dynasty were described. The results obtained from the study were as follows, 1. Arranged dishes in wedding ceremony were four kinds of table, main table, second table, third table and fourth table. That table setting was same as that of the year 1651. 2. Meal ceremonies were in sacrificial food partaking, drinking ceremony and courtesy of levee. 3. In wedding ceremony, prince and princess drank three cups of liquor. At the first cup they eat abalones soup and others in a small round table(初味), at the second cup fine noodles and others in another table(二味), at the third cup bun stuffed with fish and others in the other table(三味). 4. In sacrificial food partaking and drinking ceremony, King drank nine cups of liquor, at first cup, King eats a small boiled beef(小膳) and (初味), at second cup eats(二味), at third cup eats(三味),${\cdots}$, at nineth cup, King eats a soup, a large boiled beef(大膳) and fruits. 5. Dish materials and quantities used for wedding ceremony in the year of 1819 was same as that of the year 1651.

『조선(朝鮮)の특산(特産)』으로 보는 일제강점기 식품 특산물 현황 분석 (Analysis of Regional Food Specialities Status in Korea during the Japanese colonial period through 『Specialities of Joseon (朝鮮の特産)』)

  • This study examined the status of food specialties in Korea during the Japanese colonial period through 『Specialities of Joseon (朝鮮の特産)』. The book recorded a total of 164 areas and 317 specialties, focusing on five railway lines and branch lines on the Gyeongbu, Honam, Gyeongui, Gyeongwon, and Hamgyeong. Among the specialities, 211 species were included, excluding overlapping ones. The food specialties accounted for 100 kinds in 159 regions or 47.4 percent of the specialties. There were 47 food specialties in 47 areas of the Gyeongbu Line, 21 food specialties in 20 areas of the Honam Line, 32 food specialties in 40 areas of the Gyeongui Line, 26 food specialties in 15 areas of the Gyeongwon Line, and 33 food specialties in 42 areas of the Hamgyeong Line. Among the specialties, the amount of fish and their workpiece was overwhelmingly the largest. Next came processed goods of fruits, grains, and vegetables. In modern factories, corn, tomatoes, blueberries, and sardines were made of processed goods. Factories have been constructed for glass noodles, sugar, and soju. Specialities and processed goods produced in each region were brought to Japan during the Japanese colonial period.

서울 시내 위탁운영 중학교 급식의 운영현황 및 메뉴 기호도 조사 (A Study of the Operation of Contract Food Service Management and Menu Preferences of Middle School Students in Seoul)

  • This research was to investigate the operation of contracted food service management and menu preferences of middle school students in Seoul. Questionnaires were distributed between Dec. 1 and 20,2000 in 10 middle schools. Statistical data analyses were completed using the SAS package, including the mean, standard deviation and frequency analysis. The results can be summarized as follows: The average number of meals per middle school was 1,000 and only lunch was served in each school. In terms of facilities and equipment, low rates of the possession of cooking equipment and food carts were the major hindrance to work and production efficiency. The students' main demands were taste, sanitation, variety of food, the introduction of brand foods, the price of foods, and the speed of reaction to their dissatisfaction. Most of the schools provided rice for lunch, while the students preferred noodles, mandu and bread. beef-rib soup was preferred to broth. for side dishes, fish, roasted meat and fried foods were highly favored, along with processed foods, with low preferences for vegetables. The middle school students favored fruits. Lastly, they requested that the quality of school meals be improved through the development and supply of various desserts.

향토음식에 대한 브랜드화 방안 연구 -대전광역시를 중심으로- (Building Up Awareness of and Preference for Local Brand Foods -Focus on Dajeon Metropolitan City-)

  • This study aimed to identify particular foods that would be most appropriate as representatives foods of Daejeon, as well as the key factors affecting the branding of image of those foods. To achieve these aims we carried out a survey amongst 1,600 citizens and visitors. The Daejeon representative foods were determined to be Gujeuk Dotorimuk (Gu-jeuk acorn jelly), Hanbat Seolleongtang, Dolsotbap (stone pot mixed rice), Sutgol naengmyeon (Sutgol Cold Noodles), Daecheongho Minmulmaeuntang (Daecheong lake freshwater spicy fish soup) and Samgyetang (casserole of spatchcock with ginseng). These six dishes were designated as representative foods in 2001. Findings from the survey indicated the lowest level of brand! dish awareness was 11.6% generally and the top two preferences for the representative foods were ranked as, Samgyetang (24.8%) and Dolsotbap (23.6%). According to an awareness survey age differences played a significant role. Adults displayed a much higher awareness than younger generations. The survey also found that Daejeon city was strongly associated with images of science and technology, particularly areas such as Expo and the Daedeok Valley. This study's results suggests that developing a menu and marketing strategy based upon associated regional images may increase awareness for local foods among young consumers.
