A Study of Serum Lipid Levels, Blood Sugar, Blood Pressure of Vegetarian Buddhist Nuns and Non-Vegetarian Female Adults (II) - Based on Favored Salty Taste - (채식을 하는 여승과 비채식 성인여성의 혈중 지질수준, 혈당, 혈압에 관한 연구(II) -짠맛에 대한 기호를 중심으로-)

  • This study was conducted to verify the relation between relation between vegetarian diet and the serum lipid levels, blood sugar and blood pressure from October 1996 to February 1997. The vegetarians subjects were 245 Buddhist nuns (age:23~79 yrs) and control subjects consisted of 235 healthy female adults (age: 23~70 yrs) selected from the teachers, the nurses and the housekeepers living in Chinju Gyeongsang Nam-do. The contents included anthropometric measurement, questionnaires about eating behavior score and preference for taste and biochemical characteristics of the blood. The results were summarized as follows. The average duration of vegetarian diet of the vegetarians was 13.1 years. Vegetarians prefer to a pepper, a sweet and a acidic in the right order but that non-vegetarians prefer to a sweet, a acidic and pepper in the right order. Both groups of less than a decade and more than two decade of vegetarian diet prefer to a pepper, sweet, a acidic, a bitter, a salty and a lily, and a 10~20 yr group with vegetarian diet was fond of a pepper, a bitter, a acidic, a sweet, and a oily, in the right order. This seems to be ascribable to a difference in the health knowledge and interest. Vegetarians and non-vegetarians who said that they were fond of salty were 38.8% and 52.8%, medium was 33.9% and 33.6%, and not salty was 27.3% and 13.6%. Eating behavior score of vegetarians and non-vegetarians were 25.1 and 23.1 respectively. Eating behavior scores of vegetarians were significantly higher than those of non-vegetarians (p<0.05). Eating behavior scores of the group with more than a decade of vegetarian diet were significantly higher than those of the group with less than a decade of vegetarian diet. Levels of serum total-cholesterol, LDL-cholesterol, and AI of the salty group were significantly higher (p<0.05) than those of not salty group. Levels of serum triglyceride, HDL-cholesterol, blood sugar had no significant relation with preference of salty. Blood pressure was not related with preference of salty, but that of those who prefer a salty tended to be high. This study also reveals that the preference of a salty was significant influence on serum total-cholesterol, LDL-cholesterol, and AI, but the vegetarians did not prefer salty and have a good eating behavior. Consequently, vegetarian diet can be considerably effective in reducing the level of the risk factors of cardiovascular disease.

  • Effects of low quality roughage sources on duration and frequencies of rumination and chewing in Hanwoo steers were determined, Animals were fed three diets; concentrate+rice straw(SO:SO), concentrate+ rice straw + popped rice hull(SO:3S: IS) and concentrate+ rice straw+ground rice hull(SO:3S: IS) to compare both rice straw alone and combination with rice hull. Eating and ruminating time of steers fed concentrate+ rice straw(SO:50), concentrate+ rice straw + popped rice hull(50:35:15) and concentrate + rice straw + ground rice hull(50:3S:15) were 78.8 and 338.4minlday; 98.0 and 362.5minlday, and 160 and 519.2min/day, respectively. When steers were fed popped rice hull and ground rice hull, time spent for both eating and ruminating was significantly increased(p <0.05). When steers fed popped and ground rice hull, number of ruminating chews and number of chews per rumination time were significantly decreased(p<0.05).   • This study aims to develop effective strategies for stimulating seafood consumption in the growing young children market, particularly at a time when interest in healthy eating is increasing. To achieve this, data from the 2023 survey on changes in seafood consumption behavior of 1,000 domestic consumers by the Korea Disease Control and Prevention Agency were utilized. The analysis was conducted using an ordered probit model, along with T-tests and chi-square tests to examine the determinants of seafood consumption. The results indicated that the presence of young children in a household significantly influences seafood consumption. This is largely due to the perception that seafood is beneficial for the health and safety of infants and toddlers. Households with young children prioritize food safety and convenience, showing a preference for pre-processed seafood, while households without young children tend to purchase unprocessed seafood and prepare it themselves. This study highlights the impact of having young children on seafood consumption and purchasing behavior, providing valuable insights for the development of targeted seafood marketing strategies and policies.

