The aim of this study was to investigate the effect of sleep duration on dietary habits and body composition of university students. Sleep duration has recently been added to the list of risk factors for obesity. However, studies on this topic are fairly limited particularly in Korea. We studied the relationship between the duration of sleep and obesity principally based on body mass index and %body fat in university students. For this purpose, a survey was conducted on a total of 312 university students. The subjects enrolled for this study were divided into two groups: (1) those with sleep duration of <7 hours (148 students) and (2) those with sleep duration of >7 hours (164 students). Based on a self-reporting method, the participants filled up the questionnaires for more than 20 minutes. Based on the overall data obtained, we observed that most students (52.88%) skipped breakfast. This was mainly due to shortage of time (60.58%). We also observed that self-reporting dietary preferences included eating irregular meals (49.04%), overeating (19.55%), imbalanced diet (16.35%), and skipping meals (9.94%). It was found that cookies were the favorite snacks in the majority of the participants (50%). Our data reveal that the body mass index, fat mass, visceral fat, and subcutaneous fat, respectively of the shorter sleep duration group (<7 h/day) were 23.78 $kg/m^2$, 19.13 kg, 2.23 kg, and 11.15 kg. In contrast, in those of the control group (7 h/day), these values were found to be 21.84 $kg/m^2$, 13.88 kg, 1.56 kg, and 12.11 kg. We also observed that there were significant correlations of sleep duration with body mass index (p<0.05), fat mass (p<0.01), visceral fat (p<0.01), and beck depression score (p<0.01). Our data suggest that the body mass index in the shorter sleep duration group was higher than that of the control group; however, %fat, visceral fat, and subcutaneous fat in the shorter sleep duration group were found to be higher than those of the control group. The data obtained through our study suggest that short sleep duration is clearly associated with a modest increase in general and abdominal obesity particularly in university students.

This study was conducted to evaluate the quality of the cold air dried anchovies (CA), and compared with those of sun-dried anchovies (SA) and hot air dried anchovies (HA). Peroxide value increased, while ratio of percentage of (20:5+22:6) to that of 16:0 decreased during boiling and drying. The extents of change were CA>SA>HA in the order. In the case of CA, lightness was higher, but redness, yellowness and degree of browning was lower than in SA and HA. From the results of lipid properties, color test and sensory evaluation on color and rancidity odor, lipid deterioration was the lowest in CA of all boiled dried anchovy. Favorite properties such as a hot-water soluble nitrogen content and sensory evaluation on color and appearance of CA was superior to that of SA and HA. The nutritional properties (total amino acid contents, mineral contents and fatty acid compositions) of CA was similar to that of SA, but was superior to that of HA. Consequently, CA was recognized as a boiled dried anchovy with the most quality.

With the growing demand for online food delivery (OFD) services via Online to Offline (O2O) platforms, it is required for academic researchers to identify the success factors of OFD businesses. In line with this, this research examines the impact of the core service attributes of a restaurant (hygiene, interactivity, trust, and popularity) on business success in the OFD platform context from the perspective of information asymmetry. Furthermore, the moderating effects of hygiene factor between the core service attributes and the success of restaurants are evaluated. We utilize 1,146 restaurants registered on the largest OFD platform in Korea. The results of this study demonstrate that hygiene (certification), trust (franchise), popularity (favorite) factors have positive impacts on the success of OFD businesses. Moreover, we find that franchise restaurants with high response rates to customer reviews and inquiries achieve higher sales when they have hygiene certifications than those without the certification do. The key findings bear significant contributions to prior literature by empirically substantiating the pivotal role of service quality signals in fostering restaurant success on the OFD platforms. In addition, this study provides business implications for restaurants in O2O platform.

The purpose of this study was to investigate the extent of excessive sugar, sodium, cholesterol, and saturated fat consumptions by elementary school students through processed food's intake. A survey study was conducted with 384 fourth and sixth grade students and their mothers from two schools in Seoul and Gyeonggi province. The data were analyzed for the frequency analysis, chi-square test and Pearson correlation using the SPSS/Windows (ver. 15.0). Results showed that students consumed high amounts of sugars through processed milk and carbonated beverages, and yogurt. Additionally, they had high sodium and saturated fat levels in their diet through Ramen. There was significant correlation (p<0.01) between mothers' purchasing and students' intake of processed food. Overall, both students and mothers had some knowledge on the impact of sodium on human health. About 50 percent of the respondents did not have accurate information about cholesterol, saturated fat, and trans fat. More than 50 percent of students and mothers had no nutritional education on the risk of excessive intake of sugar, sodium, cholesterol, saturated fat, and trans fat. Top twenty percent of the students had 39.7 g of sugar, 940.1 mg of sodium, 17.8 mg of cholesterol, and 11.2 g of saturated fat through processed foods per day on the average. These results suggest that execution of nutritional education about processed food is needed for high risk group of elementary school students and their mothers. Moreover, government must enact the regulation and policy for the food industry to reduce the risky nutrients from children's favorite processed food.
