외식 소비자의 일반적 특성 및 외식 목적에 따른 외식 행동 (Relationship between the Characteristics of Consumers, Purpose of Dining-out and Dining-out Behavior)

  • Due to the increasing income of married working couples, people have become accustomed to dining out and spending more money when doing so. As a result, various restaurants are operating and new concept restaurants are emerging to meet the needs of customers. The purpose of dining-out depends upon who the companion is and the choice of restaurant and spending seems to be affected by the purpose. In addition, characteristics of consumers influence their dining-out behaviors. This study explored the relationship the between characteristics of consumers and their reasons for eating-out purpose, choice of restaurant, spending habits and preferred restaurant type.

Effects of campus dining sustainable practices on consumers' perception and behavioral intention in the United States

  • BACKGROUND/OBJECTIVES: Sustainability has become one of the top priorities in the foodservice industry. With an increase in consumer interest in sustainability and educational opportunities in higher education, it is important to know what sustainable practices are implemented in campus dining and how sustainable practices affect consumers' responses. This study aims to identify the key sustainable practices in the campus dining context, and investigate the relationship by applying the stimulus-organism-response framework to determine whether the key sustainable practices influence consumers' perception and behavioral intentions. SUBJECTS/METHODS: The self-administered online survey was distributed to college students in 8 dining halls at a large southeastern university in the United States from September 20-October 10, 2019. A total of 382 valid questionnaires were collected, and factor analysis and multiple regressions were utilized to test the research model. RESULTS: This study identified 4 dimensions of campus sustainability with a total of sustainable practices: sustainable food, waste management, energy/water conservation, and recycling/reuse. Three dimensions of sustainable campus practices (i.e., sustainable food, waste management, recycling/reuse) played a significant role in consumers forming a perceived value while energy/water conservation did not significantly influence the consumers' perceived value toward the campus dining. Waste management was identified as the most important practice to enhance consumers' perceived value (β = 0.330). Using sustainable food and recycling/reuse were ranked second and third, respectively (β = 0.262, β = 0.154). The findings confirmed the significant positive relationship between perceived value and revisit intentions. CONCLUSIONS: The findings support the inclusion of dining sustainability as a critical component in explaining college students' perceived value and revisit intention toward campus dining. Furthermore, this study provides practical implications for university administrators and foodservice operators to consider the key sustainable practices to meet the consumers' value and revisit intentions.

서울지역 실버고객들의 외식식습관과 소비행동 속성에 관한 연구 (A Study on the Eating Behaviors and Characteristics of Consumption Propensities on Dining out as Perceived by Silver Generation in Seoul)

  • 오늘날 실버세대는 독립된 소비세대로 사회 여러 분야에서 실버외식산업을 급성장시키는 세대이기도 하다. 본 연구에서는 새로운 소비의 주체세력으로 부상하고 있는 실버세대를 대상으로 실버세대에 대한 외식 소비행동에 따른 외식 선택속성과 식습관 변화를 살펴보고자 하였다. 서울에 거주하는 55세 이상의 실버 연령인 216명을 대상으로 하여 식습관 수준과 인구사회학적 특성에 따른 변인분석은 독립표본 t-검증과 F-검증을 실시하였으며, 실버세대의 식습관에 따른 소비태도와 외식소비행동 차이를 알아보기 위하여는 ${\chi}^2$검증을 실시하였다. 분석한 연구 결과를 요약하여 다음과 같은 결과를 얻었다. 첫째, 실버세대의 식습관 수준은 3점 만점에 평균 2.02점으로 나타나, 식습관이 어느 정도 양호함을 알 수 있었다. 둘째, 실버세대의 식습관에 따른 외식소비태도 차이를 분석한 결과, 식습관 태도가 비교적 양호한 사람들이 불량한 집단보다 물리적인 환경, 메뉴의 다양성, 업체의 품질과 서비스를 찾아서 외식업체를 선택하는 것으로 나타났다. 셋째, 실버세대의 식습관에 따른 외식소비행동 변화를 분석한 결과, 식습관 수준에 따른 외식업체 정보 출처와 외식업체 선택 선정기준 변수에 대해서만 집단 간 차이가 있는 것으로 나타났다.

