The development of resources for the application of 2020 Dietary Reference Intakes for Koreans (2020 한국인 영양소 섭취기준 활용 자료 개발)

  • The recommended meal composition allows the general people to organize meals using the number of intakes of foods from each of six food groups (grains, meat·fish·eggs·beans, vegetables, fruits, milk·dairy products and oils·sugars) to meet Dietary Reference Intakes for Koreans (KDRIs) without calculating complex nutritional values. Through an integrated analysis of data from the 6th to 7th Korean National Health and Nutrition Examination Surveys (2013-2018), representative foods for each food group were selected, and the amounts of representative foods per person were derived based on energy. Based on the EER by age and gender from the KDRIs, a total of 12 kinds of diets were suggested by differentiating meal compositions by age (aged 1-2, 3-5, 6-11, 12-18, 19-64, 65-74 and ≥ 75 years) and gender. The 2020 Food Balance Wheel included the 6th food group of oils and sugars to raise public awareness and avoid confusion in the practical utilization of the model by industries or individuals in reducing the consistent increasing intakes of oils and sugars. To promote the everyday use of the Food Balance Wheel and recommended meal compositions among the general public, the poster of the Food Balance Wheel was created in five languages (Korean, English, Japanese, Vietnamese and Chinese) along with card news. A survey was conducted to provide a basis for categorizing nutritional problems by life cycles and developing customized web-based messages to the public. Based on survey results two types of card news were produced for the general public and youth. Additionally, the educational program was developed through a series of processes, such as prioritization of educational topics, setting educational goals for each stage, creation of a detailed educational system chart and teaching-learning plans for the development of educational materials and media.

Nutritional intake of women in their twenties according to different degree of inclusion of animal foods: based on the 7th Korea National Health and Nutrition Examination Survey (20대 여성의 식사에서 동물성 식품의 포함 정도에 따른 건강 및 영양상태: 국민건강영양조사 제7기 (2016-2018) 자료 이용)

  • Purpose: This study examined the demographics, health status, dietary habits, energy, nutrient intake, and protein intake based on levels of inclusion of animal food among females in their 20s by using data from the 7th Korea National Health and Nutrition Examination Survey. Methods: The subjects (n = 912) were divided into 4 groups according to the frequency of animal foods consumed which were categorized as meat, seafood, eggs, and dairy products, or other animal-derived foods. Results: The subjects with a lower frequency of animal food intake ate out less frequently. As the frequency of animal food intake decreased, the total energy intake too decreased with higher carbohydrate and lower protein intake ratios. In the low frequency of animal food intake group, a higher proportion of subjects had energy intake below the estimated energy requirement and the intake of protein, vitamin B1, vitamin B2, niacin, calcium, phosphorus, and iron were below the estimated average requirements. The average protein intake was more than the recommended 45 g in all four groups. However, the lower the frequency of animal food intake, the higher the proportion of people having lower protein intake compared to the recommended intake of 0.91 g per kg body weight. It became apparent that people who do not consume animal foods at all did not meet the recommended levels of protein intake. Thus, people pursuing a vegan diet may be at risk of low protein intake. Conclusion: This study suggests that economic characteristics, dietary habits, energy, and nutrient intake are affected by the frequency of animal food consumed, or in other words, by the degree of vegetable-centered diet. Thus, this study would help improve the perception of vegetarianism, develop individualized dietary guidance and nutrition education programs for people practicing vegan or vegetarian diets to ensure that they have a balanced diet.

  • Objectives : Suicide is a global social problem. Social burden caused by suicide is gradually increasing. Various efforts have been made to prevent suicide. Lifestyle changes to western style, especially diet changes, have increased the risk for suicide. Therefore, in this study, we discussed diet as an adjuvant treatment for suicide. Methods : In this review, we summarized the biochemical mechanism of suicide, and diet as a risk factor for suicide and diet as a protective factor through a web search. Results : In this study, biochemical mechanisms for suicide were reviewed and diet as a risk factor and diet as a protective factor for suicide were investigated. It was confirmed that neurotoxic effects such as oxidative stress and inflammation in the neural system could increase the risk of suicide. Based on results of previous studies on the relationship between suicide and diet, it was found that heavy use of alcohol, coffee, carbonated soft drink, and fast food were risk factors for suicide. Protective factors for suicide included antioxidants such as vitamin C, carotene, and anti-inflammatory agents such as omega-3 fatty acids found in seafood in large amounts. Conclusions : The only treatment for suicide is prevention. In this context, effectiveness, accessibility, and safety are important for preventing for suicide. Antioxidants and anti-inflammatory agents that are relatively safe and readily available to the public could be effective adjuvant treatments to decrease the risk of suicide. In addition, it is necessary to educate the public on reducing diets that could increase the risk of suicide

