본 연구에서는 천연 자외선 차단크림을 제조하기 위해 shea butter, 올리브 유화왁스, 녹차추출물 등을 원료로 유화과정을 수행하였다. 유화과정의 최적화는 CCD-RSM을 이용하여 진행하였으며, 반응치로는 유화액의 7 days 경과 후 평균액적크기(MDS), 유화안정도지수(ESI), 300 nm에서의 자외선 흡광도 등을 설정하였다. 실험에 사용된 독립변수로는 유화제의 첨가량, 녹차추출물의 첨가량 및 유화시간을 설정하였다. CCD-RSM에 의해 최적화과정을 수행한 결과 자외선 차단크림 O/W 유화공정의 최적조건은 유화제의 첨가량(3.70 wt.%), 녹차추출물의 첨가량(2.47 wt.%) 및 유화시간(15.4 min)이었으며, 이때 예측된 반응치는 7 days 경과 후 유화액의 MDS (1173.8 nm), ESI (99.56%), 그리고 300 nm에서의 자외선 흡광도(2.47)로 나타났다. 이 조건에서의 실제실험 결과 오차율은 3.0 ± 1.5%로 낮게 나타나 본 연구에서 적용된 CCD-RSM 최적화 과정이 비교적 높은 유의수준으로 나타난 것으로 판단된다.
환경친화적이며 원유 분해능이 강력한 균주를 얻기 위하여, 태백산의 토양 일부를 채취하였다. 채취한 토양 sample 로부터 crude oil을 탄소원으로 이용하는 수십 종의 균주를 분리하였으며, 분리된 균주 중 원유분해능 및 biosurfactant 생성능이 가장 우수한 균주를 선별하였다. 또한 분리된 균주의 형태학적 특성을 관찰하고 165 rDNA sequence를 통하여 Bacillus sp. TBM40-3로 동정하였다. 또한 phylogenetic tree를 이용하여 이미 동정된 다른 균주들과의 유연관계를 파악하였다. Bacillus sp. TBM40-3의 배양액의 표면장력은 최저 29 mN/m까지 감소되었고, 생산된 biosurfactant의 유화활성은 soybean oil에서 최대였으며, crude oil에서도 높은 편이였다. 유화안정성은 합성계면활성제와 비슷하거나 우수하였다. 따라서 TBM40-3에서 추출한 biosurfactant는 합성계면활성제를 대체할 수 있는 환경친화적인 생물 계면활성제로 사용될 수 있는 가능성을 보여준다.
천연 밀배아유와 복합 sugar ester를 이용하여 밀배아유 원료 O/W (oil in water) 유화액을 제조하였다. HLB 값, 유화제의 첨가량 및 유화시간이 O/W wheat germ oil 유화액의 평균 입자크기, 유화점도 및 ESI에 미치는 영향을 조사하였으며, 반응표면분석방법인 중심합성계획모델에 의해 제조된 유화과정의 파라미터를 모의하고 최적화하였다. O/W wheat germ oil 유화액의 제조를 위한 최적의 공정조건은 HLB 값(hydrophile-lipophile balance value)은 8.4, 유화제의 첨가량은 6.4 wt%, 유화시간은 25.4 min이며, 최적조건에서 중심합성계획(central composite design, CCD-RSM) 모델을 통한 예측 반응치는 7일 후의 유화액을 기준으로 MDS (mean droplet size)= 206 nm, 점도 = 8125 cP, ESI 98.2%이었다. 또한 실제 실험을 통해 얻어진 유화액의 MDS, 점도 및 ESI는 각각 209 nm, 7974 cP 및 98.7%로 나타났다. 따라서 중심합성계획 모델을 통해 밀배아유 원료 유화액의 안정성을 평가하는 최적화 과정을 설계할 수 있었다.
Curcumin is not soluble in water. Therefore, curcumin emulsion that can dissolve well in water were prepared using multi-emulsification technology, and the antioxidant activities and physical properties of emulsion were measured. Although curcumin was not dissolved in water, it was confirmed to be well dispersed in water when prepared in an aqueous dispersion curcumin emulsion. After dissolving curcumin using water and ethanol as solvents, respectively, the DPPH and ABTS radical scavenging abilities of the filtrate and the curcumin emulsion were measured. Because it was not dissolved in water, activities were not shown. However, when curcumin was dissolved in ethanol, the activities increased as the concentration of curcumin increased. On the other hand, when the curcumin emulsion was dissolved in water, it was found to have abilities. The curcumin emulsion was nano-homogenized and the size and distribution of the emulsified spheres were measured. It was confirmed to be nano-sized as it appeared as 9.083 nm/100%. In the results of the DPPH radical and ABTS radical scavenging abilities of curcumin nano-emulsion, it was confirmed that there was no change in the antioxidant abilities. In conclusion, water-dispersible curcumin prepared using multi-emulsification technology, and it was confirmed to exhibit antioxidant activity and emulsion stability.
