Dissemination of Conidiospores of Colletotrichum gloeosporioides, the Anthracnose of Persimmon and the Disease Development (감나무 탄저병균 Colletotrichum gloeosporioides의 분생포자 비산과 농가 포장에서 탄저병의 발생과정)

  • The disease development of Anthracnose of sweet persimmon in relation to release of conida of Colletotrichum gloeosporioides were observed in a farmer's field located in Jinju from 1998 to 2002. The conidia started to release from early April and reached maximum in June to late July. The amount of conidia production reduced drastically from early August. The number of conidia trapped was closely related to amount of precipitation at the same period and number of new infections on the emerging branches and young fruits in orchard. The conidia released during the April was not effected to disease occurrence of persimmon tree but the spores produced from inoculum source after early May significantly important to the infection of the pathogen on emerging branch and this infection was directly related to infections on young fruits. Consequently the early infections on the branches brought severe occurrence of Anthracnose in the orchard. Most of the infected fruits were dropped in unripe state. The earlier infection caused the earlier fruit drop. The rate of fruit drop was reached up to 84.1% in August when the disease was occurred severely. Anthracnose of sweet persimmon also occurred in market shelf and storage warehouse. The anthracnose fruits are presumed to be infected while in orchard. Because the symptom formed on the fruit was too tiny to eliminate, the infected fruits were involved in storage boxes and anthracnose gradually developed in storage condition. The rate of diseased fruit observed in Jinju area were 1.2 to 1.6%.

Changes in Textural Properties of Jeung-Pyon (Korean Traditional Fermented- and Steamed-Rice Bread) during Storage (증편의 저장 중 조직 특성 변화)

  • This study was carried out to investigate the storage conditions and methods required for commercialization of Jeung-Pyon. The storage characteristics of Jeung-Pyon were examined with Universal Testing Machine (UTM, Instron model 1000) for textural properties during storage of under the conditions such as sealing, nonsealing, and temperatures. The differences in storage characteristics on the different varieties and years of rices were not shown. When the Jeung-Pyon was lost it's quality as a commercial product, the measured value of UTM was increased as hardness 0.74Kg to 1.0Kg, gumminess 0.23Kg to 0.59Kg, chewiness 6Kg.mm to 18Kg.mm, but decreased in adhesiveness 0.65Kg.mm to 0.40Kg.mm, cohesiveness 0.61 to 0.34, springiness 41mm to 32mm. The nonsealed Jeung-Pyon was lost it's quality for storing at room temperature because of the case-hardening after 2 days. In the case of sealed Jeung-Pyon, the case-hardening phenomena by the evaporation of moisture was not occured, therefore it was a significant factor for an extension in sealed Jeung-Pyon. The shelf-life of sealed Jeung-Pyon was 20 days and 5 days respectively during storage at $-20^{\circ}C$ and $20^{\circ}C$. The sealed Jeung-Pyon stored at $5^{\circ}C$ was lost it's quality, in consideration of cold chain this temperature was suitable for retrogradation of starch. The Jeung-Pyon sealed with air and mosture proof packaging material stored at the accelerated condition as 92% R.H. and $35^{\circ}C$ lost it's quality within two or three days.

Effects of Feeding Purple Rice (Oryza sativa L. Var. Glutinosa) on the Quality of Pork and Pork Products

  • Purple rice is a strain of glutaneous rice rich in anthocyanins and ${\gamma}$-oryzanol. Both types of compounds are involved in antioxidant and lipid metabolism of mammals. Three experimental diet types were used which consisted approximately by half either of purple rice, white rice or corn. Diets were fed to $3{\times}10$ pigs growing from about 30 to 100 kg. Meat samples were investigated either as raw or cured loin chops or as smoked bacon produced from the belly. Various physicochemical traits were assessed and data were evaluated by analysis of variance. Traits describing water-holding capacity (drip, thaw, and cooking losses) and tenderness (sensory grading, shear force) of the meat were mostly not significantly affected by the diet type. However, purple rice feeding of pigs resulted in lower fat and cholesterol contents of loin and smoked bacon compared to white rice, but not compared to corn feeding except of the fat content of the loin. The shelf life of the raw loin chops was improved by purple rice as well. In detail, the occurrence of thiobarbituric acid reactive substances after 9 days of chilled storage was three to four times higher in the white rice and corn diets than with purple rice. The n-6:n-3 ratio in the raw loin chops was 9:1 with purple rice and clearly higher with 12:1 with the other diets, meat lipids. Level and kind of effect of purple rice found in raw meat was not always recovered in the cured loin chops and the smoked bacon. Still the impression of flavor and color, as well as overall acceptability were best in the smoked bacon from the purple-rice fed pigs, whereas this effect did not occur in the cured loin chops. These findings suggest that purple rice has a certain, useful, bioactivity in pigs concerning meat quality, but some of these effects are of low practical relevance. Further studies have to show ways how transiency and low recovery in meat products of some of the effects can be counteracted.

