The purpose of this study was to provide the guidelines for the dietary lift by analyzing and studying the dietary behavior and food preference based on the gender. In the questions whether students' food preference is similar to their parents' or not, girls answered their food preferences were similar to them (M = 3.36), but boys not (M : 2.90). In the question if the knowledge learned in school has an effect on the choice of food, girls and boys answered it did not affect them, but there was a slight difference according to the gender; boys(M = 2.54) were under less influence than girls (M = 2.88). According to the gender, there was a meaningful difference in the food preference in meat, eggs, fish and shell, beans, milk and milk products, anchovies, fruits, fats and oils, beverage, and processed food. School education had a little influence on the habits of dietary life, only 8.0%. So more practical nutrition education was needed.
Objectives: The purpose of this study was to investigate effects of nutrition education providing school lunch by personalized daily needed food exchange units using Food Exchange System for adolescent athletes. Methods: The subjects were 60 sports high school students (educated group, 30 vs. noneducated group 30). Nutrition education was provided for 4 weeks (40 min/lesson/week). In addition, personalized school lunch was served for 4 weeks, nutrition education period. The personalized lunch were provided Food Exchange Units according to personalized daily needed energy. The lessons were '5 Major nutrients, functions and foods', 'My daily needed energy and food exchange units by Food Exchange System', 'My meal plan by food exchange units according to my daily needed energy' and 'Smart choice of healthy snacks and eating outs'. After nutrition education, we examined the differences in anthropometric characteristics, nutrition knowledge, dietary attitude and dietary intake between the educated and the non-educated group. Results: We observed improvements in lean body mass in the educated group. With regard to nutrition knowledge, there were improvements in 'Functions of vitamins', 'Functions of minerals', 'Foods of fat', 'Foods of vitamin', and 'Foods of mineral' in the educated group. In relation to dietary attitude, there were improvements in 'Taking a meal with family and friend', 'Taking a meal at ease', 'Taking a meal with kimchi and vegetables', 'Taking a meal with three kinds of side dishes', 'Priority of choosing snacks' and 'Type of snacks' in the educated group. With regard to dietary intakes according to Dietary Reference Intakes for Koreans, there were improvements in intakes levels of fiber, vitamin A, vitamin C, folate, calcium, iron and zinc. The index of nutrition quality, as indicated by nutrition adequacy ratio also improved in the educated group. Conclusions: These results showed that a nutrition education program providing education lessons and personalized school lunch by food exchange units according to daily needed energy showed positive changes in nutrition knowledge, dietary attitude and dietary intake of adolescent athletes. Nutrition education program providing personalized school lunch by Food Exchange Units may improve dietary behaviors and dietary intakes of adolescents.
This study examined the effects of a nutrition education program on nutrition-related knowledge, eating habits, and dietary behavior. Subjects were 3rd grade elementary school students in Anyang, Gyeonggi-do. A 5-week nutrition education program was implemented to 28 children and another 26 children were included in the study as a control group. A self-administered questionnaire was used to assess the effects of nutrition education program. Mean nutrition related knowledge score was improved after education (p < 0.001). There was a significant improvement in knowledge of nutrient source (p < 0.05), role of protein (p < 0.05), food tower (p < 0.001), getting information from nutrition labeling (p < 0.05), and proper way of snacking (p < 0.001). Eating habits and self-efficacy also tended to improve by nutrition education, especially eating habit of snack and self-efficacy on balanced diet reached significant improvement (p < 0.05). Food consumption frequency was not changed significantly, only consumption of sea weeds which is considered as a reluctant food among children was increased after education (p < 0.05). In addition, the number of leftover food items and total amount of leftover at school lunch reduced significantly after education when compared with the same 10-day menu prior to education (p < 0.01). This result suggests that unbalanced dietary behavior has been changed with the nutrition education program. In conclusion, the nutrition education program was found to be effective in improving nutrition-related knowledge, eating habits, and dietary behavior.