The purpose of this study was to investigate the quality of duck ham formulated with duck skin through the pre-emulsification process. The experiments to investigate the quality characteristics of duck ham were carried out to measure proximate composition, cooking loss, emulsion stability, pH, color, texture profile analysis, apparent viscosity, and sensory characteristics. Duck ham was prepared with various ratios of duck skin in pre-emulsion as follows: Control (duct skin 30%), T1 (duck skin 20% + pre-emulsified duck skin 10%), T2 (duck skin 15% + pre-emulsified duck skin 15%), T3 (duck skin 10% + pre-emulsified duck skin 20%), and T4 (pre-emulsified duck skin 30%). As the ratio of duck skin to pre-emulsified skin changed, the quality of duck ham in terms of moisture content, fat content, cooking loss, emulsion stability, lightness, textural analysis, apparent viscosity, and overall acceptability changed. The moisture content of T2 was the highest (p<0.05) and that of the control and T4 was the lowest (p<0.05). The fat content of control was higher than all treatments (p<0.05). T2 had the lowest values in cooking loss, total expressible fluid, fat separation, hardness, springiness, and gumminess (p<0.05). The score of overall acceptability of all treatments with pre-emulsified skin was higher than control (p<0.05). Therefore, the pre-emulsification process can improve the quality characteristics of duck ham and 1:1 ratio of duck skin and pre-emulsified skin was the proper ratio to improve the quality characteristics of duck ham.
분리 대두 단백질의 유화 안정성에 관한 인산 염 $(Na_2HPO_4,\;K_2HPO_4)$의 농도와 첨가방법의 영향을 연구 하였다. 유화 과정 이전에 인산염을 첨가하였을 경우 10mM의 농도에서 유화 안정성이 증가하였으나, 유화 과정 이후에 첨가한 경우에는 유화 안정성이 감소하였다. 반면에 높은 인산 염 농도에서는 첨가 방법에 관계없이 유화 안정성이 감소하였다. 한편 분리대두 단백질의 등전점(pH 4.5)이나 $CaCl_2$의 존재 하에서 인산염을 첨가한 경우 유화 안정성은 크게 증가 하였으며, 이 때 전체적인 유화 안정성은 분리 대두 단백질의 용해도와 유사한 경향을 보였다. 이는 분리 대두 단백질의 유화 안정성은 그 용해도와 밀접한 관계가 있다는 것을 의미한다.
본 연구에서는 유화안정제 중 하나인 cetyl alcohol 함량에 따른 천연 염모제 헤나의 유화 안정성을 분석하고 가장 안정한 유화를 나타내는 cetyl alcohol 함량을 확인하였다. 유화 안정성을 분석하기 위해 cetyl alcohol의 함량에 따른 입자 크기, 입자 형태, 점도 및 염색 후 색상의 차이를 비교하였다. Dynamic light scattering (DLS) zeta 분석 결과, cetyl alcohol 3 % 가 zeta potential 값이 115.9 mV로 가장 높은 값을 보였으며, 입자크기분포는 cetyl alcohol의 함량이 3 %인 크림 제형 염모제가 증류수에 분산된 헤나와 비교해 입도분포의 폭이 좁았다. 점도계 분석 결과 cetyl alcohol의 함량이 증가할수록 점도가 증가하였고, 크림 제형의 헤나 pH 측정 결과 두피에 적합한 pH 범위로 측정되었다. 또한 헤나 크림 제형 염모제에서는 cetyl alcohol의 함량이 증가할수록 유화 안정성이 증가하였다.
Changes in surface properties and detergency of sunactant mixtures were investigated in order to study the optimum mixing ratio of anionic and nonionic surfactants by measuring surface tension, interfacial tension, suspendability, and emulsification as a Amction of mixing ratio. Also, surface tension and detergency of the surfactant mixtures were determined with the increase of water-hardness or temperature. The results were as follows: the addition of NPE to anionic surfactant solutions (LAS or SDS) by 0.1 mole fraction remarkably decreased surface tension. NPE (n=15)/anionic surfactant mixtures showed a synergistic effect in lowering interfacial tension and emulsification, but NPE (n=7.5)/anionic surfactant mixtures did not. In suspension stability, however, synergism appeared when LAS or 505 was mixed with both of NPE's. With respect to the hydrophile of NPE, NPE (n=15) was more effective than NPE (n=i.5) in improving suspension stability. Detergency of LAS/NPE mixture changed almost linearly with mixing ratio, but that of SDS/NPE mixture increased remarkably by the addition of 0.1 or 0.2 mole fraction of NPE at all temperatures. As the temperature increased, surface tension of surfactant mixtures decreased and detergency was improved, but their synergistic effect decreased. In hard water, the mixtures showed better detergency than single surfactuant solutions.
Resveratrol was incorporated into various combinations of single- and double-layer nanoemulsions, prepared by self-assembly emulsification and complex coacervation with chitosan, alginate, and ${\beta}$-cyclodextrin, respectively. Resveratrol nanoemulsions were composed of medium-chain trigacylglycerols (MCTs), $Tween^{(R)}$ 80, water, chitosan, alginate, and ${\beta}$-cyclodextrin. The corresponding mixtures were formulated for the purpose of being used as a nutraceutical delivery system. Resveratrol nanoemulsions were obtained with particle sizes of 10-800 nm, with the size variation dependent on the emulsification parameters including the ratio of aqueous phase and surfactant ratio. Resveratrol nanoemulsions were characterized by evaluating particle size, zeta-potential value, stability, and release rate. There were no significant changes in particle size and zeta-potential value of resveratrol nanoemulsions during storage for 28 days at $25^{\circ}C$. The stability of resveratrol in the double-layer nanoemulsions complexed with chitosan or ${\beta}$-cyclodextrin was higher, compared with the single-layer nanoemulsions.