Quality Characteristics of Mul-kimchi Prepared Using Eastern Deep Seawater Added with Chitosan-Ascorbate (Chitosan-Ascorbate 함유 동해심해수로 담근 물김치의 품질특성)

  • Quality characteristics of mul-kimchi prepared using eastern deep seawater added with $0.1\%$ chitosan-ascorbate (CA) were investigated during fermentation for 12 days at $10^{\circ}C$, in an effort to effectively utilize the eastern deep seawater in Korea. Four water sources were considered for preparation of mul-kimchi; (1)distilled water added with $1\%$ mineral salt (DW), (2) eastern deep seawater (containing $6\%$ salt) diluted to $1\%$ salt concentration with distilled water (ED), (3) DW+CA (DW-CA), and (4) ED+CA (ED-CA). Juice of mul-kimchi prepared with ED-CA as a water source showed higher PH and antioxidant activity, and lower acidity, total microbe numbers, turbidity and alcohol insoluble substance compared with those Prepared with other three water sources. The former also showed higher overall acceptability compared with the latter. This study demonstrated the possibility of use of eastern deep seawater added with chitosan-ascorbate as a water source for extension of shelf-life of mul-kimchi.

A study on the Shelf-life Extension of Minimally Processed Carrot (최소가공 당근의 유통기한 연장 연구)

  • Betarich carrots were washed at various hypochloric acid(HCA) concentration and steeping time and packed in PE bag keeping at $8^{\circ}C$ for 12 days, in order eventually to examine microbiology, firmness, surface color, whiteness index(WI) and sensory quality. It was found that total bacterial counts at T-II and T-III with the 3 minute steeping were $4.37{\pm}0.19\;\log\;CFU/g$ and $4.27{\pm}0.13\;\log\;CFU/g$ respectively, showing slight decrease compared to control condition. E. coli was not detected at all treatments but less coliforms were detected at the 8-day treatments of T-II and T-III. Treatment of 3-minute steeping showed smaller reduction in firmness than that of I-minute steeping at 12-days, and T-1 (T-3) had the largest (smallest) reduction among them. It was also found that during the treatment the L-value showed decreasing trend, but the parameter a- and b-value showed increasing trend. WI increased, and its change was small with the increase in HCA concentration. The sensory quality check after 8 day storage showed that evaluation of the off-flavor appeared to be significantly high (p<0.05) at both non-treatment and HCA treatment. On the basis of the results above, it is likely to be more effective to prolong the period of circulation of beta rich carrots if you use HCA over 50 ppm for washing betarich carrots. This study will contribute to improve safety and quality in circulation of beta rich carrots.

Effect of Natural Antimicrobial Extracts on Shelf-life Extension and Quality Improvement of the Flounder Sikhe (천연 항균 추출물의 첨가가 가자미 식해의 품질 및 저장성에 미치는 영향)

  • Flounder sikhe is one of the traditional Korean fermented foods. Because honey, fucoidan, propolis, aronia berry, and horseradish are well known to have natural antimicrobial properties, we investigated their antimicrobial effects on improving the quality of flounder sikhe. Ethanol extracts of propolis inhibited the growth of Bacillus cereus, Staphylococcus aureus, and Listeria monocytogenes. The extracts of aronia berry showed similar effects against Salmonella Typhimurium. We also assessed the total polyphenol and total flavonoid content and 2,2-diphenyl-2-picrythydrazyl (DPPH) radical scavenging activity in the extracts obtained from these natural materials. The contents of polyphenols and flavonoids were the highest in propolis, which also showed a high DPPH radical scavenging activity. Therefore, addition of propolis 0.5% to flounder sikhe showed optimal improvement, with a storage stability of 15 days at pH 5.39, volatile basic nitrogen (VBN) content at 24.73 mg/100 g, and total bacterial count at $1.81{\times}10$ colony forming unit (CFU)/g.

  • In spite of adverse circumstances, dairy food industry of Korea has been developed continuously with the every efforts of farmers, processors, researchers and government officers. Development and extension of new technology, such as safety assurance, improvement of nutritive ingredient, and keeping freshness are very important issues considering short shelf life of dairy products which are prevalent in Korea. In addition to, demands for advanced technology would be increased rapidly with the increase of consumption development of high quality products supply structure, decrease of production basis, and appearance of environmental problems. And demands for information about standard would be enlarged. Development of new products and technology for quality improvement should be evolved with the application of developed technology and cooperation of relative institutes in order to enlarge the consumption of milk and dairy products. In conclusion, efficient production on the basis of balance and development of dairy products which are safe and high quality are the most important subjects for the development of dairy industry in Korea.