Nutrition education in elementary school is confronted with the present problem, as a legal basis about obligation of nutrition education in school was clarified. Moreover, it's also important for providing evidence based scientific resources to make a study of evaluating the education effectiveness. Most studies of the nutrition education effectiveness have evaluated the changing dietary attitude and nutritional knowledge score before and after the nutrition education, and suggested the effectiveness of intervention as changing between pre- and post-treatment. Nutrition education, however, purposing long-term changes, follow-up evaluation process about the learned attitude and knowledge of nutrition education were requested. For these reasons, this study attempted to fulfilled standardized nutrition education program which use "Na Story and Food World" and "Na Story for Me", a textbook for the 1st-3rd grade and 4th-6th grade designed by KFDA, and analyzed the changes about the effectiveness of nutrition education happened over a period of time. In this study, each student was assessed their dietary attitude and nutritional knowledge by four periods, before the education, right after the education, after 3 months, and after 6 months. As a result, an average score of nutritional knowledge before the education, $70.08{\pm}17.91$, were changed significantly higher right after the education to $85.69{\pm}15.05$ (p < 0.001), but it lowered to $84{\pm}15.56$ after 3 month. After the nutrition education, students in all grades had positive dietary attitude to Na reduction (p < 0.001). However, the healthy eating attitude about Na reduction had been unable to maintain after 3 and 6 months. Therefore, the systematic reeducated program in elementary school was positively necessary to reinforce children's learning and cognitive skills to maintain healthy eating knowledge and attitude toward Na reduction.
This study was to evaluate the anthropometry, dietary attitudes and the other factors of 201 children in day-care centers according to their parents' income levels. The evaluation was conducted using anthropometric measurements such as height, weight, skinfold thickness, blood pressure, and questionnaire survey which was completed by the children's mothers. The results are summarized as follows: Overall growth of children was normal according to Korean standard. There were no significant differences in anthropometry according to the income levels. The scores of eating habits of children were different significantly according to income levels. That is, the score was the lowest in the low-income group. Children generally prefer one-dish meal or snacks, while the preference levels of kimchi, seasoned vegetable and beans broiled in soysauce were lower than those cf other foods. In the questions to know mothers' nutrition knowledge, we could see that they didn't know well about protein, breast-feeding, weaning and balance in nutrients. Nutrition knowledge score of mothers was significantly lower in the low income group, which shows close relationship with low-score eating habits of their children. The score of nutrition knowledge was affected by the mother's education level. The higher the mother's nutrition knowledge and education level, the better children's eating habits. These findings emphasize the planning and application of nutrition education programs for mothers especially in the low income group.
The purpose of this research is to increase adults' quality of life by improving oral health. Total 572 people participated in this study in Young-Nam area. Survey research method was used to measure various tools of participants' general index, subjective view of oral health status, oral health knowledge, oral health practice, dietary pattern, OHIP-14, THI, QOL for analyzing the effect on quality of life. The result of the study is summarized as follows; 1. Oral health knowledge has positive effects on oral health practice (0.442), dietary pattern(0.343). Diet has positive effects on OHIP-14(0.187) and OHIP-14 has significant positive effects on THI(0.564). THI also has positive effects on QOL(0.380). But oral health practice index has slight effects on OHIP-14(0.056). 2. Indirect effect indexes on QOL are OHIP-14(0.214), diet(0.040), oral health knowledge(0.019), oral health practice(0.012) listed in order of effect size, and the biggest direct effect on QOL is from THI(0.308). The result of this study shows oral health and total health are important to improve the quality of life. And the knowledge about oral health dietary pattern should be important to improve oral health. But, even with high level of oral health knowledge, the oral health practice is at low level. Health education developing program should be needed. It is required to present basic data which represent adults with national view by extracting groups using sample probability methods as of next task of this study.