라이프스타일 유형이 외식 구매 의사 결정 과정에 미치는 영향 (The Effect of Lifestyle Patterns on Decision Making Process for Foodservice Purchase)

  • The purpose of this study was to conduct factor analysis on Foodservice consumers' lifestyle patterns in dietary life, classify lifestyle patterns, and identify how lifestyle patterns influence the 5 stages of decision making process for purchase. Among 300 copies of the distributed questionnaire, 259 copies were collected for this study. It used a total of 283 copies as the effective samples for empirical analysis except 12 copies with false entries among them. For data analysis, it conducted frequency analysis, validity and reliability analysis, factor analysis, and multiple regression analysis using SPSS 12.0. As a result, Hypothesis 1 was significant while Hypothesis 2, 3, and 5 were partially significant. On the contrary, Hypothesis 4 was not significant. Therefore, lifestyle patterns had partially significant effects on decision making process for dining-out purchase. This study subdivided dining-out consumers' lifestyles which were limited to dietary life, and also subdivided decision making process for dining-out consumers' dining-out purchase into five stages. It is significant and very suggestive that this study identified what lifestyle patterns concretely had significant effects on the specific decision making stage. In the future, the researches on adolescent class and silver class should be executed continuously.

코로나19 사태에 따른 한·중 소비자의 외식동기와 방문외식, 배달-테이크아웃 소비선택 간의 관계에 관한 연구 : 대인접촉 불안감의 조절효과를 중심으로 (A Study on the Relationship of Korean and Chinese Consumers' Eating-out Motivation, Dining Out, and Delivery-Takeout in COVID-19 : The Moderating Role of Interpersonal Contact Anxiety)

  • 본 연구는 한국과 중국 소비자의 외식동기와 방문외식, 배달-테이크아웃 소비선택 간의 관계에서 코로나19로 인해 소비자들이 느끼는 대인접촉 불안감의 조절효과를 조사하고자 하였다. 한국소비자의 외식동기가 외식선택에 미치는 영향에서 대인접촉 불안감의 조절효과를 검증한 바, 대인접촉 불안감은 이성적동기가 방문외식에 미치는 정적 영향을 약하게 하는 조절효과가 있는 것으로 나타났다. 중국 소비자의 외식동기가 외식선택에 미치는 영향에서 대인접촉 불안감의 조절효과를 검증한 바, 이성적동기가 방문외식에 미치는 정적 영향은 약하게 하고, 감성적동기가 방문외식에 미치는 정적 영향은 강하게 하는 조절효과가 있는 것으로 나타났다. 또한 대인접촉 불안감은 이성적동기가 배달에 미치는 정적 영향은 강하게 하고, 감성적 동기가 배달에 미치는 정적 영향은 약하게 하는 조절효과가 있는 것으로 나타났으며, 감성적동기가 테이크아웃에 미치는 정적 영향은 강하게 하는 조절효과가 있는 것으로 나타났다.

소비자의 구매 촉진을 위한 새로운 두부 메뉴개발 및 두부 메뉴의 이미지 설정을 위한 조사 연구 (A Study to Investigate Ways to Improve Tofu Menu Developments and Tofu Menu Image in Relation to Purchasing Promotion)