Feeding Habits of the Sandfish, Arctoscopus japonicus in the Coastal Waters of East Sea, Korea (한국 동해 연안에 출현하는 도루묵(Arctoscopus japonicus)의 식성)

  • The feeding habits of sandfish, Arctoscopus japonicus were studied using 781 specimens collected by Eastern Sea Danish and gill net from January 2020 to December 2021 in the coastal waters of East Sea, Korea. The size of the specimens ranged from 14.8 to 25.4 cm in total length. A. japonicus were fed mainly on amphipods that constituted 54.7% in IRI. Cephalopods were the second largest prey component. The diets also include small quantities of euphausiids, crabs, shrimps, fishes, and worms. The diet composition of A. japonicus showed changes in season. The cephalopods feeding rate was highest in summer, whereas the proportion of euphausiids was higher in spring than in other seasons. The proportion of cephalopods has increased as the body size of A. japonicus increased, whereas the proportion of amphipods and euphausiids decreased gradually. As the body size of A. japonicus increased the mean weight of prey per the stomach (mW/ST) tended to increase significantly (One-way ANOVA, P<0.05).

  • Two major problems currently threaten human survival on Earth: climate change and the rapid aging of the population in developed countries. Climate change is a result of the increase in greenhouse gas (GHG) concentrations in the atmosphere due to the increase in the use of fossil fuels owing to economic and transportation development. The rapid increase in the age of the population is a result of the rise in life expectancy due to the development of biomedical science and technology and the improvement of personal hygiene in developed countries. To avoid irreversible global climate change, it is necessary to quickly transition from the current fossil fuel-based economy to a zero-carbon renewable energy-based economy that does not emit GHGs. To achieve this goal, the dairy and livestock industry, which generates the most GHGs in the agricultural sector, must transition to using low-carbon emission production methods while simultaneously increasing consumers' preference for low-carbon diets. Although 77% of currently available arable land globally is used to produce livestock feed, only 37% and 18% of the proteins and calories that humans consume come from dairy and livestock farming and industry. Therefore, using edible insects as a protein source represents a good alternative, as it generates less GHG and reduces water consumption and breeding space while ensuring a higher feed conversion rate than that of livestock. Additionally, utilizing the functionality of medicinal insects, such as silkworms, which have been proven to have certain health enhancement effects, it is possible to develop functional foods that can prevent or delay the onset of currently incurable degenerative diseases that occur more frequently in the elderly. Insects are among the first animals to have appeared on Earth, and regardless of whether humans survive, they will continue to adapt, evolve, and thrive. Therefore, the use of various edible and medicinal insects, including silkworms, in industry will provide an important foundation for human survival and prosperity on Earth in the near future by resolving the current two major problems.

Studies on Selenium-fortified Functional Hanwoo-Beef by Utilizing Spent Mushroom Composts II. Effects of Spent Composts of Se-Enriched Mushrooms as the Dietary Se Source on Selenium Deposition in the Muscular Tissue and Plasma Glutathione Peroxidase Activity in the Finishing Hanwoo Steer (버섯폐배지를 이용한 셀레늄강화 기능성 한우고기 생산에 관한 연구 II. 셀레늄강화 버섯폐배지 첨가가 한우의 근육조직 내 셀레늄 축적과 혈중 glutathione peroxidase(GSH-Px)활성에 미치는 영향)

