The effects of salt concentration on the qualities of cooked egg preparations were evaluated. Diluted egg samples which contained different amounts of slat were prepared by diluting whole egg fluid with rice washing, anchovy stock , or distilled water. After heating them rapidly, hardness, gel strength, and amount of syneresis were determined along with the performance of sensory test. the pH of the diluted eggs also measured before heating. Results obtained from these experiments are summarized in the following. 1. The pH of whole egg, egg yolk, and egg white was 7.32, 6.31, and 8.41 , respectively. 2. The pH whole eggs after addition of diluting solutions and salt showed a little differences over the whole salt concentration as follows. distilled water dilution > anchovy stock dilution > rice washing dilution 3. The hardness and gel strength of cooked samples were increased with the increase of salt concentration in the range of low salt concentrations of all diluting solution. These physical properties marked maximal values at salt concentration of 3% and then decreased as salt concentration increased. 4. Amount of syneresis decreased as salt concentration increased regardless of all diluting solutions used. 5. In sensory test, 1% salt concentration were scored good by the panel members regardless of diluting solutions which showed no significant difference among three diluting solutions.
The present study examined the effect of soy isoflavones on lipid metabolism in growing female rats. Rats were randomly assigned to three different groups and provided experimental diets for 9 weeks. The experimental groups were classified into 1) a control group, 2) a soy protein isolate group: soy (+)) group and 3) a soy protein concentration group: soy (-)) group. Diets contained either casein or one of two soy proteins with (soy (+)) or without isoflavones (soy (-)). Serum triglyceride concentration showed no significant differences among the experimental groups. Serum total cholesterol concentration was significantly lower in both the soy (+) and soy (-) groups than in the control group and LDL-cholesterol concentration was significantly lower in the soy (+). Serum HDL-cholesterol concentration was significantly higher in the control group than in the soy protein groups but the HDL-cholesterol share rate in total cholesterol tended to be lower in the control group than in the soy protein groups, insignificant as it was. Hepatic IDL receptor mRNA level was significantly increased in the soy (+) group when compared to the other two groups to be 20% higher than the control group. In conclusion, soy protein isolate, soy protein rich with isoflavones reduced serum total cholesterol and LDL-cholesterol concentration and increased hepatic IDL receptor mRNA expression in growing female rats. Therefore, it is considered that the intake of soy isoflvones during puberty can be advantageous in terms of the long-tenn control of serum lipid.

Viscosity, especially characteristic among various properties of visco-elastic fluids such as high polymer solutions, is affected mainly by temperature and concentration. Hence, it is important for fluid engineering to express, by some equations, how the fluid characteristics vary with the change of temperature and concentration and to analyze them to obtain consistent viscous characteristics. High polymer solutions, synthetic products of modern chemical industry, suggest many interesting investigations because they are typical visco-elastic materials. Experimentation was made to derive some useful fluid characteristic equations of SEPARAN-NP10 (polyacylamide) expressed by n (flow behavior index) and K' (consistency index) when it is given temperature and concentration variation. To measure viscosity, capillary viscometer was adopted and the range of experimentation is 0-2,000 P.P.M. in concentration and 15-55 .deg.C in temperature. The experimental results are summarized as follows: The flow behavior index n 1) has nearly constant results irrespective of temperature variation at same conentration and the results are shown in (Table. 4-4-3) 2) has following equation, regardless of temperature, for the variation of concentration. n=-1.0765*10$^{-4}$ P+0.9915 (P:P.P.M.) This study was conducted to elucidate the changes of photosynthetic ability and cation content in barley cultivar seedlings cultured for 10 and 30 days with different NaCl concentrations containing 1/4 Hoagland solutions. At the highest NaCl concentration, the weight of dry matter and the shoot/root ratio (S/R ratio) were decreased. Thus, shoots were affected more than roots by NaCl treatment. The S/R ratio decreased more in 'Neulssalbori' than in 'Bunong' by the NaCl treatment. The. internal $Na^+$ concentration increased greatly with the highest NaCl concentration, but $K^+$ concentration in plants decreased with the highest NaCl treatment. The $Ca^{2+}$ concentration had a small change with NaCl concentrations. Thus $Na^+$/$K^+$and $Na^+$/$Ca^{2+}$ratios increased with the highest concentration. The chlorophyll content (%/dry weight) of seedlings decreased at higher NaCl levels except for Bunong in 30 day old seedlings. The photosynthetic ability decreased only for Neulssalbori in the 10 days NaCl treatment. The stomatal conductance, and transpiration had decreased in the 10 day old seedlings, but not with 30 day old seedlings.
