Effect of Dietary Conjugated Linoleic Acid on Growth Performance, Carcass Characteristics and Muscular Fatty Acid Composition in Broiler (사료내 Conjugated Linoleic Acid 첨가수준이 육계의 생산성, 도체특성 및 근내 지방산 조성에 미치는 영향)

  • This study was conducted to determine the effects of dietary supplementation with conjugated linoleic acid (CLA) feeding levels (0, 0.5, 1.0, 1.5, and 2.0%) on the carcass characteristics, growth performance, serum cholesterol, and fatty acid in thigh of chicken meat. Two hundred broiler (Arbor Acre Broiler, male) were randomly assigned to five groups and were fed for five weeks and slaughtered. Thigh muscle was used for determining fatty acid composition. There was no significant difference in growth performance, such as weight gain, feed intake and feed conversion by CLA levels. Among carcass characteristics, percentage of carcass, thigh, breast, and drumstick was not influenced by the dietary CLA levels, but abdominal fat was significantly reduced with the increased CLA amount in the broilers diets (p<0.05). Higher CLA levels increased HDL-C and reduced total cholesterol and LDL-C (p<0.05). As the dietary CLA levels increased, muscular palmitic acid (saturated fatty acid) levels was increased, but the rates of oleic acid, linoleic acid, and arachidonic acid (unsaturated fatty acid) were decreased. In addition. CLA isomers were linearly increased with the increase in dietary CLA levels (p<0.05). As a conclusion, 2% of CLA feeding is possible to maximize accumulation of CLA in meat, but changes in fatty acid composition is not profitable. Therefore, 1% of CLA feeding i,j considered to be proper for accumulation of CLA and minimization of the change in fatty acid.

  • We give pressure stimulation into long chain fatty acid of LB thin films then manufacture a device under the accumulation condition that the state surface pressure is 20[mN/m]. In processing of a device manufacture, we can see the process is good from the change of a surface pressure for organic thin films and transfer ratio of area per molecule. The structure of manufactured device is Au/Arachidic acid/Al, the number of accumulated layers are 13, 17 and 19. The I-V characteristic of the device is measured from 0[V] to +1.5[V]. We have investigated the capacitance because this fatty acid system have a accumulated layers. The maximum value of measured current is increased as the number of accumulated layers are decreased. The capacitor properties of a thin film is better as the distance between electrodes is smaller. The results have shown the insulating materials and could control the conductivity by accumulated layers.

Antioxidant Activity of Green Tea Extract in Soybean and Rice Bran Oils

  • Antioxidant activity or green tea extracts (GTE) was evaluated in soybean oil (SBO), rice bran oil (RBO) and winterized rice bran oil (WRBO) stored at 63$^{\circ}C$ for 36 days. Lipid oxidation of the oils was determined using the active oxygen method (AOM), peroxide value (POV), change in unsaturated free fatty acid concentrations and by sensory evaluation. SBO had a higher concentration of the polyunsaturated fatty acids, linoleic and linolenic acid than RBO and WRBO. WRBO and RBO were more stable against lipid oxidation than SBO. Addition of GTE (200 ppm) to the stored oils, increased the induction period (IP) in AOM, reduced the increase in POV, and lessened the change in unsaturated fatty acids. Furthermore, GTE prevented the development of rancid flavors resulting from storage, all of which demonstrate the protective antioxidative activity of GTE. However, oil color became darker in the GTE treated oils. The antioxidant protection of GTE was most effective in RBO.

Effects of Fish Oil Supplementation to Korean Lactating Women -I.   • We studied the effects of fish oil supplementation with low does on the lipid concentration and fatty acid of plasma and the fatty acid composition of plasma phospholipid and erythrocyte of lactating women. The subjects, 18 lactating women, who were exclusively breast-fed their babies were classifed into a control group and 2 fish oil groups according to dose; the subjects of fish oil groups were supplemented with 1.96g/d or 3.92g/d of fish oil, respectively for 2 weeks from 10 to 12 weeks postpartum. All subjects consumed their usual diet at home. Blood sample were collected at the final day of experiment. The plasma HDL-cholesterol level increased significantly by fish oil supplementation. The concentrations of DHA (docesahexaenoic acid) and EPA (eicosapentaenoic acid) in the plasma PC(phosphatidylcholine) and PE (phosphatidylethanolamine)of fish oil groups tended to increase, but not significant. However, the concentrations of DHA and EPA of PC and PE in erythrocyte were not affected by fish oil supplementation. These results demonstrate that fish oil supplementation with low dose does not change the concentration of plasma lipid as well as fatty acid composition in plasma PC and PE and red blood cell obviously. However the increase of plasma HDL-cholesterol level, the reduction of atherogenic index(AI) and the tendency of increase of DHA and EPA concentrations in plasma PC and PE indicate that there may be some beneficial effects on maternal lipid metabolism if fish oil intakes were increased.