  • This study was conducted to investigate effects of spent composts of Se-enriched mushrooms as the dietary Se source on muscular Se deposition and plasma glutathione peroxidase (GSH-Px) activity in the finishing Hanwoo steer. Twenty Hanwoo steers were used in the experiment and they were divided into four groups in a randomized complete block design with five replicates. Treatments were four levels (0.1, 0.3, 0.6 and 0.9ppm as fed basis) of dietary Se from the combination with spent composts of Se-enriched mushrooms and/or Se non-enriched mushrooms, in which each treatment was formulated with corn and corn gluten meal and so forth. Treatment diets were fed to Hanwoo steers for 90 days until the slaughter. Dry matter intakes had no significant differences among treatments and there were no significant differences for performances such as total BW gain and ADG among treatments. The Se concentration in blood was linearly increased with increasing dietary selenium levels and reached a plateau level after 8 weeks (p<0.001). Plasma GSH-Px activities had the similar trends to blood Se concentrations by showing that the increased dietary Se level significantly increased plasma GSH-Px activities of both total and Se-dependent (p<0.001). Muscle Se contents of Se-supplemented groups were linearly increased by 1.35 ~ 1.68 folds compared with the control group (0.1ppm; 0.273㎍/dry g) and especially those of the hind legs for 0.9ppm treatment showed the highest Se content as shown 0.457㎍ per dry gram (p<0.01) corresponding to approximately 70% increase of the control group. Se retention rate in the muscle of dietary Se originated from spent composts of Se-enriched mushrooms was estimated of maximum approximately 30% and dietary Se content showed the significant correlation with plasma GSH-Px activities and muscle Se contents (p<0.01). Accordingly, Se present in spent composts of Se-enriched mushroom as the dietary Se source not only had great bioavailabilities showing higher blood Se concentration and plasma GSH-Px activities, but also increased Se deposition in the muscle for Hanwoo beef cattle.

A Study on Changes in Feed Digestibility and Establishment of Energy Requirement for Maintenance of Growing Hanwoo Steers under Severe Heat Stress (심각한 열스트레스에 의한 육성기 거세한우의 사료 소화율 변화 탐색 및 유지를 위한 에너지 요구량 설정 연구)

  • Four growing Hanwoo cattle weighing 200±11.7kg were used within 4×4 Latin square design to establish nutrient requirements for Hanwoo growing steers under severe heat stress. The steers were fed four different energy level diets; 100%(control), 100%(E100), 115%(E115) and 130%(E130) of energy levels of growing Hanwoo steers based on total digestible nutrient level suggested by the Korea Feeding Standard for Hanwoo using timothy hay and commercial concentrate. The steers in the control were housed with no stress, whereas the steers in the other groups were under severe heat stress. The severe heat stress significantly decreased(p<0.05) true digestibility of dry matter(i.e. control 81.5% vs E100 79.1, E115 77.0 and E130 76.0, respectively). The severe heat stress and different energy intake levels did not affect blood physiological metabolites and body temperature of the growing steers. Based on changes in average daily gain by different energy intake level, the equation(Y=0.235X+115.03) of energy requirement of growing Hanwoo steers without changes in body weight was calculated, indicating that, compared with the present energy intake suggested by Korean feeding standard, 15.03% of dietary energy for maintenance of growing Hanwoo steers under severe heat stress should be increased.

Effect of Freeze-Dried Korean-Style Dishes on Visceral Fats and Serum Lipid Concentrations in Rats Fed with High Fat Diet (한식첨가식(添加食)이 고지방식(高脂肪食)을 급여한 흰쥐의 내장지방과 혈청 지질농도에 미치는 영향)

  • This study was performed to reveal nutritional excellency of popular Korean dishes, which were intended to distribute as a take-out type food suited for Americans. Four Korean dishes were selected due to their high preference from American sensory panels: Jeyuk-bokkeum (B), Kimchi-bokkeum (C), Dubu-jorim (D) and Namul (E). Nine weeks of the experimental periods were composed of two parts. In phase 1(5 weeks of the first half), high fat diets were fed to all treatments including the control group (A). In phase 2 (4 weeks of the last half), freeze-dried four Korean dishes were fed to the treatments except for the control. There was no significant difference in the final body weights among the groups as well as daily body weight gains and FER. Organ weights of the control group tended to be smaller than those of the treatment groups. For visceral fats, perirenal fat pad (RFP) and epidydimal fat pad (EFP) of the groups C and D were decreased by 20% compared with those of the group A. Total cholesterol level of the group C (94.13 mg/dL) was significantly lower than any other groups (p<0.05), but there was no significant difference in triglyceride(TG) level. HDL-cholesterol level of group B(20.38 mg/dL) was significantly higher than that of group D (17.25 mg/dL), but no significant differences were seen in groups C and E (p<0.05). In LDL-cholesterol level, the highest level was seen in group D, the lowest level in group E (p<0.05). From the findings, Kimchi-bokkeum, Dubu-jorim and Namul were superior to those of the control and jeyukbokkeum in terms of the blood lipid profiles. It might be a good Korean style take-out items suited for the Americans’ taste along with a good nutritional quality in the near future.