To obtain the information of low chlorine leaf production, the chlorine content of the soil and cured leaf in Burley tobacco growing area was investigated. The results obtained are as follows. 1. The chlorine concentration in soil at transplanting time in Kwang-ju growing area was higher than in Jeon-ju(1983), and paddy field sell showed higher concentration of chlorine than upland field in Jeon-ju(1984). The chlorine concentration in soil was different between years, locations, and cultivated land (paddy field and upland field), but the concentration, on the whole, was under the levels that might effect the leaf quality. 2. The chlorine concentration In soil was highest around todays after transplanting, and after harvesting, the concentration decreased to half of transplanting time. 3. The distribution of chlorine through the parts of tobacco plant showed remarkable difference between years, locations, cultivated land and growing stages. 4. There was significant positive correlation between chlorine concentration in top soil and chlorine content of cured leaf. 5. Chlorine content of cured leaf in Kwang-ju area(1.79%) was higher than that of Jeon-ju area(O.79%), relatively. 6. It was considered that the accumulation of salt from the sea by sea. wind did not main factor of high leaf chlorine content in seaside district.
This study was conducted to investigate the quality of white pan breads as affected by various concentration of Cordyceps powder. Breads were prepared by addition of 0, 1, 2 and 3% of Cordyceps to flour of basic formulation. The moisture content of white pan breads decreased with increasing Cordyceps powder concentration. The pH of white pan breads also decreased with increasing Cordyceps powder concentration. In color values, with increase of Cordyceps powder concentration, L value decreased and a value increased in the crumb. The weights of breads cooled decreased with increasing Cordyceps powder concentration. The volume and height of dough decreased with increasing Cordyceps powder concentration. However, the specific volume and yield of dough were not significantly different among groups. The baking loss rate was higher in the breads with Cordyceps powder than in the control. In the texture characteristics, hardness and chewiness of breads significantly increased with increasing Cordyceps powder concentration and adhesiveness increased. In the sensory evaluation, when compared to the control, the breads added to 1% of Cordyceps powder was superior to in color and flavor, while was similar to texture and taste.

Plasma electrolytic oxidation (PEO) is a promising coating process to produce ceramic oxide on valve metals such as Al, Mg and Ti. The PEO coating is carried out with a dilute alkaline electrolyte solution using a similar technique to conventional anodizing. The coating process involves multiple process parameters which can influence the surface properties of the resultant coating, including power mode, electrolyte solution, substrate, and process time. In this study, ceramic oxide coatings were prepared on commercial Al alloy in electrolytes with different KOH concentrations (0.5 ~ 4 g/L) by plasma electrolytic oxidation. Microstructural and electrochemical characterization were conducted to investigate the effects of electrolyte concentration on the microstructure and electrochemical characteristics of PEO coating. It was revealed that KOH concentration exert a great influence not only on voltage-time responses during PEO process but also on surface morphology of the coating. In the voltage-time response, the dielectric breakdown voltage tended to decrease with increasing KOH concentration, possibly due to difference in solution conductivity. The surface morphology was pancake-like with lower KOH concentration, while a mixed form of reticulate and pancake structures was observed for higher KOH concentration. The KOH concentration was found to have little effect on the electrochemical characteristics of coating, although PEO treatment improved the corrosion resistance of the substrate material significantly.
