Eating out industry is typical human service industry to depend on human resources largely. Nevertheless, management of human resources in eating out industry is beneath notice. Degree of satisfaction at a duty of an employee must be grasped to offer good service to a customer. Human service of an employee is structural element of eating out industry and a direct instrument to make a profit Therefore, an offer of good service depends on a mental attitude of an employee though satisfaction at a duty. Therefore, this study investigates elements affecting satisfaction at a duty of an employee and presents actual remedies to a chive purposes of study with importance. To accomplish this duties, this study does theoretical studies on satisfaction at a duty and literature studies on general features of eating out industry. And, on the basis of it, this study does actual studies on satisfaction at a duty of an employee in small-scale eating out industry Therefore, to disperse burdensome amount of business due to human structure that do not differentiate between operation and cooking to operate organization that employee works by turns and rest, and to use well trained part-time worker will contribute to reduction of labor cost and promotion of morale of current employee.
This study was conducted to investigate the relationship between general characteristics and the eating-out behaviors of 643 male/female industrial workers. The results of the study was summarized as follows. 1. The frequency rate of eating-out was higher for male than female, college graduates than high school graduates, high income earner than low income earner, and unmarried than married(p<0.05). 2. Average cost for eating-out was higher for male than female, for high educated and high income earner than low educated person. Age, married or not, personal health conditions and BMI, however, didn't make any difference in the average cost for eating-out. 3. Reasons fur eating-out was very different due to gender, age, degree of education income rate, married or not, BMI(p<0.05) but basically eating-out was due to get together with friends or colleagues. Also, people who thought they were not in good health answered that they did not eat-out in any conditions. Overweighted people ate out more often than normal or under-weighted people. 4. The method in gathering information about eating-out was different according to the level of education and whether married or not. On the other hand, gender, age, income rate, personal health condition and BMI did not make a big difference in its method. However, most People who Participated in the survey gathered information from people around them, such as friends/colleagues. 5. Taste was the most important factor in deciding the actual eating-out restaurant among the respondents and gender, age, level of education, married or not also made significant differences (p<0.05). 6. Besides personal health conditions and BMI, all the general characteristics including age made significant differences in selecting the most frequently visited restaurant. 7. Besides the personal health conditions, the transportation vehicle was different due to gender, age, level of education, income rate, married or not and BMI. As seen from the results, the eating-out behaviors mostly differed due to general characteristics. In order to searching for a new eating-out market, the general characteristics and the trend of the target customers has to be analyzed to activate the eating-out industry. In addition the need for highly nutritional food with low calorific value has to be emphasized along with the taste.
This study assesses consumer's eating-out pattern for Foodservice industry in Korea. Foodservice industry has become increasingly important because many businessman are looking it difficult to develop successful business as a consequence of the rapid growth in Foodservice industry in Korea This exploratory study originally nation-wide surveyed a 1450 consumer over the country. A research was conducted from July 1, to July 10, 1996 using as its subject domestic consumer over the country. The data obtained from the returned questionnaires was coded and transcribed for statistical analysis. The Statistical Package for social science program (SPSS) was used for computer analysis of the data. Findings indicated the problems of management structures, managerial techniques, and laggard counter measure against the korean government's open-door policy for dining-out industry. It is found that taste, F/B price, atmosphere are considered important in choice of restaurant. And korean consumer think it is that restaurant location, physical, evidence, quality of service, Ads of mouth and cleanliness. With the importance of dining-out industry to the business, economic, and social development of korea, it is imperative to bridge this gap for sustained growth and development. Moreover, this study for advancement and improvement through concrete and multi-directional data collection and in-depth analysis of consumer's eating-out pattern realities is required.
The objective of this study was to use cluster analysis to determine differences in eating-out behavior among grouped clusters of female consumers after each cluster was divided based on lifestyle patterns. The data were collected by interview survey from a biased sample of 1,300 females, ranging from ages 20 to 59, and living in residential districts of Seoul. Reliability analysis, factor analysis, cluster analysis, cross-tabulation analysis, and analysis of variance (ANOVA) were applied to the data. Four lifestyle factors were extracted by lower-division and classified as follows: health condition, consuming, food, and housing lifestyles. Based on these four factors, the female consumers were grouped as three clusters: the consuming-individuality type, rational-pursuit type, and conservative-stability type. The eating-out behavior of each cluster was significantly different in terms of frequency of eating-out, eating-out expenditures, restaurant selection criteria, food preferences, and the purpose for eating-out. Since this study surveyed females from ages 20 to 59, age and demographics were the differential factors in determining the various lifestyle types. Thus, to target the consumers who form a target market, the food industry should consider market segmentation that combines demographic factors such as age, income, and marital status.
Customer needs in food service industry is not only demanding high quality product(food), but also high quality service. Therefore, how to provide high quality service based on customers expectation, and how to design the service systems by food service industry or restaurants are important task. This study is service quality of Korean restaurant customers, it aims analyzes factors influences service quality of food service industry based on the perception of pork-belly specialty restaurants customers. It is expected that there is significant difference according to gender concerning level of satisfaction in service quality of food service industry as a result of analyzing the level of satisfaction for frequency of eating out relatively to the purpose of eating out, and researching the level of satisfaction for service quality of food service industry after visiting the restaurant. Based on such results, solutions that can cope with social, cultural and economical environment of food service industry are suggested. Selection of food service business, samples, and purpose of eating out, which are limits of this study, needs to be studied continuously in the future after diversifying and segmentation.