Preparation of Squid-Jeotkal with Pasteurized Red Pepper II. Shelf-Life Extension of Squid-Jeotkal (살균고춧가루를 이용한 오징어젓갈 제조 II. 양념오징어젓갈의 보존성 연장)

  • In this study, ohmic heating was applied for pasteurization of red pepper pow-der, and investigated its pasteurization effect. After pasteurization, seasoned squid-jeotkal was manufactured by using red pepper powder, and its quality changes were investigated. On com-paring sensory evaluation in squid-jeotkal by pasteurized and conventional red pepper powder during storage at 5, 16 and $25^{\circ}C$, quality changes in squid-jeotkal by the pasteurized red pepper powder. But quality change difference between two products were decrease with increasing stor-age temperature. Viable cell counts in two products stored at 5$^{\circ}C$ were increased slowly until 60 days. Viable cell counts in squid-jeotkal by conventional red pepper powder were increased up to ca. 10$^{8}$ CFU/g at 15, 25 $^{\circ}C$ after 30, 15 days, respectively, but that by pasteurized were ca. 10$^{8}$ CFU/g at $25^{\circ}C$ after 30 days. Changes in pH, VBN and NH$_2$-N in two products were shown difference significantly, but were decreased by increasing storage temperature. In squid-jeotkal by conventional red pepper powder, the main free amino acids were glutamic acid, leucine, glycine, aspartic acid and alanine, and these amino acids held 47.95% of the total free amino acid. But in squid-jeotkal by pasteurized red pepper powder, glutamic acid, glycine, aspartic acid, leucine and Iysine, and these amino acids held 57.58% of the total free amino acids.

Inhibitory Effects of Chitosanascorbate on Growth of Staphylococcus aureus and Escherichia coli Contaminated in Flounder during Storage (참가자미의 저장 중 오염미생물 Staphylococcus aureus와 Escherichia coli의 생육에 미치는 Chitosanascorbate의 영향)

  • We performed an experiment of keeping the extension of raw and semi-dried flounder (Pleuronectes herzensteini). The effect of with (WG) or without gill (OG), drying degree (20% drying: 20D, 40% drying: 40D) and storage temperature($5^{\circ}C$) and 0.1% chitosan-ascorbate (CA) treatment of vacuum packaging flounder on the growth of contaminated microorganism during storage for 10 days were investigated. Total aerobacter (TA) in the OG-treated raw flounder was $0.29{\sim}0.44$ log cycle lower than that of WG-treated flounder. Also, the number of Staphylococcus aureus (SA) and E. coli (EO) in OG were lower compared with WG. The number of TA, SA and EO in 20 D among 0 D, 20 D and 40 D stored at $5^{\circ}C$ were lowest. Especially, the SA and EO was $0.13{\sim}0.53$, 0.3-0.88, and 0.13-0.74 log cycle lower compared with raw flounder. The growth of TA, SA and EO separated from raw flounder in tryptic soy broth were completely inhibited by 0.1% CA. The anti-biotical effect of CA of two microorganisms SA and EO that separated from flounder, and the growth of all of them were 90% (SA), 96% (EO) inhibited at the 0.1% CA. The inhibition times at $37^{\circ}C$ in soy broth was 36 hr. However when CA was added directly to flounder, it appeared inhibition effect to 0.88 log cycle. The effect of CA was better when gills removed and 20% drying.

Freshness of Satsuma Mandarin Packed in Anti-fogged MA Film with Acid Treated Zeolite (산 처리된 제올라이트와 결로 방지제를 함유한 MA 필름으로 포장한 감귤의 신선도)

  • This study investigated the effect of functional MA films (FMA) incorporated with zeolite powder treated with 1 N HCL solution and anti-fogging agent on the freshness extension of Satsuma mandarin. Preference, weight loss, total ascorbic acid, sugar content, titratable acidity and gas composition in package of Satsuma mandarin were evaluated during storage at $15^{\circ}C$. After 120 days of storage, the weight loss of mandarin packed with LLDPE film (control, L) was 1%, FMA film (CA) was 1.6%. Total ascorbic acid content of Satsuma manderin in control was 19.97 mg%, those of CA was 24.25 mg%. The titratable acidity of Satsuma manderin in CA was higher than that of control, while soluble solids content of CA was lower than that of control after 120 days. Ethylene gas content of control was 89.5 ppm and those of CA was 73.6 ppm after 120 days. Quality of Satsuma mandarin packed with CA was better than that of control. It was verified that shelf-life of Satsuma mandarin in control was 100 days and those of CA film was 130 days. Quality of Satsuma mandarin was few different between treated with anti-fogging agent and non-treated, but commodity of film treated with anti-fogging agent was considered better than that of non-treated.