A rumen simulated continuous culture (RSCC) system was used to study the influence of supplementation of the three different types of protein sources such as urea, casein and soy protein on rumen microbial synthesis in terms of rumen microbial synchronization. The urea treatment showed the highest pH value. Ammonia nitrogen concentration was rapidly increased after feeding and not significantly different in the urea treatment (13.53 mg/100 ml). Protozoa numbers were not significantly different for soy protein and casein treatment compared to urea treatments during incubation. The average concentration of total VFA (mMol) was not detected with significant difference among treatments, but iso-butyrate production showed the highest for soy protein treatment among treatments (p<0.001). The lowest concentration in total iso-acids (iso-butyrate and iso-valerate) production was observed in urea treatment. The soy protein treatment showed no significantly change in acetate/propionate. The amounts of dry matter (DM) out flow showed no significant difference among treatments. Organic matter (OM) flow was the highest for urea treatments and the lowest for casein treatment (p<0.03). The nitrogen flow for casein treatment was not significantly different from other treatments. The efficiency of microbial protein synthesis in terms of microbial nitrogen (MN) synthesis (g MN/kg ADOM) digested in the rumen was highest for casein treatment (58.53 g MN/kg ADOM) compared to soy protein and urea (p<0.05). This result suggests that rumen ammonia releasing rate may influence on microbial protein synthesis in the rumen.

The concentration of atmospheric mercury(Hg0 and relevent environmental parameters that include both meteorological and criteria pollutant data were dtermined at hourly intervals during two field campaigns covering the periods of September 1997 and May/June 1998. The mean concentrations of Hg for the two study periods were computed as 3.94 and 3.43ngm-3, respectively. Through a separation of these data into both daytime and nighttime periods, we further analyzed diurnal variation patterns for Hg between two different seasons. Using our Hg data sets, we were able to recognize two contrasting diurnal variation patterns of Hg between two diffeerent seasons that can be characterized as: (1) the occurrences of peak Hg concentration during daytime(fall0 and (2) slight reductions in daytime Hg concentration relative to nighttiime Hg data(summer). To study the systematic differences in diurnal patterns between two different seasons, we analyzed Hg data in terms of different statistical approaches such as correlation(and linear regression0 and factor analysis. Results of these analyses consistently indicated that different mechanisms were responsible for controlling the daytime distribution patterns of Hg. The variation of boundary layer conditions betwen day/night periods may have been important in introducing the relative reduction in daytime Hg levels during summer. However, when the relationship between Hg and concurrently determined O3 is concerned, these differences are unlikely to be an effective sink mechanism within the ranges of ozone concentrations determined concurrently during this study, regardless of season. To further provide the general account for short-term variations in Hg distribution data, we should be able to describe the various factors underlying its sink mechanism.
Various types of organic materials could affect differently immobilization of cadmium (Cd) and its uptake by plant grown in soil. Therefore, this study was conducted to evaluate effect of different organic materials in reducing Cd phytoextractability in contaminated arable soil. To do this, rice straw and composted manure were selected as organic materials and applied at the rate of 0, 15, 30, and $45Mg\;ha^{-1}$ in Cd contaminated arable soil with $6.5mg\;kg^{-1}$ of total Cd. Radish (Raphanus sativa L.) was seeded and grown for 50 days to evaluate Cd phytoavailability with different organic materials. Composted manure was more effective to decrease $1M\;NH_4OAc$ extractable Cd concentration and increase pH of soil than rice straw. $One\;M\;NH_4OAc$ extractable Cd concentration significantly decreased with increasing application rate of composted manure. Tendency of Cd uptake by radish plant with application of different organic materials was similar to that of $1M\;NH_4OAc$ extractable Cd concentration and soil pH. Changes of soil pH with application of straw and composted might be one of factors to determine extractability and phytoavailability of Cd in this study. Radish yield significantly increased with up to $45Mg\;ha^{-1}$ of composted manure application but did not with straw application. In the view point of Cd phytoextractability and plant productivity, it is recommended to apply composted manure rather than straw in Cd contaminated arable soil.