Effects of Korean Goldenbell (Forsythia koreana) Leaf on the Growth, Body Color and Hepatopancreatic Structure of Giant Freshwater Prawn (Macrobrachium rosenbergii) (큰징거미새우(Macrobrachium rosenbergii)의 성장, 체색 및 간췌장 구조에 미치는 개나리(Forsythia koreana) 잎의 영향)

  • The giant freshwater prawn (Macrobrachium rosenbergii) suffers economic losses in aquaculture facilities due to problems such as poor body color and carapace weakness. While this species is farmed on an animal-based diet, in the wild it consumes a detritus diet with a high proportion of plant matter. The plant matter they consume in the wild is not only a source of basic nutrients, but also carotenoids, which are responsible for body color. Korean goldenbell (Forsythia koreana) is a flowering tree widely distributed in Korea, and its leaves contain carotenoids comparable to yellow carrots. In this study, we investigated the effects of feeding Forsythia leaves to M. rosenbergii on their body color and health. The experimental diets were 100% commercial feed (control), CON, 80% commercial feed plus 20% Forsythia leaf powder, FP, and 80% commercial feed plus 20% unprocessed Forsythia leaves, FL, and each diet was fed to juvenile prawn with an average weight of 1.1 ± 0.2 g for 10 weeks. In terms of body color, the CON prawn were consistently clear ivory in color, while the FP and FL prawn changed from blue to dark brown as the days of rearing progressed. Survival and growth were not significantly different between CON and FP or FL. Histological comparison of the hepatopancreas revealed that the vacuole size of B cells, the constituent cells of the hepatopancreatic tubule, was significantly larger in FP and FL compared to CON. The vacuoles of B cells are responsible for the absorption and digestion of nutrients, suggesting that the supply of Forsythia leaves may have had a positive effect on the health of the M. rosenbergii. The above results show that the use of Forsythia leaves in the aquaculture of M. rosenbergii can be expected to improve body color and health without inhibiting growth.

Development of evaluation items for adolescents' dietary habits and nutritional practices reflecting eating behaviors and food environment (식행동, 식생활 환경을 반영한 청소년의 식생활·영양 실천 평가 항목 개발)

  • Purpose: A comprehensive evaluation item was developed to assess adolescent dietary habits and nutritional practices, considering food intake, eating behaviors, and food culture, such as social support and food environment. Methods: The 59 candidate items of the evaluation checklist were obtained based on the results of the eighth Korea National Health and Nutrition Examination Survey data, Korea Dietary Reference Intakes, dietary guidelines for adolescents, Youth Risk Behavior Survey data, national nutrition policies and dietary guidelines, and literature reviews. Four hundred and three middle and high school students residing in metropolitan areas participated in a survey using the 58-item checklist, which was selected through expert evaluation and content validity ratio analysis. The construct validity of the assessment tool for the quality of adolescent diets was assessed by exploratory factor analyses to determine if the checklist items were organized properly and whether the responses to each item were distributed adequately. Results: The Bartlett sphericity test was significant for each area (p <0.001), and the eigen values were greater than one. The Kaiser-Meyer-Olkin and cumulative proportions by areas were food intake (0.765 and 56.8%, respectively), eating behaviors (0.544 and 64.8%, respectively), and food environment (0.699 and 62.4%, respectively). Twenty-two checklists were determined for the final evaluation items for the adolescents' dietary habits and nutritional practices and were categorized into three distinct factors: food intake (10 items), eating behaviors (4 items), and food environment (8 items). Conclusion: The evaluation items for adolescent dietary habits and nutritional practices is a useful checklist for easily and quickly assessing the dietary qualities and reflecting Korean adolescents and their food environmental factors related to a sustainable diet.