  • This study is to investigate the recognition and preference of tofu food among general consumers and housewives in order to develope new tofu menu. The questionnaires are consisted of general questions, style of dining out, frequency of dining, health status, preference of tofu, reason for prefer tofu. A total of 262 questionnaires were analyzed for statistical analysis. The statistical analysis was completed using SAS program (Version 8.2) for descriptive analysis and ${\chi}^2\;-test$. Main results of this study were as follows: Most of the respondents prefer Korean food, 70% of the respondents are general consumers while 73.5% of the respondents are housewives. The frequency of dining out was 1-2 times per week. The two groups bought pre-cooked food one to two times per week. Fourity seven percent of the general consumers and 50% of housewives did not like the taste of tofu due to plain flavor. The respondents overall preferred many different ways to prepare tofu dishes. The results also indicated that tofu dishes are used as side-dishes. Thirty three percent of house wives had tofu with miso soup and pan-fried tofu, while 29.6% of the general consumers had soft tofu stew. 34% of the general consumers preferred stuffed tofu with shrimp, while 35.5% of the housewives liked it. 17% of the general consumers liked grilled tofu with crab meat sauce while only 14.5% of the housewives preferred the menu. Tofu teriyaki was preferred among 8.2% of the general consumers while 13.2% of the housewives liked tofu teriyaki.

냉장육 소비전력을 위한 소비자 외식 기호도 연구 -서울, 경기지역을 중심으로- (A study on the Dining-out preference and behavior of consumers for the chilled meat consumption strategy in Seoul-Kyunggi Area)

  • This study was conducted to investigate the consumers' Dining-out preference and behavior for the chilled meat consumption strategy . A total of 328 persons in Seoul, Kyunggi areas were selected by stratified random sampling method and were responded to this study questionnaire which was composed of six parts with 65 statements about chilled meat consumption. 1. The frequency of Dining-out is characterized that 'once a month' is the highest pattern of consumers(46.3%) : In that cases, the married people showed 'once a month'(52.7%) and 'once biweekly'(23.3%), but the unmarried people showed the more frequent pattern as 'once a week'(27.3%) and 'twice a week'(27.3%). And the frequency of Dining-out in relation with the education level revealed that 'the graduate people' are the highest (37.5%). 2. Generally the first food for the Dining-out is 'Kalbi'(26.2%), and the others were 'pork grilling','chilled meat grilling','fish sasimi','chinese foods','pizza' etc.... But there were some variation in relation with incomes and housing types: For the agriculture/physical labor class, they prefers the 'pork griling'(25.0%), the office work class prefers the 'Kalbi' For the house-owner group, they prefers the 'Kalbi', but the house-renting/lodging group, they prefer the 'chinese food' or 'pork grilling' etc.... 3. In choosing the Dining-out place,'quality of food'(54.3%) and 'hygiene'(21.0%) were rated as the first important factor. 4.'Soups', 'Noodles' and 'Cooked rice in casserole' were chosen as good lunch menu : for male, they prefer the 'Soups', but females prefer 'Cooked rice in casserole'. 5. People with commercials/services(44.7%) and agriculture/physical labor(50.0%) ate their lunch in private restaurant, but peoples in the office work(57.0%)/public service personnel(70.4%) and industry use refectory; and it showed significant difference. 6. Consumers prefer the chilled meat as a Dining-out menu, but they didn't recognize the difference between chilled meat and frozen meat 7. For Dining-out menu, many people proper the beef, but the price of beef was so high than pork, agriculture/physical labor class choose the pork grilling instead of beef : commercials/services/office worker prefer the beef chilled meat . 8. The first admirable cooking method for chilled meat is direct radiation grilling with charcoal and many of consumers prefer tender, marbling, some chewy and juicy, flavor, soft as a quality of meat but physical labor class prefer the some tough and chewy texture.

외식 소비자의 음식점 선택속성 중요도·만족도 분석 (Importance-Satisfaction Analysis of Restaurant Selection Attributes for Dining Consumers)

  • This study aimed to identify consumer demands and propose improvement measures for restaurants by conducting an importance-satisfaction analysis of the attributes that influence dining consumers' restaurant selection. The key findings are as follows: An analysis of consumer hygiene behavior revealed that participants were particularly vigilant about washing food ingredients, checking expiration dates, and maintaining personal hygiene before meals. Notably, women exhibited significantly higher hygiene behaviors than men in 9 out of 12 items. The importance analysis of restaurant selection attributes indicated that "food cleanliness" and "food taste" were prioritized, with women assigning higher importance to almost all attributes, particularly emphasizing restaurant cleanliness and food taste. The satisfaction analysis showed that "food taste" and "food cleanliness" were the most satisfying attributes, with significant gender differences observed in 4 out of 26 items. The importance-satisfaction analysis demonstrated that satisfaction levels were consistently lower than importance levels across all 26 attributes. The ISA analysis identified that items in the second quadrant, such as restroom cleanliness, reasonable price, and the provision of food safety information, were in the most urgent need of improvement. Overall, the study highlights that consumers place a high level of importance on hygiene and cleanliness in restaurants, reflecting a market with increasingly stringent hygiene standards.

