A Evaluation Study on Nutrient Intake Status and Diet Quality of Middle and Old Aged Vegetarian Women in Korea (채식을 하는 중$\cdot$노년기 여성의 영양소 섭취 상태와 식사의 질 평가)

  • The purpose of this study was to evaluate on nutrient intake status and diet quality of middle and old aged vegetarian women in Korea, The research group was composed of vegetarian women (n=91), all of them were Seven Day Adventists, who had been on vegetarian diets, over 20 yrs. Their anthropometric measurements, dietary intakes, and diet quality indices were compared to omnivores (n=122). The average age of vegetarians and omnivores were 61.8 yrs and 60.3 yrs, respectively. The mean daily energy intakes of vegetarians and omnivores were 1428.8 kcal and 1424.5 kcal, respectively and there was no significant difference. The vegetarians consumed significantly lower intakes of protein (p < 0.05), zinc (p < 0.001) and vitamin $B_{2}$ (p < 0.05) compared to omnivores. In the diet quality, zinc and vitamin $B_{2}$ nutrient adequacy ratio (NAR) of vegetarians were significantly lower than those of omnivores. Mean adequacy ratio (MAR) of vegetarians and omnivores were 0.80 and 0.77, respectively and there was no significant difference. The KDDS (Korean's Dietary Diversity Score) of vegetarians and omnivores were 3.7 and 4.0, respectively, and there was significant difference (p < 0.01). The KDQI (Korean's Diet Quality Index) of vegetarians (1.5) was significantly lower than that (2.1) of omnivores (p < 0.001). In conclusion, vegetarian women have low intake status of protein, zinc and vitamin $B_{2}$, and partly low diet quality. Therefore it was needed that well planed diets to replace the nutrients supplied from excluded food groups in middle and old aged vegetarian women. Study on Energy and Nutrient Intake and Food Preference of the Elderly in Care Facilities (요양시설 거주 노인의 에너지와 영양소 섭취 실태 및 식품선호도 조사)

  • Objectives: The purpose of this study was to assess energy and nutritional intake and investigate the preference for food and cooking methods of the residents in elderly care facilities. Methods: Data were collected from 72 residents (10 males and 62 females) aged ${\geq}70$ years in elderly care facilities using questionnaires, food photographs for estimating dietary intake and records for daily physical activity. Results: Average age of the study participants was 85.0 years and 41, 36 and 8 had dementia, hypertension and diabetes mellitus, respectively. 15%, 65% and 19% of subjects were physically mobile, enervated, and immobile, respectively. Daily energy intake was 1360.2 kcal in men and 1378.0 kcal in women, which were 68.0% and 86.1% of the estimated energy requirement (EER) of dietary reference intake for Koreans (KDRI) for ${\geq}75$ year old individuals, respectively. Estimated energy expenditure (EEE) of subjects calculated using formula from KDRI was 1361.9 kcal and EER calculated using estimated daily physical activity (EDPA) was 1232.9 kcal. Energy intake and EEE from KDRI were higher than EER from EDPA. Dietary intake of dietary fiber, calcium, potassium, zinc, vitamin $B_2$, niacin, vitamin C were lower, and protein, phosphorous, iron, sodium, vitamin A, vitamin $B_1$, vitamin $B_6$, vitamin E were higher than the corresponding ones of KDRI. Subjects liked meats, fishes and shellfish, and fruits, while subjects disliked milk, seaweeds and salted fish and salted vegetables. Cooked rice, soybean paste soup, beef, cooked sliced radish strip, and yogurt were favorite foods, with steam being a favorite cooking method. Subjects considered nutrition as the most important factor for improving food service quality. Conclusions: Results of this study could be utilized for improving food-service for the residents in elderly care facilities, and provide a basis for setting reference intake of energy and nutrients of the elderly having very low activity levels.

Correlation between Nutrient Intakes and Bone Mineral Density in Carpus of Female University Students (일부 여대생의 영양섭취와 손목 골밀도와의 상관성)