This study examined the effects of 'Dietary education for children's health UP' (DECHUP) on the changes in knowledge, attitudes, and practice (KAP) of nutrition and food safety in $5^{th}$ grade elementary school students in Incheon. The DECHUP program was conducted from May to October 2018 and consisted of education and activities focusing on the children's levels of understanding. Data were collected before, immediately after, and 6 weeks after DECHUP using the same method. All data were analyzed using SPSS ver 20.0. The level of knowledge and attitudes of the subjects to nutrition and food safety was significantly higher after than before DECHUP, but the attitude of boys did not show any significant difference after 6 weeks. Although there were no significant differences in the behavior for nutrition in the practice of the subjects, there were significant positive changes in the behavior of food safety. The higher the satisfaction of DECHUP, the more positive the change in knowledge, and the more positive the attitude and practice behaviors. Therefore, DECHUP has positive effects on the KAP of the subjects, and it will be helpful for elementary school students to form desirable eating habits if it can be carried out periodically and continuously.
This study was conducted to find out the desirable measures for maintenance and development traditional foods when abroad, by investigating the knowledge and actual state of utilization of Americans residing in the Los Angeles on Korean traditional foods. The 308 respondents of questionnaires were taken. 96% of the respondents demonstrated interest in traditional foods. Among kinds of traditional food, the most preferable food was boiled rice(71.4%) and Kimchi(70.9%) , The that traditional foods are used were good taste(45.4%) and familiar taste(41.6%). The reason for avoiding them was, mainly, troublesome cooking methods (46.3% ). Conclusively, the Korean Americans residing in the Los Angeles have made good use of boiled rice and Kimchi a staple common food, but special foods. ceremonial foods and festival foods were hardly used. To maintain Korean traditional foods when abroad, it is necessary that older generations sometimes offer opportunity to meet with them to the coming Korean generations, and Korean food companies develop and export standardized and simplified traditional foods.
This study was conducted to investigate nutrient intakes and obesity-related factors of obese children by interviewing the subjects aged from 11 to 13 in Daegu. The collected data were consisted of items on general characteristics, dietary behavior, nutrition knowledge and daily nutrient intakes of subjects. The subjects were classified into obese and non-obese control groups according to their relative weights. Frequency of skipping breakfast and eating rate of obese group were significantly higher than those of control group. There was no significant difference between obese and control group in the nutrition knowledge score. Except vitamins $B_1$, $B_2$ and iron, the average daily intakes of other nutrients in obese were greater than control group. The most contributing factor to BMI turned out to be cholesterol intake. After the nutrition education targeting obese children, their nutrition knowledge scores improved, but the dietary behavior score was not significantly changed. Therefore, childhood obesity may be prevented by continuous education programs including the behavior modification of obese children. (Korean J Community Nutrition 8(4) : 477-484, 2003)
For the purpose of carrying out nutrition counseling effectively and efficiently, this study assessed the nutrition counseling practice, perception and nutrition knowledge of elementary school children in Gyeongbuk province. Survey questionnaires were distributed between November 2009 and December 2009 to 100 nutrition counseling experienced children (participants) and 110 nutrition counseling non-experienced children (non-participants) and were completed with nutrition teachers' assistance. According to the survey results, girls and overweight/obese children showed higher tendency of participation in nutrition counseling (p<0.001). Participants who took nutrition counseling according to their own intentions showed satisfaction after counseling on diverse subjects such as obesity, unbalanced diet, and weight control. Particularly, 'lack of counseling session time', 'unfavorable counseling condition' or 'difficult explanation' caused participants unsatisfaction after counseling. Participants usually perceived the meaning of nutrition counseling more correctly than non-participants and showed positive intentions for taking further counseling in the future(p<0.001). Diet good for weight control, good food to fix unbalanced diet and diet good for growing stature were the top three subjects of nutrition counseling chosen by subjects (p<0.001). Participants also showed higher nutrition knowledge scores than non-participants. Therefore, it is critically important to apply nutrition counseling in the proper environment (counseling room, time, teaching materials, etc) to elementary school students to fix healthy food habits. Therefore, nutrition teachers need to be provide professional nutrition counseling skills and knowledge.