A Study on the Effects of Food-Related Lifestyle on Coffee Consumption Behavior (식생활 라이프스타일이 커피소비행동에 미치는 영향에 관한 연구)

  • The purpose of this study was to examine the relationship between the food-related lifestyle of coffee consumer and their coffee satisfaction level in an attempt to lay the foundation for successful coffee marketing strategy setting. Self-reported questionnaires were completed by 300 adults who have visited coffee shop recently in the Seoul metropolitan area. The SPSS 18.0 program was used to analyze the samples. Data was analyzed by frequency, descriptive factor, reliability, ANOVA, and regression. A factor analysis extracted five factors comprising food related lifestyle, which we named health-seeking (factor 1), eating-out-seeking (factor 2), taste-seeking (factor 3), economy-seeking (factor 4) and convenience-seeking (factor 5). The results of the regression analysis suggested that health-seeking, eating-out-seeking, taste-seeking lifestyle had a statistically significantly positive influences on the degree of the satisfaction. health-seeking, eating-out-seeking, taste-seeking, convenience-seeking in food-related lifestyle had statistically significantly positive influences on purchase intention. These results provide an understanding for lifestyles of coffee consumers and give an insight into differentiated marketing plans for coffee industry.

The Patterns of Purchasing Diet/Low-Calorie Food and Obesity Related Eating Behavior in Normal and Obese Female College Students in Seoul Area (비만에 따른 여대생의 체중 관련 식행동과 다이어트 식품 구매 형태)

  • In this study, 230 female college students in Seoul area were surveyed to evaluate their eating habits and behavior, physical activities, and patterns of purchasing diet/low-calorie food. Their body composition was also determined using bioelectrical impedance(Inbody 520). The subjects were divided into two groups according to their BMI index with a mean BMI of 20.2$\pm$1.5(normal) weight and 25.0$\pm$1.7(obesity). Overall, 85.7% of the subjects reported that the food they purchase depends more on their preferences than the nutritional value of the food. When the two groups were compared there was no significant difference in the frequency or experience of purchasing diet-foods. Indeed, 69.3% of all female college students had purchased diet foods, and most consumed these foods 2~3 times a week. Obese group preferred a savory taste, while normal group preferred a sweet taste. The majority of the subjects(80.8%) answered that they "read nutritional labels carefully upon purchasing diet food", and that they examined calories(61.8%) and total fat(48.5%) most carefully. Of the types of low-calorie/diet foods purchased, beverages were the most commonly obtained; followed by noodles, diet-bars, and snacks. The most commonly purchased low calorie snacks were "potato-type C(hot-flavor)" and "potato-type A(salty-flavor)", while the most commonly purchased diet-bars were "low calorie-type A"(55.3%) and "high protein-bar"(32.3%). The most commonly purchased noodles were "thick noodle type"(65.1%), while the most commonly purchased drinks were "cereal tea"(65.1%) and "mixed herb tea"(66.0%). Overall, factors such as self-esteem or the degree of body satisfaction, rather than obesity(BMI index) itself, were significantly correlated with the frequency of purchasing diet-foods.

  • Spawning behaviors of Squalidus gracilis majimae (Cyprinidae) were observed in the laboratory whose environmental factors such as light (D/L = 16 : 8), temperature ($20\;{\sim}\;24\;^{\circ}C$), and dissolved oxygen (>8 mg $L^{-1}$) were quite regularly controlled. The behavioral patterns were categorized into three stages ofpre-spawning, spawning, and Post-spawning behaviors. In Particular, the pre-spawning stage was specified by 11 specific behavioral patterns of aggressive mating behaviors. During the spawning stage, the male and female performed four distinct spawning behaviors including sexual temptation, stimulation, egg spawning, and the separation, and randomly laid about 200 ${\sim}$ 300 eggs on the bottom substrates through the night. After finishing spawning, two adults separated toward their refuges and showed 3 types of post-spawning behaviors such as the resting, occasional eggs protecting, and the egg eating. The fish was identified as a partial-parental care species after the spawning.