  • The purpose of this study was to examine the correlation between nutrient intakes and bone mineral density in female university students. A total 27 female university students were measured the anthropometric characteristics, dietary intake and the bone mineral density of carpus using DEXA. The average age, height, weight, % body fat, WHR, and BMI of the subjects were 22.7 years, 161.5 cm, 57.0 kg, 29.9%, 0.8, 21.8 kg/$m^2$, respectively. Bone mineral density of ultradis and distal carpus as T-value were -1.5 and -0.4, respectively. The daily energy intake of the subjects was 1589.0kcal. And the intakes of energy, calcium, iron, zinc, vitamin $B_2$, and folic acid did not meet the Korean RDAs. The daily total food intake of the subjects was 1011.0g and food intake from cereals and vegetables was high. The major food groups of mineral intake were vegetables/cereals/milks/fishes for calcium, cereals/meat/vegetables/fishes for phosphorus, cereals/vegetables/meats for iron, seasonings/vegetables/cereals for sodium, vegetables/cereals/seasonings for potassium, and cereals/meats for zinc. The body weight and body mass index were significantly positive correlated to the bone mineral density of average carpus, respectively. The intakes of animal calcium and vitamin $B_2$ were significantly negative correlated to the bone mineral density of average carpus, respectively. In conclusion, bone mineral density in carpus and nutrient intakes of some female university students were low. Therefore, health management and the study on relation between bone mineral density in various site and long-term intakes of nutrients in many subjects are required.

Serving Yaksun(Medicinal) Food Items at a Long-Term Senior Care Hospital and an Increase in the Food Intake of Elderly Inpatients (요양병원 노인환자의 약선음식 제공에 의한 섭취량 증가)

  • This study investigates the effects of serving medicinal food items on the dietary intake of elderly inpatients. A total of 77 elderly inpatients at a long-term senior care hospital in Yeongju participated in this study. Control and medicinal food items were provided for 20 days (March 24 through April 12, 2014, and April 14 through May 3, 2014, respectively). A satisfaction survey was conducted for both control and medicinal food items on the last day of the respective serving period. Data were analyzed by using SPSS (Windows ver. 21.0). The satisfaction level was higher for medicinal food items than for control food items. The leftover rate was higher for control food items than for medicinal food items. The intake of energy, carbohydrates, proteins, fats, vitamin A, thiamin, niacin, potassium, and zinc was higher for medicinal food items than for control food items. These results indicate that the dietary intake of elderly inpatients was higher for medicinal food items than for control food items. This suggests that medicinal food items can help increase the nutrient intake of elderly inpatients and implies that such food items may be more desirable for a long-term senior care hospital diet. A prospective analysis of the long-term control is needed to establish the effects of medicinal food items on elderly patients.

Comparative Evaluation of Dietary Intakes of Calcium, Phosphorus, Iron, and Zinc in Rural, Coastal, and Urban District (농촌, 어촌, 도시 지역별 칼슘, 인, 철, 아연의 섭취상태 비교평가)

  • The purpose of this study was to compare the intake status of calcium, phosphorus, iron, and zinc of Korean adults residing in different regions. Subjects were recruited and divided into three groups according to the districts where they lived, which included rural (n=137), coastal (n=100), and urban district (n=117). Subjects were interviewed using a general questionnaire and 24-hour recall method for dietary intake. The average age of the subjects were 58.1 years for rural district, 57.7 years for coastal district, and 48.6 years for urban district. There was no significance in total food intake by regions. The food intakes from cereals, mushrooms, vegetables of rural district, that from fishes of coastal district, and those from sugars, milks, oils of urban area were the highest among three districts. The calcium, phosphorus, iron, and zinc intakes were $60.1\%,\;123.9\%,\;95.2\%,\;and\;73.1\%$ of RDAs, respectively. The calcium intakes as percentage of RDA in rural and coastal district were significantly (p<0.01) lower than that in urban district. A larger number of subjects from coastal or urban district ate under $75\%$ of zinc RDA compared to those from rural village. Major sources of dietary calcium in total subjects were anchovy, kimchi, milk, soybean curd, rice, ice cream, sea mustard, yogurt, loach, and welsh onion. Rice supplied $15.5\%$ for phosphorus, $22.1\%$ for iron, and $35.9\%$ for zinc of total intake. Except for rice, major sources of dietary zinc were pork, beef, small red bean, dog meat, chicken, jacopever, soybean curd, glutinous millet, and kimchi. In conclusion, the food and mineral intakes of adults differed according to the regions in which they resided. The food and nutrient intakes of coastal district were not satisfactory, and calcium and zinc intakes of three regions did not meet RDAs. Therefore, it is required unique and discriminatory nutritional education with each region for increasing intakes of calcium and zinc.

