  • As a preliminary study to estimate the amount of daily calcium intake of Korean people, the present study was conducted investigating the kinds and amount of food among ordinary Korean food considered to be sources of calcium. The author sampled arbitrarily a total of 165 apartment households in Pusan City which were distributed in seven administration sections. Duration of this study was eight months, from June, 1975 to February, 1976. During summer vacation in this period twenty trained students visited these households where they measured the calcium source food at dinner, and three times this amount was regarded as the total daily intake. Also questionairs itemizing the various kinds of food which were considered to be sources of calcium were given to housewives and collected about two months later. The results are summarized as follows: The major sources of calcium food were milk and anchovy, and the total calcium content taken daily was an average 195.06 mg which was far smaller than the recommended standard. Cooking methods varied according to the kinds of food; for anchovy, the boiled water extract or the part remaining after removing bone and head was used, and for chopped cattle bone, the broth from boiling foe 5 to 6 hours was used. For boiled water extract, during extraction the amount of calcium was increased in the water but smaller than foe fresh anchovy. It is, therefore, desirable to cook and eat edible fish bone instead of discarding it after extraction. The amount of calcium of shrimp and whitebait consumed was considerably less than that of milk or anchovy. Most housewives, about 71%, discarded fish bones which contained a lot of calium before or after cooking them. So, it was considered necessary to find a good method of preparing fish so that it can be eaten palatably together with the bones.

  • Physicochemical changes in persimmon were examined during natural organic acid fermentation. Major organic acids in raw persimmon juices were lactic acid (980 mg%) and acetic acid (245 mg%). The content of acetic acid was continuously increased during the whole period of fermentation up to 3 years. Glucose was the dominant free sugar, but the content was decreased after 20 days of fermentation. Most of the glucose was converted to ethanol until 40 days after initiation of acid fermentation. L- and a values of Hunter's color in fermented persimmon juice, which was naturally exuded from persimmon fruit as fermentation continued, increased gradually, while b value decreased. Acetic acid (1584 mg%) was the most abundant organic acid followed by lactic acid (712 mg%) and citric acid (48 mg%) in a persimmon fruit juice after completion of 3 year fermentation. A minute amount of residual free sugars, mainly glucose, even after 3 years of fermentation may cause changes in quality characteristics while storage for edible use.

  • An attempt was made to investigate the antioxidant activity of methylene chloride extracts of a glucose-ammonia browning reaction mixture, which contain pyrazines, important intermediate prod ucts of Maillard-type browning reactions. Methylene chloride extracts were obtained from a glucose-ammonia(1M+8M) browning reaction mixture, which had been heated at $100^{\circ}C$. for 4 hours. The molar ratio of the reactants and the reaction time were reported to be the optimum ratio and time for the maximum formation of pyrazines. The methylene chloride extracts and furfural (for comparison purpose) were added to edible rapeseed oil substrates, and the resulting substrates and the control were stored at $37.0{\pm}1.0^{\circ}C$. Peroxide values (POV), thiobarbituric acid values (TBA-values) and acid values (AV) of the substrates and the control were determined regularly during a 34-day storage period. The antioxidant activity of the methylene chloride extracts and furfural was estimated on the basis of POV, TBA-value and AV-development of the substrates and the control. It was found that the methylene chloride extracts of the glucose-ammonia (1M+8M) browning mixture possessed considerable antioxidant activity. Furfural also showed some activity.

  • The residue depletion of amoxicillin was investigated in the olive flounder (Paralichthys olivaceus), rockfish (Sebastes schlegeli), and red sea bream (Pagrus major) after 7 days treatment with medicated feed at a dose of 400 mg/kg bw/day. Fishes were sampled for muscle on 1st, 2nd, 3rd, 4th, and 5th day after treatment. Amoxicillin concentrations were determined by high performance liquid chromatography with fluorescence detector. The recovery rates of amoxicillin in muscle samples ranged 84.3-101.3% and 75.0-91.5% for the concentration of 0.05 mg/kg and 0.1 mg/kg, respectively. Amoxicillin concentrations detected on 1st day after treatment were 0.137, 0.131, and 0.172 mg/kg in the muscle of olive flounder, rockfish, and red sea bream, respectively. After a withdrawal of 3 days, muscle concentrations were 0.012, 0.010, and 0.017 mg/kg in the olive flounder, rockfish, and red sea bream, respectively. Amoxicillin was not detectable in muscle samples on 4 days following withdrawal of the medicated feed. From results of the present study, a withdrawal period of amoxicillin is proposed on 4 days after 7 days treatment with medicated feed at a dose of 400 mg/kg bw/day to avoid the presence of excessive residues of the edible muscles of olive flounder, rockfish, and red sea bream.

  • "Boram" is a new $F_1$ hybrid of rapeseed (Brassica napus L.) with early maturing, high yield and high oleic acid. This cultivar was developed from the cross between Mokpo-CGMS (male steile line) and 8634-B-1-3-1-8 (restore line) for the production of edible oil and biodiesel in 2006. Yield trials were conducted from 2007 to 2008 and regional adaptation trials were examined at four locations in 2008. "Boram" has green and parted leaf, yellowish flower, and black seed coat. The ripening period of "Boram" is similar to "Sunmang", but 3 days faster than "Tammiyuchae". The average seed yield of the regional adaptation trials was 424 kg/10a, which was 11 and 48% higher than "Sunmang" and "Tammiyuchae" variety. Total oil content of "Boram" was 44.2%. In fatty acid composition, "Boram" has no erucic acid. However, oleic acid content is 68.5%, which is 3.7 and 5.4% higher than "Tammiyuchae" and "Sunmang". And total glucosinolate content was 2.27mg/g. Therefore this variety is recommended as a leading variety at southwestern areas including Jeonnam, Jeonbuk and Kyeongnam provinces and Jeju island of Korea.

  • The Houttuynia cordata has been utilized for various beneficial purposes in humans mainly because of its potent antioxidant principle quercitrin present in this plant. This study examines the possibility of producing a functional sea food commodity containing active principle quercitrin by feeding H. cordata for a extended period. Spotted sea bass (Lateolabrax maculatus) were fed a diet containing H. cordata at 0.1-1.0% levels for 1 month and tissue concentrations of quercitrin were analyzed in serum, hepatopancreas and muscle. It was observed that quercitrin was found in the ranking order of hepatopancreas>muscle>serum. After a bolus administration of quercitrin (20 mg/kg, oral) to spotted sea bass and Nile tilapia (Oreochromis niloticus), idential rank order was observed after 48 hr. In contrast, the order was liver>serum>muscle in rat and mice, indicating that higher quercitrin distribution occurs to the muscle in fishes compared with in mammals tested. High residue concentration of qeurcitrin in the edible tissue can be an advantageous property in terms of functional food production. High level H. cordata extract inclusion of 1.0% seems to have detrimental effects in spotted sea bass leading to growth retardation and hepatic damage. It was concluded that incorporation of H. cordata extract into diet can be a way of producing healthy foods. However the level of active extract needs fine tuning to avoid toxicity to fishes.