고급 레스토랑 선택에 있어서 브랜드 연상 속성의 우선순위 연구 (The Prioritized Traits of Brand Association Initiating Consumers' Preference on Fine Dining selection)

  • 소비자들은 레스토랑 선택에 있어서 선호되는 속성을 기억 속에서 연결함으로 해서 다양한 니즈를 만족시키고 자아를 표현할 수 있는 이미지의 브랜드에 충실하게 된다. 소비자가 레스토랑을 선택하는 과정은 사회적, 문화적 가치, 개인 성향 등을 포함하는 복잡한 심리적 과정이다. 따라서, 본 연구는 고급 레스토랑 중심으로, 레스토랑 음식 속성 이외의 레스토랑 선택 속성들을 알아보고 그들의 우선순위를 조사하고자 시행하였다. 연구방법으로 포커스 그룹 세션을 통해 브랜드 연상의 변수를 파악하고, 이를 통해 실증적 연구를 컨조인트 분석을 통해 실시하였다. 결과로서, 시스템 편리성, 분위기, 가격, 서비스 측면(고객과의 관계형성, 직원의 능력)이 주요 속성으로 인지되었다. 아울러 그러한 속성의 중요도 순서는 분위기가 첫 번째 순위로 나타났으며, 가격, 관계 형성, 직원의 능력, 시스템 편리성 순으로 나타났다. 본 연구는 브랜드 연상과 레스토랑 선호의 관련성을 설명하고 있으며, 브랜드 선호 속성에 관한 향후 연구의 발판이 된다.

혼밥이 건강한 메뉴 선택에 미치는 영향: 소비 목적 지향과 메뉴 영양 정보 표시의 역할 (Can Dining Alone Lead to Healthier Menu Item Decisions than Dining with Others? The Roles of Consumption Orientation and Menu Nutrition Information)

  • Objectives: Driven by a growth of single-person households and individualized lifestyles, solo dining in restaurants is an increasingly recognizable trend. However, a research gap exists in the comparison of solo and group diners' menu-decision making processes. Based on the self-control dilemma and the temporal construal theory as a theoretical framework, this study compared the ordering intentions of solo vs. group diners with healthy vs. indulgent (less healthy) entrées. The mediating role of consumption orientation and the moderating role of amount of menu nutrition information were further explored to understand the mechanism and a boundary condition. Methods: A scenario-based online survey was developed using a 2 (dining social context: solo vs. with others) × 3 (amount of menu nutrition information: no nutrition information vs. calories vs. calories/fat/sodium), between-subjects, experimental design. Consumers' level of nutrition involvement was controlled. A nationwide survey data (n = 224) were collected from a crowdsourcing platform in the U.S. Data were analyzed using multivariate analysis of covariance, independent t-test, univariate analysis of covariance, and moderated mediation analyses. Results: Findings reveal that solo (vs. group) diners have less (vs. more) intentions to order indulgent menu items due to a more utilitarian (vs. more hedonic) consumption orientation in restaurant dining. Findings also show that solo (vs. group) diners have more (vs. less) intentions to order healthy menu items when the restaurant menu presented nutrition information including calories, fat, and sodium. Conclusions: The findings contribute to the literature of foodservice management, healthy eating, and consumer behavior by revealing a mechanism and an external stimuli of solo vs. group diners' healthy menu-decision making process in restaurants. Furthermore, the findings provide restauranteurs and health professionals with insights into the positive and negative impacts of menu nutrition labelling on consumers' menu-decisions.