Issues pertaining to Mg, Zn and Cu in the 2020 Dietary Reference Intakes for Koreans

  • In the current years, it has now become necessary to establish standards for micronutrient intake based on scientific evidence. This review discusses issues related to the development of the 2020 Dietary Reference Intakes for Koreans (KDRI) for magnesium (Mg), zinc (Zn), and copper (Cu), and future research directions. Following issues were encountered when establishing the KDRI for these minerals. First, characteristics of Korean subjects need to be applied to estimate nutrient requirements. When calculating the estimated average requirement (EAR), the KDRI used the results of balance studies for Mg absorption and factorial analysis for Zn, which is defined as the minimum amount to offset endogenous losses for Zn and Mg. For Cu, a combination of indicators, such as depletion/repletion studies, were applied, wherein all reference values were based on data obtained from other countries. Second, there was a limitation in that it was difficult to determine whether reference values of Mg, Zn, and Cu intakes in the 2020 KDRI were achievable. This might be due to the lack of representative previous studies on intakes of these nutrients, and an insufficient database for Mg, Zn, and Cu contents in foods. This lack of database for mineral content in food poses a problem when evaluating the appropriateness of intake. Third, data was insufficient to assess the adequacy of Mg, Zn, and Cu intakes from supplements when calculating reference values, considering the rise in both demand and intake of mineral supplements. Mg is more likely to be consumed as a multi-nutrient supplement in combination with other minerals than as a single supplement. Moreover, Zn-Cu interactions in the body need to be considered when determining the reference intake values of Zn and Cu. It is recommended to discuss these issues present in the 2020 KDRI development for Mg, Zn, and Cu intakes in a systematic way, and to find relevant solutions.

Relation among Mineral (Ca, P, Fe, Na, K,Zn) Intakes, Blood Pressure, and Blood Lipids in Korean Adults (일부 성인남녀의 무기질 (Ca, P, Fe, Na, K, Zn) 섭취와 혈압 및 혈중 지질과의 관련성)

  • The purpose of this study was to investigate the relation among mineral intakes, blood pressure, and blood lipids for health management of Korean adults over 20 years old. Subjects were recruited from the district where they lived, which included rural (Yoju, n = 137) , coastal (Taean, n = 100) , and urban district (Suwon, n : 117) . hnthropornekical measurement, blood pressure measurement, dietary intake assessment using 24-hour recall method, and blood collection and analysis of blood lipids were conducted. The average age, height, weight, and BMI were 54.1 years, 168.5 cm, 67.3 kg, and 24.5 kg/$m^{2}$ for men and 53.9 years,153.8 cm,59.2 kg, and 25.0 kg/$m^{2}$ for women, respectively. The mean daily intakes of total food and energy were 1219.1 g and 1740.9 kcal for men and 1071.3 g and 1432.6 kcal for women. The mineral intakes of men and women were 448.5 mg and 400.4 mg for calcium,955.3 mg and 803.7 mg for phosphorus, 13.3 mg and 11.1 mg for iron, 4302.8 mg and 3393.3 mg for sodium,2588.0 mg and 2264.9 mg for potassium, and 8.9 mg and 7.3 mg for zinc. The daily intakes of energy, calcium, zinc, vitamin $B_{2}$, and vitamin I were $76.1\%$, $60.1\%$, $73.1\%$, $68.6\%$, and $80.4\%$ of RDAs, respectively. The intakes of energy, calcium, zinc, vitamin $B_{2}$ and I were not meet Korean RDAs. Especially, calcium, zinc, and vitamin $B_{2}$ were less than $75\%$ of RDAs. Blood pressure of the subjects was 128.3/75.5 mmHg for men and 124.1/73.7 mmHg for women. Serum lipids of men and women were 180.2 mg/dL and 184.9 mg/dL for total cholesterol, 160.8 mg/dL and 137.6 mg/dL for triglyceride,41.5 mg/dL and 44.7 mg/dL for HDL-cholesterol,106.6 mg/dL and 112.7 mg/dL for LDL-cholesterol, and 3.5 and 3.3 for atherogenic index. While serum triglyceride and AI of men was significantly higher, HDL-cholesterol was lower than those of women. In the relation among mineral intakes, blood pressure, and serum lipids, we found a significantly negative correlation of intakes of calcium, calcium/phosphorus, calcium density with systolic blood pressure. There were significantly negative correlation between intake of calcium/phosphorus and serum cholesterol, calcium density and serum cholesterol, sodium intake and serum HDL-cholesterol. Based on these results, we concluded that high intakes of calcium, calcium/phosphorus and low sodium intake were associated with favorable blood pressure and serum lipid profiles in adult men and women. A Study of Nutrient Intake, Serum Lipid and Leptin Levels of Elementary School Students with Different Obesity Index in Kyunggi Area (경기지역 일부 초등학생의 성별과 비만도에 따른 영양소 섭취상태와 혈청 Leptin 및 혈청 지질에 관한 연구)

