The Hajong are the ancient tribal forest community among the ethnic minorities of the North-East region of Bangladesh. The study was carried out with respect to three income groups highlighting their indigenous knowledge. A total of forty-five households (fifteen from each income groups) were assessed using different participatory appraisals through semi-structured questionnaires. A special type of indigenous knowledge on food habit was explored in the Hajong community, which correspond to the severe dependence on forest resources. They collect their food resources from homestead forest (45%) followed by forest (40%), market and others. They have indigenous hunting procedure to trap the animal in the forest. Twenty three tree species were tremendously planted in their homestead forests which are the very important source of food. Male are highly responsible to collect the food materials from forest as well as other sources.
The objectives of this study were, 1) to investigate the perception and preference for Japanese chain restaurants due to demographics and consumption behaviors, and 2) to research improvements for Japanese chain restaurants according to the customers' dissatisfaction. Frequency analysis and one-way ANOVA were used to analyze the data. Three hundred questionnaires were distributed and 254 were returned(84.66%). The customers' perception and preference about Japanese chain restaurants were significantly related with each other. The differences of perception and preference due to demographics and consumption behaviors were significant. The most dissatisfied selection attributes were price, number of Korean dishes, number of branch offices, and advertisements, in order. From examining the progressive circmnstances of Korean food-service industry and the social trends toward a preference for healthy, special ethnic food and dishes for diet control and high protein-low fat, it is apparent that food-service businesses related to Japanese food have the potential for success. The results of this study should provide valuable information for administrators and managers in the hospitality industry.

Soy sauce was fermented at $20^{\circ}C$ for 100 days in onggi containers (ethnic Korean earthenware) which had been fabricated using three different glazing treatments: unglazed, glazed only on the outside, and glazed on both surfaces. The changes in microstructure and permeability characteristics of onggi containers were examined after fermentation of soy sauce. The effect of repeated use of onggi containers on the fermentation was analyzed by the contact between an aqueous model solution and the onggi containers used once for soy sauce fermentation. The levels of reducing sugar and free amino acids produced from the dissolved starch and protein, respectively, in the solution were compared between the new and reused onggi containers. The moisture permeance and gas permeabilities of the onggi jars were progressively reduced with continuing use for soy sauce fermentation, probably due to clogging of micropores by solid materials. After having been used once for fermentation, the microbial cells and/or enzymes immobilized on the surface or in the micropores of the onggi containers seemed to contribute to accelerating the hydrolytic reactions of starch and protein.

Honey is one of the most significant ingredients in conventional food production in different regions of the world. Honey is commonly used as an ingredient in ethnic food. Beekeeping is performed in various locations as part of the local food culture and an occupation related to pollinator production. It is important to conduct beekeeping so that it generates food culture and helps regulate the regional environment in an integrated manner in preserving and improving local food culture. This study analyzes different types of environmental factors of a smart bee farm. The major goal of this study is to determine the best prediction model between the linear regression model (LM) and the support vector regression model (SVR) based on the environmental factors of a smart bee farm. The performance of prediction models is measured by R2 value, root mean squared error (RMSE), and mean absolute error (MAE). From all analysis reports, the best prediction model is the support vector regression model (SVR) with a low coefficient of variation, and the R2 values for Farm inside temperature, bee box inside temperature, and Farm inside humidity are 0.97, 0.96, and 0.44.
The purpose of this study is to analyze the effectiveness of an agriculture and rural development ODA project in southern Nepal's Terai region to improve food security, and to suggest appropriate project approaches to improve food security. The subject of the analysis is the KOICA-funded 'Inclusive Rural Development project', and a framework for analyzing food security was established based on the FAO's four pillars of food security, and indicators were proposed to measure the food security of project farmers. The data for this study were obtained from a survey of project beneficiary farmers and their control group, and the effects of the project on food security were measured using a a t-test analysis, difference-in-difference analysis, propensity score matching-linear regression combined model (PSM-OLS) and a propensity score matching-difference-in-difference combined model(PSM-DID). The results showed that, in general, the ODA project treatment group had significant improvements in each of the four pillars of food security (food availability, access, utilization, and stability). In addition, cooperative membership had a positive impact on food security improvements, and there were also differences in outcomes among different ethnic groups in the Terai region. The implications of this study are that the Korean government's ODA policy should set aside the food security sector and incorporate food security indicators to contribute to the improvement of food security in ODA partner countries, and that agricultural and rural development ODA projects should include food security indicators as performance indicators in their pre-planning to contribute to securing food security for vulnerable groups as food insecurity is higher among vulnerable groups.