The purpose of this study was to investigate several aspects of eating out behaviors among older persons. In aging society, need of seniors are getting higher than before, they want to have a good quality of life. Specially it is changed in family structure and life style. The food habits of older person will be getting change. Hence this study tried to show the various thought of eating out behaviors, interested factors to select restaurants and menus, tendency to do eating out, inconveniences to use of eating out so on. The questionnaires were completed by 150 older persons living over 60 years old in Busan. They were mostly health and active. The most study were focused young generation however the old generation was not interest in eating out behaviors. Therefor this study gave a lot of approach to develop food habits for old person. The result were as followed: The attitude of eating out were positive, once or two times in a week was highest response 138(92%). As frequently selected food were vegetable and Korean food restaurants. Moreover older person expect a meaningful food culture among older person. As a bad grade of eating out were not to be kind to seniors, never concern to characteristic older. They wanted to have a food for their health and to share with their spare time. The study of eating out style will be very important issue of silver industry. To develop menus and to make older person culture is very needed in aging society.
BACKGROUND/OBJECTIVES: Eating-out among Korean people has become an important part of modern lifestyle due to tremendous growth of the food service industry and various social and economic changes. This study examined trends in meal patterns and meal sources while eating-out among Korean adults aged 19 years and older. SUBJECTS/METHODS: Data were from the 1998-2012 KNHNES (Korea National Health and Nutrition Examination Survey) by the 24-hour dietary recall method. This study included 55,718 adults aged 19 years and older. For analysis of eating-out frequency, data were categorized by source of meals and serving place. RESULTS: Average frequency of meals consumed away from home increased from 1998 to 2012, although it remained lower than that of meals at home. In addition, male, unmarried, employed, higher educated, and high income individuals more frequently consumed meals away from home. Moreover, sodium intake while eating-out significantly increased from 2,370 mg in 1998 to 2,935 mg in 2012. Lastly, percentage contributions of daily total protein intake, fat intake, and sodium intake from eating-out increased to more than half (53-55%) in 2012 compared with 47-48% in 1998. CONCLUSIONS: As eating-out has grown in popularity, greater recognition of public health and nutritional education aimed at promoting healthy food choices is needed. In addition to developing consumer education for overall healthier eating patterns, individuals who are younger, unmarried, higher educated, and males are especially at risk and require attention.

In the past, eating outside was usually the purpose of eating. However, it has recently expanded into a restaurant culture market. In particular, a dessert culture is being established where people can talk and enjoy. Each consumer has a different tendency to buy chocolate such as health, taste, and atmosphere. Therefore, it is time to recommend chocolate according to consumers' tendency to eat out. In this paper, we propose a chocolate recommendation application based on the tendency to eat out using data on social networks. To collect keyword-based chocolate information, Textom is used as a text mining big data analysis solution.Text mining analysis and related topics are extracted and modeled. Because to shorten the time to recommend chocolate to users. In addition, research on the propensity of eating out is based on prior research. Finally, it implements hybrid app base.
The purpose of this study was to find out the relationships among the eating behavior, the nutrition knowledge & the physical growth, and factors influencing each of them in middle school students. Eight hundred three boys and girls, who were sampled from the third graders of 6 middle schools located in Taejeon and Ahnmyeondo, were asked to fill out the questionaire. The statistics used for data analysis were Frequency, Percentage, Oneway, Crosstabs, Chi-square($X^2$), t-test, Pearson Correlation, Regression, and Path analyses. The results are summarized as follows: I. The asked students showed the significant difference in frequency intaking food and the eating attitude depending on sexual distinction and area. The girls got higher frequency score(intaking food) than the boys did and the students in Taejeon got better eating attitude score than those in Ahnmyeondo. Also, the girls got higher nutrition knowledge score than the boys did and the students in Taejeon got higher nutrition knowledge than those in Ahnmyeondo. 2. The higher the economic level was, the higher the frequency score(intaking food) was. Also, the students whose father had the occupation involved in the tertiary industry and better school ing made higher nutrition knowledge, eating attitude, and frequency intaking food than others. The students whose father had the occupation involved in the tertiary industry and better schooling were taller and heavier than others. 3. The variables influencing on the frequency intaking food were father's school ing, father's occupation, economic level, sexual distinction, eating attitude. The variables influencing on eating attitude significantly was only the birth order. The variables influencing on the height were sexual distinction, residential area, eating attitude, frequency intaking food, father's schooling. Also, the variables affecting the weight were sexual distinction, father's schooling, eating attitude, frequency intaking food.
This study was conducted to investigate university students' eating out behavior and attitude to coupons and alliance cards in the food service industry. Self administered questionnaires were collected from 435 students. Statistical data analysis was completed using a SPSS v. 12.0 program. The results were summarized as follows: The average age was 21.24. Korean-style food was the most favorite dish when they ate out. Major sources of restaurant information were friends and acquaintances. The factors of choosing restaurants came 'taste', 'hygienic', 'price' and 'service' in that order. Comparing coupons with alliance cards, they used coupons less frequently than alliance cards. The behavior of using coupons and alliance cards indicated that university students regarded alliance cards as more economically helpful than coupons.