  • The purpose of this study was to investigate the relationship among nutritional status, serum lipids and leptin of 134 elementary school students with different obesity index residing in Kyunggi-do, Korea. Subjects were assigned to under weight, normal weight or over weight group according to the their obesity index. Their nutritional status, serum lipid and leptin levels were evaluated based on 24-hr dietary recalls, anthropometric measurements and blood analysis. The mean weight, height and obesity index of total subjects was 150.8cm, 45.6kg and 5.4%. The mean % of body fat was higher while LBM and TBW (total body water) were lower in over weight subjects than those of other two groups. Total food, plant protein, carbohydrate, and vitamin C intakes of underweight male students were lower than those of overweight male students. The consumption of total fat was the highest in the female normal weight subjects and the lowest in female overweight subjects. Male students consumed more plant protein and vitamin C than female students. The mean daily intake of vitamin B$_2$, calcium and zinc of all subjects did not meet the Korean RDA. Also, iron intake of female students was lower than the Korean RDA. The mean level of serum leptin was the highest in male and female overweight subjects (p<0.001). The HDL-cholesterol level was the highest in the underweight group of male subjects (p<0.05) and in the normal weight group of female subjects (p<0.001) The serum level of leptin and atherogenic index (AI) of females were higher than those of males. Serum leptin of total subjects had significantly positive correlation with obesity index, weight, SBP, body fat, cholesterol intake, serum triglyceride, and AI. However, serum leptin was negatively correlated with LBM, TBW, intake of plant protein, vitamin B$_1$, vitamin C and serum HDL-cholesterol. Obesity index was also positively correlated with weight, SBP, body fat, serum triglyceride and AI. To summarize the results, the vitamin B$_2$, calcium, zinc, iron and fiber intakes should be supplied to elementary school students, especially those who were overweight. The average serum leptin level of students showed remarkably positive correlation with obesity index, body fat, serum lipids and AI. Also, it was suggested that the serum leptin might be related to the dietary factors like cholesterol, plant protein, vitamin B$_1$ and vitamin C of elementary school students.

A Study on the Nutritional Status and Health Condition of Elderly in Ulsan area (울산지역 노인의 영양상태와 건강상태에 관한 조사연구)

  • This survey was carried out to obtain the information concerning nutritional status, including factors of food intake and health condition of elderly living in Ulsan area. Main results were as follows. 1) Average height of subjects was close to Korean reference, while weight was below Korean reference, average obesity rate and body mass index were +6.93% and 21.9. 2) In health related factors, 41% of subjects exercised regularly, 31.6% of subjects drank alcoholic beverage, and 41.4% of subjects smoked currently. 3) Mean food habits score was 32.1(ranging from 10 to 50) and milk and lipid food intake were decreased. 4) Dietary intake data showed the average daily intake of all nutrients except phosphorus, were lower than RDA, especially vitamin A, calcium and zinc were lower than other nutrients. According to the percentage of RDA, vitamin A was the nutrient found to be least sufficient. 5) Among the various influential factors resident type, pocket money, exercise and smoking influenced on nutrient intake considerably

Correlation among Serum and Urinary Calcium, Zinc, Magnesium and Other Factors in Non-Insulin Dependent Diabetic Women (인슐린 비의존형 당뇨병 여성환자의 혈청과 뇨중 칼슘, 아연 및 마그네슘 함량과 관련인자들과의 상관관계)

  • Nineteen non-insulin-dependent diabetic(NIDD) and healthy control women were investigated to study the relationship between glycemic control and the level of calcium, zinc, and magnesium in the serum and urine. Urinary calcium, zinc and magnesium levels in the NIDD women were significantly higher(p<0.01) than those of the control women. There were no difference in serum magnesium and zinc levels between the two groups, but se겨m calcium level was lower(p<0.01) in the NIDD women compared to that of the control group. In the NIDD women, serum magnesium was negatively related to fasting blood glucose(r=-0.533 : p<0.05), urinary glucose(r=-0.767 ; P<0.001), urinary protein(r=-0.476 : p<0.05), and urine volume(r=-0.571 : p<0.05). The levels of zinc in both serum (r=0.515, p<0.05) and urine(r=0.623 : p<0.01) were related to urinary protein but only urinary zinc level(r=0.570 : p<0.01) was related to serum albumin. Urinary magnesium, not calcium was correlated with the urinary glucose(r=0.563 : p<0.05) and urinary protein(r=0.568 ; p<0.05). Fasting blood glucose was positively correlated with duration of diabetes, as well as dietary fat and calorie intake. The results of this study suggest that NIDD alters all magnesium, zinc, and calcium utilization, particularly magnesium is involved in glycemic control in this condition.