Serum Fatty Acids in Patients with Angiographically-Documented Coronary Artery Disease (관상동맥질환자의 혈청 지방산 조성에 관한 연구)

  • To study the relation between serum fatty acids and coronary artery disease(CAD), 194 subjects were randomly selected and divided into three groups(control, single vessel disease group(SVD), muliple vessel disease group(MVD)) according to the angiographic results. Total serum levels of fatty acids and serum phospholipid(PL)-fatty acids(FAs)were analysed using gas chromatography and their associations with CAD were examined. Different patterns of total serum fatty acid levels were found in men and women. Levels of most fatty acids of SVD and MVD were significantly lower in men, while those of MVD were significantly higher in women. In terms of PL-FAs in both men and women, the levels of PL-FAs follow the order of control < SVD < MVD and in women, the difference was significant. Various ratio(including ratios denoting the activites of desaturase and elongase) of total serum-and PL-FAs were similar in the three groups. In the relation of serum fatty acids to serum lipid profiles, PUFA & LDL showed a negative correlation, while, SFA & LDL-cholesterol and PUFA and HDL-cholesterol showed positive correlatons. correlations. Systolic blood pressure and alcohol intake levels negatively affected the levels of serum LA, AA, EPA and DHA in the risk factor analysis. These findings are consistent with other evidence indicating that fatty acid compositions are changed in CAD, especially on the concentration base and the change was related to the severity of the disease. Therefore, for the purpose of disease prevention and therapeutic use, balanced intakes of various fatty acids must be seriously considered.

Effects of Vegetable Oil Diets on Liver Lipid in Cholesterol-fed Rats (식물성 유지가 콜레스테롤 투여 흰쥐의 간장지질에 미치는 영향)

  • This study was performed observe the effect of vegetable oil on the liver of 0.5% cholesterol-fed rats. In this experiment, male rats of Sprague-Dawley strain were used. The rats were divided into 5groups which were fed differently either for 8 weeks: basal diet, 20% sunflower oil diet, 20% soybean oil diet, 20% rapeseed oil diet.,20% coconut oil diet. The total cholesterol, triglyceride level in the liver were showed tendency of increase with increasing of P/S ratios. Bile acid excretion in the fecal increased with increasing of P/S ratios. The value of TBA in the serum and liver were increased in proportion to the amount of polyunsaturated fatty acid. The liver fatty acid of coconut-fed group showed larger variation than fatty acid of the cocount oil. The fat chang of sunflower oil diet in the liver showed the largest change.

The Effect of Potato Lipoxygenase on the Change of Lipid Distribution, Fatty Acid Composition, Carotenoids Content and Color Value in Wheat Flour Dough (감자 lipoxygenase가 밀가루반죽의 지질분포, 지방산조성, 카로테노이드 및 색도 변화에 미치는 영향)

  • This study was designed to investigate the effect of potato lipoxygenase on the change of dough chemical composition including lipid distribution, fatty acid composition, carotenoids content and color value in wheat flour dough. For the study, the potato lipoxygenase was added to wheat flour at a level of $6.5{\times}10\;unit/g$ flour. The addition of potato lipoxygenase to wheat flour dough was found to cause an increase in free lipid content, an effect apparently related to the decrease in linoleic acid content and increase in peroxide value. This phenomena might be due to the enzymatic oxidation of polyunsaturated fatty acid. Also, the bleaching effect of lipoxygenase was observed as the decrease in carotenoids content of wheat flour dough. In comparison of color value, it was shown that redness, yellowness and total color difference$({\delta}E)$ were lower by addition of lipoxygenase.

Effects of Vitamins E and C on Human BreastCancer Cell Growth in the Presence of Various Fatty Acids

  • To investigate the effects of antioxidative vitamins in combination with various fatty acids on breast cancer cell proliferation, MDA-MB231 human breast cancer cells were cultured for 3 days in the serum-free Iscove's modified Dulbecco's medium (IMDM) supplemented with 1.25mg/ml delipidized bovine serum albumin and 10㎍/ml insulin. Alpha-tocopherol, ascorbic acid or both vitamins were added to the medium at the concentrations of 10 and 50μM in the presence of 3μg/ml of oletic(Oa), linoleic(LA) α-linoleinic(LNA) and docosahexaenoic acid(DHA). Cell growth was reduced significantly by α-tocopherol in a dose-dependent manner, but not affected by ascorbic aicd. The four different fatty acids did not have significant effects on cell growth, although DHA exerted inhibitory effect on the growth after 1 day. However, the each fatty acid was well incorporated into celluar lipid as such or elongated forms. Addition of α-tocopherol remarkably increased its celluar contents and reduced cellular levels of thiobarbituric acid substances (TBARS) that were elevated notably in the presence of DHA in the culture media. But ascorbic acid addition did not change much of either cellular α-tocopherol or TBARS contents. northern blot hybridization showed that tumor supressor gene ρ53 was most highly expressed by the combination of ρ-tocopherol and DHA in 8 hours of cell culture. In conclusion , the growth inhibitory effect of vitamin E suggests that breast cancer cell proliferation is reduced by the mechanism other than cytotoxicity of lipid peroxide and it is related to expressionof tumor supprosser gene p53, that can be increased by both vitamin E and n-3 fatty acid, DHA.

  • The effect of heating time (0 to 30 hours at $180{\pm}5^{\circ}C$) on the change of flow properties, fatty acid compositions and some other characteristics such as acid value, iodine value, peroxide value and density of purified edible rice bran oil were observed. flow properties were measured with Maron-Belner type capillary viscometer. Newtonian motion was observed in non-heated oil and the oil heated for 5 hours but non-Newtonian motion was observed in the oil heated for more than 10 hours and at high shear stress. The fatty acid compositions were analyzed by gas liquid chromatography and all the components of fatty acids were reduced in amounts with extention of heating time. The acid value, peroxide value and density were increased but iodine value were decreased with extension of heating time.

Changes in Rutin and Fatty Acids of Buckwheat During Germination (메밀의 발아과정중 Rutin과 지방산의 변화)

  • This study was carried out to investigate the chemical change of rutin and fatty acids of buckwheat during germination. The content of rutin in buckwheat before germination was 31.5mg% and that after 7 days was increased to 1, 660.3mg%. The content of stearic acid was increased slightly after 3 day during germination but those of other fatty acids were decreased gradually.