To find the association of perception of health status with lifestyle of different ethnic groups living in north-eastern part of China, a cross-sectional questionnaire survey was done by 10 local health workers for 375 Korean immigrants and 217 Chinese whose age was 30 years old or more. Because Korean immigrants showed higher mortality than Chinese, we expected to find significant lifestyle related with perception of health status which was known to be a predictor of mortality by different ethnic groups. The results were as follows : 1. We found that 59.7% of Yanbian Koreans and 42.9% of Yanbian Chinese felt unhealthy (p=0.000). 2. For Yanbian Koreans, significant variables associated with perception of health status were selected through logistic regression analysis and they were sex; female to male with an OR=2.45 (95% confidence interval[CI] 1.06, 5.64), prevalence of chronic illness with an OR=5.48 (95% CI: 4.62, 15.56), mont of meal; small or moderate to full with an OR=2.67 (95% CI : 1.40, 5.09), preference of spicy food with an OR=1.78 (95% CI : 1.04, 3.04), and less amount intake of vitamin $B_2$, with an OR=2.29 (95% CI : 1.33, 3.93). 3. For Yanbian Chinese, significant variables associated with perception of health status were prevalence of chronic illness with an OR=4.97 (95% CI : 2.11, 11.68), history of taking ginseng with an OR=3.72 (95% CI : 1.33, 10.43), and less intake of vitamin C with an OR=0.18 (95% CI : 0.07, 0.46). In conclusion, sex, presence of chronic illness, dietary habit, and amount of $vitamin-B_1$ intake were associated with perception of health status in Yanbian Koreans. Presence of chronic illness, experience of ginseng intake, and amount of vitamin C intake were associated with perception of health status in Yanbian Chinese. To prove cause-effect relation between perception of health status and lifestyle, further study is needed for these different ethnic groups.
The purpose of this study is to establish the one serving size of Korean Indigeneous Food. Serving size is necessary to make Nutrition Labeling which is required to export Korean food product especially to the United States of America. The basic data of 100 food items were collected through searching traditional and recent cookbooks. 4 industrial foodservices as noncommercial foodservice and 30 traditional ethnic restaurants and 12 gourmet restaurants in hotels as commercial foodservlce were explored to collect the data of actual serving size of each items. Moreover, experimental cooking and sensory evaluation by trained panels were conducted to assess quantity preference of selected food items. All data were rearranged through food type, that is, main dish, side dish, dessert and health food. One serving sizes showed wide variety according to the different menus that include selected food items. Therefore, means and ranges of serving size by four research methods were presented item by item. There were wide differences in intakes of main dishes, for example, noodles were around $50{\sim}100g$, cereals were 20 g, which means the one serving size can be differenciated by the food usage. In intakes of side dishes, average of side dishes were $20{\sim}30g$, but Kimches, the first traditional Korean food, were $30{\sim}50g$, and the other condiments, pepper paste and soy paste were $5{\sim}10g$. About desserts, liquid types were around 200 g, the other sugars were $10{\sim}20g$, the kind of teas were almost $2{\sim}3g$. The health foods-many kinds of that were Ginseng-were averaged 20 g; but dried mushrooms were around 2 g.
Recently, food industries are increasingly interested in launching ethnic foods in the global market, but communicating sensory information to target consumers has been complicated due to the ambiguity and complexity of Korean sensory descriptors. This study was conducted to elicit various multidimensional sensory descriptors and their definitions using focus group interviews (FGI). Two consumer groups, consisting of 10 panelists in their 20s and 10 panelists in their 30-40s respectively, participated in the FGI. A total of 14 commonly used multidimensional sensory descriptors, including gamchilmat (감칠맛), gaeun (개운), goso (고소), gusu (구수), kkal-kkeum (깔끔), neu-kki (느끼), dambaek (담백), birin (비린), siwon (시원), sikeum (시큼), ssapssarae (쌉싸래), eolkeun (얼큰), jjapjoreum (짭조름), and kalkal (칼칼), were elicited. Their definitions showed that these descriptors not only were constructed using several sensory elements but also contained hedonic connotations. Descriptors such as gaeun, siwon, and kkal-kkeum were more closely associated with overall sensory impressions, including aftersensations and post-ingestive effects rather than sensory concepts. As individuals tend to weigh different elements to construct the concept for each multidimensional descriptor, further studies are required to identify elements consisting of these descriptors to develop better test methods and gain a clearer understanding of the sensory profiles of Korean foods.
The purpose of this study was to identify the combinations of factors combinations conferring the highest utility of family restaurants to university students, and establish the relative importance of these factors in terms of their contribution to total utility. 196 of 200 questionnaires were utilized for the analysis. (Eds note: to whom were the questionnaires administered) Frequencies, crosstabs, and the conjoint, max. utility, BTL and Logit models, K-means cluster and one-way ANOVA analysesis, and the Friedman test were the statistical methods used for this study. The findings from this study were as follows: 1) the Pearson's R and Kendall's tau statistics (Eds note: these were not mentioned earlier) show that the model (Eds note: which model is this) fits the data well. 2) it was found that of all the respondents, especially the first and third clusters, regarded both the type of food and the price as very important factors. 3) it was found that all the respondents, especially the third cluster, most preferred a family restaurant (design and simulation) that provided less than 6 fusion and traditional foods. The first cluster most preferred family restaurant (design) that provided over 10 traditional and less than 6 ethnic foods. The second cluster most preferred a family restaurant (design and simulation) that provided over 10 traditional foods. 4) the results of the study have provided some insights into the effective types of family restaurant designs that can be successfully developed by those who manage menu variety, quality and type of food, price, and quality of service to university students dining at family restaurants.