Study on relationship between milk intake and prevalence rates of chronic diseases in adults based on 5th and 6th Korea National Health and Nutrition Examination Survey data (제 5기, 6기 국민건강영양조사 자료를 활용하여 성인의 우유 섭취와 만성질환 유병률 사이의 관련성 연구)

  • Purpose: The purpose of this study was to explore the relationship between milk intake and prevalence rates of chronic diseases using KNHANES data, and the significance of the relationship was tested based on meditators, socioeconomic status (income, education), dietary behaviors (smoking, alcohol drinking, breakfast, and eating out), and physical activity (walking, medium, and high). Methods: Using the 5th and 6th survey data of KNHANES, milk intake rates and presence of seven chronic diseases were summarized and analyzed by ANOVA for two groups of adult men and women as follows: hypertension, hypertriglyceridemia, low HDL-cholesterol, diabetes, abdominal obesity, obesity, and metabolic syndrome. The dependent variables for the presence of seven chronic diseases regressed with socioeconomic, dietary behavior, and physical activity variables according to Logistic models. The dependent variables for milk intake using predictor variables of socioeconomic, dietary behaviors and physical activity were analyzed according to Logistic models. Finally, the significant socioeconomic, dietary behavior, and physical activity variables in the above model along with milk intake as a control variable or mediator variable regressed with significant chronic diseases according to Logistic models. Results: Milk intake, socioeconomic status, dietary behaviors, and physical activity were significantly different among the two groups of adult men and women, which were also critical factors to the prevalence of chronic diseases. The dependent variable for prevalence of chronic diseases regressed with significant factors of socioeconomic status, dietary behavior, and physical activity variables according to chronic diseases using the control or mediator variable of milk intake and summarized as follows: For adult men, milk intake controlled the education effect on diabetes partly, alcohol on hypertension and hypertriglyceridemia, low HDL-cholesterol, metabolic syndrome, breakfast on metabolic syndrome, eating out on obesity, and medium physical activity on hypertriglyceridemia. For adult women, household income on hypertriglyceridemia, diabetes, abdominal obesity, education level on hypertension, alcohol drinking, eating out, and walking activity on abdominal obesity, alcohol, breakfast, eating out, walking activity on low HDL-cholesterol, and medium physical activity on hypertriglyceridemia and low HDL-cholesterol were partly controlled by milk intake. Other significant socioeconomic status, dietary behavior, and physical activity variables related to prevalence of chronic diseases were fully controlled or mediated by milk intake. Conclusion: This study shows that milk intake (daily more than 200 g) prevents chronic diseases such as hypertension, hypertriglyceridemia, low HDL-cholesterol, diabetes, obesity, abdominal obesity, and metabolic syndrome.

Planning Health Promotion Program in Workplace (산업장 건강증진 프로그램 개발에 관한 연구 -건강행위의 변화의도 예측요인 및 대상의 유형 분류를 중심으로-)

  • In recent years, interests in health promotion have been stimulated by the epidemiological transition from infectious to chronic diseases as lead ing causes of death, the aging of the population, rapidly escalating health care costs, and epidemiologic findings linking individual risk to morbidity and mortality. It is not surprising that the workplace has been targeted as a promising setting for health promotion. In Korea, national attention to the opportunities for workplace health promotion began in the first 1990s. But there is no in depth study to identify the relating factors to the health promotion program in the workplace. The objective of this study is behavioral and physical characteristics to find that in crease the person's risk for a range of health problems and to analysis other characteristics to influence the degree of his/her intention to change health behavior. In addition, this study is purposed to present the process of planning health promotion program in the workplace. To accomplish these objectives, one workplaces was selected. And 363 employees in those workplaces were served as subjects for the study. Major findings in this study are as follows. (1) They have many risk factors such as smoking, drinking, lack of sleep, law rate of regular exercise, irregular eating, stress. (2) Some of the health risk factors such as smoking, drinking, and stress have the negative correlation to the intention to change. (3) Among cognitive and socio-environmental factors, significant predictors to the intention are attitude and social support. (4) In the cluster analysis to segment the target population in to homogeneous unit, three clusters of lifestyle are specified. (5) Smoking cessation and exercise program are planned for the risk group to change their behavior.

A Study on Breakfast Dietary Behavior of Female Middle School Students by Intention to Participate in School Breakfast Programs (학교 아침급식 참여 희망 여부에 따른 여중생의 아침식사 관련 실태조사)

  • The purposes of this study were to investigate the eating of breakfast by female middle school students in Seoul, the perception of the school breakfast program (SBP), and determine the factors affecting the intention to participate in SBP. Out of 340 questionnaires distributed to the female middle school students, 334 were returned (98.2% response rate) and 323 were analyzed. The subjects were categorized into two groups by the intention to participate in SBP. Subjects were classified as participating and non participating groups. As a result of analyzing the breakfast intake frequency, 'hardly eat' showed the highest with 18.5% in the participating group and 10.3% in non participating group, while 'eat every day' showed 38.2% in the participating group, and the highest with 65.5% in non participating group (p<0.001). For the reason for skipping breakfast, 'no time' showed the highest with 30.0% in the participating group, 'over sleep' and 'no appetite' showed the highest with 24.8% in non participating group. For the reason for not participating in SBP, 'breakfast should be eaten at home' showed the highest with 47.2% in non participating group and 'may get up early in the morning' showed the highest with 46.2% in participating group (p<0.01). To determine the factors affecting the intention to participate in SBP, logistic regression analyses were conducted for female middle school students. According to the logistic regression analysis, father's education level was independently associated with the intention to participate in SBP in female middle school students [Odds Ratios (OR) 2.38, 95% Confidence Interval (CI) 1.03~5.52]. Frequency of eating breakfast on weekdays (OR 1.36, 95% CI 1.01~1.81), Level of need for school breakfast (OR 0.52, 95% CI 0.35~0.76) and whether to approve school breakfast (OR 0.27, 95% CI 0.18~0.41) were independently associated with the intention to participate in SBP in female middle school students. In conclusion, proper educational efforts for importance of school breakfast could be useful plan to develop school breakfast program.

Knowledge, Attitude, Practice and Related Factors about Low Salt Diet in University Students (대학생의 저염식이에 대한 지식, 태도, 행위와 관련요인)

  • Objectives: This study was carried out to measure knowledge, attitude, and practice and related factors of low-salt diet among university students. Methods: Data from a convenience sample of 251 nursing and engineering students of two universities in south-western part of Korea were collected during March 16~20, 2015 using a self-reporting questionaire and urine test. The instruments developed by Lee and Song(1999) were used to measure knowledge and practice, and Ahn(2013) for attitude toward low-salt diet. A spot urine salt stick($SaltSinal^{(R)}$) was also used to evaluate practice of low-salt diet. Data were analyzed using SPSS 21.0, and t-tests, ANOVA, Pearson correlation, and Scheffe test were used. The study was IRB approved. Results: Knowledge, attitude, and practice of low-salt diet was low and spot urine salt level was high among university students. Knowledge and attitude were higher and spot urine salt level was lower among nursing students. Knowledge and attitude were related to gender and drinking. Living arrangement, monthly allowance, smoking, frequency of eating-out, frequency of breakfast were shown not to be related to knowledge and attitude. None of the variable investigated were significantly related to practice of low-salt diet. However, spot urine salt was related with gender, living arrangement, and smoking. Conclusions: A rigorous health education is necessary in order to lower dietary salt among university students. Considering frequent eating-out among university students, it is also very important to lower salt amount in foods sold on- and off-campus.
